Sawat Dii I have never thought to quit eating meat and become a vegetarian. Even when, during the past month, my team and I were gathering information and taking photos of XCTKQWU UNCWIJVGTJQWUGU CU YGNN CU VJG JQTTKÌE OGVJQF of turning animals into dishes, it never crossed my mind to quit. Yes, vegetarianism is good. The concept of rejecting slaughtering animals should be praised. However, I think GCVKPI OGCV KU CNUQ PQV UQ DCF + CO ÌPG YKVJ VJG FKHHGTGPV tastes of eaters, except the idea of some vegetarians that accuse meat eaters of being sinners or exploiters of animals. Also, vegetarians who see themselves as the good guys... + VJKPM VJG EQPÍKEVU VJCV CNYC[U JCRRGP KP QWT UQEKGV[ come from those who think they are morally superior, blaming and looking down on those who are different. The idea of giving space to different ideas happens rarely these days, whether in general attitudes like being vegetarian or with heavier issues like liberalism over conservatism in the political world.

Sure, some days, I am a meat eater and sometimes I’m also vegetarian. Society can accommodate different ideas and lifestyles, but often the issues are excessively portrayed as being black & white, which is an archaic way of thought. However, I have never thought about quitting eating meat. P.S. This month is the culinary culture issue that HGCVWTGU QPN[ ÍGUJ CPF OQTG ÍGUJ 'PLQ[

Discovering Worldwide Culture Eat Appitizers 世界中㠎ć–‡ĺŒ–ă‚’ç™şčŚ‹ ĺ‰?č?œă‚’éŁ&#x;ă šă‚‹

Chinese appetizers @ Jia Tong Heng

CULTURE Text: Nuengrutai Sankeaw Photo: Passport to Suvannaphoum

ppetizers, or Hors d’oeuvre in French, are universally known as food items served before the main course of a meal. Started in French culture, appetizers spread worldwide with different characteristic dishes of different regions coming about over many years. European people believe that dinner is the major meal of the day as they do not rush to do anything, and can concentrate on eating. Appetizers often come in the form of soup; a light dish that features in both oriental and western gourmet cultures. There are 2 kinds of soup; clear and consommÊ soup, while the Spanish have a cold soup called Gazphacho. Chinese people prefer to eat soup, not only as appetizers, but all day long as they believe the soup will warm and relax their stomach. Chinese appetizers are also much different from Europe, full of nuts, dumplings, preserved eggs, according to the recipes of regional chefs (inherited from the royal palace). The full option Chinese dinner is normally joined by 10 persons around a round table; when waiting for people to arrive, others will wait by eating the various appetizers. The concept of appetizers is similar to the Europeans. 6JCKNCPF JCU DGGP KPWGPEGF KP UGTXKPI CRRGVK\GTU HTQO %JKPC DWV adapt to its own style. Spring roll, which was the Chinese royal food, is mostly featured in Thai cuisine. Namprik or shrimp paste is also eaten, and encourages the digestive juices. It is also eaten as a main dish. Lanna culture has no original appetizers, but many restaurants offer signature dishes of the region such as pork cracklings, sai au (northern style sausages), namprik num, and white pork sausage.

Apart from Islamic and Jewish people as well as certain regions in Europe which see the pig as being dirty, people from across the globe cook pork in a variety of styles. Around 60-70 pigs are sent to Chiang Mai’s Kad Ton Lamyai each night and are sold out during the day. Pork features in almost every restaurant around town, from food stalls to top-end luxurious bistros.

Ham with Asparagus @ G&M German Sausage

Pork features in various cultures of regional cooking, from Chinese and Thai to European and American. Some of them are just plain and low-priced food, while others are considered premium cuisines. Barbecued Suckling-Pig is a very expensive dish in Hong Kong, while suckling-pigs have featured on European menus since Roman times. 25-day roasted piglet is served every day at Jia Tong Heng Chinese Restaurant, and is the must-try item on the menu, although with a price tag of up to 1,800 Baht, it’s not something you’re likely to order every night. German Sausage and Smoked Ham is a German dish that is very popular in Chiang Mai. Though the G&M German Sausage Restaurant is situated in Doi Saket district, many Chiang Mai residents and tourists visit there to try its traditional fried dishes. The crispy skin and soft meat of the smoked pork leg is delicious with cold beer as are the 5 choices of sausages ranging from Frankfurt style to Cocktail tastes. The restaurant offers Sunday buffet for just 200 Baht a person including beverages. Recently, a second branch opened in the city, right behind Big C Extra.
