The main city of Adjara-Batumi was declared the best tourist destination by the American Academy of Hospitality Sciences in 2012. WIZZ AIR RESUMES DIRECT KUTAISI-PARIS FLIGHTS
A total of 255,310 passengers were served by the airline in the first six months of the year at the Kutaisi International Airport, which made Wizz Air the leader in the Georgian air market in the number of transported passengers, the organisation said. Hungarian budget airline Wizz Air has resumed direct flights from the Kutaisi International Airport in western Georgia to the French capital Paris on Thursday, the United Airports of Georgia announced. With a total of 154 passengers departing from Kutaisi to Paris earlier today, Wizz Air performed its first resumed direct regular flight and at this stage will perform KutaisiParis-Kutaisi flights once a week. The airline returned the second aircraft based at Kutaisi International Airport and resumed flights to Estonia and France on August 1, which allowed the increase in flight frequencies to existing destinations, as well as the

creation of additional jobs, the United Airports of Georgia noted. It also said flight frequencies had increased to various European cities, including Athens, Berlin, Barcelona, Riga, Dortmund, Memmingen, Milan, Prague, Thessaloniki and Wroclaw. UTILITY, ROADS INFRASTRUCTURE PROJECTS UNDERWAY IN GEORGIA’S SEASIDE CITY OF BATUMI
Currently, two-layer asphalt-concrete pavement laying works are underway on about 10 road sections on the territory and enterprises are being set up on 90 hectares of land in the industrial zone of Batumi. Infrastructure projects setting up utilities and roads are “actively” underway in the industrial zone of western Georgia’s Black Sea city of Batumi, the regional Government of Adjara said on Friday. The projects worth GEL13.6 million ($5 mln), also include gasification and provision of internet connection and arrangement of an outdoor lighting system and drainage channels.

BATUMI BOTANICAL GARDEN Michael D’alfons was the first to introduce new plant species in Adjara which he started in 1881 in order to embellish his garden nearby Chakvi. Later, in 1892, a geographer, botanist and traveller Pavel Tatarinov created a so-called acclimatisation garden on Batumi shoreline which is known as the Upper Garden of Batumi Botanical nowadays. In 1912, the professor Andrej Krasnov from Kharkov University founded the Botanical garden itself. It is located only 9 km away from Batumi city, between Chakvistavi river and Green Cape. The garden occupies about 1 km of the coastline and grows 0-220 m above sea level. Once this territory was covered by Colchian forests,

abundant with redwood, chestnut, Tilia Caucasica, cherry laurel and rhododendron trees. From 2,037 hardwood species in the garden, 104 is endemic Caucasian and 1,540 is introduced. These plants are grouped according to their origin in 9 phytogeographic sections, including Australian, New Zealand, East Asia, Himalaya, North America, Mexico, South America, Mediterranean and Caucasus subtropical sections. Batumi Botanical Garden is the board member of Botanic Gardens Conservation International (BGCI). It is also connected with over 140 botanical gardens from around the world, as well as the universities and research centres.

BATUMI DOLPHINARIUM
Visit the unforgettable performance of dolphins, which is held at Batumi Dolphinarium. First opened in 1975, this facility was one of the largest dolphinariums in the world. It was the boundless popularity of this location that led to the establishment of Dolphin as a city symbol. Today’s Dolphinarium is a building of modern design, with the latest opportunities for artificial preservation of marine mammals and amazing performances.
The dolphin demonstration program is a cognitive spectacle saturated with elements of the show that takes place in any weather. Eight dolphins take part in the Georgian and English-language show - Nini, Bellucci, Zoro, Marco, Batu, Lola, Tsitsi and his daughter Olympia take care of creating a positive mood for the audience. BATUMI BOULEVARD Batumi Boulevard is one of the main attractions for the town’s visitors. The wide boulevard follows the seaside and is full of beach bars, café-lounges, restaurants, amusement rides for children and various colorful and dancing fountains. In addition to unique vegetation, you will find in Batumi Boulevard many interesting sculptures and architectural monuments. Batumi Boulevard has a history of over a century. Its construction began in 1881. Its creation was the idea of Batumi district governor Mekalov, who commissioned the coastal boulevard to be built to a famous Prussian gardener named Reseller. Later, the planned development of the boulevard was

handed over to a French gardener and designer invited to Georgia, Mikheil d’Alphonse, who is referred to in historical records as the “Kind Genie of Batumi Seaside”. The development of the boulevard also owes much to Gordeziani, who studied in France and was appointed the manager of the City Park Boulevard in 1917. The first colorful dancing fountains of the Boulevard have been functioning since 1977. In 2009, the length of the Boulevard was significantly increased and now reaches 7 kilometers. The so-called New Boulevard was designed by a Spanish architect and built in accordance with the latest standards.

