Macaroni and Cheese RECIPE BY COOKING LIGHT Try this rich and creamy three-cheese macaroni and cheese for the ultimate feel-good meal. INGREDIENTS 1 teaspoon olive oil 1 cup finely chopped onion (about 1 medium) 2 tablespoons all-purpose flour 1 garlic clove, minced 1 1/2 cups 1% low-fat milk 1 bay leaf 1/2 cup (2 ounces) crumbled Gorgonzola cheese 3/4 cup (3 ounces) grated Parmigiano-Reggiano cheese, divided 1/4 teaspoon salt

2 cups uncooked elbow macaroni (about 8 ounces) Cooking spray 2/3 cup (about 2 1/2 ounces) shredded part-skim mozzarella cheese 2/3 cup panko (Japanese breadcrumbs) 1/8 teaspoon freshly ground black pepper Step 1 Heat oil in a medium saucepan over medium heat. Add onion to pan; cook 8 minutes or until tender, stirring occasionally. Add flour and garlic; cook 1 minute, stirring constantly. Stir in milk and bay leaf; bring to a boil. Cook 2 minutes or until thick, stirring constantly with a whisk. Add Gorgonzola, 1/2 cup Parmigiano-Reggiano, and salt; stir until cheeses melt. Discard bay leaf. Step 2 Preheat oven to 375°. Step 3 Cook pasta in boiling water 5 minutes or until almost tender, omitting salt and fat; drain well. Add pasta to cheese mixture, stirring well. Place about 1/2 cup pasta mixture into each of 6 (1-cup) ramekins coated with cooking spray. Sprinkle evenly with mozzarella. Top evenly with remaining pasta mixture. Combine remaining 1/4 cup Parmigiano-Reggiano and panko; sprinkle evenly over pasta mixture. Spray lightly with cooking spray; sprinkle with black pepper. Bake at 375° for 25 minutes or until heated.

What Tax Reform Means for District 30 After countless hours of debate and many months of waiting, a vote on tax reform is finally upon us. The Trump Administration has made many promises to the American people, including a promise to make sure that the middle class is not left behind. The Republican tax reform bills in both the House and Senate not only fail to fulfill this basic principle, but each will also set the U.S. economy back in an unprecedented transfer of wealth at the expense of working and middle class families all across our nation. This week in Congress, Members of both parties will have the opportunity to vote on a tax bill that will impact each and every American household. The House will consider H.R. 1 - the Tax Cuts and Jobs Act this week, while the Senate is expected to consider its version the week after Thanksgiving. A host of tax credits and deductions are on the chopping block -- such as individual credits and deductions, child tax credits, student loan interest deductions, and lifetime learning credits -- in an effort to fund a bill that will decrease corporate taxes by 15%, consolidate individual tax rates into just 4 new brackets, and repeal both the estate tax and alternative minimum tax to the great benefit of wealthy Americans and U.S. corporations. I will vote “no” on this upcoming tax bill as I believe it truly does more harm than good for the American people. The Republican tax plan will raise taxes for 36 million middle class families and cause further harm to lower-income Americans. Over the last two decades, I have been committed to fighting for livable wages and better job opportunities for every American. The Republican tax plan ignores the needs of the general public, and would further burden future genera-

tions with an additional $1.7 trillion in national debt over 10 years. Tax reform should be used as a tool to

There is a tremendous amount at risk under this plan. Students, teachers, working families, the elderly, and others will suffer under the existing plan. For example:

The House version will add $1.7 trillion to the U.S. deficit over 10 years while the Senate version is expected to add $1.5 trillion to the deficit. Medical and Medicaid: By giving $1.5 trillion tax rate cut to corporate America, the budget cuts $1.5 trillion from Medicare & Medicaid. This inadvertently affects those who have family members in nursing homes and will charge seniors and Americans facing high medical costs a health tax.

Education: In the 30th District of Texas alone, 20,624 people will lose the student loan interest deduction under the GOP bill, according to a new analysis by the Center for American Progress. Altogether, the House GOP bill raises taxes on 36 million middle class families nationwide.

