Coffee Hour with BEAT “Sheik.” The Altman Ranch was at the end of civilization, and my first thought was, not in 100 years will there be anything built out there. Knowing that Florida had the reputation of selling land to someone abroad when they could not find a local buyer, I thought we were swindled into buying some land with no value.

I LOVE AVALON PARK! When our Publisher Stephanie Lerret told me to write a column about why “I Love Avalon Park,” I was excited, no more Corona, economic crises, and more, a subject for a column which I am truly passionate about. Well, it was not love at first sight...it was a long journey, an incredible journey, and it continues, and will today, tomorrow, and for generations to come. The journey of AVALON PARK. And while this story starts with our Avalon Park Orlando project, we are excited that we have now added 3 additional Avalon Park communities that are part of the Avalon Park family. In 1988, the Altman Family based in Orlando and New York was looking for a buyer for its 9,200-acre ranch in east Orlando. A third of a century ago very few people were interested in buying a huge tract of land in the middle of nowhere in east Orlando, except an obscure Swiss-American group who bought the land after more than 1 year of negotiations. I was designated by this group to go and check out this land that we purchased. When I arrived to what is now the town Avalon Park, I was shocked. I first came to see the land, which over the last couple of decades became the town of Avalon Park, I was shocked. At that time Waterford Lakes, then called Huckleberry was failing for a second time and what is today Stoneybrook was about 1,100 acres of land called Les Spring and owned by an Arab

Well of course I could now write an entire book, and at some point, I will do that. That book will outline how a 9,200-acre tract of land became the town of Avalon Park and the Hal Scott Preserve. It will also tell the story of how Avalon Park derived its name literally meaning “the isle of fruit” from the Arthurian legend and how it is described as the place where King Arthur’s sword Excalibur was forged and later where the King was taken from being gravely wounded in battle. This book could easily be well over 1,000 pages, so we will save that for another day.

When I come back and arrive in Avalon Park, seeing the “Welcome Home” sign brings a sense of relief, pride, and love. In 1999, Avalon Park Group moved to Founder’s Hall, the first building completed in Avalon Park, and if you would have told me that more than 20 years after, I would still spend most of my daily life in Avalon Park, I would be skeptical. But you see,

While the full story would be a long adventure, it can be summed up like this: For about 20 years, a passionate team and I have had the honor to build a town from scratch. We all live, learn, work, and play here, and we all love to continue to shape our dream every day. When I first moved full-time to Florida, a quarter-century ago, my wife Jill and I lived in a townhome in the suburbs of Fort Lauderdale. I got homesick, not because there were not any mountains like in Switzerland or because it was hot and humid. These are things you prepare yourself before moving to Florida. I missed being in a town, where I was able to live, learn, work and play. A town where people

While Avalon Park Orlando is 99% complete, we are just starting our journey in Wesley Chapel, Daytona Beach and Tavares. I love that every single day we all can build on the Avalon Park we call home. Together we can make it better, reinvent the town of Avalon Park, reinvent us with the opportunities in OUR town. I am excited about these next chapters in the Avalon Park journey. Avalon Middle School Update

Dear Parents / Guardians: Happy New Year! On Monday we welcomed back several students to campus who had been in LaunchED@Home. For our 6th graders, it was like their first day at school all over again. However, they acclimated quickly and our week went smoothly. During the next two weeks, 8th grade students will be getting important information about 9th grade course selection through their social studies classes. Please make certain that your child is sharing this information with you. Also, Timber Creek High has shared important information with us about this process as well as about their APC+ program. Please read the information in the newsletter below carefully and take advantage of the virtual parent night and other resources TCHS makes available to you.

While we are all excited about the potential for returning to normalcy with the introduction of the Covid-19 vaccinations, please remember that the inoculation process will likely take many months. Athletic Information AMS will be offering Middle School Athletics during the second semester; however, OCPS had to make modifications due to the pandemic. We will be implementing an intramural model where students will be able to participate against other AMS students in the four traditional middle school sports (Volleyball, Track, Soccer, and Basketball) throughout second semester. There will be no competitions against other middle school teams this school year. The intramural format will allow any student on the campus (LaunchED@Home, Face-toFace, or FLVS/OCVS) to participate in a sport. Dates are listed below for when each sport will take place.

