Spice-Rubbed Chicken with Roasted Onions Ingredients
Directions
• 4cups thickly sliced or quartered red, white, and/or yellow onions and/or boiling or Cipollini onions, peeled • 15 pound whole roasting chicken • 1teaspoon sugar • 1teaspoon garlic powder • 1teaspoon ground cumin • 1teaspoon paprika • 1teaspoon ground coriander • 1/2teaspoon salt • 1/4teaspoon ground cinnamon • 1/4teaspoon ground black pepper • 1/8teaspoon ground nutmeg • 2tablespoons olive oil • Chard Leaves (optional)
1. Preheat oven to 350 degree F. In large shallow roasting pan place half the onions in an even layer. Sprinkle with 1/4 teaspoon salt; set aside. Fold chicken neck skin onto chicken back, secure with small skewer; tie legs to tail with kitchen string. Tie wings close to body or twist wing tips up and tuck under back of the chicken. 2. In small bowl combine sugar and remaining seasonings. Brush chicken all over with oil. Sprinkle spice mixture and rub in with fingers. Place chicken, breast side up, on onions in pan. If desired, insert meat thermometer into center of inside thigh muscle. (Thermometer should not touch bone.) Loosely cover with foil. 3. Roast for 1 hour. Remove foil. Add remaining onions to pan. Roast, uncovered, 30 minutes; cut strings on legs and wings. Roast 30 to 45 minutes more or until drumsticks move easily in their sockets and chicken is no longer pink (180 degrees F in thigh). Cover with foil. Let stand 15 minutes before carving. Serve chicken with roasted onions and chard leaves. Makes 6 to 8 servings.

• 3/4 cup (1 1/2 sticks) unsalted butter plus more for baking dish • 1 pound good-quality day-old white bread, torn into 1" pieces (about 10 cups) • 2 1/2 cups chopped yellow onions • 1 1/2 cups 1/4" slices celery • 1/2 cup chopped flat-leaf parsley • 2 tablespoons chopped fresh sage • 1 tablespoon chopped fresh rosemary • 1 tablespoon chopped fresh thyme • 2 teaspoons kosher salt • 1 teaspoon freshly ground black pepper • 2 1/2 cups low-sodium chicken broth, divided • 2 large eggs Directions 1. Preheat oven to 250°F. Butter a 13x9x2" baking dish and set aside. Scatter bread in a single layer on a rimmed baking sheet. Bake, stirring occasionally, until dried out, about 1 hour. Let cool; transfer to a very large bowl. 2. Meanwhile, melt 3/4 cup butter in a large skillet over medium-high heat; add onions and celery. Stir often until just beginning to brown, about 10 minutes. Add to bowl with bread; stir in herbs, salt, and pepper. Drizzle in 1 1/4 cups broth and toss gently. Let cool. 3. Preheat oven to 350°F. Whisk 1 1/4 cups broth and eggs in a small bowl. Add to bread mixture; fold gently until thoroughly combined. Transfer to prepared dish, cover with foil, and bake until an instant-read thermometer inserted into the center of dressing registers 160°F, about 40 minutes.

In the 30th district alone, 20,624 people will lose the student loan interest deduction under the Republican bill, according to a new analysis by the Center for American Progress. Altogether, according to the nonpartisan Tax Policy Center, the House Republican bill raises taxes on 36 million middle class families nationwide. This bill also takes numerous steps that would harm millions of students, employees, and teachers, including by ripping away the lifeline of the student
loan interest deduction that 12 million graduates rely on, ending lifetime learning credits, ending tax-free tuition assistance from employers and decimating the state and local tax deduction that helps fund our schools. The Republican bill also eliminates deductions for teachers who buy school supplies for their students, stripping a key deduction away from 353,650 teachers in Texas. “Educating our young people is the most important investment government can make,” said Congresswoman Johnson. “How will Texas Republicans justify stealing from students and schools, just so they can write bigger checks for the super-rich and corporations shipping jobs overseas? “The American people deserve real tax reform that puts the middle class first, not the insulting ripoff that Republicans are pushing in this Republican Tax Scam.”