The medical expense deduction is claimed by nearly 9 million American households, which helps families with children with disabilities, long-term care needs, a need for expensive fertility treatments, and many others. For example, in 2015, 9 million Americans claimed the medical expense deduction which gives tax relief to families with high medical costs. Alarmingly, this bill, H.R. 1 would charge them a health tax by removing that deduction and leaving millions with higher taxes.

State and Local Tax Deduction: This proposal seeks to largely eliminate the State and Local Tax (SALT) Deduction, but allows for a property tax deduction of up to $10,000. The bill would impose an unfair double tax on middle class families, driving down home values, and endangering local governments’ ability to fund law enforcement, schools, and

Johnny Graham - A Successful Dallas Businessman Who Deserves a Landmark THE INTERVIEW By Arielle Johnson There is one profession that will always be profitable and never have to compete with automation, which eliminates jobs. This business guarantees success. Really, about the only way this business would not be profitable, is if its workers never showed up or they showed up, but refused to allow patrons to enter their place of business. And really...who does that?! We are talking about the BARBERSHOP folks!!!! Truth be told, there are different levels of barbers and barbershops. But there was a time here in Dallas when one barber dominated the sea of barbers, and did so well in terms of profitability, even his workers were able to pocket up to $1,000 or more per week---believe it or not, in the 70s. His name was Johnny Graham and to make sure we put everything into historical perspective, we would be remiss if we did not mention during which time period his legacy began. Mr. Graham began building his empire in 1969. Mr. Graham was born in Florida on December 13, 1918 Florida. He moved here to Dallas in 1946, the same year he graduated from Ft. Worth Barber College, with hopes of to pursuing his dream of becoming a master barber. It is worth mentioning, Mr. Graham put all of his energy and efforts into every job he has ever held, and even though passing the Barber examination with a 3rd grade education proved to be the most challenging of all feats, after the third try, he became certified. Mr. Graham had one of the most organized barber businesses in the country and with his top-notch skills,

eventually had 10 barber shops in the Dallas area. He equipped his barbers with all the skills necessary to run his shop or their own if they chose to do so. As Mr. Crawford, one of Mr. Graham’s barbers stated, “Mr. Graham made sure we were in his shop every Sunday morning at 7:00 a.m. to attend training. During training, he taught us everything we needed to know about running a barbershop - Bookkeeping, paying taxes, customer service, grooming, cleanliness, etc.

He had us come in at 7:00 a.m. on Sunday mornings because he was observant of Sunday being a day of worship and always made sure we had enough time to show up to church on time.” The young Mr. Crawford, who had gotten his first break in the barber business from Mr. Graham in 1967, absorbed everything he could from him and eventually went on to establish his own shop 7 years later. Mr. Graham and his wife were known for their philanthropy and con-

sistently made generous donations to the March of Dimes, American Cancer Association, American Heart Association and many others. Although his barbers may not have made donations to any of these organizations, Mr. Graham insisted they give free haircuts to clients who fell ill and were in no position to pay or make into the shop. He encouraged his barbers to go to their homes if necessary or even the hospital to make sure their clients were groomed. Also, his barbers formed a caravan regularly and went close to 100 miles out of town to a boys home to cut the children’s hair. On October 9, 1990, after living a long, full life Mr. Graham left this place to move on to his heavenly home. But his legacy has survived him. Those barbers he trained spread out across the Dallas/Ft. Worth Metroplex and other places across the country, utilizing the business discipline he taught them to establish businesses some of which are still standing after nearly 50 years. After knowing as much as we know about Mr. Graham, we feel as though one of the ways in which we as a community can honor him would be to establish his first Dallas shop, which is located at 2804 Southland, Dallas, Texas 75215 as a Landmark. Right now, Mr. Graham’s son, Johnny Graham, and long time friend, Mr. Crawford are gathering the information necessary to begin the filing process to make this historical spot official.

