The contemporary Mediterranean menu of Jungle Fish, crafted by Greek Executive Chef Georgios Giannoulis, evokes the spirit of the sun-kissed region, where cuisine is a philosophy and the art of eating is a palpable passion embraced by all. Having access to extensive organic gardens scattered throughout the estate is an enviable luxury for any cook, and Giannoulis is one lucky chef! Fresh, home-grown organic vegetables, aromatic herbs and basmati rice are right on his doorstep – an advantage he takes fully, transforming nature’s bounty into his vibrant, seasonal menu. It is easy to be charmed by Giannoulis’ colorful dishes, as each one of them is his personal culinary journey of respectfully marrying robust Mediterranean essences with bold Asian flavors and locally sourced premium ingredients. Summer is for feasting and feast we did, starting with the succulent grilled octopus (the chef’s favorite dish) chargrilled to perfection to bring out the sweetness of the

A TRIP WITH ARCHIPELAGO INTERNATIONAL REVEALS THE POWER OF WOMEN IN LOMBOK AND THE NEW NIGHTLIFE SPOT IN GILI TRAWANGAN ISLAND…

I

t was 10 a.m. when our group arrived at the Lombok International Airport for our adventure with Archipelago International. The sun was

shining brightly and a list of destinations was waiting to be discovered. But before our adventure began, we filled up on authentic Lombok dishes at Rumah Makan Nasi Cahaya Balap Puyung. Located only a couple of minutes away from the airport, this restaurant offers a simple fried chicken with fresh vegetables and chili on the side – beware though as their spicy chili will pop your eyes wide open, a good way to kick off your adventure in Lombok.

Call an ambulance by dialing 118, but it is a lot more practical and quicker to hire a taxi. Most hotels have on-call doctors on standby. For “Bali Belly”, Lomotil and Imodium eliminate symptoms, but not gastro-related infections. A fever along with symptoms requires doctor-prescribed antibiotics. Drink as much liquid as possible. Isotonic drinks under various brand names are widely available and are known to replenish body hydration and replace fluids. For discomfort, diarrhea and cramping, drink strong, hot tea; avoid fruits and spicy foods. Some day-biting mosquitoes carry dengue fever, but this is not a problem in tourist areas. Bali is non-malarial and prophylaxis is not required. Mosquito bites, cuts or abrasions easily become infected in the tropics. Treat them immediately. Drink only bottled or boiled water. Peel fruit before eating; avoid raw vegetables except at reputable restaurants. Ice in restaurants is safe. Protect yourself from the intense equatorial sun. Use high SPF sunblock and a hat. AIDS and sexually transmitted diseases are increasing in Indonesia. Local sex workers have multiple partners from around the world. They are not checked for sexually transmitted diseases. Act responsibly and use condoms, available over the counter at pharmacies.