Healthier Spaces

Safer materials make healthier buildings Our daily lives are exposed to environmental pollutants that pose some degree of risk, sometimes unavoidable. Some risk we choose to accept because there is no choice. Some risks we can avoid because we have information and can make informed decisions. According to the Center for Disease Control, people spend about 90% of the time indoors, increasing the risk of health issues due to indoor air pollutants. Scientific research evidence indicates that the indoor air can have more pollutants than outdoor air. Thus, the health of spaces is rapidly gaining attention due to the increasing negative health and mental impacts. “Walking into a modern building can sometimes be compared to placing your head inside a plastic bag that is filled with toxic fumes.” -John Bower, Founder, Healthy House Institute The CDC groups the indoor pollutants as biological and chemicals. For the most part the biological pollutants come from pets, insects, environmental conditions, and accumulation of mold, viruses, and bacteria. On the other group, the chemical irritants can come from gases, fumes, Volatile Organic Compounds (VOCs), pesticides, and toxic materials. Toxins in materials and products should be an important consideration when designing and building a new space, buying a home, furnishing and decorating. Because everything in our spaces from lighting to paints, caulking, and other sealants, to flooring, wiring, and insulation, can pour toxins into the air you breathe. These toxins can mimic hormones, disrupt fetal development, cause allergies and asthma and even cause cancer. What is being done to address the toxins issue? Healthier material standards. In an effort to address the increasing health concerns associated with toxins in building materials and products, there are a number of organizations providing guidance for suppliers and manufacturers to screen and assess material formulas and optimize when risks and hazards are present. Some of the most robust methods to screen and assess materials are the Cradle to Cradle Products Certification, The Pharos tool, UL Greenguard, Green Screen, The Health Product Declaration, Declare, The Living Well challenge, and Safer Choice to name a few.

Prefer products with eco-labels because they have been checked and optimized; ask builders/contractors to select safer choices as much as possible and check on the product reviews online. Be smart when buying consumer products because there are harmful ingredients for you and the surfaces. For instance bleach and ammonia. Even products listed as natural can contain irritants, read, investigate the ingredients and make informed decisions. Last, trust nature! Plants are a fantastic inexpensive solution to improve one’s health by helping purify indoor air quality, plus, reducing energy consumption and improving the aesthetics of any space. The ultimate goals of these organizations is to make buildings, homes and spaces safer and healthier for occupants, reducing the risk and hazards of chemical toxins by setting standards that industry can follow. In the end, the manufacturers that have checked their products’ formulas can innovate with safer alternatives and can be recognized with a label or certificate/certification or declaration that their clients or the end consumer can see. It is important that as consumers we identify the healthier choices that are available at building material depots, supermarkets, etc. That is why eco labels play an important role in purchasing decisions. At the same time programs that are business oriented should be followed by builders but if you as a building occupant are curious to know what is done at the design and construction level, then the Leadership in Energy and Environmental Design -LEED certification will cover a whole building including the health of materials. Meet the Member Interview with Perseo Pharma

1. How did Perseo Pharma come about? Perseo pharma is a spinoff of INOFEA AG, another company also located on The 5th Floor. Both companies share the same technology, derived from FHNW in Muttenz, which consists in making enzymes more powerful for all sorts of biotechnology applications. Back in 2017, INOFEA decided to explore the possibility of using its proprietary technology specifically for medical applications. Funds were raised and two years later, an initial proof of feasibility was reached, enabling the foundation of the spinoff. Perseo pharma is now a fully independent privately funded pharma start-up and is using the shared technology exclusively for the development of therapeutic applications. 2. Could you give us a short overview of Perseo Pharma? Perseo pharma is a very early-stage start-up, we are turning 2 years old in March! We work in close partnership with the University of Applied Sciences Northwest Switzerland (FHNW) and more

BBQ 50’s Brown Paper Bag BBQ Chicken Recipe: I remember watching my grandma prepare this meal as a kid. It was like magic watching the chicken go in the bag raw, and, coming out of the oven in an hour or so cooked to perfection! 3-4 lb whole chicken cut into pieces 3 T soft butter or margarine Standard size paper bag & Paper clip Large casserole dish Sauce 3 T ketchup 2 T Apple Cider Vinegar 1 T lemon juice 2 T Worcestershire sauce 4 T water 3 T brown sugar 1 tsp salt 1 tsp prepared mustard 1 tsp chili powder Blend all sauce ingredients in a medium saucepan and bring to a boiling point and set aside. Open paper bag and grease the inside of the bag

with the butter from the bottom up to four inches from the top. Take your chicken. Rinse and lay dry with a paper towel. Salt and pepper each piece and dip in the sauce. Then, place in the bottom of the bag. Once full, fold the bad down and clip shut with the paper clip(s). You can add an extra paper clip if you have concerns that the bag won’t stay shut. Trust the bag! Place sealed back on its side in large casserole dish (no lid!). Put in preheated 500 degree oven for 15 minutes. Then lower heat to 350 degrees and bake for another hour and fifteen minutes. Take out of oven and let cool in bag for 15 minutes before serving. For crispy skin, take out of oven after an hour. Cut the top of bag open with scissors all the way across the top so the you can see the top of the chicken and place back in oven for 15 minutes so the skin can brown. Enjoy!!

