Gayle and Brian Bid Farewell to Catering

After 17 years in business, Gayle Woods and Brian Edwards are retiring from catering. They started WE Catering in 1997 and worked out of the Craigleith Ski Club. In May of 1998 the couple purchased an empty restaurant and opened Goodies Cafe and Catering. When Gayle and Brian sold Goodies Cafe in 2012, they continued catering under their original catering company of WE Catering. Gayle says “we have enjoyed great support from the people, businesses and service groups of Wasaga Beach and area and would like to express our gratitude and appreciation. We have met and made some wonderful friends along the way and wish continued success and blessings to all.”

Point of View Top Ten Tips for Feeding Pets Holiday Leftovers Be Prepared When Your Pet Comes Begging With the holidays approaching, your dog or cat will inevitably be begging to partake in the big turkey dinner. Most readers will admit to sharing table scraps with their pets. While this can be a wonderful way to add lean protein and fresh veggies to your pet’s diet, there are also hidden dangers in holiday fare. This year, before you go preparing a heaping plateful for your pet, consider these ten tips to keep a safe, healthful holiday for your dog or cat. #10 Yes to Turkey Turkey can be a wonderful lean protein to share with your pet. You will just want to be sure to remove any excess skin or fat, stick with white meat, and make sure there are no bones. #9 No to Alliums Nothing with alliums (i.e., onions, garlic, leeks, scallions) should be ingested by your pet. While it is true that small, well-cooked portions of these foods can be okay if your pet is used to it, ingesting these foods in large quantities can lead to toxic anemia. #8 Yes to Mashed Potatoes Potatoes are a great, filling vegetable to share with your pet. However even though the potatoes themselves are not harmful to pets, be aware of additional ingredients used to make mashed potatoes. Cheese, sour cream, butter, onions, and gravies are no-no’s in a pet’s diet. #7 No to Grapes Many people are unaware that grapes, and subsequently raisins, can be toxic to pets. The fruit has been shown to cause kidney failure in dogs. #6 Yes to Cranberry Sauce Cranberry sauce is just fine for pets but watch the amount of sugar in it. It is probably best to only provide a small helping to your pet’s plate. #5 No to Xylitol While you may be making the healthier choice by cooking with artificial sweeteners over the real thing, sweeteners containing Xylitol are poisonous to animals, and potentially deadly to dogs. #4 Yes to Macaroni and Cheese If you know your pet’s stomach handles dairy alright, macaroni and cheese is a safe leftover to share. If you are unsure though, it may be best to just give plain macaroni. Cats often develop lactose intolerance when they become adults. #3 No to Chocolate Chocolate is a well known off limits indulgence for pets. During the holidays however, baking chocolate is used in recipes and sometimes forgotten about by the time the dishes hit the table. Make sure this holiday season that your pet does not ingest any chocolate, especially the baking kind. #2 Yes to Green Beans Plain green beans are a wonderful treat for pets. Fresh vegetables are a great addition to any diet. If the green beans are included in a green bean casserole though, be conscious of the other ingredients in it. #1 No to Alcohol Alcohol is definitely a big no for pets. What we people may consider a small amount can be toxic for a smaller animal. Also, keep in mind that alcohol poisoning can occur in pets from atypical items like fruit cake (the recipe may have called for rum or other liquor), as well as unbaked bread.

