Turkey Rundel Gaelic for "by a clear running stream" this dish exemplifies a brilliant combination of ingredients, infusing scallops with turkey in a light and succulent dish. We wrapped the stuffed turkey in chicken skins, as we could easily obtain them from any butcher shop by letting them know in advance how many we needed. They impart a rich juicy flavour, otherwise lacking in the lean turkey escalope and give it a finished look.

In a blender put the bay scallops, egg whites and salt and blend until smooth. Place the chicken skins fat side up on a clean cutting board. Gently flatten the turkey escalopes, about 5 oz each, between two sheets of saran wrap using the flat side of a knife. Place on top of the chicken skins. Lightly season the turkey with a little salt and pepper. Run fresh spinach leaves under hot water until soft and pliable. Lay these on top of the turkey escalope. Spoon a layer of the scallop mousse on top of the spinach and roll up. Bake at 350 degrees F seam side down for about 20-30 minutes and the skin is golden brown. Deglaze the pan with a little brandy or wine and allow to reduce until it reaches sauce consistency. Adjust the seasoning with a little salt and pepper. Add a little sugar to a sautee pan and add the cranberries. Cook until they are soft but still hold their shape. Add to the sauce.

Wasaga Beach Lions Club Takes Vision Screening Hi-Tech Wasaga Beach Lions Club is proud to announce the 1st Legacy Project to celebrate Lions 100th birthday in 2017. In 1925, Helen Keller spoke at the Lions International Convention and she asked the Lions to take up her challenge. “Will you not help me hasten the day when there shall be no preventable blindness; no little deaf, blind child untaught; no blind man or woman unaided? I appeal to you Lions, you who have your sight, your hearing, you who are strong and brave and kind. Will you not constitute yourselves Knights of the Blind in this crusade against darkness?” Purchasing a new vision screener and offering to test every prekindergarten student has been the biggest step in our clubs history of fulfilling Helen Keller’s challenge. The purpose of a Plusoptix Vision Screening Device is to detect most common vision disorders in children. Plusoptix Vision Screening devices take binocular readings from 1 meter away in less than one second. Beach Corner A Year in Review Hard to believe Beach Corner celebrated four years this past November. It's been a true pleasure bringing entertainment, festivals, concerts and events to our community with beachboosterradio.com. When I look back at this year I had some incredible guests that graced Beach Corner. The most memorable interviews were with the Late Bobby Curtola where I had the honour of interviewing not once but three times. He began his musical career at the tender age of 16 and after performing the Bob Hope Show in 1960 “Curtolamania” was born until his untimely death in June. Bobby was full of energy and his love for music and his fans were utterly genuine. Thanks to Wasaga Beach Beer Company for presenting Bobby Curtola to our 5th Annual WFF Red Carpet Gala Awards, Bobby commanded the stage at the gala night and had the audience in the palm of his hands. The Spoons with Sandy Horne and Gordon Deppe were also a favourite having been a fan of their music for the most part of my life. I met both Sandy and Gordon at the Summer Stayner Outdoor Festival where I had a chance to chat with them. When speaking with Sandy I felt like she was my best friend. Jeff Woods radio broadcaster, author and publisher of “Radio, Records and Rock Stars”. Jeff is known as “Canada's voice of classic rock” he interviewed almost every Rock Stars on the planet. Consumed by music for over 30-years hosting radio programs and series, since 1983, Jeff was the creator and host of “The Legends of Classic Rock” heard internationally by a million weekly listeners across Canada and the world for fourteen seasons. He published his first book titled “Radio, Records and Rock Stars” released on May 2016 which has garnered great success thus far. I had the privilege of interviewing my long time friend, Gil Moore. Gil is owner of Canada's biggest recording studios “Metalworks Studios” in Mississauga, founder of “Metalworks Institute for Sound and Music Productions” and famously known as the drummer and vocalist of multi-platinum award rock band, “Triumph”. The interview took place at Metalworks Studios my old stomping ground. It was so nice to reconnect with Gil after all these years. This was followed by Canadian icon Rik Emmett aka vocalist for Triumph and now with RESolution 9. Rik released RES 9 this past November where his album reunited Triumph band members, Mike Levine (bass) and Gil Moore (drums/vocalist) along with guest artists, Alex Lifeson from Rush and James LaBrie from Dream Theater. These are just some of the celebrities I hope you enjoyed listening on Beach Corner along with covering some of our community events and festivals. I truly want to thank Joe Bickerstaff and Bill Frieday for giving me this opportunity in hosting a weekly radio show along with Rick Seon who created my awesome Beach Corner posters, the beachBOOSTER team and sponsor, Exchanging Vows Bridal Boutique. A North Pole Scoop: Santa has Roots in Wasaga Beach