Avalon Eatery Coming Soon to Avalon Park Many of you have contacted us asking our timeline...we feel like it’s been a month of Sundays, but we’re getting there! Here is a breakdown of what has happened and what’s to come... We are waiting on our licensing from Tallahassee along with our final beer & wine. Once that happens, we’ll move very fast. We hope to open our doors within the next 3 to 5 weeks... fingers crossed that we are closer to three than five! This is the hurry up and wait part... Painting and prep are now complete. All appliances in the back of the house are in place. The old diner signage has been removed and our Avalon Eatery signs are being fabricated. We’re actively working on decor and having a blast with it...a fun and eclectic theme that will complement our award winning very diverse urban fusion menu. We are a green restaurant and repurposing as much as we can. We spent the last two weeks finding unique chairs and have now completed our collection. We are going to paint them

black so even though they are different they will all be ‘the same’. All our tabletops are being made with repurposed wood. Our 7’ custom round table was delivered over the weekend and includes a 36” Lazy Susan to add even more personality to the round front room which will be a semiprivate dining space for groups up to 14. Our walls are being decorated with moss and mirrors and lots of fun repurposed accents. Lighting and sound systems are being installed this week. Soon, we will actively start our hiring process. We have so many positions available and we’re looking forward to meeting many of you then. Some fun background. We are a family-owned business (husband and wife) and will always be onsite to greet and service you. When you walk through our doors, you’re our family. Angie is known to be ‘everyone’s Nonna’. Claudio was born in Buenos Aries Argentina and came to

the states in the 60’s as a young boy. Angie is second generation here. Angie’s ‘Nonna’ came to the states in 1902 from Calabria Italy. Their Italian and Argentine background has influenced their menu which includes hand pressed empanadas and a full gnocchi bar. Angie & Claudio have four grown children and four grandchildren which all together they have grown their family to 14. They are native New Yorkers, and their passion is in the kitchen. EEOC to Launch New Freedom of Information Act (FOIA) Software Beginning Feb. 1, Requesters Can Initiate New FOIA Requests and Appeals Using New Tool The U.S. Equal Employment Opportunity Commission (EEOC) announced today that, effective Feb. 1, it will begin using a new software system (“the 2021 system”) to receive and process Freedom of Information Act (FOIA) requests and appeals, replacing the system it has used since 2015.

As part of EEOC’s ongoing commitment to transparency and accountability, FOIA requesters will continue to be able to monitor their requests and appeals online and exchange correspondence and documents with EEOC electronically. While EEOC posts many agency documents on its website, and in its online FOIA public reference

room, individuals can submit FOIA requests for other records. Beginning Feb. 1, requesters can initiate new FOIA requests using the new 2021 system at https://eeoc.arkcase.com/ foia/. Requesters who submitted FOIA requests before Feb. 1, will be able to check the status of those requests through the Public Access Link through March 12. After that date, requesters must access all EEOC FOIA requests using the 2021 system. To avoid any service interruption, current users are encouraged to create an account in the 2021 system as soon as possible. EEOC will continue to accept FOIA requests and appeals via U.S. mail, email, and facsimile. The contact information for EEOC’s FOIA offices can be found at EEOC’s FOIA webpage. Requests and appeals received in these formats will be entered into the 2021 system by EEOC staff for electronic processing and online requester monitoring. FOIA is a law that gives individuals the right to request access to federal government records. EEOC receives upwards of 16,000 FOIA requests annually. To ensure a memorable event use inspiration from your own love story to make your wedding day unique to you. Here are some tips of how to do just that… Start with a Theme Rustic, beachy, vintage… It seems these days there are so many Pinterest ideas for wedding event style. A wedding theme should show off your personality as a couple. And that theme should be established first and incorporated into details throughout. Here are some ideas to get started picking a theme: • Inspiration from a moment such as first date, favorite memory, or the proposal • Favorite locations you have been together (or want to go together!) • Favorite hobbies/activities you enjoy together • What is your fashion sense like? Sporty, casual, preppy, classic? • Favorite things (food, movies, music, etc.) • A love for a certain season or holiday • Favorite colors or overall décor theme Some couples go all out with a very specific theme while others may decide on a more subtle aesthetic. AdventHealth Coronavirus Vaccine Q & A: What You Need to Know

