As Roy and I hop across the white sand of Trellis Bay with our two excited boys in tow, the moment I love the most is seeing that aqua coloured water lapping on the shoreline. That to me is a luxury not many are lucky enough to enjoy.

With his father being a chef himself, he was able to explore ingredients and his culinary creativityigniting what would later become a lifelong love of cooking. “I lived above the restaurant growing up and I’ve known from 11 years old that I wanted to be a chef”. At the age of 15, he left school and was given the opportunity of a lifetime to work as a Stagiaire at the Virgin Limited Edition property in Morocco. Shortly after that, still at the tender age of 15, Jacob’s career kicked off when he advanced to the position of Apprentice Chef at the Belmond Le Manoir aux Quat’
Saisons in Oxford, England. It is a two Michelin starred restaurant created by Chef Raymond Blanc that served up to 200 guests per day. While there, he worked across the various sections in the kitchen, successfully completing the apprenticeship. He learned classic French cooking techniques, food presentation, farm-to-table concepts, time management skills and developed a strong work ethic. On his 16th birthday, while many teenagers would be out celebrating, Jacob spent his special day in the kitchen, doing what he loves most. With his unwavering dedication to his craft, Jacob continued to climb up the culinary career ladder, working his way up from humble beginnings
as Apprentice Chef to Head Chef at Moskito Island in the Virgin Islands. While he is formally trained in French fine dining, Jacob enjoys cooking a wide range of different cuisines. He is particularly passionate about showcasing the fine flavours of the Virgin Islands. It is this love of local food coupled with his vast knowledge and experience in the culinary industry that laid out the roadmap for his transition into entrepreneurship.

In September 2021, Jacob officially launched Dearie Catering, his own private luxury catering company with an aim to elevate the culinary scene in the Virgin Islands. He offers creative and unique dining experiences, positioning private dining as the latest luxury. Finding inspiration from his travels throughout Europe, South America, Asia and other parts of the world, Jacob can cook a wide variety of different cuisines. With all that he creates, he adds a touch of luxury to each meal by incorporating fresh, seasonal ingredients sourced from local farmers and suppliers. “I am passionate about showcasing what the BVI has to offer and the potential of our local produce and seafood,” he told us. • 8 ounce brie cheese wheel
• 1/2 cup black currant jelly or preserve
• 1/2 cup fresh black currants; cleaned and dried

1. Preheat oven to 325°F.
2. Place brie wheel onto baking sheet and heat in the prepared oven for approx. 5-10 minutes, or until centre of cheese wheel is soft and gooey.

Duck Breast with Red Cabbage and Blackcurrants

• 1 tablespoon Dijon mustard
• 1/2 teaspoon blackcurrant syrup; concentrated
• 1/2 teaspoon Worcestershire sauce
• 1 teaspoon sugar
• 1 tablespoon soy sauce
• 1/4 teaspoon cayenne pepper
• 1/2 teaspoon kosher salt; or more to taste
• 1/2 teaspoon freshly ground black pepper; or more to taste
DIRECTIONS:
1. Preheat oven to 350°F. Season the chops with salt and pepper.
2. Heat a medium skillet over high heat and cook the meat until browned on all sides, 3 to 4 minutes total. Remove chops from heat and brush with Dijon mustard. Place in an ovenproof dish.
3. Roast chops for about 20 minutes or until a meat thermometer
inserted into the thickest part of the meat reads 125°F. Remove from oven and strain off cooking juices, if using.
4. Meanwhile, cook pasta according to package directions, then drain.
5. While pasta cooks, in a medium saucepan add juices and/or broth. In a small bowl mix the cornstarch together with a little cold water until a smooth roux forms, stir this into the stock. Add all remaining sauce ingredients, stir, heat over medium and simmer for about 3 minutes. Season to taste with salt and pepper.
6. Serve prepared pasta together with the lamb chops and sauce, add thyme and fresh blackcurrants for garnish.
For the red cabbage
• 2 tablespoons butter
• 3 cups red cabbage; shredded
• 3 tablespoons black currant syrup
• 1/4 cup white wine
• 2 tablespoons balsamic vinegar
• 1 teaspoon ground cumin
• 1/2 cup bacon; cooked and crumbled
• 1/2 cup dried figs
• 1/3 cup blackcurrants
• 1/2 teaspoon kosher salt; or more to taste
• 1/4 teaspoon freshly ground black pepper; or more to taste
For the sauce
• 2 3/4 cups chicken broth
• 2 tablespoons honey
• 2 tablespoons balsamic vinegar
• 2 tablespoons black currant syrup
• 1 cinnamon stick
• 2 star anise
For the duck
• 2 large duck breasts; boneless, with skin intact
• 1/2 teaspoon kosher salt; or more to taste
• 1/2 teaspoon freshly ground black pepper; or more to taste
• 1 tablespoon butter
• Fresh figs to serve (optional)
DIRECTIONS:
1. For the red cabbage: melt butter in a large sauté pan over medium high heat and sauté the cabbage until it starts to soften, about 5 minutes. Add the syrup, wine, vinegar and cumin. Bring to a boil, reduce heat and cover. Simmer for about 45 minutes, stirring occasionally. Add cooked bacon, figs and black currants. Season with salt and pepper and set aside until ready to serve.
2. For the sauce: in a medium saucepan, heat the broth and honey over high heat until it boils. Add vinegar and return to a boil. Add the syrup and spices and simmer for 5 minutes. Strain into a medium bowl or large glass measuring cup.
3. For the duck: cut a checkerboard pattern in the skin of the duck breasts, without cutting through the meat. Season with salt and pepper. Heat a skillet over medium heat and add the duck, skin side down. Fry for about 10 minutes until the skin is golden and crispy. Turn the duck breasts over and add butter. Continue to cook for another 5 minutes, spooning butter over duck occasionally. Remove from heat, tent with foil and allow to rest for 5-10 minutes.
4. Cut each duck breast in half and serve on top of the red cabbage. Serve immediately with sauce.
Cured Venison with Crisp breads and Blackcurrant Chutney
FOR 4 SERVINGS

