Miami Chinese New Year Celebration 2014 Peter Liu presents the donation to the Team SOS Miami

On February 16th, over 5,000 south Floridians gathered at the Miami-Dade College Kendall Campus to celebrate the arrival of the Year of the Horse. This year’s festival marked the 26th anniversary of Florida’s largest Chinese New Year celebration organized and presented by the Chinese Cultural Foundation, Inc. in cooperation with the Confucius Institute (Miami Dade) and Chinese Cultural Association, Inc. Visitors were able to satisfy their appetite for all things cultural by visiting more than 20 food vendors and more than 50 vendors/exhibitors providing arts, crafts, commercial, health, and spiritual products. A large children’s play area

provided a variety of rides. At 12:20 p.m., the Wing Lung Tai Chi dragon and lions began dancing through the festival grounds to begin a spectacular showcase of talent in the College’s gymnasium to a standing room only crowd. The show was a solid 90-minutes of fast moving, high quality entertainment. Performers in colorful traditional costumes presented Chinese folk dances and music, foot juggling, skillful acrobatics and contortion, and the continuing crowd favorite, Matsuriza Taiko Drums. As usual, with the large and appreciative crowd, a second show was also presented.

According to Mr. Liu, the festival has donated more than $50,000 to international, national, and local charities. Miss Vietnam Florida Pageant 2014 This past 2014 Miss Vietnam Florida Pageant was the Vietnamese Community of Central Florida’s 18th annual Misses pageant. I received the prestigious honor and privilege of becoming the Pageant Director for our fifteen beautiful, intelligent and striking contestants and all of our absolutely wonderful Committee Board members. Overall, I must admit that this was one of the most challenging; yet, also enlightening, rewarding, and amazing experiences that I have ever encountered. Initially, we only had a number of FOUR confirmed contestants. Our Executive Board, which consisted of: Lisa Marie Nguyen, the 2012 1st Princess Miss Vietnam Florida, as the Pageant Coordinator, Tiffany Chan Tran, the 2013 Miss Vietnam Florida Queen, as the Contestant Coordinator, and I were all extremely stressed and worried that this pageant was headed toward doom and failure because with no contestants there can be no show. However, with much teamwork from the Committee Board members as a whole combined with our social media announcements and the traveling word of mouth of the Miss Vietnam Florida 2014 Pageant, we recruited a total of fifteen contestants! During our first few rehearsals, in between the contestant photo shoots, orientation, and walking/posing practices, I observed the girls talking quietly amongst one another, laughing, and sharing food and jokes. These fifteen lovely fresh faces with an exquisite concoction of diverse personalities and interests soon bonded and formed a pageant sisterhood. You see, that is the thing about our Miss Vietnam Florida Pag-

eant that we are beyond proud of. In the end it is not about competing to win the crown, but the boundless door of opportunities, experiences, and friendships that open up to us. This adventure that we can reminisce on one day later in our lives and proudly announce that we stepped out of our shell, dipped our feet into the Vietnamese culture on an entirely new level, and was truly a part of history. These fifteen young rose buds all had major concerns. Whether it was their fear of public speaking, stage fright, their lack of grace and poise, or their lack of knowledge in the art of fake eyelashes. There was always a worry! Fortunately, all of the Executive Board members and most of the Committee Board members were ALL in their shoes a time ago. We were all girls who applied to be Miss Vietnam Florida Pageant contestants before, who also attended long dance rehearsals and walking/posing practices. We all had our moment to shine on that stage at the Central Florida Fairgrounds and now we are helping other girls have their radiating moment as well. With that said, throughout the five pageant practices scheduled throughout the few months prior to pageant day, each young rose bud was molded with an ample amount of love, discipline, and structure to perform their very best on pageant day. The morning of pageant day was truly a bittersweet moment, the stress of all of the pageant planning and preparations would soon be over; however, all of the hard work, time and excitement invested into this one day would soon be over as

well. I recall distinctly so how exhausted I was! It was a long month of constant emails, phone calls, and meetings. In my head I checked off my to-do list, the contestant’s talent and performer’s music for the show were all downloaded and cut accordingly, the walkie-talkies I had to pick up at 3 o’ clock in the morning were all charged and ready, the trophies, sashes, and crowns were all set up beautifully, the flower lady dropped off the bouquets, the gift bags were all here lined up, and the contestants were all backstage touching up their hair and make up. It seemed as if all was in order; thus, it was my turn to get all dolled-up and stage ready. Before I knew it and with only one eyelash on, people were running backstage screaming my name, “Amanda! Amanda! Someone needs you,” “Amanda! Amanda! These people need to speak to you,” and “Amanda! Amanda! This person cannot get into the venue because they do not have guest passes.” So with one eyelash on, three hours of sleep and a beauty queen approach, I gulped down the rest of my Vietnamese milked coffee and dealt with each situation appropriately. Woosah! I rushed back to finish glamming-up as fast as I could and before I knew it, it was show time! This was the moment. All of the re-runs during practice that we made the girls do of the opening number to the late hours into the day was all going to show its worth. All of the Committee Board members below stage held our breath and clenched our fingers into our hands hoping and praying for a flawless performance. Opportunely, that was just what we got, an impeccable open-

