The new Namaaz can be considered a fine dining restaurant, but you won’t find any excessive decorations. “To be honest, I see that the fine dining competition in Indonesia is not about the food but more about the interior design, perhaps to provide customers with a certain atmosphere,” he explained. “But I don’t have to follow them. Of course the place has got to be nice, but I don’t want my food to hide behind the beauty of the interior design.” Another thing about Namaaz is that you won’t find fancy ingredients such as foie gras, caviar, truffles, etc. “Fine dining restaurants feel obliged to serve those ingredients to add value. Me, I add the value by creativity. What we offer is a unique dining experience,” Andrian concluded.

At the time he had been experimenting with transformation, so he dug deeper and found molecular gastronomy. Ronald’s case is a proof that sometimes a big mouth can be beneficial. In fact, he is the first person in the world to apply molecular gastronomy to coffee. Among his creations are the Espresso Raviolli (jelly espresso made of alginate and calcic) and the drinker’s mouth to spout smoke.

However, Ronald sees it as a revenge project. “When I was a little kid, people told me not to play with food. It’s payback time!” he exclaimed triumphantly. “In the end, you’re called two names for being different – unique if you succeed, or weird if you fail.” Andrian and Ronald agree that molecular gastronomy can be applied to any kind of food to create something previously unimaginable. SPREADING GOODNESS This coming June, the inspiring Dr. Jane Goodall, DBE will visit Bali for the first time to address the 2014 graduating class of the Green School Bali. One day prior to the graduation ceremony on June 17, the world-renowned ethologist, UN Messenger of Peace and founder of the Jane Goodall Institute will spend a day with the Green School students to celebrate more than half a century’s worth of research on the Chimpanzees of Gombe. The Green School will open its doors to other schools in an exclusive public event at 10:30 a.m. www.greenschool.org

INTERNATIONAL RUN The Bali Hash House Harriers is a running club that meets on a weekly basis – one of over 1,000 Hash clubs existing in major cities in the world. On March 13, the Bali Hashers bid for the next Interhash—a bi-annual 3-day event where Hashers from around the world meet—to be held in Bali, and succeeded. The Bali Interhash 2016 is planned to take place in Sanur at the end of May and will host up to 5,000 participants from over 50 countries. There will be 16 different run sites around the Ubud area and Indonesia’s President in 2016 is expected to attend the event. TELL-ALL EVENING Ex-spy and bestselling author Valerie Plame was spotted at the Indus Restaurant in Ubud on April 17. Entertaining a large crowd of literature-lovers at the satellite event of the Ubud Writers & Readers Festival, Valerie electrified the audience with her stories of tracking down nuclear arms dealers and going undercover in far-flung countries. For “Bali Belly”, Lomotil and Imodium eliminate symptoms, but not gastro-related infections. A fever along with symptoms requires doctor-prescribed antibiotics. Drink as much liquid as possible. Isotonic drinks under various brand names are widely available and are known to replenish body hydration and replace fluids. For discomfort, diarrhea and cramping, drink strong, hot tea; avoid fruits and spicy foods. Some day-biting mosquitoes carry dengue fever, but this is not a problem in tourist areas. Bali is non-malarial and prophylaxis is not required. Mosquito bites, cuts or abrasions easily become infected in the tropics. Treat them immediately. Drink only bottled or boiled water. Peel fruit before eating; avoid raw vegetables except at reputable restaurants. Ice in restaurants is safe. Protect yourself from the intense equatorial sun. Use high SPF sunblock and a hat. AIDS and sexually transmitted diseases are increasing in Indonesia. Local sex workers have multiple partners from around the world. They are not checked for sexually transmitted diseases. Act responsibly and use condoms, available over the counter at pharmacies.