Chef Brian Rissotto is one of my favorite comfort foods and the Arborio rice that is used to make it is the key to its texture and flavour. Arborio rice is a variety of short-grained rice used primarily in the classical preparation of risotto. Because it undergoes less milling than ordinary long-grained rice, it retains more of its natural starch content. Cooking releases this starch, giving risotto its creamy consistency. A pound of arborio rice can absorb up to 6 cups of liquid without becoming mushy. Broccoli Rissotto 2 tbsp chopped broccoli 2 tbsp onion 2 tbsp finely diced carrots 2 tbsp oil ( canola or olive oil) 1 tsp garlic 1 cup Arborio rice 3-4 cups chicken stock 1/4 cup 35% cream 1/4 cup parmesan cheese Method Sautee the onion carrots and garlic in the oil. Add the rice and continue cooking for another minute or two making sure that the rice does not brown. Slowly add the stock, about 1/2 cup at a time. Continue to add more stock a little at a time until the rice has absorbed most of the moisture in the pan. Add the broccoli about 7 or 8 minutes in and continue adding the stock until the rice is tender. Total cooking time is about 15 minutes. When the rice is cooked finish the dish stirring in the parmesan cheese and the heavy cream. You may have to adjust the seasoning with a little salt and pepper. Serve immediately. This makes about 4 main course servings. (Continued on Page 3 for Waldorf Salad)

Light and crisp it makes an excellent starter Waldorf Salad Recipe 1 cup chopped, slightly toasted walnuts 1 cup celery, thinly sliced 1/2 cup raisins 4 sweet apples ( red delicious), cored and chopped 3 oz plain yogurt 2 Tbsp fresh lemon juice Salt to taste Pepper Spinach and arugula METHOD In a medium sized bowl, whisk together the yogurt and the lemon juice. Add about a 1/2 teaspoon of salt, 1/4 teaspoon of fresh ground pepper. Mix in the apple, celery, raisins, and walnuts. Serve on a bed of fresh spinach and arugula

