Orlando Japan Festival, organized by the Japan Association of Orlando (JAO) is one of the largest festivals featuring Japan in Florida. More than 3,000 participants experienced Japanese culture, performing arts, music and cuisines at The Village at Hunter’s Creek on November 3rd. Festival was kicked off at noon by Consul General Shinji Nagashima from Consul-General of Japan in Miami. It is followed by well anticipated “One Hundred Taiko Drummers” by Orlando Taiko Dojo and Montessori School of Celebration. At the same time, Basaar by Mitsukoshi offering unbelievable discounted items was open for the year end shoppers. Non-stop crowd filled up the audience section all day long. Many local Japanese restaurants offered their best dishes to support the Japan Festival. This festival would not be possible without the help of the volunteers, staff members, performers, and all

“I am also proud that we became more visible and recognized in mainstream society, enabling us to celebrate Asian Pacific Heritage Month in the Governor’s mansion” Dr. Joy Bruce re-invigorated the Asian American Federation of Florida statewide, and united its member organizations to participate in the Census 2010 initiative that resulted in significant (70%) increase in the number of recorded Asian Americans from 266,256 in 2000 to 454,821 in 2010. She is also the founder of NANAY, Inc. with a mission to promote the health, welfare and well-being of elders and youth. She formed the Philippine American Federation of South Florida in 1980 to unite and support the various Philippine-American organizations in South Florida.
Grandmaster Pui Chan
“It’s (teaching Kung Fu) not just a job, but a way of life.” Chan Pui was first introduced to martial arts at the age of 6. In 1970, he opened his first school in Boston, becoming one of the leading pioneers in introducing martial arts to the United States. In 1980, Pui Chan established Wah Lum Temple in Orlando. Since then, there are more than 30 martial arts schools under his Wah Lum System around the world. This training system continues Pui’s dream to encourage dedicated martial artists to share the Wah Lum philosophy and training to achieve maximum potential in the art.
Lita Abril Martija
“ I am proud to serve my community - the Asian Americans in general, and the Filipino Americans in particular - by actively playing a part of teams striving to make a difference.” Whatever we do in life, do it with confidence. Lita Martija served as founding presidents of the Asian American Chamber of Commerce, Asian American Heritage Council, and the Philippine American Chamber of Commerce. She was recognized as “Woman of the Year”, by the National Association of Professional Women in the United States, given the Lifetime Achievement Award by the Asian Chamber, and received the City of Orlando Mayor’s “I HAVE A DREAM” Award in recognition of her activities “following Martin Luther King’s legacy of equality, justice, freedom, peace and harmony.”
Takemasa Ishikura
“Being part of organizing Orlando Japan Festival has been my biggest success. It was impossible without the help and support of my friends and family, Orlando Taiko Dojo members, members of JAO and the Asian Community including Asia Trend.” Takemasa Ishikura started to perform as a member of Kanto-Abare-Daiko at the EPCOT Japan pavilion of Walt Disney World in 1983. Takemasa Ishikura took over the leadership and formed Matsuriza Japanese Traditional Taiko Drummers in 1998. He also created a subsidiary team “Orlando Taiko Dojo” which helps spread the Taiko Japanese culture extensively through performances and classes. He is also the organizer of the Orlando Japan Festival which becomes the largest Japanese events in Orlando.

A New Year, A Healthier You
By: Jamie Luu, RD
T
his new year is the perfect time to start a healthier diet after a long winter full of indulgence. Whether you spent this holiday at home, taking visitors to your favorite local food places or traveling and exploring new foods, you can probably agree that more than fifty percent of your activities were centered on eating. Though there is nothing like a delicious large bowl of pho or all-you-can-eat crawfish with family and friends, periods of overeating can add up - impacting your weight and health in the long run. Now that this year is coming to an end, it is time to start on a healthier diet by being aware of not only what you eat, but also the way you eat. Put these five tips into your daily practice to help you feel great, keep weight from creeping on, and to prevent future health problems.
Make Your Meals Bright and Colorful
Keep Dipping Sauces to a Minimum
For a healthier diet, add a variety of fruits and vegetables to your meals daily. Fruits and vegetables provide important antioxidants and nutrients like vitamin C, vitamin A, folate, potassium and fiber that are beneficial for both short- and long-term health. In addition, green leafy vegetables like gai lan and baby bok choy are high in fiber, which can make you feel full easily, helping to reduce your calories at each meal. These vegetables are also known to help maintain a healthy digestive tract and blood sugar level.
Sodium is found naturally in foods, which means you’re likely to get enough in your daily diet without needing to add more. Dipping sauces such as soy, hoisin and hot sauces, regular or lite, are high in sodium and can add excess sodium to your meals. Too much sodium intake daily can cause you to gain water weight and eventually lead to hypertension. So as much as possible, use just a dab for taste.