The culture of toasting does exist in many cultures; however, the Georgian “Tamada” or toastmaster has no parallel. The role of the Tamada is to lead the Supra. The Tamada is considered to be the most honorable member of a traditional Georgian Supra. The ideal Tamada is well educated, has extensive knowledge of Georgia’s history and culture, is eloquent, is sociable, has a good sense of humor and has musical ability. The Tamada should be able to lead a series of toasts on a variety of topics. He should also be able to entertain guests with poems, songs and interesting stories. The Georgian Supra is a fundamental element of Georgian identity, which is why the tradition has been preserved to this very day. In total, there are approximately 300 different toasts, some of which are obligatory for each Supra, regardless of its duration.

A traditional Georgian feast is a superb display of the diversity of Georgian cuisine, cooking techniques, tablesetting traditions and other accompanying rituals. Ajarian cuisine is an inseparable aspect of Georgian cuisine. In mountainous Ajara, dairy products are common ingredients in many dishes. Boat-shaped Ajarian khachapuri is one of the most famous Ajarian dishes. Sweets also play an important role in Ajarian cuisine. Viticulture is an essential component of Georgian and Ajarian culture that has been cultivated for hundreds of years. In total, there are around 50 different grape species in Ajara that are still used in wine production to this very day.
Georgia is one of the oldest Christian countries in the world, which has had a significant influence on Georgian culture. Gonio, one of the oldest settlements in Georgia, is located in Ajara. It was inhabited in the 8th-7th century BCE. The Gonio Fortress, which was built by the Romans, has mythic ties to the legend of Jason and the Argonauts. Ajara is famous for its stone-arch bridges and different religious monuments. The monasteries, Gelati and Bagrati recognized by UNESCO as World Heritage Sites are located just a few hours’ drive from Batumi. Tbilisi, Mtskheta and other parts of Georgia are also very rich in unique and diverse cultural monuments. Moreover, non-material culture, such as Georgian polyphony and dances, are important parts of Georgian culture. Ajarian songs and dances occupy a special place in Georgian folklore.

NEW GEORGIAN CARGO AIRLINE TO START OPERATING ON TRANSCONTINENTAL ROUTE
According to Camex Airlines, assets in the amount of GEL100 million ($36.5 mln) had already been added to the Georgian economy as a result of the investment project, noting the number of new jobs created within the project would reach 150, the country’s Economy Ministry said Camex Airlines, a new Georgian cargo airline company described as a “Georgian-American product”, will become the first air freight company in the country to operate on a transcontinental route, the United States Embassy to Georgia announced on Monday. Following the obtaining of the Air Operator Certificate, Camex Airlines will be represented on the market with four aircraft and make its first commercial flight in the second half of August.

GUDIASHVILI’S PAINTING FROM THE ART MUSEUM Everyone knows that women’s faces have a special place in Lado Gudiashvili’s diverse works. “Lado Gudiashvili dedicated his entire life to art. However, you know what painting means after Delacroix, Courbet, Cézanne, Siora; At the same time, thanks to the mysteries of his nature and his natural instincts, he perfectly manages to remain a poet, for which he is always loved” wrote the famous French poet and art critic Andre Salmon about Lado Gudiashvili’s personal exhibition organized in Paris in 1925. A year later, the poet Titsian Tabidze dedicated his words of admiration to the young artist who returned from Paris: “He suddenly appeared in Tbilisi. We knew that he was on an expedition of artists collecting Georgian frescoes that came from ruined, destroyed temples and towers. He came as Nyamori and as a fresco - Zviadi was captivated by the show... he was fascinated by the nameless masters and together with Niko Firosman and Davit Kakabadze he won the name of the winner in the first competition of Georgian artists. This was the beginning of universal recognition, public love, which always accompanied the great artist. The works of Lado Gudiashvili, are works of the artist who created his unique style in Georgian art of the 20th century, which would become a part of exhibition for many museums. Painting and graphic works made by Gudiashvili at different times, the chronology of which covers a rather extensive period of the master’s work - 1920-50s, these exhibits are: flexible and artistic “Feast of Kintos”, “Joy” captured with a certain metaphorical symbolism, mythological composition “Jason abduction of the Golden

