a Happy  new  you Every year people make new year’s resolutions with losing weight, getting fit, stopping smoking and drinking less often, at the top of the list. However, they rarely work and three weeks into January most good intentions have been ditched in favour of old habits. But why is this and how can we make resolutions that will last? Health and fitness expert Sean Roberts, founder of Eden Hills Health Retreat, says the key to success is in the way you formulate your new year’s resolution. He says: “The reason most people give up after three weeks or so is not because they don’t have any willpower, it’s because they’ve not really made a proper resolution in the first place but instead an unachievable wish list. “A resolution consists of a series of actions which you put in place to resolve an issue. going to do something is not a resolution, it’s a wish for which you have no plan of attack, reason or method for measuring progress. “It’s not surprising therefore that people find it hard to stay motivated and give up before they’ve really got started. What people need to do instead is take a bit of time out, look at the bigger picture and systematically put a plan together which will help them achieve their goal. “One of the most crucial things to plan for is having motivational markers - without which many people give up and fail.” With the number one goal for most heading into the new year being to lose a few pounds and get into shape, here Sean shares his top tips for making the ‘perfect’ new year’s resolution for losing weight. Step 1 First identify some things that you want to change and the reason why you want to change them. For example – I am overweight and I feel uncomfortable in my clothes, embarrassed when I go swimming and miss how I used to feel when I was slimmer. Also, I have noticed my health being affected since I have gained weight and it’s making it hard for me to run around and play with my children.

Step 3 Then (and this is crucial) try to identify which one of the things above you can change. Ask yourself, is it changeable and how can I change it? For example – when it comes to mealtimes, could you plan to sit down as a family and eat a balanced meal every night. Step 4 Then look and identify the things that you can’t change. For example – hours at work, school pick-ups and drop-offs and having the children at home etc. Step 5 Next, it’s important to identify how you are going to feel when you reach your goal and how you are going to reward yourself and keep yourself motivated on your journey.

Children’s author set for new year school tour Children’s author Lorna McCann is heading on a tour of Shropshire schools in the new year to share her passion for reading and writing. The mum-of-two, who writes fun and engaging stories for children aged 3 to 6, will be using the tour to promote her new picture book ‘Felix - the small boy with the BIG imagination’ It follows the success of Lorna’s first book ‘Wendy and the Biscuit Tree’ which was published in November 2016 and is currently an Amazon Bestseller in its category. The 37-year-old was inspired to start writing books for children after making a promise to her own two boys, Lucas (6) and Finn (5).

Lorna said: “I’ve always loved snuggling up with the boys at bedtime with our favourite books. They have wonderful imaginations, so we also like to make up stories together. ‘Wendy and the Biscuit Tree’ started life as an oral story which I used to retell to the boys but then one day they asked me to make it into a book. “Without thinking I said ‘yes’ and that’s where my journey to becoming a children’s author began. At first I didn’t quite know where to start but then I met my editor Sue Miller, who is the founder of Team Author UK, and within a year of making that promise to the boys ‘Wendy and the Biscuit Tree’ had gone from being a story in my head to a physical book.

