Some nights I pul led u p the hem of my clothes and clawed at my ski n, searching for signs that I was becoming one.

Iowa was a place I began leaving constantly to seek out and crawl through gutted mining towns and looted industrial buildings, bombed-out barracks and contaminated environmental zones in countries whose languages I couldn’t speak, places that excrete warnings of the wars and quakes and depressions they’ve witnessed.

Native Iowans told me about the dangers of al l the state’s rivers, the flat and modified land that flooded a year before I arrived and formed lakes, roof peaks jutting from the surface like coastal boulders and forming currents across roads, the moldy basements when the water drained the closest thing they had to ruins.

I watched the river out my window, and I wil led the stagnant water to prove it.

COLD FRIED CHICKEN, BUT TER MILK “RICOT TA,” TABASCO, CAVIAR Cold fried chicken is right up there with cold pizza on my list of favorite leftovers. I think it’s as good as hot fried chicken. Jon Bignelli, a longtime part of the wd~50 kitchen, came up with the idea for a cold fried chicken course. One frustrating thing about cold fried chicken is how the meat reacquaints itself with the bone and becomes difficult to separate, so we took the bone out. And we maximized the pleasure of the dish by making our fried chicken out of all thigh meat. We cooked large terrines of it sous vide, cut them into bars, and breaded and fried them just before service. Then we threw the chicken in the freezer to chill it quickly, so diners would get cold fried chicken that was still moist (because even the best fried chicken in the world dries out a little in the fridge overnight). When we were staring at the almost-finished plate—chicken, Tabasco sauce, ricotta—I realized that caviar could make it a fun high-brow, low-brow dish.

1.

For each serving, cut a piece of fried, chilled chicken in half and place the halves

end-to-end (as though they’re hinged) on a plate. Pipe 3 dots of Tabasco fluid gel around the chicken.

2. In a saucepan, stir the “ricotta” over medium heat to warm through. Place 3 spoonfuls around the chicken. Place a quenelle of caviar, about the size of a demitasse, over 1 pile of ricotta. Finish with 2 pieces of chicken skin and sprigs of chervil.

Egg Shop Nick Korbee 17 HAM AND EGG SANDWICHES— OR, LOSING BETS AND HAVING TO MAKE A LOT OF SANDWICHES One day after a very long lunch service the staff was “unwinding” at the local. A friendly debate began regarding which menu item had been the most popular the previous month. We went back and forth between the Avo Egg, the B.E.C., and the El Camino. Unwinding, as we tend to do it, usually results in placing bets on nonsensical and harmless things.

At the time, Sarah Schneider (Egg Shop Founder) was particularly interested in ham and egg sandwiches and organizing a tasting for possible new menu items. I was most interested in being right about the bet, as I was fully convinced I would emerge victorious. I was so confident I asked Sarah to pick a number between 1 and 20. She picked 17, a bold move. I was hoping for a number under 10. But, unwinding as we were, the bet proceeded and the stakes were named. If Sarah was correct regarding which item had been the most popular, I would be obligated to create and prepare a tasting of 17 variations of the ham and egg sandwich. I did not emerge victorious. What follows is my creative exercise, a visual guide in miniature to those 17 sandwiches, with recipes for 3 of our favorites following. Cheers!

17. HOLIDAY IN WAIKIKI: grilled pickled pineapple, sunny- up, fried ham, pan con tomate
