BHCF LADIES LUNCHEON

may/june 2023

Just over 20 years ago, Berkeley Hall’s gracious Clubhouse opened its doors, welcoming members to the community. As the heart of our community, it’s where we gather and socialize, and it was just a year ago that we celebrated our grand opening of the Verandah.

It’s brought me great joy to see Members enjoy easy camaraderie in our new, inviting setting with its stunning views. From lunch gatherings to evenings on the Verandah as the sun sets, the momentum and social atmosphere is friendly and welcoming and all we hoped it would be!

Now, we look forward to building on our social and culinary offerings. And with three sommeliers onboard, it’s easy to say Club wining + dining are definitely among our greatest attributes. If you haven’t shared some wine experiences with Dustin,

Elijah and Tim, you can find out more in our ‘Raising the Bar’ feature on page 10. Spring at Berkeley Hall is truly spectacular. With great play on our beautiful courses and a vibrant social scene throughout the Clubhouse, Berkeley Hall has never felt better. As our community grows, it’s the friendships that bring us together, on the courses, courts, and on the Verandah, which has truly become our feel-good space, whether meeting friends for evening dining or casual drinks at the bar.

Around the Club, our strategic plan embraces the best ways to enhance our ‘Member Experience.’ Projects center around kitchen renovations, Tap Room updates, Fitness Island enhancements and finalizing details for the 2025 North Course renovation.

As we approach summer, it’s easy to stay cool around the pool, with poolside drinks and our casual summer menu, which kicks off Memorial Day weekend.

Club traditions set the tone for many of our best family celebrations, from holidays to welcoming some of our newest family members, such as ‘Baby Berkeley’ – you can read more on page 7.

As you read through the Berkeley Experience, be sure to mark your calendars for all our great member events, especially our Grand Fourth of July Celebration!

Baby Berkeley’s story begins long before she actually arrived. Her story is one of love and tradition, which isn’t surprising when you consider her grandfather Ross Marancos first purchased a property in Berkeley Hall in 2004.

The Marancos family spent their time between Canada and the Lowcountry, with Ross bringing sons Kyle and Taylor for annual golf outings and staying in the cottages before building a home in 2013. Taylor and Jill began coming here as a young couple, later marrying in 2021.

Over the years, Berkeley Hall has become the family’s favorite gathering spot. So, when they found out they were soon to be parents, the baby’s name was naturally the big question. One afternoon, while here visiting dad Ross (Poppy) and Mary Beth Botz (Gigi), they were considering a few names when Gigi, as she is affectionately called, suggested “Berkeley.” It was an immediate yes!

Jill and Taylor have always had a special bond with Berkeley Hall and come here as often as possible. From young adults to parents, that connection has grown even more meaningful.

Now that Baby Berkeley is here, we had a chance to spend some time with this young family and learn what they cherish most about Berkeley Hall. And how their

family story begins anew, as we welcome Berkeley into our BHC family.

BH: Did you always envision Berkeley Hall as part of your family story?

Jill: Most definitely! I was lucky enough to start coming here in 2016 (a year after Taylor and I met) and we've been coming every year since. We love the community, the golf and more importantly, spending time with family. Bringing Berkeley into the world has made Berkeley Hall even more special and we will ensure she knows what she's named after. We hope to make many more family memories here with the newest addition to our family!

BH: Has tradition become more meaningful now that Baby Berkeley has just turned 7 months old?

Taylor: Tradition is very important to us. We love celebrating holidays and having Berkeley in our lives makes it that much more special.

BH: Favorite Berkeley Hall memory?

Jill & Taylor: Our favorite memory is bringing Berkeley here for the first time in February. She was born in Canada in October while it was chilly outside, so it was her first time experiencing the lovely warm temperatures. She loved her first visit and can't wait to come back!

ith three Sommeliers here to share their love and knowledge of wine, we’re in for an enhanced dining experience – and a true appreciation for the depths of their combined knowhow when it comes to exploring palates and pairings.

“We like to say, we raise the bar with a level of member service that welcomes members to a warm and inviting evening

There’s nothing better than good conversation around the table, and our three Somms have a lot to share. Who doesn’t love a good wine story, and Elijah, Tim and Dustin have a lot of them. Here, we thought we’d talk a few notes about wines, food pairings, the art of winemaking, and what makes a good vintage so special to uncork and savor!

10 BERKELEYHALLCLUB.COM CULINARY NEWS
here at the Club,” says Dustin Dunn, Assistant GM and Sommelier. When it comes to the Berkeley Experience, we can all share a toast to our BHC Somms: Tim, Dustin and Elijah, featured with Executive Chef Jeff!

