TEAMTALK
THE SOURCE OF LIFE ‘Om Swastiastu...’ Usually rain is pouring down hard in Bali at this time of the year. But due to global warming, the weather has been pretty unpredictable. So whether November sees rainy days that you have to carry an umbrella wherever you go or beautiful sunny days that make you want to plunge in a pool, we want to invite you to embrace the water. Water heals – and the Mulia Spa understands this very well. Aside from its massage

treatments, this spa has complete facilities from a Hydrotherapy pool to their Emotional Steam Room. And only at the Mulia Spa will you find Asia Pacific’s first ever Ice Room. Flip through ‘Invite & Indulge’ to discover more about this spa. And if you’re looking for a place to swim in Bali, our ‘Foto Folio’ boasts seven swimming pools, each with its own distinctive style. From the long and heated pool in Padma Ubud to the eco-friendly pool in Bambu Indah, and the infinity pool that overlooks the ocean in Anantara Uluwatu – you pick! At the same time we would also like to invite you to appreciate water as the source of life, which we can learn from the springs in Bali. The Balinese construct pipelines so that everyone can enjoy the fresh water straight from the spring. They also build a Pura Beji and a statue of Dewa Wishnu to honor the water – you can find out more about this in ‘Craft & Culture.’ Last but not least, we can’t hide from the fact that fresh water is scarce in many parts of Bali. This is a bitter truth that we all have to get a grip on. What is causing this and what can we do to help? Read our talk with the Bali Water Protection program in ‘Profile & Portrait’ for inspiration. If you still need more reasons as to why we need to preserve water, let’s take the literal meaning of a verse from a love song by ‘90s boyband Boyz II Men, “Let’s don’t wait ‘til the water runs dry. We’ll make the biggest mistake of our lives…” ‘Om Shanti Shanti Shanti Om…’ The Team

ISLAND RUM Nusa Caña is now available on the island! Highlighting the authenticity of Indonesian rum, Nusa Caña is creating fermented and distilled sugarcane drinks in artistic bottles that showcase the “King of the Forest” barong mask inspired by Arie Smit, the legendary Bali artist. With its smooth aroma and toasted fruit flavors this drink has attracted many rum and spirits enthusiasts, and can now be enjoyed in notable venues such as Potato Head Beach Club, Ku De Ta, Akademi Bar, Night Rooster and Baker Street Social. The basic ingredients of the drink – which are Javanese sugarcane molasses, forest-filtered water and red rice cake – will have you reminiscing about the local drinks that you usually find in many parts of Java. In Bali, Nusa Cana is best sipped on the rocks with star anise and a lemon twist or mixed with lime and ginger beer to refresh you on a hot day. www.nusacana.com
SPORTY CHIC Welcoming winter in some parts of the world, PUMA has launched their Winter 2016 collection for women that consists of three different style of shoes with sporty designs and a touch of femininity. The first one is the “Suede Platform” that marries PUMA classic suede with a basketball style, resulting in a sophisticated street style. With a touch of gold at the front and soles made of gum, the “Suede Platform” is available in black, blue, and red. The second is the “Duplex Evo,” which is best for walking on contoured roads because of its EVA outsole. Last but not least, the “Eskiva Evo” is inspired from 1960s and made of soft leather to show the athletic side of PUMA. All of these are available at the Discovery Shopping Mall Kuta. SWEETEST ADDITION Amidst the rice fields adjacent to Alaya Resort Ubud now stands a joglo house that serves as the resort’s newest restaurant, named Manisan. Not only does this restaurant offer delectable Indonesian food from across the archipelago – you can expect dishes from the western part of Indonesia like Minangkabau, Bandung and Pontianak and the eastern parts like Ambon – but Manisan also showcases koki masak that will entertain guests with the performance of spontaneous traditional cooking and authentic food preparation. Manisan is born from the collaboration between the Alaya Resort Ubud and Indonesian celebrity gourmand and food ambassador William Wongso, who also took part in hosting two dinners before the restaurant was launched. This restaurant is perched in Alaya’s newest wing together with 40 new guest rooms, five suites, a gym, a boardroom, a swimming pool and a 350-year-old wooden joglo for wedding ceremonies or other receptions. A unique coffee place that will take you on a journey through the archipelago is Tales of Coffee. Tales of Coffee is striving to develop a sustainability program in their production as well, and that’s why they source their beans directly from the farmers – you can expect to find coffee beans and powder from around Indonesia, which are divided into The Islandhopper, The Jungletrekker, The Lavasurfer and The Moondancer. Don’t forget to smell the aroma of the coffee first before you take a sip. Tales of Coffee Jalan Pantai Berawa, Canggu, 0813-3795-5729 www.talesofcoffee.com

