BILLIE RAY MARTIN The Queen of Electronic Soul, Billie Ray Martin, first came to prominence with
Electribe 101. The acclaimed deep house act scored a series of hits including the classic "Tell Me When the Fever Ended" before Billie departed to continue exploring fusions of electronic music and soul. She soon found herself with a worldwide number one with "Your Loving Arms", now regarded as one of the all-time classics of dance music. A couple of years ago she took to the decks and launched her own clubnight ‘Komputerliebe’ and now tours the world from Berlin to Brazil, singing and DJing. Wow that went quick! Seems like just yesterday that I bumped into a dodgy looking geezer in a club who told me about a fantastic new nightclub/ restaurant/exhibition space he was bringing to Bangkok called Bed Supperclub. Little did I know that 7 years later the club would still be the best in Bangkok and that I would be expected to call that man sir! It’s been a rollercoaster ride but during the ‘lows’ you would always find us quietly chilling out and sipping on mojitos. Of course for the ‘highs’ we were hands in air on gold tanks & fast cars, shaking our butts to international superstar DJs like Felix Da Housecat and Kenny ‘Dope’ Gonzales.
When Bed Sheets decided to put Tata Young on our front cover of the 7th Anniversary issue we also decided not to ask her the usual run of the mill questions and instead tempt her with the 7 cardinal sins. We couldn’t believe our luck when electronic soul queen Billie Ray Martin agreed to do our top 10 singles chart and the icing on the cake came when American artist Luke Chueh agreed to be our featured spotlight artist. PAUL asks CAMERON Who or what influenced your decision to become a chef? My grandmother Nin. Born in 1907, she was always an old grandmother. I went to her place every day after school and we’d cook together. I loved it. What are a few of your favorite flavor combinations? Not sure about my favorite combo but I do like strong flavours. What’s your most indispensable kitchen tool? A dry cloth. What are your favorite cookbooks? Thai street food by David Thompson, actually all his books are great reading. Where do you like to go for culinary travel? Now that I am living in Thailand, I should say Thailand. There’s always great interesting food to be found here. Which person would you most like to have dinner with? There’s a few… Singer Bono, actor Patrick Stewart, author and inventor Edward de Bono, Indian writer and activist Arundhati Roy and Italian chef and restaurateur Antonio Carluccio. If you weren’t a chef what would you be doing? That’s easy, creating fantastic art, painting, drawing and making sculptures.

Cute and brute: Luke Chueh’s work
forces one to face the fact that cute figures are capable of brutal deeds. Born in the States to Chinese parents Luke quickly worked his way up the ranks of the LA art scene, establishing himself as an artist not to be ignored. His work has been shown in galleries around the world and he’s been commissioned to do art by A-list bands such as Linkin Park & Fallout Boy.

If there was a fundamental emotion I’m trying to provoke, through my work, it’s that feeling that comes along when you uncontrollably exclaim “Fuck yeah!” when you see or experience something. Basically I try to create the kind of work I would be excited to see if I went to an art show.

Your work sells out at every show, has been made into toys, ipod skins and been used by big bands. What’s been your proudest moment? My proudest moment was when I sold my first paintings in 2003 at a Cannibal Flower show. The feeling was unbelievable. I think the only other time that can rival it was when my show “Paintings of Hope & Hopelessness” sold out at the opening reception approximately an hour after the doors opened and my parents were there to witness it.
Is there anything you can’t eat? There are a lot of fermented and preserved foods that generally gross me out and I refuse to touch. Stinky tofu and thousand year old eggs are perfect examples. http://www.lukechueh.com/

Dry the skin of the salmon fillets with a paper towel and season heavily with salt especially on the skin side. Sear in medium hot pan with a good splash of olive oil. Cook until the skin is golden and crispy. Turn the salmon over and cook until medium rare. Remove from the pan where the salmon will continue to cook. Warm lentil salsa and place on warm plates. Place salmon skin side up on the lentils. Garnish salmon with warm tomato olive braise and top with a few sprigs of coriander. Finish plate with smoked chili vinaigrette and a few segments of Thai orange. Tomato olive braise Small can of whole peeled Tomatoes, crushed 60 ml Olive Oil 1 Onion, diced 1 Jalapeño, diced 2 pieces of Garlic, minced 10 Green Olives, pitted and diced 1 tablespoon of Capers Small bunch fresh Oregano, picked Small bunch fresh Thyme, picked 1 teaspoon Cayenne pepper 5 Bay Leaves 1 small bunch of fresh Coriander, chopped Juice of a Lime Salt Flakes to taste Heat the olive oil in a pot on medium high, and then cook the onions and jalapeños for 10 minutes, stirring occasionally. Add the minced garlic and cook for another minute or so then turn off the heat and then stir in the crushed tomatoes, scraping any brown bits that might have formed on the bottom of the pan.

Mix well but don’t let tomatoes get hot. Immediately place the tomato mixture into a blender, and puree. Pour the blended tomato mixture back into the pot and add the rest of the ingredients. Bring to a boil and then simmer on low for 20 minutes. Remove bay leaves. Lentil salsa 400 grams Yellow Lentils, cooked until soft 200 grams Pumpkin, medium dice, steamed Small bunch of fresh Parsley, chopped Good splash of Extra Virgin Olive Oil Small bunch of fresh Italian Basil, chopped Small bunch of Thyme, picked Cook and chill all ingredients. Warm just before cooking the salmon, Season with salt flakes and freshly ground pepper and lastly add fresh chopped herbs Smoked chili vinaigrette 3 – 4 pieces of Sundried Tomatoes, dry 1-2 Chipotle Chili Mitszukan Vinegar, few tablespoons to taste 3/4 cup of Olive Oil 2 pieces of Garlic, minced 1 teaspoon Red Curry Paste Small bunch of Basil Leaves, chopped Soak the tomatoes in warm water until soft, drain of water and mince with knife. Put minced tomatoes in blender with chipotle chili and vinegar, puree until smooth. Slowly add the oil and remaining ingredients, taste for seasoning. If necessary thin with water. How long will our relationship last? There’s no expiration date on true love or a Bed World Card. Our relationship is eternal as long as certain criteria are upheld. What other qualities do you have? From time to time I have been known to open doors with dodgy locks and have been used to chop garlic. So tell me again why should I bother to keep you in my wallet? What the hell? What time do you guys close? 1am or 2 am? Tough one. If was up to us, the answer would be, much later than 2 am. Our closing times like most other clubs in Bangkok are truly at the mercy of the local Thai police departments. If the Lumpini Police Dept decide they want us to close at 1 am, then we close at 1 am. If the Lumpini Police Dept decide we can stay open until 2 am, then we can stay open until 2 am. Sorry, there is no exact science to this and as such, closing times fluctuate depending on the politics of the local police division. At the moment, we are back to closing at 2 am.
