ALI & NINO THE KISS OF MOVING STATUES

Created by the USA-based Georgian sculptor, Tamar Kvesitadze, a kinetic sculpture of Ali and Nino is undoubtedly one of the most popular tourist attractions in the Boulevard.

7-meter constructions of a man and a woman perform a circular motions for 8-10 minutes eventually merging into each other.

The work was designed in 2007, but only installed in 2010. Made of steel discs, it weighs 7 tons and is 8 meters high. Its construction took 10 months and both figures are controlled by a computer. In addition to the movement, the monument also features spectacular, colorful lighting.

The sculpture was inspired by the Azerbaijani novelist Kurban Said’s eponymous novel. The sculpture symbolizes eternal motion, love and convergence of cultures.

However, each visitor can have his/her unique emotions and associations after attending this performance.

To the people of Batumi, the city on Georgia’s Black Sea coast where it has since found a permanent home, it’s Ali and Nino.

To everybody who visits the city, it’s likely to be the abiding memory of their trip: a moving (in every sense of the word) statue which slowly brings two lovers together for a short embrace, only for them to part almost immediately.

It’s impossible not to stand transfixed, bewitched almost, before its tragic beauty, for the full 10 minutes it takes to complete the full cycle of coming together and breaking apart. And then you’ll stand there and watch it again. And again. It’s truly mesmerising.

who are Ali & Nino? Set mainly in old Baku, Azerbaijan, Ali and Nino is a sweeping novel of romance and adventure which tells the tale of Ali, a Muslim schoolboy from an aristocratic Azeri family who falls in love with Nino, a beautiful Christian girl with distinct European sensibilities. In order to be together they must overcome personal scandal, family blood feuds, World War I and the Bolshevik revolution.

In the end, they must choose between loyalty to their cultural beliefs and heritage, and ardent devotion to each other. They choose each other, only for Ali to die fighting the Bolsheviks as they advance on Baku.

10 PLACES TO VISIT IN GEORGIA THIS AUTUMN

Autumn is one of the best seasons to visit Ajara. The autumn season provides excellent conditions for seaside holidays, rural tourism and wine tourism. In particular, autumn is the vintage period in mountainous Ajara. Visitors can involve themselves in many fun and memorable harvest-related activities, including grape harvesting and wine making.

1- Martvili Canyon (Samegrelo)

Located at river Abasha, this canyon is a great place for those who are tired of heat. Take a boat trip, swim in transparent water between small cliffs or take a bath in waterfalls, look how beautiful are rays of light falling from above.

The closest town is Martvili. You can also see Martvili monastery on the way to or from canyon.

2- Prometheus Cave

(Imereti)

Another place to escape from summer heat. Discovered in 1984, now this cave offers a 1 km long walking route through colourful caverns and a boat trip through an underground lake. It is even possible to get married in one of the halls!

The closest town to Prometheus cave is Tskaltubo.

Take into consideration that the cave is closed on Mondays!

Shatili (Mtskheta-Mtianeti)

A small village in North-Eastern Georgia, Shatili amazes with it architecture: the houses are situated on the cliffs, as birds’ nests. Mountainous landscapes there are simply breathtaking! You can go there from Tbilisi with a minibus or taxi. On your way, make a photo stop near Zhinvali reservoir.

Uplistsikhe (Shida Kartli)

In this cave town not far from Gori and Tbilisi you can see how people have lived here several thousand years ago. Stone hewn streets and around 150 caves for different purposes (residential, ritual) remained till our days.

5- Okatse Canyon

(Imereti)

Spectacular views and well maintained routes will make you enjoy your hike. In 4 km from canyon, there is also waterfall Kinchkha, one of the tallest and beautiful waterfalls of Georgia. You can definitely see it all in one day!

The closest city to the canyon is Kutaisi. You can take a minibus to village Gordi, and from there reach the visitor center of Okatse on foot.

Autumn is one of the best seasons to visit Batumi. little cold and sometimes rainy weather lasts until late autumn and this period is referred to as the “velvet season”. Autumn sunny weather with seaside vacation is best for rural recreation and wine tourism.

6- Vardzia (Samtskhe-Javakheti)

Imagine: all this complicated system of caves has been established in the XII century (around 900 years ago!), used to be inhabited by around 30.000 people, and the whole town actually belonged to glorious Queen Tamar. Now you can see her face at well preserved fresco in a monastery which is maintained by several monks. The closest town is Akhaltsikhe. On your way to Vardzia you can also see Rabati fortress, which has been recently renovated, and Khertvisi fortress, which is well preserved. Make sure you are not planning your trip on Monday, because both Vardzia and Rabati are closed!

