Point of View How Heavy Is This Glass Of Water? A psychologist walked around a room while teaching stress management to an audience. As she raised a glass of water, everyone expected they'd be asked the "half empty or half full" question. Instead, with a smile on her face, she inquired: "How heavy is this glass of water?" Answers called out ranged from 8 oz. to 20 oz. She replied, "The absolute weight doesn't matter. It depends on how long I hold it. If I hold it for a minute, it's not a problem. If I hold it for an hour, I'll have an ache in my arm. If I hold it for a day, my arm will feel numb and paralyzed. In each case, the weight of the glass doesn't change, but the longer I hold it, the heavier it becomes." She continued, "The stresses and worries in life are like that glass of water. Think about them for a while and nothing happens. Think about them a bit longer and they begin to hurt. And if you think about them all day long, you will feel paralyzed – incapable of doing anything." Remember to put the glass down!

he sweet smell of mesquite charcoal interspersed with the aroma of meat, sizzling on the grill, sends my taste buds into overdrive. Who can resist the temptation of a barbecue on a warm summer night? The main component for a successful cookout is the char broiler itself. The cooking surface must be hot to prevent the food from sticking and the coals should be white hot in order to disperse the heat evenly. Grilling smaller items like shrimp or vegetables can often be the most challenging to cook. Insert three or four pieces on a water soaked skewer. It is a lot easier to turn one skewer than to try and flip three or four shrimps before they burn. This technique also prevents the food from falling through the gaps and into the fire. Try not to turn your steaks more than once. Cook them half way to the doneness that you want before flipping allows the meat to stay juicy and moist. You can rotate them a ¼ of a turn to prevent them from burning and also create a nice cross pattern on the steak. Rubs and marinades are another way to really elevate the savory elements of fish, steak, chicken etc. Most marinades contain sugar and salt for flavor. Charbroiling marinated foods on high heats allows the sugar to caramelize and combine with the salt to take on a unique taste. Teriyaki Marinade 3 cups Kikoman (or brewed) soy sauce 1 cup water 1 cup brown sugar ½ cup garlic buds ½ cup fresh ginger 1 bunch green onions 4 oz sherry
Method In a food processor grind up the garlic, ginger, and green onions. You don’t have to peel the garlic or ginger. Add them to the soya sauce, sugar and water mixture and bring to a boil. Simmer for 2 minutes and remove from heat. Strain the mixture and drain well into a bowl. Discard the garlic and ginger and add the sherry to the marinade. Refrigerate. In a shallow pan place the meat you are using. Pour enough sauce over meat so it’s partially submerged and let it rest in the refrigerator for about ½ an hour. Turn over and allow to sit for an additional ½ hour. Remove from the marinade and you are ready to grill. Save the marinade and make it again within the next few days. It will not be as strong and will require a little longer time to impart the flavor. Keep separate from the original sauce. Another simple way to impart maximum flavor is to coat the meat with a rub. One of my favorite rubs is this easy to make basic spice mix. 1/2 cup brown sugar 1 tsp cayenne 2 tbsp garlic powder 1 tbsp kosher salt 2 tbsp chili powder
Combine and coat it on the meat or fish and let stand for a ½ hour or so. Enjoy and happy grilling Brian Edwards WE Catering www.wecatering.ca

From Craft to Technology by Nancy Bickerstaff Who would have thought that the fabric of your suit or your dress was in some way related to your computer? It is a long story and it took many years but there is a connection! Weaving is a simple process of interlacing threads, but one requires something on which to build it. A simple picture frame or even stakes in the ground will do. The Navaho Indians originally used trees and later, the loom evolved. Although sometimes very simply made, the loom became extremely important during the Industrial Revolution. (late 1700s to 1800) Through this period, the textile industry showed great advances. Hargreaves built the Spinning Jenny which enabled one to increase yarn production as instead of a single bobbin, several could be wound at the same time. New looms were built and a French man named Joseph Jacquard invented the Jacquard loom. Actually an attachment which sat on top of the loom enabling the lifting of a single warp allowing very complex designs. This was made possible by a chain of punched cards and the lifting was determined by the holes in the cards. I believe there is still a Jacquard loom on display at the Ontario Science Centre in Toronto. An English mathematician by the name of Babbage was at this time working on a plan to build a calculating machine. Babbage struggled for years trying to get government funds to assist him. Having knowledge of Jacquard’s loom, Babbage wondered about the punched card idea, but he died a very disappointed man while attempting to build his Analytical Machine. Another English Mathematician, Boole, had similar desires to take the method of using punch cards from the loom to a data processing machine, with no success. IBM was born in 1924 and incidentally so was I. IBM became a world leader in data processing, originally using the punch card idea. We know how the world has changed with the evolution of the computer that all started with the desire to improve the function of the early loom. “Keeping the Community Safe & Reducing Crime through Information Sharing”