muted colours Gone are the days of bold statement pieces that overstimulate the senses, or gelato toned pastels that are sickly sweet, latest trend predictions are that this year it’s about soft neutrals and muted colours for a gentle, sophisticated palette. Pale greys, blush pink, dusty pale greens and blues, light camel, smokey peach - all either working harmoniously together or introduce just a hint amongst neutrals. Ringing the changes at The Old Shop From the outside, The Old Shop at Vennington nestles quietly amongst its neighbours in this small Shropshire hamlet, not offering much in the way of a hint about the surprise it’s hiding at the back. It’s not until you head up the drive at the side of the property that The Old Shop reveals its secret – a timber clad extension that raises this house from ordinary country cottage to a stunning contemporary family home. “It’s a bit of a ‘wow’ moment for people who come looking for us in the garden,” laughs Ljiljana Adamson, one half of the husband and wife team who have breathed new life into the cottage that originally dates back to around 1700. “People really don’t expect to see that very modern look out in the countryside but it’s been done so well, it works perfectly with the rest of the existing cottage that’s undergone a huge overhaul.” It has been a labour of love for the Adamsons who arrived in Shropshire “by accident”. A professional couple living and working in London, they’d made the decision to retire to North Wales and were looking for property there when they stopped in Shrewsbury en route to a viewing. Owners Alicia and Dean McGuire’s feet have not touched the ground after opening the UK’s newest and Telford’s first trampoline park named AIREA51. The husband and wife team have been welcomed up to 700 customers each day in the first week of opening and have already booked over 100 parties – which come in bronze, silver and gold packages. They have been overwhelmed by the interest Aire51 have had so far. As a family run business, Alicia and Dean wanted a place that was suitable for all ages, from preschooler to teenager. It was their own experience as parents that prompted them to open AIREA51. They found very limited options to take their three children, aged two, three and six-years-old on a day out where all of them could play and be happy, even mum and dad. With this in mind, AIREA51 was designed and built to cater for all ages, with something to entertain everyone. Alicia said: “We have a lovely viewing gallery attached to Café 51 with free wifi, magazines and also a free kids corner and soft play area. So, parents can relax, read a magazine and watch their children bounce while the younger sibling is safe in the soft play area.” Alicia, a professional dancer from London, will be bringing her unique experience to AIREA51 by teaching toddler classes such as Dinky Disco Dancer and Budding Ballerinas at 10 am on Tuesday and Thursday. Her successful dance career has seen her performing for over 20 years

on many TV shows, at corporate events, and touring with various top music artistes. Husband Dean, who also, owns a recruitment agency called Link2recruit, came up with the ‘trampoline park’ concept in 2006, but at the time it was a UK-wide credit crunch and the businessman struggled to gain investment. Eleven years later, and due to the ever-growing success of trampoline parks around the UK, the pair were able to get backing for this exciting business venture and are excited to see where it will lead. Dean comments: “This week we have launched our fitness classes; AIREA cardio, AIREA Toning, AIREA Legs, Bums & Tums and AIREA Bootcamp. Nasa studies have found that bouncing on a trampoline is more effective than running for 30 minutes and at only £7 a class it’s a great value and a lot of fun. The next class to launch will be Flicksters, a freestyle gymnastic class. Our top coach Reece Lyndsey will get you jumping around like ninjas in no time at all with his flicks, kicks and trick. We have various levels ranging from our mini Flicksters to our Elite Flicksters.”

This New Inn at Baschurch’s take on a classic dessert breathes new life into it and for those of a certain age, is a reminder of the classic children’s television programme of the same name. Preparation time: 10 minutes | Cooking time: 1 hour | Serves 6

Ingredients For the Panna cotta: 3 leaves gelatine 150ml milk 150g caster sugar Pinch of saffron 600ml cream For the rhubarb: 500ml water 200g caster sugar 100ml grenadine 1 vanilla pod 2 sticks of rhubarb

For the meringue: 150g egg whites 110g caster sugar

For the honeycomb: 160g caster sugar 80g golden syrup 2 tsp bicarbonate of soda For the jelly: 5 leaves gelatine Reserved poaching liquor

Method

For the meringue Begin by preparing the meringues, as they’ll take the longest. Preheat the oven to 100°c, whisk the egg whites into soft peaks, gradually adding in the caster sugar. Place the mixture into a piping bag before piping small peaks of mixture onto a sheet of baking paper. Then, bake for one hour or until the meringues come away from the baking sheet without leaving any residue.

For the Panna cotta To make the Panna cotta, first soak the gelatine in cold water until it blooms. Add the rest of the ingredients into a pan and bring it to the boil. Squeeze the gelatine to rid it of any excess water, and then whisk into the cream mixture in the pan before allowing to cool slightly and then pouring into glasses.

For the rhubarb To prepare the rhubarb, put the water, sugar, grenadine and scraped vanilla pod into a pan and then bring it to the boil. Peeling the rhubarb and cutting it into 2cm pieces add it to the pan and poach it until it is al dente before removing and putting it aside. Keep the poaching liquor however as you will need it to make the jelly. For the jelly Place five leaves of gelatine into cold water to bloom. Warm the poaching liquor and then add the gelatine, making sure that any excess water has been squeezed off. Then allow to cool to room temperature while making the honeycomb. To make the honeycomb Add the caster sugar and syrup into a pan and heat until amber in colour (on a sugar thermometer the temperature should be around 150°c). At this temperature, whisk in the bicarbonate of soda and pour it onto a baking sheet before allowing it to cool before breaking it into pieces. To serve When the Panna cotta has set, pour over the jelly to a depth of 5mm. Allow the jelly to set in a fridge before adding three sticks of poached rhubarb, meringue, and the broken pieces of honeycomb. Enjoy!