7- Kintrishi Protected Areas (Ajara)

Located near Kobuleti, this protected area offers you several beautiful trails, where you can discover typical Ajarian arch bridges, waterfalls and enjoy the coolness of forest. Very nice idea for a day trip, if you are somewhere in Ajara and want to see more than beaches.

8- Kakhetian wine towns

The whole region of Kakheti is famous for its wineries. If you are confused and don’t know where to go, we’d recommend you to visit at least one or two of those sites: Telavi with its medieval fortress and 900-yearold sycamore, Ikalto Academy – alma mater of Shota Rustaveli, Alaverdi monastery and its wine cellar, Tsinandali and house-museum of Georgian poet Alexander Chavchavadze (wine cellar is still in the mansion!), Kvareli and wine tunnel there, or Sighnaghi, city of love, which is famous not just for wine, but also for well preserved city walls and monastery Bodbe.

9- Mestia and Ushguli (Svaneti)

Svaneti is one of the most beautiful regions in Georgia. You will be fascinated by Caucasus peaks (the highest peak in Georgia, Shkhara, is there with its 5193 m of awesomeness).

Mestia has recently become a good destination for skiers, but in summer it all looks very attractive for hikers, trekkers, campers and those who want to escape from any rush. Ushguli is considered to be one of highest constantly inhabited settlements in Europe. It amazes with its authenticity, and is actually reachable for tourists just during several month per year, so hurry up to visit it this summer!

Waterfalls, glaciers, medieval towers in each household (towers of Upper Svaneti are under UNESCO protection, by the way) – does it sound like an interesting place to go?

10- Borjomi

Yes, of course, we all know that you’ve heard of Borjomi water. Maybe it even saved you after a night out. But Borjomi water from a natural spring is something different (and also healing, no doubts).

You can have a nice walk through Mineral water park, or hike in Borjomi-Kharagauli National Park (there are trails for one day trip and for several days as well). SPA-treatment in one of hotels can also be one of the greatest things to try this summer. Give your body and soul a break: bring them to Borjomi!

SHANGRI LA TBILISI 10TH ANNIVERSARY!

On September 22, 2022, Shangri La Tbilisi Gaming & Entertainment Facility celebrated its birthday. The celebration of its10th anniversary was surrounded by grandeur and glamour. The square in front of the facility turned into a real carnival show. Guests were greeted by dancers and performers in colorful costumes. A street orchestra set a wonderful rhythm and a fire show in front of the Shangri La which became a vivid embodiment of the celebration of the anniversary.

There were many surprises for guests inside the facility itself: a bright photo zone, an exquisite interior decorated with fresh flowers, and, of course, a rich buffet in accordance with the best traditions of Georgian hospitality. The real star of the evening concert program was the great Nino Katamadze. The guests warmly welcomed the unique vocalist

on the stage of the Shangri La Tbilisi stage and literally bathed her in a standing ovation. The bright, unique, philosophical and very emotional music of Nino Katamadze certainly became a symbol of a new wonderful decade in the history of Shangri La Tbilisi, which first opened its doors to guests in 2012 and up to this day remains the most prestigious entertainment facility with the highest service standards in Georgia.

Shangri La Tbilisi is part of an international gaming network, well known for its high level of service, classic table games, modern slot machines, VIP club and restaurant, where each guest will enjoy the game, pleasant environment and comfort.

BATUMI BOTANICAL GARDEN

Michael D’alfons was the first to introduce new plant species in Adjara which he started in 1881 in order to embellish his garden nearby Chakvi.

Later, in 1892, a geographer, botanist and traveller Pavel Tatarinov created a so-called acclimatisation garden on Batumi shoreline which is known as the Upper Garden of Batumi Botanical nowadays.

In 1912, the professor Andrej Krasnov from Kharkov University founded the Botanical garden itself. It is located only 9 km away from Batumi city, between Chakvistavi river and Green Cape. The garden occupies about 1 km of the coastline and grows 0-220 m above sea level. Once this territory was covered by Colchian forests,

abundant with redwood, chestnut, Tilia Caucasica, cherry laurel and rhododendron trees. From 2,037 hardwood species in the garden, 104 is endemic Caucasian and 1,540 is introduced. These plants are grouped according to their origin in 9 phytogeographic sections, including Australian, New Zealand, East Asia, Himalaya, North America, Mexico, South America, Mediterranean and Caucasus subtropical sections.

