Bon appétit Mozelle’s special Vegan/ gluten free snickerdoodle muffins
8 tbsp or ½ cup coconut oil ½ cup pure cane sugar 1 tsp vanilla extract 2 flax eggs (I did ½ cup almond milk mixed with 2 tbsp flax meal) 1/2 tsp baking soda ½ tsp baking powder ¼ tsp sea salt ¼ tsp nutmeg ¼ cup coconut flour 2 cups brown or white rice flour (you can substitute 1 cup for spelt flour for more texture and flavor) Spelt flour tastes very similar to
wheat flour. Keep 1/2 cup pure cane sugar and 1 tsp cinnamon mixed together in small a separate bowl to roll the muffin batter 1. Mix coconut oil at room temperature and sugar together until creamy
sugar mixture (do not over mix) 5. Then use an ice cream scoop or tbsp to roll into the cinnamon/sugar mixture before putting into lined muffin pans. This should make 12 muffins.

When all mixed, the batter should be thick, moist, and creamy, but not watery. Bake these muffins for about 30 minutes at 350 degrees.

The Dallas Black Chamber of Commerce (DBCC) – Business Development Corporation held its annual scholarship Golf Tournament on June 5th at the Cedar Crest Golf Course. The tournament draws golf enthusiasts, both amateur and semi-pro, from all over the region. In honor of Samuel L. Brown, a longtime Board Member and Dallas Entrepreneur, the tournament has been renamed to honor Mr. Brown for his longstanding contributions to the annual scholarship program. Proceeds from the annual golf tournament benefit the DBCC - Business Development Corporation Excellence in Education Program, which is designed to enhance the educational, cultural and social experiences of students in Dallas. This year, 22 scholarships were awarded to Dallas Independent Scholl District Students graduating seniors at the Annual Excellence in Education Scholarship Program. Whomever you wish to blame, one thing is clear: it wasn›t the Democrats who brought our state government to this very sad point. The CityMenCook Father’s Day Event by Arielle Johnson

This past Sunday, on Father’s Day, June 18, 2017, Terry Allen, held his 17th Annual CityMenCook Extravaganza at Gilley’s Restaurant, which is located at 1135 S. Lamar Street in Dallas. CityMenCook is dedicated to honoring Fathers and Father figures and gives the men in our area, a fun and exciting opportunity, to assist with raising funds for charitable organizations, by displaying and comparing their culinary skills to each other, in a competitive manner. The event began promptly at 3:00 p.m. as planned, and as you can imagine, it was packed. There were throngs of people lined up before the doors were officially opened, and we can only imagine their thinking was, “Let’s get in and make our way around to all the tables before these tasty treats disappear.” Most of the people in line were already registered and it made for a smoother entrance. There were two pathways one could take upon entering; celebrities walked down the red carpet to the right, and posed
for a few photographs in front of the CityMenCook wall banner, then briefly chatted with the hosts on video cameras, who grabbed them for feedback on the event. For the attendees who entered on the left, it gave them direct access to the men who were serving up their dishes proudly to the crowds. At about 3:20 p.m., there was a continuous line, 2 to 4 persons deep, which steadily moved around the tables sampling everyone’s specialties. There were a few tables available for those who were interested in sitting down and eating, but the majority of the guests were eating on the move, and almost ready for the next chef by the time they got to them. Yes....every cook there had their specialty in front of them and they weren’t taking NO for an answer from anyone thinking twice about passing up their dish to try their neighbors food. Around 3:30 p.m. the live music started, and although the lighting had already created a certain ambiance, the sounds of Joyce Spencer’s saxophone rising above the crowd, and her physcially being elevated above the guests on stage, seemed to create the perfect backdrop for what was already a perfect day. Now at around 4:00 p.m., the latecomers started to spill in, and the ones who had arrived on time before them, realized it was time to go back to some of their favorite chefs to obtain additional samples. The chefs were excited about seeing some of their tasters coming back for seconds, because it meant they probably had a good chance of being crowned one of the top chefs.
At about 4:30 p.m. we started walking behind the tables to talk to some of the chefs about their involvement with CityMenCook and the dishes they decided to bring with Page 9
them. We had an opportunity to speak with Chef Steve Wesley, who is a Culinary Arts Teacher for Grapevine Independent School District. He told us he has been with Terry Allen, the founder, as a Chef since CityMenCook’s inception. Mr. Wesley often travels with Mr. Allen to different radio and television shows and news shows, when media interests in the event begins to build up, as they get closer to the event date. The two of them have formed an alliance over the years, which began back in 2000, when he heard Mr. Allen on a radio show speaking of the event he was planning, and the importance of Black men being portrayed in a positive manner. Mr. Allen’s call for help in building the event, with the right type of people in place, definitely resonated with Mr. Wesley and the rest is history. Mr. Wesley was crowned as one of the top cooks in last year’s CityMenCook cook off, and this year, he brought a totally different dish, which was West Wings and Pancakes, and won again. Mr. Wesley says he participates because it is for a good cause, but it is also fun. He says some of the new cooks were teasing him a little bit when he came in, by saying, “Oh...look at old school setting up over there.” In front of all of them, he starts to smile, and sometimes laughs because he has become old school through experience. For Mr. Wesley, participating is CityMenCook will always fun for him, and is never about competition.

