“It’s all about providing those experiences that you would never find on your own,” says Suzanne, the regional product manager who developed our Greece offerings. “We work very closely with local guides and travel companies, but we almost always adjust their experiences to add the extra-special Audley touch.” The work never stops: even after we launch a new country, we start researching new hotels or excursions within it and further fine-tune every experience. “It’s hard work, but it’s one of the best jobs in the world,” says Suzanne. “There’s really no end when you begin to scratch beneath the surface of a place.”

eru runs on street food; it’s cheap, fresh, and best eaten on the go, preferably with pepper sauce dribbling down your hands. At lunchtime, a tantalizing waft of sizzling meat and spiced onions dances on the breeze; whether you’re in Lima or Lambayeque, you know you’re in for a treat. Anticuchos

For a classic Peruvian bite, I recommend anticuchos: skewers of seasoned, seared and sauced beef steak or cow’s heart. The dish has risen from humble market stalls to high-end restaurants in recent years, but it’s still best enjoyed on the street. Other must-trys include butifarra (a ham sandwich stuffed with avocado and onions), and Cuzco’s beloved choclo con queso (corn on the cob with local cheese). I love to eat it at the colorful San Pedro market, washed down with a guava smoothie for just 1 dollar. The stalls are loaded with fruit from all over the country, including the Amazon. For dessert, mazamorra morada is always a treat. It’s a chilled pudding made from purple corn.
DID YOU KNOW? Peru is the birthplace of the potato. About 10,000 years ago, the plants were domesticated in southern Peru, and today almost 4,000 different varieties are grown in the region.

The raw facts about ceviche Ceviche
Ceviche is a true delicacy in Peru and when it’s done well, it’s outstanding. It’s actually a surprisingly simple dish, just chopped raw fish cured in lemon or lime juice then mixed with chili, spices, onions, and cilantro. You know it’s a good ceviche if you see people drinking the ‘tigre de leche’ – the broth of the dish. In Lima, my favorite place for it is Chez Wong in the neighborhood of Santa Catalina. Chef Javier Wong is a ceviche god, and was a good friend of Anthony Bourdain. The fish is fresh every day, and each dish is made to order. In Cuzco, Barrio Ceviche, located on the Plaza de Armas, is also incredible. It favors freshwater fish, and offers a combination of the classic preparation with more modern flavors. Typically Peruvians only eat ceviche for lunch.
Four must-try dishes Cuy, the famous guinea pig dish, can look daunting when it’s barbecued whole (also known as ‘asado-style’), but it’s incredibly tasty. In higher-end restaurants you will find it cooked off the bone. Try the ‘cuy tacos’ at the Lima restaurant Astrid y Gastón. (astridygaston.com)
Ají de gallina, a chicken stew, is real Peruvian comfort food. The shredded meat is slow-cooked in a spicy sauce. The dish can be traced all the way back to 1789, during the French Revolution, when chefs from France made their way to Peru.
Papa a la huancaina is a Lima staple that has made its way around Peru. The huancaina sauce is made with cheese, chili pepper, milk, garlic, and onion, and it’s served over yellow potatoes. Even though it originated in Lima, the dish gets its name from the highlands city of Huancayo.