The artist’s canvases and graphic images contain romanticized portraits of contemporaries, in which living nature is the general basis for the creative development of the artist’s thoughts. In the author’s allegorical compositions, characters full of sublime feelings are captured, who are embodied in the Gudiashvili world of old legends, myths and celebrations. In this regard, the stylized portrait “with a regretful bird” preserved in the graphic fund of the Art Museum, dated 1970 and drawn with colored pencils, is noteworthy. The peculiar decorativeness of the composition, the striated forms made with the expressive lines give the model a kind of lyrical tone. The picture depicts a beautiful, noble young woman with a high neck, almond eyes, a faint smile, with a fairy bird perched on her fingernails. “For me, a woman is the crown of nature. The expression of the fullness and abundance of nature - the artist said - I think and try to depict my women, whoever they should be, Seraphita from distant centuries or Manana sitting on the Orbeliani balcony, and for today’s girls to be, first of all, Georgian mothers... I want to feel in them without hesitation feminine beauty, kindness, virtue and poetically exalted soul... ...every artist has his own perception of beauty.” Gudiashvili’s perception of beauty - this is what the visitor to the art museum.

Last year four eco-tourism cottages and a new pier were arranged in the Kolkheti National Park. Also, a new picnic area near the Pichori River was renovated. Visitors of the Kolkheti National Park in Georgia’s west now have an opportunity to experience new zip line and rock-climbing attractions at the location, Georgia’s Agency of Protected Areas announced on July. The Agency said one of its priorities is the development of ecotourism in protected areas around the country. Various infrastructural projects are being implemented in the protected areas, existing infrastructure are being renovated and new attractions will be added so that the visitors have

more opportunities to relax and get to know the local biodiversity,” Yuri Nozadze, the Deputy Minister of Environment Protection and Agriculture, said. The wine of the Adjarian house is authentic in taste: there is tart white, there is an elegant rose, there is a rich red, as well as primordially Georgian black.

Rose wine is obtained from the unique variety Chkhaveri, which grows in the mountains of Abkhazia, Guria and Adjara. It is kept on the vine until the first frost, and when the wine is made, it turns out initially pink. The technology in Europe is called “Ice Wine”.

TOURS & ROUTES AROUND OF BATUMI KEDA MUNICIPALITY WALKING ROUTE
The route begins at Dandalo Bridge (Batumi-Akhaltsikhe Highway) - behind it, goes up the forest-covered slope and follows the path; in approximately 300 m it joins the village road. After passing 1.5 km to the east it reaches the edge of the forest, where the steep section starts, ending at the spring and gorge locked by the fallen trees, and bringing us close to the Kaviani Fortress. From Kaviani Fortress we continue to the east and in approximately 2 km we will reach road to Kldisubani Village. The descending path brings us the road heading towards Ajaristskali Valley. The route
ends at Hanging Bridge, by which we will cross the river and reach Batumi-Akhaltsikhe Highway.
KHULO TOURIST ROUTE I
The tour begins in small town Khulo by visit to Ethnographical Museum. From Khulo we can choose out of three options: Small town Khulo-Tago cable way, which brings us to Tago Village in 8 minutes. The 6 km road to this village is strongly damaged and the cable way has extremely important meaning. The cable is 1700 m. long, ascending for 350 m. Riding by this cable way is interesting adventure, full of the impressions and fascinating views. Small town Khulo-Uchkho Bridge. The route goes to the north, towards the Okruashvilebi Village by the medium quality country road in the middle of the forest.

After Okruashvilebi we get to the Duadzeebi Village. The road is mainly going by the slope and little by little descends to the gorge. The Arch-shaped Uchkho Bridge connects two parts of Uchkho Village with each other. The bridge is newly rehabilitated and is suitable only for walking. Small town Khulo-Kedlebi. This route also leads to the north. After riding 1.3 km we come to the crossroad, one way, from where, heading toward Uchhko and the other towards Kedlebi Village. Bridge, and the other - towards Kedlebi Village. The distance from the crotch to the Kedlebi Skiing Base is 3.8 km and there is the concrete automobile road. Kedlebi Village bears the typical beauty of Acharian villages and is surrounded by the mixed forests. From the Skiing Base the route follows by the village street, which turns into the path; in approximately 400 m. we come to the crossroads, from which we go up towards the forest-covered Slope; in approximately 1 km we will reach Waterfall, which is fed by the springs flowing from Karata Mountain.