Protect your Property “Lock it or Lose it” Generally not a week goes by that that someone does not report to the Huronia West OPP that their “unlocked” motor vehicle has been entered and property stolen. In many case only loose change is all that is stolen, but we have had GPS, lap tops and large sums of cash left in individuals’ wallets left in vehicles, stolen! Thefts from motor vehicles can be stopped. Time and time again it has been proven that this is a crime of opportunity. Below are several tips to help you from not becoming a victim: Always roll up you vehicle’s windows and lock the doors even when at home. Generally thieves will not break windows unless they see something worth stealing and possibly being heard. Never leave valuables in your vehicle while unattended. You are just asking someone to break a window to get it. If you must leave valuables in your vehicle hid them from sight. Cover it or if possible put it in your trunk. Never leave your vehicle keys or a spare set of keys in your motor vehicle. If you can park your vehicle in a locked garage and remember to also lock the vehicle and remove the keys. Store your vehicle keys away from your vehicle in some location you will know but others will not. Never leave garage door openers visible in your vehicle, hide them. They can be used by criminals to gain access to your home. Report suspicious activity, persons or vehicles to Police when you see them not the following day (1-888-310-1122). If a crime is currently being committed call “911” and report it. Keep bushes and trees trimmed to reduce hiding places for individuals who may want to commit a crime (enter your unlocked vehicle). If possible park you motor vehicle in a well-lit area. Park your motor vehicle in an area where you can see it from inside your home. If street lights are out call the municipality to have them fixed. A well-lit street increases safety makes it easier to see suspicious activity and deters crime.

By not locking your motor vehicle while at home you are providing that opportunity to those who would steal from you. It may not happen tonight, or the next day but it will happen if you do not lock your motor vehicle. The Ontario Lottery and Gaming Corporation spoke in front of the Wasaga Beach business community about their efforts to find a private operator for a casino in the area. Rod Phillips, President and CEO of the Ontario Lottery and Gaming Corporation, told the business people at the Wasaga Country Life Resort Rod Phillips on July 18th that the corporation is looking for an operator that will build and manage the planned 300-slot casino. The next step of the process is to find a suitable location. The final decision about the casino in Wasaga Beach will be reached in 2013 with a collaboration between Wasaga Beach council and the OLG. Phillips also added that the Town of Wasaga Beach did an excellent task regarding the casino issue.
Film Production Company Locates in Collingwood I had the pleasure of inviting Tom Strnad (pronounced Sturnad), Producer of Mountain Goat Film Company to Beach Corner. Tom was born in Toronto and lived in Richmond Hill. He decided to move to Collingwood in August 2010 as he enjoyed snowboarding and bike riding at Blue Mountain. This location met both of his worlds allowing him to travel to Toronto for work. Tom has over ten years of experience in film, television and post-production and formed Mountain Goat Film Company in 2011 in a boutique style environment in Collingwood. Tom built these production and post-production services around his own productions and can now offer them to producers across Canada and the world. His goal is to have his company grow in Georgian Bay and build with local talent. Tom found there's a lot of hidden talent in terms of animators, cinematographers, directors and actors along with more and more film industry people. Mountain Goat Productions deliver such services as: feature film production; TV production, post-production, colour correction work, closed captioning and described video work. This film company provides numerous local jobs and attracts Toronto clients with additional tax credit and budget friendly services to Collingwood. Tom says this is an untapped area for film industry in terms of tax bonuses: “There's a regional tax credit bonus for filming outside of the GTA. A lot of companies are starting to film in Hamilton this is another area where people are beginning to film more and more. Sudbury had large amount of companies in terms of location cast and crew. The tax bonuses create a nice area for film industry.” Mountain Goat Film Company surrounds themselves with a team of award winning scriptwriters, producers, editors, animators and