Breaking Through the Darkness By Arielle Johnson

Having an opportunity to enjoy the performing arts in your own neighborhood can be a very exciting experience. Your senses are awakened by the innovative ways the entertainers use to connect you to their raw talent and they do it minus the fluff. Fluff can be a stateof-the-art sound system, mechanical props, colorful lighting and stuff. But strip all of it away, down to the bare minimum and we got fresh, uninhibited talent and a new level of creativity. When it’s all said and done and the curtain falls, we’ve got an audience walking away feeling as though they’ve gotten more than their money’s worth and although it may be way past their bedtime when it ends, there’s an electricity flowing through the air that’s bouncing all over the place from person to person. This is what it was like at the South Dallas Cultural Center on Saturday night, November 11, 2017. The occasion was the celebration of Mercedes Johnson’s book entitled, “Her Story: Breaking Through the Darkness.” Rather than come out on stage and read excerpts of her book to us, the author organized a group of artists and added a subtitle to the evening, dubbing it, “A Neo Soul Night.” The band, drummer Forest, saxophonist Mark, and keyboardist Justin, sat in the recesses of the stage and lighting, playing soft jazzy music in the background, as the performers got rid of their last minute jitters/temporary bouts of nervousness. As the stage went completely black, her image was replaced by a poet’s who put Nina Simone’s lyrics to the song, “Black Bird” in spoken word form. Shortly after, the stage blackened again for a few moments as a spiritual dancer graced the stage gesticulating pain in her body movements with an equally painful look on her face. Her performance ended with her collapsing to the floor, in a sea of hopelessness and in an almost fetal position as the song playing in the background faded out, “Black Bird You Ain’t Never Gonna

MEN’S BASKETBALL EARNS FIRST WIN OF SEASON OVER EASTERN KENTUCKY LAS VEGAS - The Prairie View A&M University men’s basketball team posted its first win of the season with a wire-to-wire 80-70 win over Eastern Kentucky Monday in the MGM Resorts Main Events Tournament at T-Mobile Arena. Prairie View A&M (1-3) never trailed in the contest against Eastern Kentucky (2-2) of the Ohio Valley Conference. Zachary Hamilton had a team-high 23 points with four rebounds and two steals to lead three Panthers in double figures. Gary Blackston had season highs in points (19), assists (five), and steals (three) while adding five rebounds. Dennis Jones scored 14 off the bench with three assists. The Panthers forced a season-high tying 19 turnovers leading to a season-high 27 points in collecting the Southwestern Athletic Conference’s first win over a Division I opponent this season. “This was a total team effort for 40 minutes, which is the first time this year we’ve put two halves together,” said PVAMU head coach Byron Smith. “We shot fewer threes (a season-low tying 18), so the main focus was driving to the basket. We were really good at the free throw line (season-high 82.6% on 19-23 attempts). Hamilton, Blackston, and Jones were really good on the perimeter. J.D. Wallace (six points, five rebounds), and Iwin Ellis (three points, three rebounds) were grown men today on the interior.” Hamilton’s three-pointer opened the scoring and sparked an 8-2 run for Prairie View A&M, which took its first double-digit lead at 19-9 with just under 12 minutes to play in the first half on a pair of free throws by Jones. The free throws were part of a 10-2 run capped by a Hamilton jumper which gave the Panthers their largest lead of the first half at 21-12 with 10:47 to play until halftime. PVAMU opened the second half with a 39-29 lead, but six quick points by the Colonels cut the lead to four in just over a minute. However, a steal and subsequent three-point play by Shaquille Preston pushed the lead back to seven.