BHC: First Big Wine Moment?

TIM: I first tried my favorite wine

Eight Years in the Desert at an Orin Swift wine dinner at my prior club. This wine opened me up to just how powerful and intriguing wine can be and kicked off my interest in wine.

BHC: Your favorite food + wine pairing, and why?

DUSTIN: Vintage Champagne and fried chicken! The acidity from the Champagne matches perfectly with the fried dredge on the chicken. Absolutely delicious and I’ll never forget my first experience with this pairing. Back in Los Angeles, with veteran restaurateur and master sommelier Michael Jordan at Bashan restaurant. (Who happens to be one of only 15 experts in the world who have been awarded both master sommelier and certified wine educator diplomas.)

BHC: What first drew you to the art of winemaking?

ELIJAH: In 2010, as bar manager and wine buyer for an upscale restaurant, I was invited to a sommelier summit during harvest in Walla Walla. I spent an afternoon with the director of winemaking at Long Shadows winery, which produces 6 different style wines from world-renowned winemakers, helping where I could. As the grapes went from vineyard to winery, to fermentation and press to barrel, I saw the marriage of science, agriculture and artistry, and I was hooked. It really felt like I had fallen in love.

Years later, I’m the guy making decisions, when to pick and which lots to process. I loved working in the lab, adjusting treatments. Making my own wine from vineyards I was familiar with,

hands-on by vine training and dropping fruit, was a joy.

BHC: From the wine list - Top summer wines and best to pair with?

TIM: When I think summer, my mind immediately jumps to Rosé. Our Elizabeth Spencer Rosé of Grenache offers lovely notes of fresh strawberries, peaches, and bright acidity. This wine is a go-to for many appetizers, but I would especially recommend with our Tuna Tartar.

ELIJAH: I love rosé! Especially excited about: Wolffer Summer in a Bottle Rose Cotes de Provence. (Provence rosés are the industry GOATs!)

BHC: What should we be trying right now?

DUSTIN: Pinot Noir from the Willamette Valley. There are a multitude of styles and producers that offer a different experience. My top choice at the Club right now: Domaine Serene Evenstad Reserve Cheers!

“The Magnificent Lives of Marjorie Post”

Mrs. Post, the President and First Lady are here to see you…So begins another evening for Marjorie Merriweather Post. Presidents have come and gone, but she has hosted them all. Growing up in the modest farmlands of Battle Creek, Michigan, Marjorie was inspired by a few simple rules: always think for yourself, never take success for granted, and work hard – even when deemed American royalty, even while covered in imperial diamonds. Marjorie had an insatiable drive to live and love and to give more than she got. From crawling through Moscow warehouses to rescue the Tsar's treasures to outrunning the Nazis in London, serving the homeless of the Great Depression to entertaining Roosevelts, Kennedys, and Hollywood's biggest stars, Marjorie Merriweather Post lived an epic life few could imagine. Not content to stay in her prescribed roles of high-society wife, mother, and hostess, Marjorie dared to demand more, making history in the process. Before turning thirty she amassed millions. But it was her life-force, advocacy, passion, and adventurous spirit that led to her stunning legacy.

“Demon Copperhead”

It’s a brave writer who takes on a retelling of Dickens. Yet the American author Barbara Kingsolver’s Demon Copperhead, which transposes this English, quasi-autobiographical Bildungsroman to her home territory of Appalachia, feels in many ways like the book she was born to write.

This powerful reimagining of David Copperfield follows one boy’s struggle to survive amid America’s opioid crisis. Kingsolver’s hero Damon Fields, known as Demon and nicknamed Copperhead for his red hair, is born to a drug-using teenage single mother in a trailer in Lee County, Virginia. After enduring being fostered by the pathologically insolvent McCobbs, Demon finds a home with Coach Winfield and his daughter Agnes. Under Winfield’s tutelage he becomes a rising school football star until an injury nudges his recreational drug habit into full-blown opioid addiction. David’s struggle to find purpose in life becomes Demon’s battle to achieve sobriety and transcend the failure of those around him “to see the worth of boys like me, beyond what work can be wrung out of us - Farm field, battlefield, football field.”

Favorite golfer of all time: Tiger Woods

QUICK TIP: When putting, speed is more important than line. Put an alignment stick or a couple tees about 2 feet behind the hole. From roughly 15 feet, roll 7-10 putts towards the hole. See how many balls you can get come to rest in between the ball and alignment stick or in the hole. Move back to 30 feet and try the same thing. With consistency, your confidence will build, and you will see the line better. Remember, the more you practice, the luckier you get!