AdventHealth plans to vaccinate several thousand people, or as much as supply allows, at its launch site adjacent to Orlando International Airport. This will be a limited rollout to ensure adequate supply. During this initial phase, the vaccine will be available to three groups: Community health care personnel with direct patient contact, Established AdventHealth Medical Group patients who are 65 years and older, and AdventHealth caregivers’ relatives who are 65 or older. Over the past year, we have sought to lead in the fight against COVID-19, bringing groundbreaking treatments to our patients and contributing to important research. Now, we are honored to undertake this responsibility on behalf of the Central Florida community, and we’re grateful for the state’s support in giving us this vital role. Together, we are making great strides, and brighter days are ahead. Those who wish to be notified when they might be eligible to receive the vaccine can register for alerts at www.CoronavirusVaccineAlerts.com. Eating Healthy in the New Year

“New Year, New Me” seems to be the theme of January that many of us turn to year after year. For some, it works for many by the time February hits we slip back to old habits. The pendulum swings back and forth throughout the year as we try new and different diets or trends with the hope of losing weight and feeling better. But alas, December rolls in and we tend to find ourselves saying, “Next year will be the year I finally get in shape and lose weight!”

Granted, 2020 was a bit of a struggle for all of us. Let’s start 2021 off on the right foot and learn how to maintain a healthy weight, and enjoy foods we like at the same time. Changes in our habits don’t and won’t happen overnight, so be kind to yourself and trust the process. Remember, eating healthy is not a punishment—in fact, it’s a reward for your body. It’s a way of telling your body that you care, and you want it to be happy! In exchange, your body will care for you and keep you healthy. Eating healthy also doesn’t mean we need to have a lack of flavorful foods. Adding in fresh and dried herbs and spices will punch up your flavor and may even increase metabolism, enhance fat burning, and

promote feelings of fullness.

So, how can we begin a journey that will lead us to better overall health? Start Slowly In order to eat healthily, you need to combine nutritionally dense foods with common sense and a whole lot of enjoyment! Use the 90/10 rule; eating right 90% of the time is what matters, it’s ok to splurge once in a while. If you have a craving address it and move on, this will help you from binging later. And by all means, don’t starve yourself. Your body needs food for energy! Eat Breakfast Every Day Eating a nutritious breakfast is a great way to jump-start the day. Starting your day with a healthy protein, good fat, and a complex carb will help you get the day off on the right foot. It may even help to minimize impulse snacking and overeating at other meals, boost your intake of essential nutrients, and may also help keep your weight in check. Eat More Nuts and Seeds Almonds, cashews, hazelnuts, peanuts, pecans, and pistachios all pack plenty of beneficial nutrients, including vitamin E, folic acid, potassium, and fiber.

Although many nuts are high in fat, the fat is mainly unsaturated making them a great choice to help you eat healthily. Since nuts can also be higher in calories, it’s best to enjoy them in place of other snacks and not in addition to them. Try keeping your serving sizes small usually just a handful!

Taste Your Food Many of us reach immediately for the saltshaker when food hits the table. If you’re cooking at home taste your food as you go, try adding in herbs and spices to ramp up flavors. If you taste your food before adding salt you might also discover that your meal is flavorful enough. Make Healthy Choices Available Adding healthy snacks and foods to your grocery list automatically makes it easier to eat healthy with less stress. Buy a few apples, some fresh in-season fruit, baby carrots, hummus, cucumbers, lightly or unsalted nuts and seeds, homemade granola, or really anything your like. If it’s packaged make sure you check for added sugars and sodium. This makes healthy food choices readily available to you and they’re portable which makes it easy to have them on the go as well.

Eat More Fruits and Vegetables Grilled, baked, raw, or roasted fruits and veggies are a nutrient-packed way to fill your plate with food that is generally low in calories. You may think you are eating plenty of fruits and vegetables but try tracking how often you actually do eat them for one week—the result may surprise you! Try getting a minimum of five servings a day, and more if you can. Remember, start slow and work your way up. Chef’s Note One serving equals a half-cup of chopped fruit or most vegetables. For raw, leafy greens like lettuce and spinach, a serving is one cup. Ideally, the food you eat should delight your senses. Your plate should look pretty, smell great, taste delicious, and have different textures. Start the new year off on the right foot. Go slow and learn to enjoy your food. Try something new once a week to expand your food choices, this will help you from getting bored with your food and falling back on old habits. Eat well and stay healthy!

Kiwanis Club Update The Kiwanis club of Avalon Park has been very active in the past several months. We have continued our Kiwanis Terrific Kids awards each month along with our Kiwanis Teacher of the Month awards each month. We also read every Thursday at the Orange County Academy and deliver meals to several families every Thursday for the Meals on Wheels program.

We also completed the Socks and Sneaker drive for the homeless of East Orange County. We are currently collecting diapers for the Center for Children and Families in Orlando. We are also planning our upcoming Charity and Scholarship Golf Tournament on March 5th at Stoneybrook.
