Summertime Grilling Recipe

Eat Local PNW Salmon varieties like chinook, king, coho, sockeye or chum salmon. Season simply with salt, pepper, rosemary and garlic rub.
Tofu
Marinate tofu overnight in sesame oil, coconut aminos, garlic & ginger.
Hatch Chilies
Simply wash & toss on the grill! Cook 13-15 minutes until skin is blackened, then put in a glass bowl, cover with a lid to allow them to steam. When they have cooled some, you can remove the blackened skin, then chop. Kale Salad with a Sesame, Lemon & Honey dressing

Juice a whole Meyer's Lemon into a large salad bowl and add:
• 3 Tbsp Honey • 3 tbsp Sesame oil • 1 tsp dijon mustard • salt & pepper to taste • 1 bunch chopped kale
Stir all the ingredients at the bottom of your salad bowl. Add chopped kale & massage your kale into the dressing. Pour kale salad into serving bowls, top with peppers, tofu & salmon.