Some people get a personal audience with the Queen. Others get to meet the Prime Minister. My wife Eva and I got to meet Santa and Mrs. Santa. And guess what? They came to our house for milk and cookies just a few days before the Wasaga Beach Santa Claus parade! Now how special is that? It’s not every day you get to interview Santa. So, Eva and I were racking our brains trying to think of questions our Beacher readers would want to ask. The best place to start was to ask how Santa got his start. Our Santa is some 150 years into his tour of duty. But the way he puts it, this tour of duty is an honour and a pleasure to make all our children across the world happy on Christmas Day. He told us that he did not take his duties lightly. He spent hours at Timothy Eaton’s store in downtown Toronto f o r m a n y consecutive years learning about all the toys Eaton’s was featuring each year. He wanted to be totally up to speed on what kids needed and wanted. He learned what’s in and what’s out when it comes to the sought-after toy of the year. We were so impressed with his knowledge and known history of toys and their popularity. He talked about a host of toys like Barbie, Cabbage Patch Kids, Tickle Me Elmo, “Star Wars” action figures, you name it, he knew so much about them. Matter of fact, Santa’s latest Santa suit comes from the Eaton’s Toronto Santa Parade. Santa went on to say how busy he had been and will be in our area leading up to Christmas Day. He was so excited about being the real Santa for the Wasaga Beach Santa Claus parade this year and went on to say how booked solid he was to do children meet and greet days, special family requests, attending the Wasaga Beach Town Christmas Party and a host of other engagements. He even got to drive the Meaford Zamboni this year! In the last few years, it’s been his most busy time since people have learned that he has a Wasaga Beach telephone number listed under one of his elves Edmund James Allen, aka Ted. And we learned a whole Christmas Stocking full of facts from Santa during our great visit. Because of his dedication to be the best Santa ever, Santa had so many things to tell us about his work and Christmas. I’d say, he could create his own Santa Trivial Pursuit Game. Did you know that reindeer are the only animals in which both male and female of this species have antlers? Did you know that on Christmas Night Santa cruises the earth counter to its rotation so that he can make the most of night time when he delivers toys over the world? Did you know that the early candy canes were all white before they were spun with red and white candy? He went into explicit details on how he uses his magic glitter dust to make himself shrink so he can make it down any size chimney. He knows all these details, facts and figures because he always wants to have an answer for any question he gets from all our children. He also had a few Christmas requests for our Beacher Mom and Dads. If you don’t have a chimney, please leave your backdoor unlocked on Christmas Eve. He will lock up after he leaves. His favourite cookies with milk are chocolate chip. Totally Unexpected Uses for a Crockpot Did you know that you can whip up a batch of homemade scented soap with the help of your slow cooker? You will need 16 ounces of coconut oil, 16 ounces of olive oil, a helping of lye, and the essential oils of your choice. Measure your ingredients into the slow cooker, and turn on the heat. Stir the mixture carefully, and wait for it to set. Use your slow cooker to make candles? Yes, you sure can! Not only is it a fun project, but it's a great way to repurpose wax chips from old candles that have burned down. Simply grate or shred the wax into the slow cooker, and heat on low. Then, prep your molds (old coffee cans or plastic containers work well) by oiling them with a bit of cooking spray. Tie a fresh wick (available at craft stores) onto a pencil, suspend the pencil across the top of the mold, and tape the bottom of the wick in the center of the mold. Once the wax has melted, pour it into the mold, and let it cool. Once the wax has hardened, trim the wick and light it up. An old crockpot filled with water makes a great humidifier—a must-have during the dry months of winter. Fill the pot about three-quarters full with hot water, cover with the lid, and turn the appliance to its highest setting. After 15 minutes, remove the lid and let the steam saturate your indoor air. You can use a slow cooker to turn broken crayons into fresh art supplies, with the help of inexpensive silicone molds that you can buy at craft stores. Sort all of your old crayons by color family, and remove the paper wrapping. Place the broken bits of a single color into the slow cooker, and heat on low until the pieces have melted. Pour or ladle the melted crayons into silicone molds and place in a cool, dry location until they've cooled completely. Then, break out the coloring sheets and set the little ones to work. A slow cooker makes a great vessel for simmering liquid potpourri. Place fruit and spices into the slow cooker, add just enough water to cover, and turn the switch to a low setting, leaving the lid off. Go with deliciously scented basics like apples and cinnamon sticks or oranges and cloves, or experiment with lemons, bay leaves, evergreen sprigs, or ginger to find a personalized scent that’s perfect for your home. You can use a crockpot to take a lot of the effort out of removing paint from small metal objects like hinges, drawer knobs, and cabinet hardware. Simply place the items into the slow cooker, cover with water, and let them soak overnight on high. For really tough, dried-on paint, add a few drops of liquid detergent to the water. Let the items cool to the touch, then give them a scrub with an old toothbrush. The paint should slip right off, leaving you with like-new hardware for your next upgrade. Knitters, crafters, and other handy types can use a slow cooker to dye fabric or yarn. Place the materials (natural fibers work best) in the slow cooker, and cover with a mixture of four parts water to one part white vinegar. Heat on high until the mixture is steaming, then add food coloring—one drop at a time—until you achieve the desired shade. Let the soupy mix simmer on low for two to four hours, then rinse your threads in warm water and allow to dry thoroughly before using.