Georgia is an up-and-coming tourist destination due to its vast tourism potential. KHULO TOURIST ROUTE II The route begins in small town Khulo, continues to the east till Danisparauli Village and follows BatumiAkhaltsikhe Highway for 22 km. From Danisparauli Village we continue towards the Goderdzi Resort by the same road (2.5 km). Goderdzi Resort is the modern downhill skiing destination established in 2012. Currently it is not functioning at the full capacity. In winter, two cable ways are working. They bring us to the height of 2330 m. By Batumi-Akhaltsikhe road we get to Goderdzi Pass (5.7 km). Goderdzi Pass is the key point of this route.
SHUAKHEVI TOURIST ROUTE
The route begins at small town Shuakhevi, at the automobile bridge, by which we cross Ajaristskali and enter the Chirukhistskali River Valley. The type of the road is the dirt road, which is in a very good condition. in approximately 1.5 km we will see the bridge and Okropilauri Fortress sign. The Fortress is located on the elevation at junction of two rivers - Chirukhistskali and Tbeti. It is easily observable. It was also called Uchamba Fortress, and currently only two walls and part of the tower are still standing. From the bridge we continue by the automobile road to the south and in 12 km we come across with the Oladauri Church of Peritsvaleba which has been built at the place of the old church built in 2000s AD and is active. Then automobile road leads to Iakobauri

Village via villages Paposhvilebi and Makhalakidzeebi. From Iakobauri Village we can get to Darchidzes’ Fortress by two routes: one still follows the automobile road in the direction of Chirukhistskali. In 3.2 km we turn to Darchidzes’ Fortress and reach it in approximately 1 km. the second route goes by road to Darchidzeebi Village, which can be passed by the off-road vehicle. This road is distinguished by the fascinating views and allows observing the beauties of Darchidzeebi Village. Darchidzes’ Fortress is damaged, but although its shape can still be seen, because it is located on the top of the rock and repeats its shape configuration. The spot opens fascinating views over Chirukhistskali Valley. From the Fortress we return to the automobile road and again follow Chirukhistskali Valley. In 3.9 km we come to the spring with drinking water. After this spring the road cover worsens and is not fit for the low cross-country ability vehicles. After passing 6.7 km, we finish the route at temporary summer stations, from which we can enjoy the beauty of alpine meadows and wooden summer houses spread over them. From Chirukhi the road goes to Bakibako of Khulo Municipality, but it is accessible only for off-roads and horse tours (18 km).

Situated at the crossroads of Europe and Asia, Georgia is a country ripe with diverse natural beauty, maritime and mountainous climates. Georgia has a rich history, and the country’s folklore, traditions, dances and songs are unparalled in their intrigue and beauty. Georgia is also renowned for its exquisite cuisine and wine culture. In fact, Georgia’s winemaking traditions stretch back thousands of years.
KHULO CULTURAL ROUTE The route begins in small town Khulo, from where it goes in the direction of Batumi by Batumi-Akhaltsikhe highway till Furtio arch bridge for 8.3 km. From there the road furthers up by the automobile bridge, turns to the south and enters into the Skhaltistskali Valley. In 10 km we come to Skhalta Monastery located at the terrace of mountain slope and represents the only specimen of medieval spiritual architecture and wall painting in Khulo Municipality. After Skhalta Monastery the route follows Skhaltistskali Valley for 17.3 km till Vardtsikhe turn; Bakibako Village is in 4.6 km from here. From Bakibako we can choose several directions: To Khikhiani Fortress located at the cradle of Skhaltistskali River, at 2220 m above the sea level. For 2.2 km you can take the off-road vehicle, while the last 900 m you’ll have to walk. There is a well cut path on the steep, forest-covered slope and requires good physical shape. The Fortress was built in XII-XIII AD; it covers are of 1 ha and is adorned by the four towers.

Bakibako-Mtisubani ring; it starts in Bakibako Village and the very first sight we come to is the place where Selim Khimshiashvili was decapitated; after this we follow the road to the south till Chirukhi turn (2.5 km). From there we can get to Chirukhi Village either by horse or by off-road vehicle (16 km). From Chirukhi Turn we cross the river (to the north-west) and follow the road to Mtisubani Village. In the surroundings of Mtisubani Village we you can visit the grave of SelimKhimshiashvili and natural ice-box.