INGREDIENTS:
For the chutney
• 2 cups fresh black currants; cleaned
• 2 teaspoons white wine vinegar
• 1/2 cup sugar
• 1/8 teaspoon ground cilantro
• 1/8 teaspoon ground cloves
• 1/8 teaspoon ground anise
• 1/8 teaspoon freshly ground black pepper
For the appetisers
• 8 crisp breads
• 8 ounces dry cured venison; very thinly sliced (or other game i.e. elk)
• 1 cup sour cream
• 1 cup baby arugula; washed and dried
DIRECTIONS:
1. For the chutney: in a medium saucepan over medium heat add currants, stirring occasionally for 10 minutes while they soften. Add vinegar, sugar and spices. Cook until the chutney thickens, stirring
occasionally, for 10 minutes, or until desired consistency is achieved. Remove from heat and let cool.
2. For the appetizers: assemble crisp breads with equal portions of venison and arugula. Serve immediately with chutney and sour cream on the side.
Blackcurrant Compote with Vanilla and Star Anise
FOR 4 SERVINGS

INGREDIENTS:
• 2 cups fresh blackcurrants; cleaned
• 1/2 cup sugar
• 2 tablespoons water
• 2 tablespoons fresh lemon juice
• 1 fresh vanilla bean; split in half
• 3 whole star anise
DIRECTIONS:
1. In a medium saucepan add all ingredients and stir to combine.
2. Cook over low heat without stirring until the sugar has dissolved. Bring heat to a simmer, breaking up fruit, until desired consistency is reached, 20 to 30 minutes. Remove from heat.
3. Carefully remove the vanilla bean and star anise.
4. Pour compote into a bowl and either allow to cool or serve immediately.
Blackcurrant Ice Cream with Pistachios and Mint

INGREDIENTS:
• 1/3 cup water
• 1/2 cup sugar
• 1 vanilla bean; split in half
• 2 tablespoons blackcurrant jelly or preserve; plus more for serving
• 4 egg yolks
• 2 3/4 cups heavy cream
• 1 cup fresh blackcurrants; cleaned
• 2 tablespoons pistachio nuts; shelled and chopped, for serving
• 2 tablespoons mint leaves; torn, for serving
DIRECTIONS:
1. In a medium saucepan over medium heat add water, sugar, vanilla bean, and jelly or preserve; cook for 5-10 minutes until sticky. Remove from heat and carefully remove vanilla bean.
2. Whisk the egg yolks in a small bowl and gradually pour them into the sugar mixture, stirring constantly, until well combined. Set aside.
3. In a large stainless steel bowl whip the cream using an electric mixer until stiff peaks form.
4. Add egg/sugar mixture to whipped cream along with the whole blackcurrants. Fold mixtures together carefully so they remain marbled.
5. Place stainless steel bowl into freezer and freeze until solid, up to 6 hours.
6. Remove bowl from freezer approximately 10 minutes prior to serving. Garnish servings with chopped pistachios, mint and extra jelly or preserve.
Healthy Blackcurrant Tea
FOR 12 SERVINGS
Preparation time: 10 minutes

INGREDIENTS:
• 2 cups fresh blackcurrant leaves; washed and dried thoroughly
• Lemon juice; to taste
• Honey; to taste

DIRECTIONS:
1. Preheat oven to the lowest possible setting.
2. On a large baking sheet, spread currant leaves out in a single layer.
3. Dry in oven for at least 2 hours, or until completely dried and easy to break apart.
4. Remove from oven and cool completely. Cool and store in an airtight box.
5. When ready to brew tea, break apart desired amount of tea into a tea strainer or place whole leaves in a teapot or directly into a tea cup.
6. Add boiling water and stand for 5 minutes. Strain and serve with lemon juice or honey to sweeten, if desired

