Why should I consider an SVQ2 Professional Cookery course?

Do you want to continue to build upon your food preparation and cooking skills? Do you want to embark on a career in hospitality at commis chef or chef de partie level? Do you want to work towards a recognised professional qualification which will enable you to study further at SVQ3 level and beyond? If yes, then SVQ2 Professional Cookery is the right course for you. Taught fulltime, this course is designed to build upon and strengthen the skills you have already acquired to create a thorough and more advanced working knowledge of the professional cookery environment. The course will be very practical in nature and will allow students many opportunities to practice and develop their skills. Two days each week will be theory based within college with the remaining three days spent working in a professional kitchen.

The course will introduce the following required areas: •

Maintain a safe, hygienic and secure working environment

Work effectively as part of a hospitality team

Maintain food safety when storing, preparing and cooking food

Maintain, handle and clean knives.

You will also be required to complete ten additional units from a list of 24 which will include: prepare vegetables dishes, prepare game, prepare and cook basic soups, make basic stock, liaise with care team to ensure that individual nutritional needs are met, prepare and cook basic cakes and biscuits.

What qualifications do I need to enrol on this course?

Potential students will be expected to have completed SVQ1 in a relevant discipline, have achieved 5 Standard Grades at level 3 or above, or have completed an access course such as General Catering Skills.

How can I continue to develop my food preparation and cooking skills? A natural next step for those students who wish to develop their skills further would be SVQ3 Professional Cookery.