Who’s got room for pudding? We’ve been counting down to the big day, sourcing recipes for the perfect festive feast to dazzle your dinner guests this Christmas. We’ve found a few alternatives to the traditional Christmas pudding that we think your guests will love.

Apricot mince pies (Makes 12)

Ingredients

100g (3 ½ oz) unsalted butter, at room temperature and cubed, plus extra for greasing 200g (7 oz) plain flour, plus extra for dusting 1 tsp ground mixed spice 1 tbsp caster sugar 6 tsp apricot conserve 6 tsp good quality mincemeat Milk or beaten egg, for glazing Icing sugar, to dust

Method

mixed and a little powdery. Add this to the flour and butter and stir in. Using a round-bladed palette knife, mix 3-4 tablespoons cold water, stirring until it comes together. Then with your hands, work the dough gently into a ball, wrap in cling film and allow to rest for about 20 minutes. Roll out the pastry thinly on a lightly floured work surface. Stamp out 12 circles with a fluted pastry cutter, slightly larger than the cake holes, and press the circles into the tin. Put about ½ teaspoon of apricot conserve into each pastry case, then top with about ½ teaspoon of mincemeat.

Put the flour into a mixing bowl, add the butter and rub into the flour until the mixture is like fine breadcrumbs.

Re-roll the pastry trimmings and cut about 12 smaller circles and put them on top of the mincemeat. Glaze the tops with a little milk or beaten egg, if available, and bake in the preheated oven for 12-15 minutes until the pastry is crisp and golden.

Add the mixed spice to the sugar in a pestle and mortar or a strong bowl with the end of a rolling pin and grind together until well

Cool in the tin for 5 minutes, then remove and cool on a wire rack. Dust with icing sugar to finish.

Preheat the oven to 200°C (fan oven 180°C), gas mark 6. Lightly grease a 12-hole cake tin.

Christmas cherry soufflé

Wondering what to do with that last morsel of Christmas pudding? Despite its myriad of rich flavours – Christmas pudding, ginger, cherries and brandy – this soufflé manages to taste decadent yet light.

Ingredients:

40 g (1 ½ oz) butter, plus extra for greasing 25 g (1 oz) cold Christmas pudding crumbled 2 tbsp brandy 25 g (1 oz) black cherry conserve 4 tbsp plain flour 300 ml (½ pint) whole milk 75 g (3 oz) golden caster sugar 25 g (1 oz) stem ginger, finely chopped 4 large eggs, separated Icing sugar, to dust

Method:

Preheat oven to 180°C (fan oven 160°C), gas mark 4. Butter an 18cm (7 inch), 1.7 litre (3 pint) soufflé dish. Put a flat baking sheet in the oven to heat up.

Stir together the crumbled Christmas pudding with the brandy and conserve and set aside. Melt the butter in a saucepan, stir in the flour and gradually add the milk. Bring to the boil, stirring, then reduce the heat and cook for 2 minutes. Stir in 50 g (2 oz) of the sugar with the ginger, then beat in the egg yolks. Gently fold in the Christmas pudding mixture into the sauce. Whisk the egg whites until they form soft peaks, then gradually whisk in the remaining sugar until the meringue is stiff and glossy. With a large melt spoon fold the meringue into the sauce and turn into the prepared dish. Sit the dish on the heated baking sheet and bake for 45 minutes until well risen and golden. Dust with icing sugar and serve straight away. Cooks Tip: The sauce for the soufflé can be made the day before it is needed. Don’t beat in the 50 g (2 oz) caster sugar but sprinkle on top of the sauce to prevent a skin forming. When ready to cook, beat well before whisking and fold in the meringue as above.