Batumi Botanical Garden is the board member of Botanic Gardens Conservation International (BGCI). It is also connected with over 140 botanical gardens from around the world, as well as the universities and research centres.

An equally pleasant place for walking is the “square of Europe”, which is decorated with singing fountains and an imposing statue of “Medea with the Golden Fleece”. It is on these lands, according to legend, Jason extracted the Golden Fleece. Batumi is famous for it and its surprisingly beautiful architectural sights.

BATUMI PUPPET AND YOUTH PROFESSIONAL STATE THEATRE

Since January 14, 2016, Batumi Puppet and Youth Theatre has resumed its creative activities in the reconstructed building.

With supplementary floor and a summer hall added to the main structure, this historic building bears the status of the monument of cultural heritage.

The institution was involved in numerous collaborations with painters and composers. Its programs were enriched and developed year by year.

COLONNADES

The idea to construct Colonnades in Batumi belongs to the local doctor Ivane Mchedlidze. He brought the project with him in 1933-1934 from a professional trip to Sorrento city, Italy. The project was completed under the supervision of Bogdan Kirakosyan, an architect from Batumi. This structure used to serve as a gate to the seashore which used to be closer to it than today. Years later, the shoreline receded and the sea moved back further from the construction. Despite this, colonnades remain one of Batumi’s most frequented landmarks and a popular meeting place in the city. You will meet similar colonnades at the entrance of Batumi Central Park.

BATUMI ARCHAEOLOGICAL MUSEUM

If historical artefacts are things of your interest that Batumi Archaeological Museum is for you. There you can examine ancient cultural monuments that were unearthed on the territory of Adjara. In 2007, a permanent popular science exhibition was opened. It introduces visitors to the ancient history epochs. Since 1998, the joint expedition of Batumi Archaeological Museum and Oxford University Ashmolean Museum enriched the museum with new artefacts.

ADJARA MUSEUM OF ARTS

Niko Pirosmani, Lado Gudiashvili, Gigo Gabashvili, Davit Kakabazdze, Elene Akhvlediani, Merab Berdzenishvili, Rusudan Petviashvili – these names are only a small part of world-renowned Georgian painters whose works are presented in Adjara Museum of Arts. The museum building itself is a work of art and one of Batumi’s historical buildings on top of it all. Ajara Museum of Arts hosts personal, group and retrospective exhibitions as well as music and theatrical performances.

THE STATUE OF MEDEA

On the Europe Square stands the statue of Medea, princess of Colchis. Created by Davit Khmaladze, the monument symbolizes the wealth and strength of the country. According to antique mythology the youngest daughter of Aeets the legendary king of Colchis fell in love with the leader of Argonauts’ crew, Jason, and helped him to steal the golden fleece. Medea had in-depth knowledge of herbs and possessed healing gifts. As the legend has it, she could rejuvenate a person which is why Medea was perceived as a goddess and temples were dedicated to her. The term ‘Medicine’ originates from the name – Medea.

BATUMI ILIA CHAVCHAVADZE STATE THEATRE OF DRAMA

Batumi Theatre of Drama which opened its doors in 1952 (Architect I. Teplitski) was named after Ilia Chavchavadze seven years later. The first theatre performance ever staged in Batumi dates back to 1879 when Zurab Antonov’s play “Has the Uncle Married?’ was performed by amateur stage actors. The venture was initiated by Batumi Policemeister’s wife, Ketevan Zhuruli. Like in other theatres of Georgia, plays were held for charity here. Those engaged in the drama art moved from building to building but hardly ever lacked the attention of the audience.

THE NOBEL BROTHERS MUSEUM

This museum is set up in the same building where Nobel brothers’ crude oil refinery partnership ‘Batumi Kantora’ was located around a century ago.

Up to 2,000 museum exhibits depict the examples of technological innovation introduced by Nobel brothers, Rothschilds and Mantashev in Batumi, at the end of XIX and in the beginning of XX centuries. These technological artefacts mainly represent tea, tobacco and printing development dynamics in Georgia. At that time, Nobel brothers also introduced latest technologies for oil transit in Batumi.

