Roasted Turkey Breast Stuffed With Goat Cheese, Cranberries and Pears With the holiday's approaching, it is time once again to put our diets on hold and partake of the food and spirit of the season. This recipe for a Turkey breast stuffed with pears, cranberries and goat cheese is a guaranteed, sure fire way, to wow your guests. Serve with a turkey au jus and garnish with thyme and fresh sage.
1 lb Turkey breast with skin on 1 tbsp butter 1/2 onion diced 1/2 pear peeled and diced 1/4 cup dried cranberries 2 tsp fresh thyme chopped 2 tsp fresh parsley chopped 2 tsp fresh chives chopped 1/2 tsp salt 1/4 tsp pepper 2 slices white bread 3 oz goat cheese crumbled Canola oil 1 Carrot sliced thick Celery heart Heat butter in a sauce pan. Add the onion and saute' until translucent. Add the pear, cranberries fresh herbs and salt and pepper. Cook for 1 minute. Transfer to a bowl and add the bread cubes. Mix until combined and cool for about 10 minutes. Add the cheese and mix well. Adjust the seasoning and set aside. Lay the Turkey breast on a cutting board and butterfly it. Make sure you do not cut through it all the way and that the meat is of an even thickness. Fill with the cooled stuffing and tie up with butchers twine. In a roasting pan, make a bed of the celery and carrots and thyme and set the stuffed Turkey breast on top. Brush the top of the breast with oil and sprinkle with a little more salt and pepper. Bake in a 350 degree oven until the internal temperature reaches 170 degrees Fahrenheit. Remove from the oven and cover loosely with foil. Remove sprigs of thyme and use pan drippings to make the Jus.
Turkey Au Jus All the drippings from the pan 1/4 cup white wine 1/2 tsp butter 1/2 shallot finely chopped 3 Tbsp flour 2 cups chicken broth salt and pepper to taste Deglaze the turkey pan with the wine scraping down any brown bits Add butter to pan and add the diced shallots and cook 2 minutes. 3rd Annual It'z Your Wedding Show Wedding bells will be ringing at the 3rd Annual It'z Your Wedding Show taking place at the Westin Trillium House in Blue Mountain on Sunday, November 27th from 11:00 a.m. to 3:00 p.m. Over 50 local vendors are anticipated including photographers, florists, venues, live musicians along with a bridal fashion show presented by Exchanging Vows Bridal Boutique in Collingwood. According to Amanda Jerome, organizer of It'z Your Wedding Show, the event promotes local businesses. “Big supporter of local any of these vendors can be found within a 50-km radius of Collingwood, Blue Mountain anywhere in Southern Georgian Bay.” The idea came three years ago for Amanda in bringing local vendors together. She felt there was a niche in the market to showcase vendors and their talents to all future brides and grooms. “There's nothing quite like it locally. It's a fun afternoon for all of us vendors to get together as well as to show off our talents to all the brides to be in 2017. We are such an amazing community of people where we work together, florists with florists, photographers with photographers. I work with Tara Klein from Exchanging Vows Bridal Boutique she is an amazing contributor to this show. Tara will feature pop up bridal shop at the show where you can purchase your wedding gown as well as sample sale that day.”
Along with organizing the event Amanda wears many hats, she is a co-publisher with Christine Patchall for “It'z Your Day Wedding Guide” and an Event Planner and Graphic Designer. This is a paper publication published yearly during the winter season. “It is a paper version of a wedding show. It shows all of the local vendors as well as great advice articles and featured articles of these vendors giving the brides an overview of what we have to offer in the area.” As an Event Planner and Graphic Designer, she can provide services from consulting to giving advice and interviewing brides to get a better sense of their visions for the big day. “Each and every bride/or couple is unique not all venues are suitable for them, so I can help them filter out the process of finding the perfect place, the perfect florist and photographer. Beyond that help with the planning of their full day including itinerary, floor plan development and of course being there for them on the big day, managing the vendor deliveries overseeing the set up and just being their right hand woman,” said Amanda.