FALL FOR JOHN Welcoming fall, John Hardy debuts The Modern Chain Collection that is an evolution of the 1990s flat woven chain bracelet for men. With this new design, these chain bracelets are versatile and ideal for casual or formal wear. However, John Hardy still pays a tribute to the original chain-weaving method and that’s why this collection is woven by men due to the need for more physical strength to make the large links bracelet. By the looks of the bracelet, this men’s collection conveys a powerful and masculine symbol. John Hardy also produces the women’s collection that features gleaming gold and silver bracelets with fresh patterns and chic beauty. These bracelets are perfect to wear alone or in stack. The luxurious bracelets are lightweight and slim, thus they are comfortable for everyday use. John Hardy Banjar Baturning No. 1, Desa Mambal, Abiansemal (0361) 469-888 www.johnhardy.com

At least that was what I experienced when my electric car from the hotel lobby stopped at the spa’s door. A woman welcomed me to the spa lounge and handed me a glass of iced red ginger and lemongrass that was surprisingly refreshing. As I sipped my drink, I decided to have a Balinese massage. However, before the massage began, I opted to access the Wellness Suite first – and trust me, an experience at this suite is one to treasure. Mandapa, A Ritz-Carlton Reserve presents their Dining Beyond package that offers a custom dining experience. You are free to dine in any location within the resort area that you wish, and once the location is confirmed, the hotel staff will serve their signature dishes just for you and your group – you can also ask for barbecue! One of the best venues is their three-bedroom villa, where they will prepare a beautiful table setting for you and your loved ones, and set up an appetizer and dessert buffet as well as a seafood and meat barbecue.
The magical vibe and livelyy culinar culinary scene of Bali intrigued Sydney-based restaurateur Maurice Terzini (MT) enough to spread his wings to the Island of Gods. He has successfully established a number of Australia’s iconic dining venues and events and now he welcomes us in his latest baby, Da Maria, an Italian osteria in the middle of Petitenget. He talked to Bali & Beyond (BB) about it before the opening night on November 5! BB: Hi Maurice, we are excited to see Da Maria restaurant! Would you explain a little bit about it? MT: I’m beyond excited too! Da Maria is an Italian-based restaurant. It is an Italian osteria, which means a restaurant with comfort food at affordable prices. It’s a bit casual and fun. It is an idea that we have been experimenting with in Sydney and it has been very successful. And now we are going to take elements from that idea and introduce them to Bali. It’s going to be unique. BB: What should guests expect at Da Maria? MT: The inspiration is from Southern Italy, so the food could basically be found in places like the Amalfi coast in Italy. Guests should expect tropical food like Southern Italian pizza, which is fermented and cooked in a particular way, and a lot of seafood as well because Southern Italian – or Italians in general – cook and eat a lot of fish. We are creating some incredible seafood and fish dishes, and we are working with local fishermen and sourcing the ingredients locally in order to maintain our sustainability. It’s all simple and true Italian food, and everyone will have a good time! BB: What is behind the name Da Maria? MT: Da Maria is a mysterious person. No, I’m just kidding. She’s actually no one, it’s just a name. It actually means at Maria’s. So I want the restaurant to have a casual ambiance, just like when you dine at your friend’s or aunt’s place.
While in Yogyak arta for a weeken d getaway, make you drop by Bakm sure i Jowo Mbah Gito. Their tree house restaurant and sig nature Mie Godo k are totally winn ers!
BALI&BEYOND NOVEMBER 2016
BB: Why are you opening Da Maria in Bali? MT: I have come to Bali many times. This island has a special place in my heart and I’ve always wanted to do something here. Now I see that Bali has become a food and beverage destination with a much better quality than before. And the feeling to open an Italian restaurant just feels right and hopefully people in Bali will love what Da Maria offers. www.damariabali.com 39