As the day quickly approaches, I would like to remind children and parents to practice safety precautions to make the evening a memorable one. For Parents: Discourage the use of masks on your children. Masks make it hard for children to see what's around them, including cars. Make-up is a better alternative. Costumes should fit properly to prevent trips and falls. Avoid oversized shoes, high heels, long dresses or capes. Select costumes with bright colors to increase your child's visibility. Add on reflective tape to costumes if possible. Children under 10 should be accompanied by an adult. By the age of 10, some children are ready to go trick or treating with a group of friends. Provide your child with a flashlight. A cell phone is a good idea if you have one. Draw a map outlining the route they should follow and set a curfew. Tell your children not to eat anything until they get home. Let your children draw the faces on pumpkins with a marker and leave the carving to parents. Start trick or treating early before it gets too dark. For Children and Youth: Carry a white bag or pillowcase for your candy, or add some reflective tape. Bring a cell phone in case you need to make an emergency phone call, don't abuse that privilege. Always travel in groups. Be sure there are at least 3 of you at all times. Don't visit houses that are not well lit. Never go inside a stranger's house. Walk on the sidewalk whenever possible. If there's no sidewalk, walk on the side of the road facing traffic. Don't criss-cross back and forth across the street. Never cross between parked cars, always at crosswalks, street corners or intersections. Don't eat your treats before you get home. When home, ask your parents to look through your treats with you to make sure everything is okay. For Homeowners: Turn on outdoor lights and replace burnt-out bulbs. Remove items from your yard or porch that might trip a child. Sweep wet leaves from your steps and sidewalk. Use alternatives to candles in your pumpkins such as a flashlight or battery-operated candle. If you do use a candle, never leave it unattended. For Drivers: Drive slowly in residential areas where children are more like to be trick or treating. Watch out for children, many of whom may be wearing costumes with masks that make it difficult for them to see. Children are excited; they may dart out in traffic. Remember that costumes can limit a child's vision and they may not be able to see your vehicle. Reduce your distractions and stay alert. Remember to enter and exit driveways slowly and carefully. Entertainment in The Beach! Rocky Horror Show Coming To Wasaga Beach Get Ready To Do The Time Warp Again With Richard O'Brien's Rocky Horror Show.It's just a jump to the left, a step to the right put your hands on your hips bring your knees inside, it's the pelvic thrust – let's do the “Time Warp” again. The Wasaga Community Theatre proudly presents the “Rocky Horror Show” a 1975 British musical, comedy, horror film and stage play, book, music and lyrics by Richard O'Brien. This hugely popular stage musical is coming to Wasaga Beach RecPlex. Opening night is set for October 31st at 9:00 p.m. followed by an after party. Performances are scheduled for November 1st, 6th, 8th, 9th at 8:00 p.m., two matinees on Sunday, November 3rd and November 10th at 2:00 p.m. The RecPlex will transform into an enclosed theatre surrounded by curtains for that Halloween atmosphere. The Rocky Horror Show tells the story of a newly engaged couple, Brad and Janet, who encounters a problem when their car halts in the rain. They both look for contacts only to find themselves at the castle of Dr. Frank-N-Furter, an alien transvestite, ready to unveil his new creation, a muscle man name, “Rocky Horror”. The Wasaga Beach Community Theatre is a small but dedicated group of individuals who share the goal of providing an outlet for the incredibly talented people in our community while bringing much needed entertainment to our town. Forty-five productions spanned over twenty years from the Wasaga Beach Community Theatre. Two stage productions presented each year in town: April and November. John Clayton is the Director of the stage musical. John is a resident of Wasaga Beach for fourteen years. He joined the Wasaga Community Theatre nine years ago and has been involved with almost every production since that time. He has acted, sang and directed a few. According to John there are twenty-five members in Wasaga Beach involved in this production from cast to backstage crew. What he finds most challenging is getting everybody to rehearsal. “Making sure they are there. We started with two rehearsals a week and we are now up to four rehearsals a week.” said John. Karina Wipper's vibrant voice will open the show singing to “Science Fiction Double-Feature” in the role of Dr. Frank-N-Futer is Brent Squires, a Paramedic from Wasaga Beach. This is his first musical and his most outlandish character role to date. John explained: “Brent is about as far away as the character as possible but when dressed up in drag he seems to come up pretty good.” It is a twohour show with a 15-minute intermission followed by an after party on opening night. Everyone is encouraged to dress-up a gift will be awarded for the best costume. ‘Tis the season for goblins, ghouls, and witches in our part of the world. In the October daylight through the forest amidst the fallen leaves you can’t help but notice a spooktacular site as you are passing the Flos Road 3 W intersection on Crossland Road. No, it’s not the crooked forest of Western Poland’s Gryfino. It’s two trees, one small tree and one very large tree completely draped in pairs of footwear. Your first take leads you to ask yourself, what? Then your mind starts wandering and you start postulating that all those pairs of soles may have a more profound meaning. Was Freddy Krueger collecting foot apparel from his victims and placing them on his trophy trees? Or, is it the curse of the shoe trees? Legend has it that at the edge of a farmer's field just south of Belding Michigan, hundreds of pairs of shoes hang like fruit from the tree. It started with a young boy who worked the field during the Depression without shoes for several winters and lost his feet to frostbite. Infection set in, killing him while he was still in his teens. Before he died, he cursed the fact that such a basic necessity didn't grow on trees. On the first anniversary of his death, a pair appeared on one of the low hanging branches. Since then, every year, more and more shoes have appeared on the tree. It's said that his ghost can be seen each night as the sun sets, watching over his crop of shoes. So what is the story for the shoe trees at Flos Road 3 W and Crossland? Does anybody know? In a Tipping Point moment I would say these trees would make a good scary film for the Wasaga Beach Short Film Festival or start off a Halloween tourist attraction craze that would put the Wasaga Beach area on the scary season attractions circuit that already includes the Kawarthas, Haliburton Highlands, Gravenhurst, Discovery Harbour in Penetanguishene and Wye Marsh in Midland. How our local places were named Meaford Approx. Pop. 15,000. In St. Vincent Township., Grey County., at the mouth of Big Head River and Nottawasaga Bay (inlet of of Georgian Bay) and Hwy. 26 and County Roads 7 & 12, 28 kms East of Owen Sound. Settled by David Miller after whose wife Peggy the place was first named Pegg’s Landing. A sister settlement. was called Stephenson’s Landing after an innkeeper named Stephenson, and there was much rivalry between the two places. In 1840 the post office was established as St. Vincent after Admiral Sir John Jervis, Earl St. Vincent, after whom the township was also named. In 1858 the town was named Meaford after Meaford Hall, the Staffordshire estate of Lord St. Vincent. The Rt. Honourable Sir Lyman Poore Duff (1865-1955) was a native of Meaford. He was an expert in constitutional law and held many appointments, including that of Chief Justice of Canada from 1933 to 1944. The hero of a popular dog story is buried in Beautiful Joe Park on Victoria Crescent. During a visit to Meaford in the 1890s, Margaret Marshall Saunders heard from William Moore how he had rescued an abused dog from its cruel owner. She told the story in the novel Beautiful Joe, which by 1939 had been translated into 10 languages and sold seven million copies. Miss Saunders was awarded the C.B.E. for her contribution to securing humane treatment for animals.