designers as well as Canada's top cinematographers. Some of their clients include YTV's “Cache Craze” along with the HGTV series “Live Here, Buy This”. A film titled “Blue Gravity” about a downhill mountain bike adventure released through Platinum known for distributing action sports films throughout North America, won the Silver Remi Award at the 2013 WorldFest Houston Int'l Film Festival. Some of Tom's film repertoire includes: Jazzman (2009); Dead Dreams, an upcoming film “Fortune Hills” set in the early 40's-50's period about two prisoners who escape looking for a hidden treasure. A family feature film “Dynamo Daredevils” the story about two ghost hunting kids who have an ability to see or hear ghosts and track them. A lot of these scenes were captured around Pretty River Provincial Park area and Sunset Point Beach in Collingwood. Mountain Goat Film offers high quality work with a proven track record of domestic and international delivery. Should you be interested in entering the Wasaga Beach Short Film Festival – Video Advertisement category and promote your business at the same time – Mountain Goat Film Company in conjunction with the Wasaga Beach Short Film Festival is offering a professionally produced 30-second commercial only $200 per ad. Natural Medicine: Separating Fact From Fiction B-viamins May Reduce Risk of Age Macular Degeneration (AMD) Dr James Meschino DC, MD, ND A study published in the July 2013 issue of the American Journal of Clinical Nutrition has provided additional evidence to show that higher nutritional status of certain B-vitamins may be important in the prevention of Age-related Macular Degeneration (AMD), which is the leading cause of vision loss in people over 55 years of age in the US and Canada (1). Previous studies have shown that taking certain antioxidant vitamins and minerals, as supplements (Vitamin E, Vitamin C, Beta-carotene, Selenium, and Zinc), at specific dosages, can slow the progression of AMD (2,3) In the current study, known as The Blue Mountain Eye Study (Australia), serum folate (B-vitamin folic acid), vitamin B-12, and homocysteine were determined from blood samples drawn in 1997–1999 from cohort members aged ≥ 55 y. AMD was assessed in 1760 survivors from retinal photographs taken in 2002–2004 and 2007–2009. Total intakes of folic acid and vitamin B-12 were assessed by using a food-frequency questionnaire. Result showed that higher blood levels of homocysteine were associated with a significant increased risk of developing AMD, whereas higher serum levels of vitamin B12 were strongly associated with decreased risk of developing AMD. More specifically, data showed that increased concentrations of serum total homocysteine were associated with ∼30% increased odds of developing AMD over 10 y and increased concentrations of serum vitamin B-12 were associated with ∼ 30% reduced odds of developing AMD. Serum folate was less strongly associated, with an approximate reduced odds of 10% for development of AMD. People with folate or vitamin B-12 deficiency at the beginning of the study (baseline) were approximately twice as likely to develop AMD during the 10-yr study period (1). Homocysteine is a toxic end-product of metabolism

known to damage blood vessels and increase risk of cardiovascular disease. Studies continue to show that high serum levels of homocysteine also contribute to damage seen in AMD. The Blue Mountain Eye Study provides further evidence to support this hypothesis. What is important is that homocysteine levels are reduced via supplementation with, and dietary intake of, vitamin B12 and folic acid. These B-vitamins recycle homocysteine back to the non-toxic, and highly useful, amino acid known as methionine. This explains why high levels of serum homocysteine and low levels of vitamin B12 and folic acid are so strongly linked to the development of AMD, as confirmed once again in the Blue Mountain Eye Study (1). Summary It is thought that AMD is a highly preventable disease, which requires attention to various lifestyle behaviors. Extrapolating from what we know from experimental, observational and clinical studies, the following practices appear to be the best proactive strategies to prevent the development of AMD: 1. Don’t smoke 2. Protect your eyes for UV-light 3. Prevent the onset of type 2 diabetes, by remaining at your ideal weight, performing endurance and strength training exercises regularly, keeping your fasting glucose level below 5.0 mmol/L (90 mg/dL). 4. Eat a diet rich in brightly colored vegetables and fruit (dark green, yellow, orange, blue, purple, red). 5. Keep your cholesterol level low by also consuming foods low in total cholesterol, saturated fat and transfats. 6. Take a high potency multiple vitamin and mineral each day that contains the following dosages of antioxidants and B-vitamins: Vitamin C- 1000 mg Vitamin E – 400 IU Selenium – 200 mcg
Zinc – 15 mg Beta-carotene – 15,000 IU Lutein powder – 6 mg B-50 complex, including 400 mcg folic acid, 50 mcg vitamin B12 and 50 mg vitamin B6 (vitamin B6 also lowers homocysteine) For individuals who already have AMD higher dosages of certain vitamins, minerals and phytonutrients are required to slow the progression of the disease.