Salted caramel meringue terrine A fantastic alternative to Christmas pudding. Layers of soft, mallowy meringue layered with caramel and caramel cream then frosted with toasted almonds and icing sugar.

Ingredients

5 egg whites 300g caster sugar 1 tsp distilled malt vinegar 300ml carton double cream 60g salted caramel To decorate 50g shredded toasted almonds Icing sugar Icing snowflakes

Method

Heat the oven to 110°C, 90°C fan oven, mark low. With a pencil, mark a 22.5cm square on a sheet of baking parchment and turn over, pencil down, onto a large baking sheet. Mix together the egg whites, sugar and vinegar in a heatproof bowl. Place over a saucepan of gently simmering water and beat with an electric whisk for 10 minutes or until very stiff and shiny. Spread the meringue mixture into the marked square and bake for 40 minutes then cool. The meringue will feel soft and mallowy and the top just slightly firm. Whip the cream until it just holds its shape and fold in half the caramel. Keep whisking slowly for a few more seconds until the cream is just firm enough to spread. Cut the square into 3 lengths, each roughly 7.5cm x 22.5cm. Using a palette knife, lift one length of meringue onto a serving platter and spread with about a third of the cream. Drizzle with half the remaining caramel and place a second length of meringue on top and spread again with cream. Drizzle with the remaining caramel and top with the final meringue.

Instead, a subtle marriage of juniper and strawberries flow over the tongue before the strawberries burst into life. Merywen - £39/70cl Handmade in a small copper pot still in the Conwy hills Merywen small batch gin comes in hand-labelled and numbered bottles and makes a stunning gift. Detail is the key with Merywen – all the ingredients are foraged and gathered in the Welsh hills, including juniper, heather and gorse. A classic and fresh juniper-led gin, this is fabulous served with a good quality light tonic water and a slice of grapefruit.

Scatter the top with the almonds, dust with icing sugar and add edible snowflakes, to serve. Cooks Tip: The assembled meringue terrine without the almond decoration will freeze for up to 1 month. Launch of Shropshire’s first Wine School A local wine enthusiast is embarking on a radical career change as he launches the county’s first independent wine education company Gary Carter, from Shrewsbury, is launching Shropshire Wine School, offering an exciting range of tastings and courses for those who are keen to learn more about wine. Used to travelling round Europe working in a €billion multinational business, this new venture will bring Gary back to his home town of Shrewsbury to begin his own personal wine business adventure on a very local scale. Shropshire Wine School is the latest addition to the successful and rapidly expanding www. localwineschool.com family – a UK-wide network of more than 25 independent wine schools established in 2000 in Newcastle upon Tyne. The school will offer tastings at all levels from introductory evenings to 8-week courses, and Saturday wine experiences including Champagne and lunch. Food and wine matching workshops as well as unique wine tasting experiences for corporate and private clients will also feature at the school. Gary will also, in 2018, be bringing professional wine training to Shropshire as the region’s only provider of WSET courses. Telford mum with a mission to get families fit Fitness instructor Tara-Lee Trafford is celebrating six months since she opened her first fitness studio in Hortonwood Telford. Fit4Families gives parents and young children the chance to work out together.

“I started Fit4Families because I saw a gap in the fitness market. Gyms only allow you to join once you’re 16 years-old and by that point we have already developed bad posture and habits. I want fitness to be something that we do from the start, it’s a family activity - something we pass onto our children and ingrain in their lives.”

The fitness centre follows the Vibe concept – upbeat, fun classes that combine a motivating instructor with feel-good music created by Delvin Clarke; Tara’s mentor and friend. They also offer personal training, Zumba and legs, bums and tums classes. It’s an antidote to the hardcore training that has been popular in the last decade. The most popular class is Vibe Cycle, with the strapline ‘don’t just ride…feel the vibe’, each participant is in total control of their own resistance level. Vibe Power is also a popular class, based on freestyle resistance, it uses predominantly barbells with a focus on strength and power – low reps with high resistance.

Tara-Lee from Hadley has been in the fitness industry since the age of 16, including managing gyms, although this is the first time she has taken the plunge and opened her own business. It’s not just a business for Tara-Lee though, she wants to empower her community, change things, get kids active and give something back. “After six months we have had nothing but positive feedback,” says Tara, “it’s not been easy, but people seem to like that we’re a community and a family here. You can have a go at anything, no matter how skilled you are or how great your gym kit is. What’s most important is making fitness fun.”