he key to an incredible African safari? Picking the perfect place to stay. From luxurious lodges to wild camps, safari accommodation comes in a variety of styles, each with its own unique guides, local wildlife, and safari experiences. We work with over 1,000 lodges and camps across Africa, and our team of specialists has seen them all. Here are some questions your specialist will ask when helping you pick your accommodation.
1. Do you want a camp or lodge? When it comes to going on safari, accommodation options can be split into two categories: tented camps and lodges. “Tented camps are far from your average camping experience,” advises Shannon Burke, East Africa product executive, who has stayed in over 100 lodges and camps in her lifetime. Think suites under canvas, often with four-poster beds and stylish interior design. Tented camps can be mobile or permanent, simple or luxurious, and give you a close connection with the wilderness. Similar to tented camps, lodges have rooms that are individual chalets and range from rooms with few frills to opulent villas. The defining difference is that you’re surrounded by four walls rather than canvas.
2. How active do you want to be? Would you prefer to track wildlife on foot or in a vehicle? In a 4x4, you can cover a lot of ground and get close to the animals; walking safaris are a wilder experience. “Each property offers a variety of activities,” says Shannon, “and some specialize in really active safaris, such as Karisia in Tumaren Ranch, Kenya. Every day the crew packs up the camp and loads it onto camels, who carry it to the next spot, while you find the wildlife on foot.” 3. Who are you traveling with? If you’re on a honeymoon, you might want a camp that offers private dining and safari vehicles. Meanwhile, priorities for a family could include children’s activities, big bedrooms, and flexible food options. Robin’s House in Zambia’s South Luangwa National Park is a self-contained haven for family safaris, with two bedrooms, a swimming pool, and its own chefs and wildlife guides. 4. How remote of an experience would you like? “If you want to immerse yourself in the wilderness for a night or two, try fly camping,” says Shannon. “You walk with
a guide to a remote location, and spend the night there in dome tents, dinner is enjoyed around the campfire under the stars. There is literally nothing except you, the wildlife, and the amazing landscape.”
5. What wildlife do you want to see? All of Africa’s parks and reserves have very different ecosystems and wildlife. Is there one animal in particular you have always dreamed of seeing in the wild? If elephants are a top priority for you, look to Chobe National Park in Botswana, or Hwange National Park in Zimbabwe. For the ultimate Great Migration experience, Tanzania’s Olakira Mobile Camp – which moves between prime Serengeti wildlife areas twice a year – is an excellent choice. 6. SHINING A LIGHT The impact of this approach is already creating positive change. “Many of our northern Thailand itineraries visit a small guest house called Langia Lodge, which is run by the local community,” says Lauren. “When I went there recently, they showed me the new paved road that goes through the village. All of the money to build it had come from tourism, from people who have visited with Audley. It was inspirational to see.” We are constantly working to make our trips even more eco-friendly, from offering carbon offsets for every flight, to swapping car journeys for loweremission bike tours. Audley Travel’s Stuart Howarth shares moments from his recent trip to China
W
hile China’s panda reserves and Great Wall might be the focus of your first trip, this vast country has so much more to offer. On my most recent trip to China, I visited Yunnan Province, which stretches from the lowland borders of Vietnam and Laos up to the mountainous border with Tibet. This is a region of shimmering rice terraces, tranquil hilltop temples, and valleys where snub-nosed monkeys bounce between the coniferous trees. I was scoping out new hotels, tours, and experiences for our China itineraries – and I found some time for photography, too. How could I not? Everywhere I looked, there was an incredible mountain view or a glittering golden Buddha. Once again, China had me under its spell.
ACT OF DEVOTION As we use only local guides throughout China, I was with a Tibetan Buddhist. He took me inside many different temples, where he would light candles, pray, and prostrate himself.
Your guide will try to time your visits for morning or evening prayer, so you can see the monks chanting mantras. It was a very moving experience.
PRAYER FLAGS When you’re hiking in Yunnan, you’ll often see prayer flags, which are a very important aspect of Buddhism. Each flag has a mantra written on it. I saw the ones
pictured above fluttering outside Feilaisi Temple, overlooking the Meili Snow Mountains – another sacred location in Yunnan. MONKS’ MEAL The mountains near Mingyong Glacier – in the northernmost tip of Yunnan – are sacred for Buddhists. You’ll find temples perched in the farthest-flung places. One day, we hiked a route through its spiritual peaks, and came across some monks eating dinner outside their monastery. Although none of them spoke English, they offered us some food and tea and were delighted to have foreign visitors.

Why is Australia such a great destination? It’s so vibrant and varied – there really is something for everyone. Most of the cities are set right on the ocean, so you can combine cultural sights with beach hopping. The landscapes are wonderfully diverse, from white-sand beaches and farflung islands to mighty mountains and the arid outback. Plus, of course, the endemic wildlife is amazing – what’s cuter than kangaroos and koalas? What is your personal history within the country? My family moved from the US to Brisbane when I was in high school. I finished my senior year there, then took a gap year to explore. Living in Australia gave me real insight into local life, and inspired me to pursue a career in travel. My whole family loves Australia, and we’ve returned many times together – we’ll be going for Thanksgiving this year.
What is Australia’s best-kept secret? Not many people have heard of the Flinders Ranges, a beautiful mountainous region about five hours north of Adelaide. It’s a breathtaking Outback experience without all the crowds you get at Uluru. There is so much wildlife, and the eco-friendly villas at Rawnsley Park Station are gorgeous. Each one has a retractable ceiling, so you can stargaze from your bed. Why is Australia best explored on a tailor-made trip? It’s incredibly diverse, so planning a vacation can be daunting if you don’t have expert help. Australia is about the size of the US, so I have put together hundreds of completely unique itineraries – each one designed for that particular client. What’s your most memorable Australia experience? I traveled with my mom to Tasmania, and met up with Craig, one of our best guides in the country.