The Dallas Children’s Theater THE INTERVIEW By Arielle Johnson Today we had an opportunity to speak with Sandra Session-Robertson, the Director of Communications and Philanthropy at the Dallas Children’s Theater. The theater was established over 30 years and prides itself in being open year round. We wanted to find out more about what role Mrs. Robertson plays from day to day to make sure the theater remains viable and why the performing arts are so important to children. Prior to joining the staff at the Dallas Children’s Theater, Mrs. Robertson, a University of Texas - Austin graduate, spent 20 years in public broadcasting. She describes herself as being the outlier in her family because they are all educators. But even as an educator, communication is key, therefore she really did not deviate too far from her upbringing. Mrs. Robertson started out with the theater as a volunteer, with such a passion for the work she was doing, the theater realized they could use her services on a more consistent basis, and offered her a permanent position. She works Tuesday through Fridays and starts her day real early in the morning. Her primary concerns are how the houses are doing with ticket sales for upcoming weekend performances and fundraising. If she goes online and notices there is more inventory than what she is expecting to see, she reaches out to supporters on social media to help with meeting their goal. When she’s not at the theater, she is traveling to different fundraising galas in an at-
tempt to connect with possible donors. A combination of creative advertising methods are used, even good old fashioned, strategic flyer distribution. Literally, no stone is left unturned in their efforts to raise money. Recently there was a drive to have donors adopt a brick which displays their name as a contributor to the theater, and be permanent fixture as part of a walkway built at the theater.
The operating budget for the theater is $800-900,000 per year, but Mrs. Robertson tells us if there were a budget closer to $1.5 million a year, it would open up more possibilities and positions for more staff members. You see, the Dallas Children’s Theater is very professional and capable of delivering Broadway styled productions; a bigger budget offers more opportunities to enhance the experience of program participants and spectators coming out to support the shows. Mrs. Robertson really understands how important the experience of attending and learning about theater is to children. “Many of our children don’t get the opportunity to go to a good performing arts theater and be-
cause of this, they are missing out on the benefits a theater association can bring. We do not run this theater as a side job, instead, we make every effort
to produce professional shows through the eyes of the children,” said Mrs. Robertson. If you go to the website, you will notice some of the upcoming shows are listed as being “Sensory Friendly”, meaning extra care is being taken to reach children with sensory challenges during the presentation. It also means special care is taken in presenting conflicts and villains which
may be disturbing to some children. Dallas Children’s Theater classes offer students between the ages of 3 and 18 an opportunity to discover themselves and gain confidence and experience by working with others. There is an enrollment fee to get your child signed up for classes, but if money is a challenge, you can download the theater’s financial assistance application which available on their website. The theater website address is www.dct. org Please keep in mind there are a number of holiday themed plays available for your viewing pleasure. “The theater experience,” as expressed by Mrs. Robertson, “is good for the child’s brain.” Also, it brings families together by allowing them to sit next to each other while experiencing the theater production. And if you think the content may be too sensitive for a young member of your family, you are welcome to call the theater ahead of the performance, and ask them to modify the show so it is suitable for everyone in your party. Affordable Healthcare Enrollment Deadline is Near By Arielle Johnson
The Trump Administration has been trying to do away with Affordable Healthcare since it took over the White House. Critics say they are trying to destabilize the current healthcare market. It appears as if no regard has been given for those who have little to no savings due to the juggling of their family’s expenses. Here is what we know about the Affordable Healthcare Plan that differs from the previous year:

I did an internal review of that case as well, and determined the appropriate course of action was to discipline the prosecutor and to take action to prevent mistakes regarding disclosure from happening in the future, which includes mandatory ongoing training for all prosecutors.
Prior to Ms. Warner’s termination, we spent the weekend investigating the case and interviewing both parties involved, who submitted sworn affidavits. In an effort to provide the utmost transparency, our office is releasing those documents. Regarding the prosecutor who was terminated earlier this year because of a DWI arrest, she was suspended without pay immediately following the incident pending the results of an investigation. After reviewing all of the evidence of the investigation, she was terminated. I would like to address a situation involving an-