KHARITON AKHVLEDIANI STATE MUSEUM

Khariton Akhvlediani Adjara State Museum is one of the oldest museums in Georgia. It was founded in 1908 after Batumi city council approved the initiative of then Pushkin school teachers and decided to open a museum for children. The renowned scientist and public figure, Khariton Akhvlediani served as the Head of the museum in 1938-1989. This interesting museum invites visitors to three places at once: Mehmed Abashidze museum-He was a respected persona in Georgia; Personal items, documents and photos of t. Ilia Chavchavadze, Georgia’s greatest public figure; and a science library where a rich fund of old books is represented.

ETHNOGRAPHIC MUSEUM ‘BORJGALO’

Folk crafts and lifestyle museum which was created and founded by the native of upper Adjara, Kemal Turmanidze, is today the ethnographic museum which covers 3,000 m2. Once you get to the museum, you plunge into the old Georgian traditions.

Pottery, metal, stone and wood processing, beekeeping, fruit farming, viticulture and agriculture is displayed at the level of the work process.

Mannequins dressed in traditional attire, props, folk music – all this paraphernalia will animate your imagination. You can find residential, worship and agricultural buildings here too, both in the form of small models and in life-size.

ILIA CHAVCHAVADZE MUSEUM

Another museum worth your visit is the museum of Ilia Chavchavadze, who was one of the most distinguished sons of Georgian nation, later sanctified and declared a saint by the Georgian Orthodox Church. The writer, the publicist, the philanthropist, the public figure and the leader of Georgian national-liberation movement was shot and killed in 1907 by the opponents of the liberation of Georgia. The museum was opened in Batumi in 2001 where you can examine personal belongings of Ilia Chavchavadze and his Adjarian peers. There are 289 exhibits kept in the museum, including a table, a closet, small and big samovars (tea-kettles), a sewing machine belonging to Ilia’s wife, Olga Guramishvili and many other items.

EXHIBITS FROM THE ART MUSEUM

Georgian fine art of the 20th century, during its century-long history of existence, went through a difficult and interesting path of development, which presented many artists with clear individuality. Among them are outstanding female artists Ekaterine Bagdavadze and Esma Oniani, whose wonderful works are in the permanent exhibition of the Art Museum.

Ekaterine Bagdavadze - (1916-1975) -One of the prominent representatives of Georgian art of the 20th century. She studied at the art faculty at Tbilisi Art Academy under the guidance of prominent artists Ucha Japaridze and Mose Toidze (1934-40).

Ekaterine Bagdavadze’s painting “Waiting” (Mushamba, oil. 79X49. 1966) is preserved in the art museum. The artist’s works are characterized by an intense, sonorous color, rich pictorial lines and peculiar decorativeness. In the generalized, idealized faces of women, who are immersed in their own world, the author conveys different feelings and moods.

Esma Onian - (1938-1999) -painter, graphic artist, poet, essayist. One of the important representatives of Georgian art of the second half of the 20th century. BATUMI STADIUM RECEIVES REAL ESTATE OSCAR AT FIABCI-GEORGIA PRIX D’EXCELLENCE AWARDS

The recently unveiled Adjarabet Arena stadium in Georgia’s Black Sea city of Batumi has received a prize promoted as a “real estate Oscar” on Friday for best public infrastructure.

The sports facility was singled out for the prize at the FIABCI-Georgia Prix d’Excellence Awards, organised by the national branch of the international real estate federation.

A jury panel composed of leading industry experts from Georgia and other countries selected the winning projects based on internationally recognised FIABCI criteria.

The win means the stadium will be among other winning projects to feature in the FIABCI Prix d’Excellence Awards in June 2023 in the United States.

Supported by Bank of Georgia, Galt & Taggart and Digital Area, the event was aimed at positioning Georgia on the international map as a country that develops “high-level projects of the future”, FIABCI-Georgia said.

Founded in 2019, the national branch of the international real estate federation now includes around 40 leading companies operating on the Georgian real estate market.

BATUMI CITY ASSEMBLY APPROVES GENERAL PLAN TO PROMOTE CYCLING

The city assembly in Georgia’s western coastal city of Batumi on Monday approved a general plan regulating cycling in the city, with the move seeking to introduce an integrated approach to making the streets of the popular visitor destination bicycle-friendly.

The goal of the plan, drafted with the involvement of municipality representatives, local cyclist groups, nongovernmental organisations and interested agencies, aims to ensure “safe and comfortable cycling”.

Institutions involved in the development of the plan used the Bicycle Policy Audit methodology - developed

by an international consortium of bicycle experts and co-funded by the Intelligent Energy Europe Programme of the European Union - for the first time in the South Caucasus, Batumi city assembly said.