Tara-Lee’s unique community concept for fitness means all her fitness trainers are volunteers who can earn qualifications as they teach. The youngest instructor is just 14-years-old and teaches alongside her mum. The cost of joining is from just £10 per month or £4 to pay-as-you-go.

Tara-Lee’s enthusiasm for fitness is contagious and she intends to continue spreading the message in her home town that exercise should feel good and do good and that’s exactly what she’s doing with Fit4Families. Brave family come  f memory of Arthur It would have been so easy to just give up, says Arthur’s dad Nick When he was just two years old, little Arthur Mullis was admitted to hospital and died suddenly. His family were shocked and devastated. Their world had been turned upside down and no words could express their pain. “It was such a shock because he was a strong little boy and a real fighter,” recalls dad Nick. “But when Arthur died he didn’t look like Arthur and I think I just had a complete meltdown. Those images haunted me and I couldn’t sleep.”

“It wasn’t the feeling of ‘I’ll go to see my dead child’. It was the feeling that we were going to get our child back. We walked in, and his body wasn’t stiff anymore, and he was in his suit. It just looked like our son, and there he was asleep.” Hope House’s specialist bereavement counsellors were there to help Alison and Nick and Arthur’s sisters Mia and Katie. Their care continues as long as the family needs it to help come to terms with their devastation. “It was only when Arthur died that we realised Hope House isn’t there only for terminally ill children but for any local family that is facing the death of their child alone,” says Nick

Nick and Arthur’s mum Alison were relieved but puzzled when Hope House called and offered to have Arthur’s body brought to their hospice near Oswestry so that the family could say goodbye in their own time in the special Snowflake Suite.

“The loss of a child is a terrible event for any family to go through, and being able to go to Hope House with Arthur and receive all that love and support was a lifeline for us. It brought home how important Hope House is in this community and how many families it has already saved.

“I was confused at first. I thought Arthur had never been to Hope House so why were they calling? But when we walked in it just felt like home. It was not like what I had expected at all,” recalls Nick.

A different hairstyle can change even the most shrinking of violets into an entirely different person; and a wig can alter your look in seconds without the commitment of a chop and colour. So, when she asked me – with my short, wavy, out-of-control crop - to come and see for myself, I jumped at the chance of a hair makeover. Nicky is an expert in wig fitting. As a hairdresser and trained wig expert, she advises on the ideal colour and cut for your face shape, complexion and occasion. She can then cut and style a wig to achieve the desired look. Climbing nervously up the stairs to the bright and stylish fitting area, I was soon put at ease feeling like a child with a new dressing-up box. I just didn’t know where to start. Nicky took the lead. “You have to experiment,” she says. “A wig can look gorgeous on the mannequin but won’t look right with your face shape or colouring. Sometimes a wig that you wouldn’t have looked twice at, can look fabulous.” Having never been blonde, I was keen to try some golden hues; I was also attracted to long Disney princess locks; and then – as I have some naturally grey hair – I thought I’d see if silver would suit! Wigs tend to get a bad press. Many women are worried they will feel heavy, itchy or – worse still – get blown off in a gust of wind. Other common misconceptions are that they will look old-fashioned and obvious, sitting like a rug on your head. I was struck by how light, comfortable

I’ve been saying it for years. Manufacturers need to introduce more inspirational interior cabins. Why make the exterior looks the key buying feature, when the part of a car that you stare at continuously, sometimes for hours on end, is the bit behind the wheel. And at last, Peugeot has rewritten the rulebook for car interior architecture, revealing one of the most exciting cabins I have ever sat in! The new 308 (hatch SW or GTi) which has just gone on sale, has a raised instrument panel which Peugeot says is inspired by the world of watch making! The ‘clock maker’ style dials feature finely engraved needles and elegant topography. The rev counter and temperature gauge show a reversed needle design, allowing the needles to come together on acceleration. Fascinating! An LCD screen sits between the dials and has white or colour graphics which display key data including satellite navigation directions. It almost makes sitting in congestion worthwhile! There is a compact multi-function steering wheel which increases the visibility of the instrument dials and helps to improve agility when cornering. A large touch screen is angled towards the driver and key features surround the outside of the screen for easy access, but I still prefer a knob or button to change air conditioning when on the move. The spacious cabin is very quiet on the road, seats are comfortable and supportive and there is the option of a large panoramic roof which stretches front to back. 80 | It’s beautiful

