Avgolemono Soup Avgolemono soup is a classic Greek dish that can be served either as a light entree or as an appetizer. Use either rice or orzo pasta, whichever one you prefer. Be sure to dice the chicken breast in small pieces so they cook through quickly.

INGREDIENTS 2 Tbsp olive oil 1 cup chopped onion 5 cups chicken stock, plus 1 cup water 1/2 cup orzo or rice 1 pound skinless chicken diced Salt 3 Tbsp lemon juice 3 eggs Fresh parsley for garnish

METHOD Heat the olive oil in a medium pot and saute the onions over medium-high heat until they are soft and translucent, 4-5 minutes. While the onions are cooking, bring another pot of salted water to a boil and add the orzo or rice. When the onions are ready, add the chicken stock and water and bring to a bare simmer. When the orzo or rice is nearly done — firm, but mostly cooked — drain the boiling water and add the pasta or rice to the chicken broth. Add the diced chicken breast to the pot. Let this cook 5-8 minutes, then taste the soup for salt. Beat the eggs in a bowl. Whisking constantly, add the lemon juice to the eggs. You will need to temper the eggs before you add the egg-lemon mixture to the soup. It takes both hands to do this. With one hand, whisk the egg-lemon mixture vigorously. With the other, slowly pour in a ladle's worth of hot broth. Do this at least twice, and you can add as many ladle's worth of broth as you want to the mixture. Turn the heat off the soup. Whisk the soup with one hand while you pour the hot egg-lemon mixture in with the other. Serve at once, garnished with parsley.

Palaver International Literary Festival – A Celebration of Caribbean Literature The Second Annual Palaver International Literary Festival was a celebration of Caribbean literature, music and cuisine held August 6th and 7th in Wasaga Beach at Beach Area Four. The two-day affair began with an open microphone at Beach Area Four staged for outstanding poets and storytellers for both days followed by the opening ceremony at noon. The 2016 Palaver Awards Dinner took place on August 6th at the RecPlex with this year's theme “A Birthday Toast to Jamaica”. All enjoyed a star-studded after-dinner show and presentation with the popular folk music ensemble, The Heritage Singers along with famous Jamaican Jazz Pianist, Orville Hammond. Mike Jarrett, founder of the Palaver International Literary Festival, is a writer and journalist for more than 40 years. Born in Jamaica he retired in Canada with his Jamaican wife who grew up in Canada. Mike had never visited Canada. “I never visited Canada before, it didn't take me twelve hours to like what I was feeling not just what I saw but what I felt and here I am sixteen years later,” said Mike Jarrett. The premiere edition of his book, “All in The Same Boat” was published in November 2014 and launched for general distribution on August 8th, 2015 at the inaugural Palaver Festival. This book is an autobiography tracing the 30-year journey of Mike Jarrett as an advisor to the Caribbean Shipping Association, records the contribution of a number of stalwarts. “It's a history and therefore what I'm hoping to do is to connect people with what transpire over a period of time that I had a front row ring side seats.”