You may think this is a technology story but guess what? It’s about the kind of people that live in Wasaga Beach that will keep moving our Town up the satisfaction curve as the place to live, learn, work and play. Take Solar Guy Kevin DaSilva. He liked The Beach so much he gave up a big company job in Toronto to live here permanently and enjoy what The Beach offers all year round. After a project job placement with his company working in the area Kevin did not want to leave. Working for Ethoenergy, his current employer, he laid out a business argument for Wu Wus to go solar and the benefits he demonstrated worked right into the vision Alfredo and Mary DaSilva have for creating the best fit for what they offer and what their customers want in a holiday in Wasaga Beach. Kevin DaSilva (no relation to Alfredo and Mary), is also a student of running a business in his own right. Thanks to Kevin and his partner Emily, many people experienced Flyboarding at The Beach this year. Their new business added to the tourist experience buzz that was created in The Beach this past summer. I got a first-hand experience of the passion, technical knowledge and capability and energy Kevin puts into developing solar power solutions for people. Having spent 17 years in the electric power business myself, I was impressed with the depth and breadth of Kevin’s knowledge and relevant experience. The decision to go solar by our Wu Wu’s Cabins owners was just a matter of fact approach to making good business decisions. Their secret sauce to their business comes into play by delivering the best accommodation experience for their customers they can at the right price. What’s evident is their personal approach with customers, sense of family values and an obvious desire to treat their customers with care and respect the way they would expect to be treated themselves. Alfredo and Mary are part of a large Portuguese family. Many of their relatives helped them renovate when they first bought the property and since then, Alfredo and Mary have been improving the facilities and building the business year over year. Even their granddaughter Isabel had a hand in shaping the business. She could not pronounce the letter “v” in the Portuguese word for grandfather and out came the name “wuwu” she used for her grandpa. This inspired Alfredo and Mary to call their newly acquired property Wu Wu’s Cabins. “This past season was a very good season for us”, Alfredo commented. He went on to say they experienced a return of many Quebec customers. People are coming back to The Beach. I learned that their hard work is paying off. You only need to read what their customers are saying about them in Trip Advisor and Expedia.ca. This family knows how to create a great holiday experience and win the loyalty of their customers in a business that is steeped in Wasaga Beach tradition. They want people to have fun and create great memories when they visit us. I keep thinking you don’t need a big hotel chain to do that. With the winding down of the Wasaga Beach Fish & Game Club, the club's funds have been generously passed on the Central Ontario ATV Club (COATV) with the understanding that funds would be distributed to some great local organizations and initiatives. $500.00 to the local Salvation Army, $500.00 to the Wasaga Beach Ministerial Food Bank and the remaining (approximately $7,000.00) to be used to help with the repairs to the COATV Club House in Wasaga Beach and to help with the purchase and delivery of the new Rescue Ranger ATV to the Wasaga Beach Fire Department. Wasaga Beach Remembrance Service and Reception, Nov. 6, 2016 The annual Wasaga Beach Remembrance Service is held the Sunday before November 11th at the Wasaga Beach Cenotaph located at Town Hall. Hundreds stood under beautiful blue skies to remember those who have served and those that continue to do so. After the service, all were invited to a friendly community reception held at the Wasaga Stars Arena, to raise a glass in remembrance.

Question: Is it true that I’m supposed to drink 88oz. glasses of water per day? Answer: This is actually a more complicated question than you might think, but the answer is no, not necessarily. The daily Adequate Intake (AI) for water is 3.7 liters (132 ounces) for men and 2.7 liters (96 ounces) for women over age 19. You’re probably thinking these numbers are high, but that’s because they represent total water intake from both fluids and foods. This even includes beverages with caffeine and alcohol, since the Institute of Medicine concluded that they contribute to overall hydration, assuming they’re consumed in moderation. Generally speaking, we take in 80% of our water from fluids and 20% from foods, so doing a little math gives us about 105 ounces for men and 77 ounces for women per day. These are rough estimates gathered from national data, and they may be appropriate for some, but how do we go about individualizing these recommendations? It’s actually pretty simple. Ideally, we should base our fluid needs on body weight, since a heavier person clearly needs more water than someone who weighs less. Therefore, a good goal is to drink half your body weight in ounces each day. This approximates the daily fluid losses from your body. For example, a 160-pound person should drink roughly 80 ounces of fluid per day. A simple way to check if you’re adequately hydrated is to make sure your urine color is pale yellow to clear on a consistent basis.