In the industry, many successful stories have their origins rooted in very humble beginnings. For many, they didn’t expect the life decisions they made to push them through the revolving door of an entirely new industry, affording them a special place in the world of luxury. Kevis Hughes, the luxe entrepreneur, is one such story. As part of this special Luxe issue of the magazine, we uncovered the story of how he got started in the luxury industry, his latest ventures and the secrets behind his ongoing success.
How it all started
When Kevis started out in the world of luxury, he had no formal training. But the way he was raised made
him understand the true value and meaning of luxury and created the conditions for his success later on.
When he passed someone on the street, he always greeted them with a “good morning”, “good afternoon” or “good night”. When his grandmother got part time cleaning jobs and needed his help, he never hesitated.
“When she needed my help cleaning the bathrooms, I went right in and cleaned. My brother was on glass duty and I did the toilets,” he told us.
These are just some of the principles that shaped his life, leading him to create brands that are authentic, precious and ultimately, human.
Before he graduated high school, he wanted to find a part time job of his own and wandered through the doors of Columbian Emeralds.
Initially, he applied for gift wrapping as it was during Christmas but when he came into work well dressed in
shirt and tie, his then boss had other plans for him. He ended up being the company’s gofer during that time and upon graduation, he quickly advanced to the position of sales associate. “My first impression was ‘it’s just pretty glass’… who’s going to spend $4,000 on it,” Kevis had wondered to himself. Yet, on the job he was introduced to the different semi-precious gemstones and learned the rules of sales and management. However, some rules are just meant to be broken.
Kevis vividly recalled one faithful day when a female cruise ship passenger walked into the store and asked to see a sapphire tennis bracelet. All the senior sales associates were busy at the time and Kevis really shouldn’t have shown her the bracelet but decided it was the right thing to do in that moment. By the time the customer

left the store, Kevis had secured a $10,000 sale, leaving the senior sales associates and his supervisor in disbelief at how he’d done it. This moment of “learning the rules and breaking them well” is what kick-started his career. There he was, paving his way into the luxury sector, never having any experience in it before. He went on to spend ten and a half years with Columbian Emeralds, working his way within the company. In his hands, the most amazing gemstones and precious metals in the world were transformed into beautiful works of art.

After learning the value of luxury at Colombian Emeralds, he went onto discover the art of putting it all together and curating the full destination packages at the BVI Tourist Board. In June 2009, Kevis was tasked to work with the BVI Tourist Board on a photo shoot for a magazine. He was responsible for curating the jewellery and assisting with overall coordination. By the end of the day, Kevis had made such a strong impression on the Tourist Board team that he was offered a job right then and there. From there, he jumped into the next phase of his career. He spent 9 years, another part of a lifetime in luxury, at the BVI Tourist Board. There, he led the charge at the BVI Tourism Board’s Marketing department where he added sophistication and style to everything from brand development to destination marketing. During his tenure, he mastered the art of luxury hospitality. He tailor-made unique experiences with luxurious products to create exclusivity and once-in-alifetime packages. After his third year
of being at the board, the BVI VIP Club programme, originally born in the German office, was introduced and brought to the BVI office. During that time, Kevis made sure the programme was a huge success. From celebrities to royalty to super models, Kevis had the unique opportunity to meet and work with a number of big names like Wendy Williams, Kevin Hart, Tyra Banks, Gisele Bündchen, Ludacris and even Prince Harry. He also played a role in the organising of a promotional plan with the Wendy Williams show where the

then Premier, Honourable Ralph T. O’Neal was featured on the Wendy Williams show. A special ‘Watch and Win BVI’ promotion also took place on the show where the winners got the chance to experience the BVI. Without a doubt, Kevis left his mark in the world of tourism. After another decade of luxury, he decided that it was time for him to embrace a new journey.
Being his own boss
In 2017, Kevis left the BVI Tourist Board to pursue his entrepreneurial path. From there, he set foot into the areas of super yachts, marketing and public relations and his first love - jewellery repair. First, Kevis needed to find a way to marry both his love for marketing and his wealth
growing in the Virgin Islands and wider Caribbean. Since its inception, it has grown tremendously, becoming the go-to resource for captains in need of assistance aboard luxury yachts. His third and final business (for now at least), Kiss the Jeweler, is his jewellery and watch repair company. It is currently closed as he is in the process of rebranding. To not reveal any surprises, you’ll have to keep a look-out for updates on his next move and what more will come as he continues to reshape the luxury landscape. In the meantime, he left us with a word of advice for anyone who is trying to make their way into the industry: “Obstacles do get in the way but often times we forget that by learning the rules we are able to break away from them.”