The city authority also noted the document had been developed as part of the regional Sustainable Urban Mobility in the South Caucasus programme, funded by the German federal ministry for economic cooperation and development.

The German Society for International Cooperation is involved in the implementation of the programme..

AIR TRAFFIC SCHEDULE FOR WINTER SEASON APPROVED FOR GEORGIAN AIRPORTS

All three international airports of Georgia, located in the capital city of Tbilisi, Black Sea resort city of Batumi and western city of Kutaisi, will have a busy flight schedule this winter season.

Forty-one airline companies will carry out flights between Georgia and 61 destinations in 31 countries during the winter season, the Georgian civil aviation agency announced on Wednesday after officially approving the schedule for the period.

Set to run between October 25 and March 25, the season will see an average of 390 flights per week, the agency noted, adding it continued to accept applications from airlines for “additional regular and seasonal multiple charter flights”.

INT’L CONSULTING COMPANY TO HELP PREPARE LONG-TERM MASTERPLAN FOR BATUMI AIRPORT

ADP Ingénierie, an international consulting and engineering firm, has been commissioned to prepare long-term master plans for Tbilisi and Batumi international airports in Georgia’s capital and Black Sea city respectively.

TAV Georgia, the operator of the two facilities, announced on Thursday the firm’s representatives were

in Batumi and being introduced to the infrastructure of the city’s airport. Work has also started for a similar master plan for the airport in the capital city.

TAV Georgia also said the plan for the latter facility would be ready by end of the year, while Batumi airport will have the document prepared for January next year.

RAFTING IN GEORGIA

In Georgia there are many wild fast flowing rivers fed from glaciers in the surrounding mountains.

Georgia is a country that has possibilities to do every kind of extreme sport, including rafting. This extreme sport in Georgia became popular since 1980s. Simply raft adventurers navigate through different degrees of rough waters (mostly rivers) in order to thrill and excite themselves as they bump up and down along strong waves and currents.

The basic principle of rafting is to haul down the river current using speedy inflated air-boats that usually have seats differing in number from one to twelve depending on boat type.

Rafting season in Georgia starts in April and continues till the end of October. So if you are keen on rafting visit Georgia during this period and experience whitewater rafting in the Caucasus Mountains.

There are several categories of rafting that are divided according to the difficulty of the river – class I is the easiest while class IV means life threatening. Rivers in Georgia offer opportunities for almost all rafting categories.

KNOW BEFORE YOU GO: WHITE WATER RAFTING

Jonesing for some wet n’ wild exercise that’s a little more extreme than a dip in the pool? Consider hitting some bubbly rapids. Adventure tourism — activities that involve an element of risk plus water, heights, or extreme speeds — is the perfect fit for adrenaline junkies. But if bungee jumping or ejecting yourself from a plane seems a bit too extreme, then try out beginner-friendly white water rafting. Here’s what to expect from that first white water run.

Arts and Rafts — The Need-to-Know

When we say raft, we don’t mean one like Tom Hanks fashioned in Castaway. We’re talking about an inflatable vessel that cuts through rushing streams and whips around doom-impending boulders. The mission: Propel and maneuver the raft with a paddle through varying grades of rapids. While an expert instructor takes on the brunt of the work, the team-focused exercise also amps strength and endurance levels for all rafters (usually eight per raft). Just a few hours scaling turbulent waters can burn some serious energy (over 300 calories per hour, on average), and work the arms, abs, and core. Frank Mooney, a river guide for over 20 years, says those shoulders and hips might also be a little sore after a day on the river. Adventurers may reap the benefit of some mood boosters, too. A study on wilderness river rafting trips found that rafting touted psychological advantages like relaxation, nature appreciation, or achievement . As far as safety goes, it’s not always the catastrophic stuff to

watch out for (think capsizing and the like). Minor injuries like slips, trips, and falls were most frequently reported in a study of 21 adventure tourism activities including rafting, horseback riding, and tramping . Risky business may be grounds for injury, but with expert guides, proper instruction, and the right gear, white water rafting makes for a fun (and challenging) activity.

Rapido, Rapido! — Your Action Plan

To get first-time rapid-goers on their way, we talked to some veteran rafting guides and river experts for a few essential pointers. Here are their suggestions on what to bring, wear, and expect on the water.

Start out slow: Experts classify rapids on a scale of 1-6. Class 1 rapids are small with a slow current and low waves, and no obstructions in the water (child’s play), while Class 6 rapids feature large, frequent waves (read: you will fall out and lose your shorts on the way).