’m no stranger to risk-taking – I have skydived from 4,000 meters high and gone bungee jumping as well. I frequently dive with sharks, and I even
fell in love and got married. When adventure beckons, I brace myself, gear up and just go. Nevertheless, the concept of canyoning or canyoneering was foreign and a little bit scary for me. Canyoning is an adventure sport that is rapidly gaining popularity worldwide. It involves the uncharted territory of specialized equipment, brain-boggling technicalities and challenging courses. But at the same time it is also a combination of fun and thrilling outdoor activities such as trekking, scrambling, sliding, rappelling, jumping and swimming, and it often takes place in remote and rugged natural settings. I was sold.
READY TO GO! It was no ordinary Sunday morning. My husband and I were deep in the heart of wilderness, beneath the rainforest canopy of Git Git in northern Bali. We were already suited up in our canyoning necessities: five-millimeter wetsuits, helmets, rubber boots, a climbing harness with carabiners and a Pirana descender for rappelling as well as an unflattering butt cushion for water sliding.
THAT’S THE SPIRIT!

Joined by two other couples, our guide named Angga, his assistant Oka, and Adventure and Spirit’s (Bali’s pioneering canyoning
operator) photographer Imin, we explored Kalimudah, the novice’s easy half of the action-packed Kerenkali Canyoning Adventure program. It was a spot in Bali like we’ve never seen before.
THE WILD, WILD, WET Undeterred by the impending rain we went trekking down a scenic trail of forested hilltops amidst coffee and clove plantations, clambering over rocks and ridges and sliding down water-polished chutes into surprisingly chilly pools. So far, so good – until

Titled “Dreamworld”, this exhibition is a part of the hotel’s “Artist Playground” program, and is going to make you wander between what’s real and what’s not and challenge you to channel your inner being. Together, these artists collaborate to create a collage of pop art where modern and traditional Asian aspects collide. Don’t miss this one as it only lasts until December 11. BEYOND MYTH Hand in hand with Rumah Sanur, a creative hub where artists gather and collaborate, ARTOTEL Sanur – Bali presents a “Modern Myths” exhibition. Located at the hotel’s ARTSPACE, this exhibition displays the creations of three young talents – Kunci Sathya Viku, Rio Simatupang and Arnis Muhammad – and is curated by Summa Durie. “Modern Myths” is inspired by the fact that Indonesia has over 17,000 islands and each one has its own mythical spirits, like Leak Bali, Sulawesi’s ghost and Rimung Aulia, a spirit of a guardian tiger that protects the forests in Aceh. In this exhibition, the three young artists invite the audience to get to know these legendary spirits through their contemporary artworks that are colorful and eye-popping. Call an ambulance by dialing 118, but it is a lot more practical and quicker to hire a taxi. Most hotels have on-call doctors on standby. For “Bali Belly”, Lomotil and Imodium eliminate symptoms, but not gastro-related infections. A fever along with symptoms requires doctor-prescribed antibiotics. Drink as much liquid as possible. Isotonic drinks under various brand names are widely available and are known to replenish body hydration and replace fluids. For discomfort, diarrhea and cramping, drink strong, hot tea; avoid fruits and spicy foods. Some day-biting mosquitoes carry dengue fever, but this is not a problem in tourist areas. Bali is non-malarial and prophylaxis is not required. Mosquito bites, cuts or abrasions easily become infected in the tropics. Treat them immediately. Drink only bottled or boiled water. Peel fruit before eating; avoid raw vegetables except at reputable restaurants. Ice in restaurants is safe. Protect yourself from the intense equatorial sun. Use high SPF sunblock and a hat. AIDS and sexually transmitted diseases are increasing in Indonesia. Local sex workers have multiple partners from around the world. They are not checked for sexually transmitted diseases. Act responsibly and use condoms, available over the counter at pharmacies.