ing at that! Throughout the show, I had to hold back tears more than a multiple of times. First and most importantly because I literally endured obstacle courses to have my face pageant ready and was not going to let a few tears ruin that. But also because I am the Pageant Director after all, and must maintain my emotions in order to get this show running! Nonetheless, words could not express how proud and happy I was to see each and every one of the fifteen young rose buds bloom into beautiful, confident, graceful, and well-spoken elegant young ladies on stage. All of my anxiety and fatigue vanquished into thin air, their performance gave me more positive energy than five Red Bull cans ever could! It was ABSOLUTELY AMAZING!!! It was the first time in our pageant history where a contestant, Nhi Linh Dinh Nguyen, for her talent segment started off by

singing a refined and balletic song, “Only Hope” by Mandy Moore; then, all of a sudden the music changed to an upbeat one, she took off her heels underneath her evening gown, did a few Tae Kwon Do stances as two of her assistants, each entering through the right and left entrance of the stage held wooden planks up for her, and she proceeded to lift up her evening gown and kicked, punched, chopped, drop-kicked and broke four boards! Everyone’s jaw dropped and rolled a few feet away from them and she received a standing ovation. Nhi’s vision was to emphasize that a Vietnamese lady can be both graceful and delicate, but also strong and vigorous. Overall, I must admit that this was one of the most challenging; yet, also enlightening, rewarding, and amazing experiences that I have ever encountered. With conviction, I can say that the 2014 Miss Vietnam Florida Pageant was one of

the best pageants up to date. With our Vietnamese Community of Central Florida supporting the 2014 Miss Vietnam Florida Pageant Committee, as a union we pulled off one of the best shows in history! towards the organizing committees. From them, I learned not only event planning or marketing strategies, but also the experience they have, determination, and most of all the love of cultures. Dragon Parade was not just a platform for local Asians to showcase cultures for people outside of the communities. It was a variety of people from all walks of life came together to celebrate cultures. A lot of time we try to educate using academic methods or promote using media. Yet, I think the best education is experience. Words can easily become so limited when

it comes to customs that grew from interaction among people or traditions that rooted from hundred years of history. That is when customs and traditions speak better for themselves. Through art, dances, food, music, and many other forms of cultures, we were able to transcend barriers and present to you who we are truly and authentically. Again, I am truly thankful and honored to be part of such great event. The same as how I enjoyed the process of organizing Dragon Parade, I also hope you enjoyed the time spent with us, and the experience our festival brought to you.

Drums rumbling and beating sounds break the stillness on Saturday morning February 1, 2014 at the Central Florida Fairgrounds in Orlando. The festival, 18 years old, has been known to attract 20,000 people for the weekend to experience the food, music, dancing, singing, martial arts, games and more. The festival officially began with the opening ceremony at 11 a.m. At the entrance, customarily everyone was invited to watch the lion dancing team and firecrackers lit on the “cay nêu” meaning a 10 feet tall bamboo stick was used to chase

the bad spirit away. On this bamboo were hung with dozens and dozens of fire crackers. By firing the crackers on this bamboo stick the Vietnamese, old custom, believe that their new year will be filled with richness and wealth. As guests, VIP, spectators watching, the officers started the fire crackers, smoke, noise, people cheers eagerly creating a warm atmosphere among guest and the participants. 2014 is 39 years after Saigon fell to Communist regime on the 30th day of April,1975, and millions of Vietnamese fled their homeland by any means to escape the cruel concentration camps