CULTURAL TOUR IN THE MACHAKHELA GORGE
The route offers visitors to see one of the oldest and most beautiful part of Adjara region- Machakheli gorge. A touristic route starts from the Batumi - Akhaltsikhe highway and goes upward the Machakhela gorge. Starting from the confluence of the rivers Chorokhi and Machakela, it goes to the Gvara fortress, which is located very close to the rivers confluence. From the Gvara fortress the route fully follows the gorge. To the village Ajarisaghmarti, it is asphalted road, after which continues with the ground road. At the Ambrazura (Cannon place) crosses the river Squrdidi and then continues to the Machakhela gorge again. On the road we meet Tskhemlara beautiful arched bridge and following the gorge encountering the villages Kveda and Zeda Chkhutuneti. Here there awaites for the visitors amazing, not very high waterfall and Machakhela ethnographic museum. It is noteworthy that there are many interesting exhibits in the museum, which were characteristic for the local peoples life. From the Machakhela museum the route continues to the direction of the Chkheri bridge and waterfall. This section of the route goes along the narrow road across the steep slope of the gorge. During our way there can be seen impressive panoramic views over the Machakhela gorge. From the Chkheri bridge our route
goes down the bottom of the gorge and passing through the Chkhutuneti fortress ruins ends at the Qoqoleti arched bridge.There are several guesthouses and catering facilities in the gorge, where if visitor wishes, one can spent the night, and have the opportunity to taste the local cuisine.
KEDA CULTURAL ROUTE A route starts from the village Gobroneti and passing the village Akho, with the road going through Ajaristskali slopes connectes to the village Gegelidzeebi. The route starts from the village Gobroneti, from the road coming down from existing two guesthouses in the village (Zebo, Tskarostvali) and turning to the north-east direction and continuing our route to the villages Akho and Gegelidzeebi. Here the route goes along the slightly inclined ground road. The route goes through the villages so it gives opportunity to see Ajarian village life. In the village Akho, there is one of the oldest mosques in the Ajara region, from where the route goes with the narrow ground road to the village Gegelidzeebi, firstly goes to the house-museum of famous Ajarian poet and writer, Fridon Khalvashi, where you can see different things associated with the life of the poet; after it the route finishes in the same village (Gegelidzeebi), to the family cellar of Nuri Sirabidze. Here the visitors can taste pitcher wines made in family conditions and also taste Georgian cuisine. The given route on almost whole length passes through the

right slope of the river Ajaristskali and gives opportunity to enjoy with the wonderful panoramic views over the gorge and over the mountainous Ajara villages located on its slopes. The route covers the villages of Gobroneti, Akho and Gegelidzeebi area. The cultural and historical sites located here, but one of its main attractions are landscape views spread over the Adjaratskali gorge.

И у меня получилось! Сегодня у всех нас есть возможность пользоваться удобным чат-ботом и быстро получить ответы на все вопросы. - С какими сложностями вы столкнулись в Грузии? -Ритм жизни отличается от того ритма к которому я привык.
Но, это и понятно! В такой атмосфере и самому хочется чилить и никуда не торопиться! Женя: В Грузии оказался по воле судьбы, я в принципе не думал, что куда-то перееду из Беларуси, но все планы изменились после 24 февраля. Работаю руководителем проектов в IT, компания специализируется на разработке финансовых приложений. Милана: Я политический беженец из Беларуси, в Грузии живу уже год. Я экономист-бухгалтер, в Минске работала в одной из крупнейших компаний страны, трансформировала отчетность согласно международным стандартам. Увлекаюсь бегом, путешествиями, с удовольствием разделяю любые спортивные активности. Вадим: Я в Грузии с апреля. Еще живя в Беларуси занимался организацией забегов. Люблю бег, в частности gps-art.