Course that you haven’t played, but would like to…Augusta National

Favorite Club in the bag: Putter

Favorite golfer of all time: David Duval

QUICK TIP: Pay attention to the alignment of your clubface and yourself at address. With all clubs, pick out a spot just a couple of feet ahead of your ball in-line with your target (this may not always be the flag).

Then, when addressing the ball place the clubface down first aimed at that intermediate point. It will be easier to be correct over a couple of feet than it will over a couple hundred yards! Then align your body parallel to that imaginary line between ball, point and target. Commit to your swing and watch the ball fly towards your target! Play well!

Do not just simply aim at that point, break the putt into 2 halves...how much is the putt going to break to that point and how much it it going to break after that point?

STONE McCALL

Favorite Major Championship: The Masters

Favorite Sporting Team: Cincinnati Bengals

Course that you haven’t played, but would like to…Pebble Beach

Favorite Club in the bag: Driver

Favorite golfer of all time: Scottie Scheffler

QUICK TIP: To have a consistent golf swing, tempo is essential. Whether it be a short pitch or a long iron and even driver, the tempo of the golf swing must remain consistent throughout the entire bag. This promotes good ball striking and prevents getting too quick and over swinging.

Top 100 Instructor Krista Dunton brings a level of excitement to Berkeley Hall Golf Academy that’s unparalleled.

everyone is built differently. No one is going to swing the golf club the same, nor should they, as we all have different physical structures. In my 25-plus years of teaching, what makes me different is I know what to leave alone and what to pinpoint and fix so you build a golf swing you can own and it can repeat on the course.”

DAY 1 We use technology to get a game plan of where you are and where you’re going to go to.

DAY 2 The process of getting your game on the course. How to think correctly, make it productive, implement swing changes under competition and pressure.

Dunton’s unique, custom approach is matched by the award-winning technology at Berkeley Hall’s 33-acre Learning Center. “We have the technology to properly diagnose what’s going on with the golf ball, the golf club. I individualize what you can do with your body through bio-swing dynamics, because

Once on the course, Dunton works on the other elements of human skills: how you think, react to your shot, manage your emotions and develop great technical skills that repeat under pressure, with a good mental set that allows you to perform at your best.

“We are fortunate to have some of the best technology so we can measure and assess. We measure so we don’t guess, and the changes we make as your teachers and coaches are going to help you improve your game.”

DAY 3 How to keep this going, and practice correctly and efficiently.

ON THE GREENS: LOOK AHEAD

s we move into late spring/ early summer, both courses are playing well and the overseed has provided excellent playing surfaces during the winter and spring golf seasons. The Agronomy team is preparing for our busy summer maintenance and project schedule as we implement essential course maintenance.

POA ANNUA

I would be remiss if I failed to mention that pesky Poa Annua (Poa) weed that we and most courses in the Lowcountry struggle to control. We currently have nine Berkeley Hall Poa plants being tested at the University of Tennessee for herbicide resistance. We should have some results this summer and will use use that data to help guide our decisions in late summer and early fall when it comes time to treat for Poa.

OVERSEED

Over the next few weeks, the Bermudagrass will begin to overtake the Ryegrass in the fairways. If the weather stays on the cooler side, we may use some products to encourage Bermudagrass over the Ryegrass, but we will wait to see how the weather plays out. We did overseed the par 3 tees and #18 tees on the North Course as a trial. With rounds at all-time highs and Poa pressure we thought it would be more aesthetically pleasing and recover better during the winter

and early spring play. We are encouraged by the results and may look to do more overseeding of the tees next season.

SUMMER PROJECTS

This summer will be exceptionally busy for the Golf Course Maintenance team, as each course has two summer closures. We are adding a new process to the South Course tees this year called “fraze” mowing. This process involves an aggressive cutting of the tee surface. It has shown great results in battling Poa because it mechanically removes the seed from the soil underneath the tee. The North Course greens will receive an aggressive verticut to work on the organic layers and grain. We will also be doing the drill and fill to North Course greens as well.

During the summer closures we will be focused on reducing some of the bunkering on the South Course

while increasing the size of a couple tee areas on #5 and #16 South. We will also be repairing a few problematic bunkers on the North Course. During the heavy rains of August last year, we identified some areas that need additional drainage, and we will add more drainage in these areas to help us reduce cart path only days.

The Golf & Greens Committee is working with management on the entire scope of work for the 2025 North Course closure. We will provide more insight later this summer on plans for the North Course. It is important the plan is in place so we can secure contractors and materials for 2025.

As stewards of our two spectacular Tom Fazio courses, our continuing mission is to provide the premier golf experience that our membership enjoys. We look forward to seeing everyone out on the greens!