I drove the 308 powered by the1.2 litre Pure Tech petrol engine mated to a new six speed manual gearbox. The BlueHDi 180 Stop&Start Diesel engine, exclusive to the 308 GT, is available with a new-generation EAT8 automatic transmission. As the winter weather kicks in, sitting in traffic jams is inevitably a large part of driving, but when driving the new Peugeot 308, it doesn’t seem to matter so much!

LAST WORD Ho Ho No! My children first asked me to put the Christmas tree up in October. How do they even know Christmas is coming? It certainly hasn’t come from me. I’m more a leave it until the week before Christmas decorator, and shopper for that matter. Is it really essential to celebrate Christmas at all? I was at a children’s birthday party just yesterday and the other mums were excitedly sharing their Christmas plans. They must have spotted the look on my face, or that I was trying to slope away, “What?! You don’t like Christmas?” they all looked at me in amazement. Why isn’t it okay to not like Christmas. Is it mandatory? If there was an emoji that sums up Christmas for me, it’s the one rolling its eyes. That’s me all through December. To fully embrace Christmastime, you have to be really dedicated – months of saving up and planning presents, cooking enough food to feed a small army, braving the shops to buy said food and going head to head in a trolley dash with over-enthusiastic shoppers battling for the last turkey, Christmas pudding, brandy sauce. Heading out in the freezing snow for some sledging/carol singing. Braving the office Christmas party. Getting offered food everywhere you go. It’s all just too much. I like routine; get up, go to work Monday to Friday, come home, weekends off. It’s simple and it works. Then along comes Christmas and messes up the routine. Shops and offices closing early, closing down for days or complete shutdown for a week or more. Even the TV schedule goes to pot. All the regular shows get taken over by tinsel-clad hour-long specials. 82

Don’t get me started on the tree. Every year I aim for the show home look, perfectly minimalist colour coordinated bows. I really don’t want a tree at all, it’s just a token gesture and somewhere to store the presents under. The reality is that once the children have finished with it, it resembles more of a hurricane-hit disaster zone. Terrible tinsel I thought I’d thrown away is tossed over the branches alongside decorations made from toilet roll that have come home from school. I asked my six-year-old son why we celebrate Christmas. He wasn’t sure but thought it might be something to do with ‘Jebus’ - or was that Easter? He’s not quite certain. He did tell me the thing he likes best about Christmas, and rather predictably, it’s the presents. Only the good ones though, not the bad ones, he doesn’t like the bad presents. And he’s not the only one. In the UK adults receive £2.6billion worth of unwanted gifts at Christmas and spend an average of £809.97 per household, with over half of this accounting for gifts. We spend almost double the average of any other European household over Christmas. When I was growing up, we waited all year for Christmas to get a new bike or a computer. Even then we had to share it between three of us! It was a year of anticipation

and an exercise in behaving well in the hope that we’d be rewarded. In today’s world the latest toys and electronics are purchased on demand from January – November. The thought of making a child wait for 12 months for a bike seems archaic. I bought my three-yearold daughter a bike in August. She hasn’t been on it yet. I might wrap it up again for Christmas, she probably won’t notice. Obligatory gift-giving has to be the part I hate the most. Buying gifts for distant friends and family members I don’t see from one year to the next. And why? Because they buy me one. I used to have to buy a stash of ‘emergency’ gifts in case anyone should call at the house with gifts for us that I wasn’t expecting. No more. I’m putting my foot down this year and have already made the ‘deal’ with friends that we won’t be buying each other gifts. Don’t get me wrong, I buy presents, I decorate a tree and I’ll be sitting watching my children in their nativity play. I’ll even take them on a trip to Santa’s Grotto, their enthusiasm for it secretly makes me smile. But when it’s all over I’ll have that tree down and back in the shed faster than you can say ‘Merry Christmas’.