Жить в Батуми мне очень нравится, поэтому я хочу сделать для города что-то полезное. Дима: В Грузию приехал в начале марта 2022 года. Выбрал Батуми, поскольку здесь мне удобнее заниматься спортом. Прекрасные возможности тренироваться. Можно бегать вдоль моря, можно убежать в горы. Есть несколько бассейнов. По профессии я руководитель проектов в IТ. Управляю командами разрабатывающими программное обеспечение.
- Какой у Вас проект в Батуми? Мы организовали беговой клуб “Love Run Batumi”. Проводим как регулярные тренировки, так и забеги на разные дистанции. Началось всё с поиска компании для пробежек в чатах экспатов. Так появилась постоянная группа бегунов. После нескольких тренировок в команде появилась идея организовать благотворительный забег в поддержку Украины. А после успеха первого мероприятия, было решено создать беговой клуб, который бы объединял как новичков, так и профессионалов в беговых тренировках и соревнованиях. - Сколько уже было проведено забегов и когда следующий? На сегодняшний день мы провели 2 соревнования: “Run for Ukraine”, благотворительный забег, собравший более 150 участников, и “Summer Batumi Run”, к которому присоединились почти 200 человек. Мы, как организаторы, очень рады тому, что смогли привлечь к участию грузинских любителей бега. Для нас очень ценно участие местных жителей, так как мы хотим сделать для города, где все сейчас живем, полезное мероприятие, популяризирующее спорт и продвигающее бренд Батуми. Здорово, что с организацией нам помогает администрация города и местные предприниматели. Мы стремимся проводить наши забеги с соблюдением всех правил подобных мероприятий, поэтому на дистанции работают ведущий, фотографы, волонтеры, организуются точки питания и замеряется время участников . Еще мы заботимся о наших участниках и их здоровье, поэтому на всех наших
забегах дежурит бригада скорой помощи. В каждое мероприятие клуба мы добавляем что-то новое, дорабатываем детали и улучшаем организацию, основываясь на обратной связи от участников. Следующий забег запланирован на сентябрь 2022, хотим приурочить его к закрытию летнего сезона в городе. - Как попасть на забег в сентябре? Чтобы попасть на забег нужно зарегистрироваться и оплатить участие на https://tkt.ge/sport?culture=en В день мероприятия каждый участник получит стартовый пакет с номером и атрибутикой. Разминку проведет профессиональный тренер Финиш будем фиксировать с помощью современного оборудования для электронного хронометража. Все бегунам вручим медали с крутым дизайном. Победители, конечно, станут обладателями призов от партнеров забега. - Какая главная цель вашего проекта? Цель нашего проекта- объединить любителей бега в Батуми, привлечь к участию не только бегунов-экспатов, но и атлетов из Грузии. Не менее амбициозная цель - продвижение бренда Батуми, как центра спортивного движения и здорового образа жизни. Не секрет, что в 2022 году комьюнити экспатов сильно расширилось и в город приехали люди, открытые новым событиям и возможностям. Наш проект это также и инструмент нетворкинга, способный познакомить экспатов и местных предпринимателей, объединённых идеей спорта и здорового образа жизни. Мы открыты предложениям о сотрудничестве. Ajaruli khachapuri
It can easily be prepared at home even if you do not have any experience cooking. Ajarian Khachapuri is one of the iconic dishes of Georgia – the country, which is famous for denotative, delightful dishes. Khachapuri in Ajarian style comes in a different shape and is inspired by the shape of a boat - as Batumi is a coastal city and boating is part of its culture.

So, prepare your apron and kitchen tools and here we go: Georgian Cheese and Egg Bread Filled with melted cheese and topped with a runny egg, this flatbread is best eaten hot—tear off the crust and dunk it in the well of cheese and egg.
Ingredients 1 tsp. active dry yeast 1⁄4 tsp. sugar 1 tbsp. olive oil, plus more for greasing 1 1⁄4 cups flour, plus more for dusting 1 tsp. kosher salt 2 1⁄4 cups shredded Muenster cheese (14 oz.) 1 cup crumbled feta cheese (6 oz.) 2 eggs 4 tbsp. unsalted butter, cubed
Instructions Combine yeast, sugar, and 2⁄3 cup water heated to 115° in a bowl; let stand until foamy, about 10 minutes. Add oil, flour, and salt; mix with a wooden spoon until a soft dough forms. Transfer to a lightly floured surface and knead until smooth and elastic, about 4 minutes. Transfer to a lightly greased bowl and cover loosely with plastic wrap; set in a warm place until doubled in size, about 45 minutes. Place a pizza stone on a rack in lower third of oven. Heat oven to 500° for 1 hour. Combine cheeses in a bowl; set aside. Punch down dough and divide in half. On a piece of lightly floured parchment paper, roll half of dough into a 10” circle about 1⁄8” thick. Spread a quarter of the cheese mixture over dough, leaving a 1⁄2” border. On one side of the circle, tightly roll dough about a third of the way toward the center. Repeat on the opposite end. There should be a 2”-3” space between the two rolls. Pinch the open ends of the rolls together and twist to seal, making a boat shape; place another quarter of the cheese mixture in the middle; repeat with remaining dough and cheese. Transfer boats on paper to stone; bake until golden brown, 14–16 minutes. Crack 1 egg into the center of each boat. Return to oven until egg white is slightly set, 3–4 minutes. Place 2 tbsp. butter on each bread; serve hot. AJARA Life Magazine 79