After a basket by Eastern Kentucky cut the Panther lead to five at 45-40 with just under 16 minutes remaining, a three-pointer by Troy Thompson on the ensuing possession pushed the lead back to eight at 48-40. The Panthers led by no less than six points the rest of the contest. The Panthers will face the winner of Georgia State and Eastern Washington Wednesday at 3 p.m. CT. PRAIRIE VIEW, - Texas – Prairie View A&M University coach Willie Simmons addressed the media Monday on the Southwestern Athletic Conference Football Head Coaches Teleconference. Quarterback Neiko Hollins was named both Offensive Player of the Week and Newcomer of the Week by the Southwestern Athletic Conference, and WR/ KR Darius Floyd was named the SWAC Specialist of the Week. It is the second straight week Hollins earned the Newcomer of the Week Award, as he tied a career-high with four touchdowns passes while completing 23 of 35 attempts for 348 yards in last Thursday’s 42-28 win on the road at Incarnate Word. It is his first Offensive POW award. Floyd was named as the league’s top specialist for the second time this season after totaling a career-best 262 all-purpose yards in the win. Floyd averaged 36.3 yards on three kickoff returns, had career highs in receptions (11), and receiving yards (153), and tied a career-high in touchdown receptions (two). The Panthers scored a season-high 42 points in the victory, their second straight and third in the last four games. Prairie View A&M football will close the 2017 season in the 33rd Labor Day Classic at Texas Southern Saturday at 6 p.m. at BBVA Compass Stadium. It gave our team an opportunity to go on the road and have a big win, which (playing well) is something we’ve done in spurts this year. On the road, we’ve played well at times, but we’ve also done some things that have kind of cost us late in ball games. It was good to see the team respond. We jumped out to an early lead at 28-7, (but) had a few turnovers in the second half, and gave up a big play on defense that allowed them to tie the game 28-28. At that time, our team could have gone in one of two directions. They could have quit and folded and felt that this is kind of the way the season’s been going, or they could have come together to continue to trust the process and come out of a hole, and that’s what they did (the latter). They believed in each other, they didn’t quit. We were able to get a couple of late touchdowns and put the game away at the end, which was good to see.” On LB Jalyn Williams: “He’s really played at a level that I haven’t seen from a will linebacker position that he plays in a long time. He’s all over the place. He’s running sideline to sideline. He’s getting downhill. He’s covering receivers. He’s playing as good a level of football at the linebacker position as anyone in the country…For a linebacker to have 19.5 tackles for loss is phenomenal.” On Play of Floyd: “He was a high school running back, so he has that dynamic playmaking ability with his legs. He’s a strong runner, deceptively strong given his stature. He’s not a big guy (6-0, 185). When you look at him, he doesn’t look physically imposing, but he’s a very strong runner and hard to bring down. He’s elusive, has good functional speed. He’s not the fastest guy in the world, not the quick-

est guy in the world, but does enough things good enough to keep defenders off balance.” On Texas Southern Game: “You can throw records, you can throw everything else out the window when it comes to rival games. We saw that last week with Alcorn and Jackson State (A 7-3 JSU win over SWAC East Champion Alcorn)…Whenever there’s a rivalry, given our proximity being 45 minutes from each other and being the two premier HBCUs in the state of Texas, we understand how huge this game is. There’s a lot riding on it for both teams, for both coaching staffs, for both administrations, the student body, the alumni bases. For 365 days, there are bragging rights. Again, we understand the magnitude of the game. I have a ton of respect for (TSU Head Coach) Mike Haywood and the type of coach he is. I expect his team to be ready to play. They gave us all we (could handle) last year in the first game of the season. We had to come from behind to beat them. I expect them to bring their best shot. For us, it’s about preparing to bring our best shot in the hopes of going in a hostile environment down in BBVA Compass Stadium this Saturday and try to get a win.” BIG MOMENTS vs. INCARNATE WORD: · Williams had a career-high 11 tackles along with one tackle for loss and one sack against Incarnate Word. It was his ninth straight game with at least one tackle for loss and he now has 19.5 TFL on the season to lead the SWAC and is tied for second nationally. · Dawonya Tucker’s 97 yards rushing yards set a career high. His 72-yard scoring run late in the third quarter was the longest run from scrimmage since Trey Green’s 80-yard touchdown run at Texas Southern on Sept. 5, 2015. · Zack Elder made a career-best six PATs · CB Ju’Anthony Parker made his fourth interception of the season, the most by a Panther defender since Brian Medlock’s four INTs in 2012.