Wear proper wet gear: Expect to get soaked (who doesn’t love a good chance to show off that itsy bitsy, teenie weenie, yellow polka dot bikini?). And to stave off tush chafing, pack a pair of gym shorts or water-resistant shorts for a barrier to the raft. Reservationist Michelle Fisher recommends wearing synthetic materials because cotton pulls heat away. And to protect the toes, Fisher suggests water shoes over flip-flops.

De-bling: Leave jewelry, grillz, and cash money in the car. Sky Fogal, professional river guide at Pocono Whitewater, says, “The general rule of thumb for river trips is if it got lost or wet and it would ruin your day, don’t bring it.”

Protect your noggin: Most facilities require rafters to wear helmets past Class 1 and 2, but it depends on the state, the river, and the company (who will provide them before launching). The right protective equipment, and procedures to hop in and out of the raft minimize the risk factors .

Lather up: Logging a solid day in the sun requires some sun block application. “What folks don’t expect is how sunburned the tops of their thighs and neck will be,” says PJ Stevenson, a 17-year rafting veteran.

Stay afloat: Just like swimmies from the kiddie pool days, keep a lifejacket on at all times. In the event that you find yourself in the river, a lifejacket not only serves as a floatation device, but makes it easier for a guide to pull you back onboard.

Dry off: Pack a change of clothes, a towel, and some water — though drenched, you’ll likely be thirsty once on land.

White water rafting is not only a fun, exhilarating activity for most age groups, but also a way to switch up your workout routine and get some fresh air (and an excessive amount of water). Beginners should shoot for Class 1 and 2 rapids.

Average farm size in Georgia is 1.55 ha and most of local farmers produce products on open-fields, which causes seasonality supply. Most agriculture products are cheap during harvesting season and quite expensive during non-harvesting season. During non-harvesting season Georgia imports some main products from neighboring countries (mainly from Turkey), such as tomatoes, cucumbers, onions, garlics, potatoes, egg-plants, belly peppers etc.

Additionally, demand for different greens and berries (blueberries, raspberries etc.), which aren’t quite traditional and Georgia produces only small quantities, is increasing yearly. Most local producers are plagued by prevalent inefficiencies in their production, caused by lack of know-how, adequate technology and capital. Therefore there is a clear need for new modern greenhouses, which reduce dependence on

seasonality and provide products during the whole year.

Meat and Poultry

There are many small farms in Georgia, which are managed by individual households. Because of the lack of modern and efficient approaches in breeding, species selection, resource management and in other factors, many of them just remain small household with small scale production.

The demand on meat consumption in country has an increasing trend. Around 25% of beef, 50% of pork and 80% of poultry consumed in Georgia is an imported product. There is a need and capacity to build modern farms, to supply local market in the first stage and to distribute through the region as a next step. Farming in Georgia has many advantages, e.g. ecological clean environment, cheap land and labor, easy access to different resources and so on.

In addition to all the factors mentioned above, easy and cheap access to clean mountainous water opens an opportunity to run profitable fish farming business with high quality output.

Here, Chef Elene shares her recipe for Kharsho.

Kharsho (Georgian: ხარშო), also known as Kharcho, is a traditional Georgian dish, usually made with beef or chicken. It can be made with walnuts and with or without rice.

So, prepare your apron and kitchen tools and here we go:

Kharsho (Chicken and Walnut Soup)

Ingredients

1 whole chicken

350 grams of walnuts

2 medium sized onions

3 cloves of garlic

1 heaped tbs of tomato puree

5 tbs of oil

1 tsp of dried marigold

1 level tsp of blue fenugreek

1 level tsp of dried coriander

1 tsp of dried red pepper and salt.

Instructions

Cut the chicken into medium to large pieces and add, together with 5 tbs of oil (3-4 if the chicken is fatty) to a deep pot. Cook for 15 minutes on a low to medium heat.

Finely chop the onions and add to the pot. Continue to cook for 10 minutes, stirring frequently. Add 1.5 liters of water. Stir and cook for a further 10 minutes on a medium heat.

now Grind the walnuts and garlic together. Add 1 heaped tbs of tomato puree, 1 tsp of dried marigold, 1 level tsp of blue fenugreek, 1 level tsp of dried coriander, 1 tsp of dried red pepper, and salt (amount dependent upon personal preference) to the ground garlic and walnuts. Stir in 1 cup of the chicken juices and mix thoroughly.

Stir and cook on a medium heat for 3-4 minutes and then serve.