Turn your slow cooker into a bartender by using it to cook up a hot cocktail this holiday season. Mix up all of the nonalcoholic components of your cocktail in the slow cooker, and keep it covered. When you're ready to serve, pour your spirits into a glass, then ladle in some of the heated mixture. Be sure to keep the alcohol out of the appliance or it will cook off before you are ready to imbibe. Here's a fun project that the kids can help with and enjoy for weeks to come—making their own play dough. Mix two cups of flour, ½ cup of salt, and four tablespoons of cream of tartar in the slow cooker. After that, pour in two cups of water, two tablespoons of oil, and a bit of food coloring. Place a damp towel under the lid, and cook the colorful mess on high for 45 to 60 minutes, stirring often.When done (the dough should easily form a ball), remove the mixture from the slow cooker, knead several times, and allow it to cool. When stored properly, the playtime essential should last three to four months.

The Wasaga Beach Women’s Business Association (WBWBA) celebrated the holidays with our annual Christmas Party at Country Life Resort. Fit and Healthy in The Beach Expert answers to your health and wellness questions by Jessica Brown Question: What’s the best way to wake up my metabolism for weight loss? Eat first thing in the morning before my cardio workout or skip breakfast and wait longer to extend the fasting period? Answer: Exercising in the “fasted state” has been promoted as a way to possibly burn more calories from fat than from carbohydrates. One theory suggests, because the body’s resting metabolism continues to work overnight while the body sleeps, lower levels of carbohydrates will be available for fuel before breakfast, resulting in the body having to use fat as fuel. But, there are an equal number of studies that suggest the opposite. Therefore, we suggest that if fat loss is your goal, it’s more important to consider additional ways to be more active throughout the day rather than limiting your caloric intake prior to a morning workout. Moving more during the day and smart nutrition choices will play a more significant role for long-term fat loss. Fueling for early morning workouts will depend greatly on what works for you. If you choose to eat breakfast, a low glycemic food 30 minutes prior to exercise can provide enough energy to fuel your workout without raising insulin levels, which is known to metabolize and store fat. If you simply like to exercise on an empty stomach, properly fueling the body afterwards is really important, as you’ll want to give the body the correct amount of nutrients to provide lasting energy for the rest of the morning. Question: Are there benefits to using the preprogrammed workouts that are available on the various cardio machines?
Answer: Pre-programmed workouts can provide you with new ideas on how to use the cardio machines and help you avoid getting into a cardio rut. Programs are available on most treadmills, stationary bikes, and elliptical trainers. The programs automatically manipulate variables such as time, incline, resistance, and speed to challenge your heart in a variety of ways. Rolling hills, speed work, intervals and automatic resistance changes can provide new challenges and motivation to complete a workout without you having to decide what to do next. Variety in your cardio regimen can help you break through plateaus, avoid boredom and get more from your time at the gym.