Unfortunately, due to the crowd, which is good, we were not able to visit with all of the cooks, but we did get time in with David Jones of the House of Blues. He was serv ing up a specialty you won’t find on the House of Blues menu – Crawfish Pie. And yes, it was just as awesome as it sounds. Not too far from him, we met a chef by the name of Jesse Jenkins, whose catering service is named Advance Service Catering. He told us it was his 8th year participating in the CityMenCook event, and then shoved a sample of Barbecue Beans mixed with Ground Beef at us and said, “Here....you got to taste these ‘Nasty Beans’.” He never lied...those beans had the right amount of tangyness to them and they were packed with meat. A little further down from him, we discovered a table with different interesting flavors of pickles. The name of the business is Tatyanna’s Pickle Palace, and the table was manned by the owner’s son, D’Shon, who is a bodybuilder and trainer. We got to chat with her son a little bit about how his mom would soak the pickles in different flavored Kool-Aids when he was a kid, and other neighborhood kids would come by begging for the pickles. The item soon became so popular that his mother started to sell them to the children. Some of the interesting flavors they had on this past Sunday were, Cherry, Sour Apple, Peach Mango and Pink Lemonade. We know some of you are reading this right now, and wondering why you failed to attend. Maybe you saw us stuffing our faces at
Gilley’s, on one of the local news stations Sunday night and realized you missed a great event. It is quite alright this time. PVAMU SPORTS HALL OF FAMER GILLIARD PASSES PRAIRIE VIEW, Texas - Prairie View A&M University Sports Hall Of Famer and Panther great Clifton Gilliard passed away Tuesday at the age of 79. Born in Shreveport, La., Gilliard and his family moved to Houston shortly thereafter. He graduated from Fidelity Manor High School before enrolling at Prairie View A&M. Gilliard was a member of the 1958 SWAC and HBCU National Championship football team and later served the University in a variety of capacities. “Coach Gilliard was the epitome of a Prairie View A&M Panther,” said Vice President and Director of Athletics Ashley Robinson. “He served this great institution as an athlete, coach, administrator, and instructor, and dedicated his life to Prairie View A&M University. With all he had accomplished in every facet of his career, Coach Gilliard continued to be an active financial supporter of our student-athletes as well as being a season-ticket holder. I always enjoyed our conversations during my time here on The Hill. He always had an encouraging word of wisdom that I looked forward to receiving. He will be greatly missed.” Gilliard was inducted in the PVAMU Sports
Hall of Fame in 1994, and was also inducted with the 1958 championship team in 2015. Gilliard was a three-year football letterman and earned All-SWAC honors playing halfback on the third HBCU national championship team in school history under legendary coach William ‘Billy’ Nicks. Gilliard’s impact on Prairie View A&M was felt in athletics and academics. Gilliard served The Hill as head men’s cross country and track and field coach, was head football coach for one season, and also spent time as Interim Athletics Director. Gilliard had two stints as an assistant football coach, and was also an assistant track coach. Between his time working at the University, Gilliard served as principal at nearby Hempstead High School. Under Gilliard, men’s cross country three straight SWAC titles, the first league championships in the program’s history, in 2005, 2006, and 2007. Men’s indoor track won back-to-back titles in 2007 and 2008, and with a championship in the 2008 SWAC men’s outdoor meet, Gilliard’s men’s program achieved the SWAC Triple Crown (winning titles in cross country, indoor track, outdoor track) in 2007-08.
Current PVAMU head men’s track and field coach Chris Clay was recruited by Gilliard in the mid-1990s and competed at PVAMU from 1996-2000. “He was more than just a coach,” said Clay. “Coach Gilliard was an instructor. He taught me in several of my classes. He was also my advisor and the department head of my major. He was a guy with many responsibilities that showed me what hard work looked like. He never complained about anything. To me, he defined what multitasking was all about. Being a department head as well as an assistant football coach, he was involved in so many things. He never allowed us to make excuses for anything. He just looked for the results.” Funeral arrangements are pending. “He set a standard,” Clay said of Gilliard. “It wasn’t his job to come down to our standards. It was our job as student-athletes and coaches to come up to his standards. Coach taught me how to be a people person, and how to interact with the University community. He also taught me everything I know today about coaching and how to be a better man.”

The Panthers and Bearkats will now play on Thursday, September 7 at Panther Stadium, with kickoff just after 6:30 p.m. It is the second straight year the PVAMU football home opener will be televised live on ESPNU, as
the Panthers defeated Texas Southern 29-24 on Sept. 4, 2016 in the inaugural game in the new venue.
“We’re excited to again have our home opener nationally televised on ESPNU,” said third-year PVAMU head football coach Willie Simmons. “To have the opportunity to showcase our program against one of the top teams in FCS Football is a great honor and a great challenge. We expect it will be