The vision of the Palaver Festival according to Mike is an event of human beings to understand each other. “If you do not understand each other as people we make mistakes about each other we draw around conclusions about each other. Far more importantly we do not come together which is where strength comes from.” He further explains, “Just like little paper boats on a stream each floating uncontrolled without directions, like a small stream running down the hillside unharness if you are able to harness that stream, you would be able to make a resource if you don't it doesn't do anything.” For two-days participants shared the enriching and meaningful experience that is “Palaver”. “If understanding is what we are after, we need to be reading at least understanding each other stories. Therefore the event best presents that platform.” But for Mike it is through literature, books, documents, ideas and speaking of those stories to each other. “Storytelling was very big this year at Palaver it's a major element at the festival. People telling their own stories by that I don't mean stories that begin with 'Once Upon a Time'. For information and registration visit palaver.ca. You’ve got to love the Ontario weekend. I guess that’s why we have so many people coming to Wasaga Beach these days. Eva and I decided to do a weekender ourselves and took the pooch to visit my sister and husband at their campsite on Lake Nipissing. Steaks on the barbecue, our favourite drink in hand and lots of crazy fun conversation with the camping neighbours. I even got to tent with family dog Duke and we are now tent buddies. He was so good. Ok so his mom insisted that we take his orthopaedic dog bed with us and his doggie blanket in case he got cold, etc., etc. No wonder Duke thinks he’s a person. Eva and I got to visit with my parent’s best friends who still spend their summer weekends at the campgrounds. We heard a few good stories about my Mom and Dad when they were part of the fun group that camped together every summer in this very campground my sister and husband still occupy with their trailer year after year. It was a great opportunity to put all the hectic stuff behind us and just chill with good company and a lot of good hearted conversation. It gave us time to enjoy the quiet of nature as we took Duke for a walk while taking the lake scenery across the bay. There was also time to take in the favourite butter tarts made by Jean Marc’s Boulangerie from the nearby town. Oh yes and then we had their wild blueberry pie as well. OMG sensational! We had a chance to catch up with my sister and husband and also had the opportunity to plan a weekend with all of my other siblings in August since one of my nephews is visiting from China for the first time in 6 years and my niece and family are back on vacation from Edmonton, Alberta. What a great experience and we got to deposit a few more good memories in the family memories bank. I guess you don’t realize, day to day, how you can miss out in life if you don’t stay connected with the people you love and enjoy to be with. Can you give me some tips on how to get started andthe best way to journal? Answer: Several studies have shown that people who keep food journals are more likely to be successful in losing weight. The simple act of food journaling is an excellent way to bring instant awareness to what, how much, and why you are eating. Journaling helps identify areas where changes might need to be made, whether it’s recognizing a food allergy or sensitivity, or realizing that many of your daily calories are coming from mid-afternoon beverages and late-night snacks. Decide on what type of journal will work for you. You might choose a simple notebook and manually log or you could use a smart phone app (like Anytime Health) and track digitally. Next, start logging your food. It makes the most sense to log right after you eat,whenever possible. Be sure to include time of meal, food amount/portion size, and degree of hunger. Be as honest and thorough as you can. It’s easy to forget the handful of M&M’s at the office or that alfredo sauce on your lunchtime pasta. Review your journal weekly, either on your own or with a dietitian to determine eating patterns that are positive and those that need a change to help you move towards a healthier lifestyle. Question: Can you please explain what Tabata is? I know it’s a form of intense exercise, but what exactly do you do? Answer: Tabata training is a specific type of high intensity interval training that is short in duration but extremely HIGH in intensity. Japanese scientist Dr. Izumi Tabata and his team of researchers in Tokyo discovered Tabata Training. Tabata’s research was done on two groups of athletes: one group training at moderate intensity (5 days a week for 6 weeks for one hour at a time) and the other at a much higher intensity (4 days a week for 6 weeks but for only 4 minutes

Like the beach, the Nottawasaga River has a long history and has played an important part in the development of Wasaga Beach. Over the years, the river has served many purposes for many people and businesses. It was always used as a transportation route for the natives of our area and then continued to be used as an important part of the main travel route from York (now Toronto) to Penetanguishene and beyond. During the 3 year War of 1812, the Wasaga Beach portion of this route was so important, Schoonertown, a small military outpost was built at the current site of the Schoonertown Bridge. Our Nottawasaga River also saw the battle and the sinking of the HMS Nancy during this conflict and is now recognized with the museum on Historic Nancy Island. When logging was a thriving industry around Southern Georgian Bay, the river was instrumental in moving the fallen trees in huge log booms out into the bay and on to other ports. Commercial winter ice recovery was important and kept perishables cool throughout the summer months and when the ice went out every spring, commercial and

sport fishing flourished. The tranquil beauty of the winding river did not escape the eyes of the millions of visitors discovering Wasaga Beach! Unique in the world, our river boasts beautiful sandy dunes sloping towards the river while other areas provide perfect shorelines for boating and fishing. Cottagers found the Nottawasaga River running through our town provided even more “waterfront” and allowed for docking and boating from their own properties. When the cold winter months allow for the river to freeze, snowmobilers have enjoyed our frozen river that at one time allowed for easy access to the many hotels and lounges that were dotted along the shores. Wasaga Beach's annual Winter Carnival was once held on the frozen river, under the Main Street Bridge. Yes, we will always be “The Beach”, but let’s remember how lucky we are to have the Nottawasaga River as an important part of our town, allowing for additional, unique outdoor enjoyment and recreation!

In other words they literally got fitter faster! You can see how this is becoming a popular method of training. The Tabata protocol is only 4 minutes of exercise but within those 4 minutes, you perform 20 seconds of extremely high intensity exercise followed by 10 seconds of recovery and repeat 8 times in a row. In order to get the results Tabata saw in his study, you need to workout as hard as you possibly can for each and every second of the intervals (to a place where you literally cannot say a word and do not feel like doing the work again). You can choose any exercise that allows you to achieve the intensity described. Tabata workouts are intense, but great if you are short on time, need to break through a plateau, or you are just looking to change up your exercise routine. You should always build in significant recovery after a Tabata workout (easier workouts the next day or two) and keep in mind that if you are doing Tabata training right, you will not want to go for very long!