On October 27, 2017, Representative Eric Johnson met with Governor Abbott regarding the removal of the “Children of the Confederacy Creed Plaque” from inside the Texas Capitol due to its false claims that the underlying cause of the Civil War was not slavery. Representative Johnson gave Governor Abbott a letter at the meeting containing the message below: “Thank you for agreeing to meet with me today regarding the "Children of the Confederacy Creed" plaque located inside the Texas Capitol. I sincerely appreciate both your time and your willingness to discuss with an open mind a topic of great importance to me and many Texans. While I have addressed you as "Governor" in this missive, I am writing you today in your capacity as Chairman of the State Preservation Board, a distinction that is actually set forth in state statute. But, while not set forth in any statute, I am also writing you in another, perhaps more important, capacity: as a learned man who
respects the truth. I have had the dubious distinction of being vetoed by you multiple times; while none of these occasions were met by me with joy, I was nonetheless impressed to learn from your staff when they called to break the bad news to me that you read all of the bills sent to your desk personally. Despite my disagreement with every one of your vetoes of my legislation, I have always respected the fact that you take your job seriously enough to read every bill you receive and to draft veto statements rooted in what you believe to be the truth. And it is out of this respect for and belief about you that I write today to make a very straightforward request: Governor Abbott, please take any and all required steps to remove the "Children of the Confederacy Creed" plaque from inside the Texas Capitol as soon as possible, as the plaque's central claims are patently false. The "Children of the Confederacy Creed" plaque is cringe-worthy in its misstatement of the truth regarding Texas' involvement in the Civil War and should be removed immediately. Despite having an honors degree in history from Harvard College, I do not consider myself an historical expert. However, I am confident that our state historian and any of the prominent historians housed at our state's most prestigious universities would agree that the "Children of the Confederacy Creed" plaque fails to meet even the lowest standards of historical accuracy, particularly for a permanent display in the Texas Capitol. For Texas, the Civil War was most certainly a "rebellion" and its "underlying cause" was undeniably slavery, according to easily obtained primary source documents. It is my sincere hope that after reading the text of the "Children of the Confederacy Creed" plaque and comparing it to the Declaration, you will support the immediate removal of this historically inaccurate plaque from the Texas Capitol. Your love of and respect for the truth should impel this.”

Quarterback Neiko Hollins was named Newcomer of the Week by the
Southwestern Athletic Conference. Hollins also earned National FCS Freshman of the Week honorable mention accolades. In his fourth start of the season, the redshirt freshman from Fresno, Texas set career highs in all four categories, completing 25 of 43 passes for 410 yards and four touch-
down passes leading the Panthers on five touchdown drives. A trio of the drives ended with scoring passes to Khadarel Hodge, who set a single-game school record with 232 receiving yards to break a 53-year old mark set by PVAMU Hall of Famer and AFL great Otis Taylor. Hodge earned honorable mention honors for FCS National Player of the Week as he tied career highs for receptions (eight) and receiving touchdowns (three). The Panthers (4-5 overall, 3-3 SWAC) won its final home game of the season on Senior and Military Appreciation Day On Game vs. UAPB: “I thought the guys did a really good job of coming out Saturday and sending our seniors out the right way, which it was senior day for us and Military Appreciation Day. Prairie View has a long history of military generals that have graduated from this University or Presidents at this University so to commemorate them was a good event. I thought for the first time all year we played well in all three phases. Offensively, we had our highest output (610 yards). We threw for over 400 yards and senior Khadarel Hodge set a school record for receiving yards in a single game, which is a record that has stood for over 50 or so years.” On Play of QB Neiko Hollins: “He’s really has come along this season. He sat behind Lavell (McCullers) for four or five weeks. After the Grambling game, we made the decision to change the quarterback position.
He has earned it. He has done a really good job of conducting himself above his age. He’s a 19-year-old redshirt freshman, but he’s a mature guy that is doing a good job of trying to lead not only the younger guys, but the older guys as well. He has had to overcome some of his own adversities as well, so for him to come in and play as well as he has is really encouraging. He has definitely established himself as becoming the face of the program. We feel like Prairie View has a real bright future with him at the helm.” The Panthers return to action Thursday in a 6 p.m. game at Incarnate Word. Of course, the perception is that their conference is better than ours. So they won’t be intimidated by us. Their record (1-9) is not indicative of the type of team that they have, I don’t believe. I believe that they are a dangerous football team. We are playing on the road and we have shown this year that we are a good team at home, but not so good on the road, so this is a big challenge for us.” #pvamufootball