Pace Yourself
Take it To-Go
Skip the Sweets
If you tend to eat fast, try slowing down. Chew each bite of food at least 30 times before swallowing or place your chopsticks down after each bite. Eating slower helps give your stomach time to process and communicate with your brain, letting you know when you’ve had enough, keeping you from overeating. Eating slower can also help prevent heartburn.
It is okay if you did not clear off every grain of rice or strand of noodle from your bowl. Pay attention to your body and recognize when you’re comfortably full – not stuffed. Eat what you can and take the rest home. You’ll thank yourself later for not overstuffing and for the leftovers you saved for lunch tomorrow.
Sweet toppings on frozen yogurt and sugary drinks like tapioca pearl-filled fruit smoothies can easily push your calories past its daily limit. Instead, pass up on the treats and place them on the occasional splurge list to keep you from packing on extra pounds overtime.

Mukushin-ryu Kacchu Kumitachi Seminar On Nov. 2 the Rising Sun Dojo held their annual Mukushin- ryu Bujutsu Seminar at the Shindai Dojo in Orlando. This year the seminar was kacchu kumitachi – sword combat while in full armor. Teaching the seminar was Ohashi Kenshin, sensei – 15th generation souke (headmaster) of Mukushin-ryu Bujutsu, and the head of Wasaka Ichiryo Gashuka no Kai-a group dedicated to the restoration and preservation of authentic samurai armor (yoroi). Ohashi sensei, along with fellow armor club member Shoichi Nakamura brought 3 full sets of yoroi (samurai armor) from Japan for the seminar and for a demonstration the following day at the Orlando Japan Festival. The seminar and dem-

onstration was all part of a training and cultural exchange, sponsored in part by Rising Sun Dojo and the Obama City, Japan city council. Students from several different schools of Japanese swordsmanship attended the event as it was a rare chance to not just learn the techniques used when fighting in full armor, but to have the opportunity to actually use those techniques while in full armor…against an opponent who was also in full armor. Seminar attendee and student at Rising Sun Dojo Marty Fries explained- “I think the Yoroi Seminar opened a lot of eyes about how different it is to train/fight in armor. The weight, restricted movement, and different targeting change our techniques. Being able to share that with the

sword community was a pleasure.” For students of Mukushin-ryu, this is a very important aspect of our training. Much of the foundation and techniques within the style is based on fighting in and against an opponent wearing armor. Having the opportunity to actually wear and train in the armor allows the student a very unique perspective that without that experience, would never truly understand some of the nuances of a particular technique. SPIFFS 39th Annual International Folk Fair SPIFFS 39th Annual International Folk Fair was celebrated October 31 - November 2, 2012, in beautiful Vinoy Park on the waterfront in downtown St. Petersburg. Around 15,000 visitors attended the celebration and enjoyed a trip around the world in a day. The very first Folk Fair took place in 1976, in conjunction with the US Bicentennial. This year’s theme was “Holiday Foods of The World”, showcased by more than thirty participating ethnic groups. Ongoing entertainment on two stages featured musical instruments, singers and dancers

from around the world. A major feature of Folk Fair is of course all the food specials from all over the world - a great opportunity to learn about a country or ethnic group through food. The Asian community was represented by Cambodian, Chinese, Filipino, Hmong, Korean, Indian, Japanese, Mongolian, Taiwanese, Thai and Vietnamese groups. Displays showing each group’s culture and heritage were present in the various villages and food specialties were offered for sampling. The first two days of Folk Fair were dedicated to area
schools, with many student groups performing and demonstrating Tai Kwan Do as well as folk dancing and gymnastic shows. Each student was given a passport, which they had stamped in each village and got answers to passport questions relating to the theme of “Holiday Foods of the World”. On Saturday, November 2, a Citizen Naturalization Swearing-In Ceremony took place after the spectacular Parade of Nations with close to 1,000 paraders in colorful ethnic costumes. By Lotta Baumann

the same feat for the women winning Women’s Singles and partnering with Jing Yu Hong to win women’s doubles. Jing Yu Hong then partnered with Halim Haryanto Ho to try for the Gold medal sweep by winning the Mix Doubles. The Mix Doubles was perhaps the showcase game as it pitted Halim Haryanto Ho a former world doubles Champion with his partner Jing Yu Hong against a strong Canadian team of Toby Ng and Michelle Li both who were at the last Olympics in London. The US fought hard but eventually fell to the Canadians in two games 21-16 and 21-15.
and the exceptional play of the US shows we are becoming a major player in the world of badminton.”
ClearOne’s own coach Hendry Winarto performed well reaching the quarter finals in Men’s Doubles and the semi finals in Mixed Doubles. Hendry stated, “The combination of our hosting a terrific event, the ClearOne Badminton Centre

Overall it was an incredible beginning for an event that will likely find a permanent home in Orlando. Major sponsors such as Yonex, Embassy Suites Orlando North and Aston Martin are also looking forward to the tournaments return. Aston Martin showcased the Vantage. The only thing that was actually faster than that at the event was the shuttlecocks that launched off the racquet head on contact at speeds of over 200 mph.
