Why should I consider an SVQ3 Professional Cookery course?
Do you want to continue to build upon your food preparation and cooking skills? If yes, then SVQ3 Professional Cookery is the right course for you. Taught full-time, this course is designed to build upon and strengthen the skills you have already acquired to create a very practically based and advanced working knowledge of the professional cookery environment. The course will require students to study for two days a week in college – one day in the kitchen and one day in the classroom. The remaining three days will be spent in the professional kitchen workplace honing and refining your skills. The course will introduce the following required areas: •
Develop productive working relationships with colleagues

Maintain the health, hygiene, safety and security of the working environment

Maintain food safety when storing, preparing and cooking food

Prepare fish, meat and poultry for complex dishes
•
Cook and finish complex fish, meat, poultry and vegetable dishes
•
Prepare, cook and finish complex hot sauces
•
Prepare, cook and finish dressings and cold sauces
You will also be required to complete four additional units from a list which will include: prepare shellfish for complex dishes, cook and finish complex game dishes, prepare and cook fresh pasta dishes, prepare and cook complex pastry products and prepare and process complex chocolate products. You will be able to choose those areas which interest you specifically.

What qualifications do I need to enrol on this course? Potential students will be expected to have completed SVQ2 Professional Cookery. Alternatively, if you are a chef with considerable experience of producing basic dishes you may well be considered for this course.
How can I continue to develop and broaden my Professional Cookery skills? A natural next steps for those students who wish to develop and broaden their skills further would be SVQ3 Hospitality Supervision and Leadership.