and denied freedoms. One never forgets about the Vietnamese authentic culinary exotic dishes and bowls of noodles soup famously called “PHO” and chicken, pork barbecues, cold dessert cups, fresh sugar cane juices, petit fortune cookies, ice café, the Vietnamese special product, competitive value of market high society consumers. In addition to tasty foods, the Vietnamese New Year Festival also holds a talent show and a Mrs. Vietnam pageant for those women who are young at heart and want to showcase their skills and talents. The Miss Vietnam Florida pageant was established in 1997 in which the main focus was on the beauty of the traditional Vietnamese dress, áo dài, and the young lady who carry her charm, grace and beauty, and later, a forum for our young ladies to gain additional life experience and develop in their personal and professional goals in which they can express their opinions, talent and intelligent. It is also designed to inspire leadership qualities and promote commitment to the community. Among the vendors who provided foods, drinks, games, we also found charity organizations such as Kathy Nguyen, sales and marketing representative for Fun Raising Funds, LLC, was selling coffee and tea at her booth to support the Children of Vietnam; the National Vietnam War Museum, to spread the word of their new expansion located on Tanner Road. The Representative from Joint Ventures was trying to spread the word about the new museum that breaking ground should be seen this year. We are told that that this museum is going to include interactive activities and simulations for younger children ; and it is the momentum for recognizing both Vietnamese veterans and American veterans who fought in the war. Health BeneÞts of Ear Massage Auricular Therapy DIY at Home: Much like the basis for reflexology and iridology, Auricular medicine is based on the concept that the ear is a microsystem of the anatomical body, and that different areas of the body is reflected on the external ear. Therefore, stimulation of specific areas of the ear will be able to affect the corresponding areas on the body to treat a broad range of disorders and conditions. Different sensory nerves supply the external ear and they connect to reflex centers in the brain, so stimulation of the ear points will result in stimulation of the neurotransmitters within the brain centers and spinal cord of the central nervous system. The Ear acupressure points can be stimulated with acupuncture needles or with electric stimulation. It is also often stimulated with non invasive methods such as herbal seeds, lasers and magnets. DIY stimulation can also be done daily with different self massage techniques to obtain optimal health! Tugging on the Earlobe Method: Using your index finder and thumb, hold both lobes and pull outwards and backwards with moderate force for 3-5 minutes daily. Rubbing on the Helix Method: Using your index finger and thumb, rub up and down the helix of both ears till the ear is warm and flushed. Lifting the Apex Method: Using your thumb and index finger, lift, pull, rub and knead the ear apex until it is flushed and warm. Whole Ear Massage: Using your thumb and index finger, rub and press on the whole ear including all the crevices for 3-5 minutes daily. Pressing of the Concha Region: Using your index finger and thumb, press all around the concha (the deepest depression of the ear that leads to the external auditory canal) with moderate pressure.

A Foodie Tour of San Francisco San Francisco’s Chinatown, founded in 1848 centered on Grant Avenue and Stockton Street in San Francisco, California, is the oldest Chinatown in North America. Many Chinese came to California also known as “Gum San” or “Golden Mountain” in search of riches as part of the gold rush of 1849. However, most found jobs working long, perilous days for the Central Pacific on the Transcontinental Railroad. The American idiomatic expression “A Chinaman’s Chance” comes from this time period when Chinese migrant workers in the U.S. were sent into mines and down cliffs to ignite dynamite, and if they were not lifted back up before the blast, serious injury or death would result. “A Chinaman’s Chance” were not very good at all in this case.

A place of interest here in Chinatown would be the Golden Gate Fortune Cookie Company (56 Ross Alley, San Francisco, CA 94108) where you can still see fortune cookies being made by hand. As noted by Jennifer 8. Lee, author of The Fortune Cookie Chronicles, and a superb TED talk on the origin of Chinese American food (http://www.ted.com/talks/jennifer_8_lee_looks_ for_general_tso.html), we learned that fortune cookies are not Chinese at all, but rather a very uniquely American invention with possibly Japanese origins. While walking along the streets of San Francisco, you could drop by one of the many shops selling “dim sum” to go. From shrimp dumpling ha gow to char siu bao roast pork buns, these little shops sell their dim sum to go in take out boxes a real “street food” type of experience and rather

unique to San Francisco. Delicious Dim Sum (752 Jackson St, San Francisco, CA 94133) and Good Mong Kok Bakery (1039 Stockton St, San Francisco, CA 94108) are both great choices, particularly for the pork buns at Good Mong Kok. Although most people are familiar with Ellis Island on the east coast as the gateway to the millions of immigrants entering New York in the early part of the 20th century, few know the existence of Angel Island Immigration Station on Angel Island right in San Francisco Bay. Angel Island served as a detention center for thousands of Chinese immigrants during 1910 to 1940. After the Chinese Exclusion Act of 1882 which essentially banned all Chinese immigration and several other antiAsian immigration legislation was passed, Angel Island was built to detain those Asian immigrants. Thousands of Chinese immigrants were detained

Freedom High School NCHS Chinese New Year Celebration This past Chinese New Year’s Eve, the National Chinese Honor Society (NCHS) of Freedom High School held a celebration. Teachers, students, and faculty members all joined in the festivities. The club held various events such as a raffle of Chinese novelties, such as fans, chopsticks, and tea, and held a presentation of the history of the holiday. They explained various aspects of Chinese New Year, such as the reason for

wearing the color red on that day, hanging spring scrolls on each side of the front door, as well as the origin of red packets. Chinese food from Andy’s Nice House was provided for dinner to follow the tradition of eating dinner on Chinese New Year’s Eve with your close ones. The NCHS invited C.K Lau to perform a wonderful saxophone performance, in which he played “The Moon represents my Heart” (月亮代表我的心). There was also a dem-

onstration of calligraphy by master calligrapher Peter Lau, with the writing of a pair of spring scrolls. The event ended on a high note with the members of NCHS performing “Happy New Year” (新年快樂) by 卓依婷。 NCHS is a club whose mission is to increase awareness of the Chinese culture. All members pledge to continue studying Chinese, understand Chinese culture, and contribute to world peace and prosperity.