Wasaga Beach ON. October 21, 2013 – On November 14, World Diabetes Day, members of the Wasaga Beach Lions Club, along with their friends and families, will walk in the Strides: Lions for Diabetes Awareness event. The walk will begin at 4:00 p.m. from Boston Pizza at Stonebridge Town Centre going north across the Blue Bridge to the Main Beach with a rest station at the Sweet Tooth Store for coffee & hot chocolate then back to the finish line at Stonebridge Town Centre. Total distance covered will be 3 km. Over a hundred people are expected to participate. Health screenings and information from local companies will be available to the public free-of-charge near the finish line. “Take the time to gather your family, friends and neighbors to walk in the Strides event. This is an enjoyable way for the community to join together in the fight against diabetes. Contact the Wasaga Beach Lions Club at 705-429-3331. In addition, we will be able to take your registration at Stonebridge Town Centre from 3 p.m.” said Club President Janice Campbell. The cost to join in the Walk is only $5.00 per adult with no charge for those 12 and under. Donations will also be accepted with funds going to Lions Community giving including Canadian Diabetes Association and Camp Huronda, which is a Summer Camp for Diabetic Children near Huntsville, Ontario. A certificate and pin will be presented to participants. Lions all over the world organize Strides events in their communities to heighten awareness of diabetes and its complications and to provide information on preventing and managing the disease. These events promote regular, healthy exercise and include participants of all ages. Main Street and Main Beach

Since the early part of this century, our Main Beach… and our Main Street has been the hub of our tourism industry and an entertainment centre! Our Main Street became a vibrant and exciting place to shop, meet, dine and be entertained… while our grand beachfront hotels rivaled those anywhere and welcomed visitors with their modern facilities offering the most beautiful beach and views in the world. Great entertainment was available everywhere in the Main Beach area… including Playland Park… one of Canada’s Largest Amusement Parks! For years we have had dreams of building on what was created in the glory years of Wasaga Beach when we were known as Canada’s Premiere Beachfront Resort! In the sixties, we had reached a point where although we had all in place… we needed to stay in tune with what the tourists of the day were looking for! Included here is a rendering of what some “wide-awake” folks saw for our Main Street and Main Beach area. It shows some great additions to our wonderful beach area, including a grand pier at the foot of Main Street, a break-wall/pier to protect the point and the river’s mouth, development on the beachfront and even a marina in the protected river on the point. What’s interesting to note is the caption under this drawing… wondering what became of these great ideas for development… in order to stay current with our dreams of remaining a truly world class beach resort! This drawing and comment were published in a local newspaper in 1966! It seems that almost 50 years ago, we were wondering when the needed improvements to our Main Beach and Main Street area were going to be acted upon! Now, in 2013 as Visioning Meetings continue in Wasaga Beach with more discussion on how to revitalize our Main Beach and Main Street area, I hope we can look forward some changes soon! Our Main Street and Main Beach must be revitalized and once again be recognized as the commercial and entertainment hub of our tourism industry!
