Molte cose sono cambiate dal nostro primo volo, 14 anni fa, ma la cura per i servizi rivolti alla clientela e la sicurezza dei passeggeri sono rimasti invariati e sono i valori che ci hanno spinto verso nuovi e più ambiziosi traguardi. Tante sono state le sfide e le gratificazioni che apprezziamo e di cui abbiamo fatto tesoro. Giunti a questo punto, vorrei esprimere la mia più sincera gratitudine ed il mio apprezzamento a tutti i nostri impiegati. Negli ultimi 14 anni, siamo riusciti ad avere nel nostro staff collaboratori estremamente validi che condividono la nostra filosofia riguardante il lavoro di squadra ed i valori fondamentali di questa compagna. Il successo di Blue Air è facilmente riconducibile alle loro capacità, dedizione e duro lavoro. Con l’inizio del nuovo anno, possiamo fare un bilancio di quello che il 2018 ha portato alla nostra compagnia: a Marzo abbiamo dato inizio al servizio su Parigi, Charles de Gaulle; abbiamo infatti inaugurato una nuova tratta che collega Torino al più grande aeroporto internazionale di Francia ed al secondo più importante in Europa. Il 2018 è stato anche l’anno del lancio del primo volo Torino-Cracovia. Abbiamo anche dato il via ad un nuovo servizio su Stoccarda, un collegamento tra il Piemonte e la Germania meridionale con prospettive estremamente convenienti per chi viaggia per lavoro. Ed ancora, rispetto allo scorso inverno, abbiamo incrementato i voli per Alghero, Bari, Lamezia Terme e Napoli. Per il 2019 è mia intenzione aggiungere qualche nuova destinazione, restate collegati per saperne di più. Questo anniversario ci ricorda che la cura per i servizi rivolti alla clientela e la sicurezza dei passeggeri sono i valori che hanno permesso lo sviluppo della nostra azienda in questi ultimi 14 anni. E oggi più che mai la compagnia concentra il proprio impegno proprio su questi valori. I nostri 14 anni di attività ci portano anche a pensare al futuro in termini di risultati, perché il meglio deve ancora venire. Siamo orgogliosi di festeggiare il nostro 14esimo anniversario e sono sicuro che Blue Air continuerà il suo prosperoso cammino ancora per molti anni. Many things have changed since our first flight, 14 years ago, but our core values of safety and customer service are what have always pushed us to new heights. There have been many challenges and rewards that we have learned from and we appreciate them all. At this milestone, I’d like to express my sincere gratitude and appreciation to all of our employees. In the past 14 years we have managed to retain exceptionally talented individuals that share the mindset of working together and the core values of this company. You can easily draw a direct line between their talents, dedication, and hard work, and Blue Air’s success. As we move forward into a new year, it’s officially time to reflect on what 2018 has brought us: in March, we began operating to Paris Chales de Gaulle, when we launched a new service from Turin to the largest international airport in France and the second largest in Europe. 2018 was also the year when we launched our very first flight from Turin to Krakow. We also started to fly to Stuttgart, a convenient link between Piedmont and the south of Germany with a predominantly business perspective. Also, compared to last winter, we have increased the frequencies for Alghero, Bari, Lamezia Terme and Naples. I would love to add a couple new destinations in 2019, but you’ll have to stay tuned to find out where. As we overfly this anniversary, we are reminded that it is customer service and safety that have enabled us to thrive for the past 14 years. Today, more than ever, we are comitted on this core values. The celebration also calls for forward thinking because, without question, our greatest accomplishments still lie ahead of us. We are proud to celebrate our 14th anniversary and I am confident that Blue Air will continue its successes for many years. “Leonardo da Vinci. Disegnare il futuro” è la kermesse che dal 15 aprile al 14 luglio metterà in mostra ai Musei Reali di Torino il famoso Autoritratto e altre opere del Genio. “Leonardo da Vinci. Disegnare il futuro” is the exhibition that – from April 15 to July 14 – will display the famous self-portrait and other works by the Genius.
Il celebre Autoritratto di Leonardo da Vinci sarà esposto dal 15 aprile ai Musei Reali di Torino nella mostra “Disegnare il futuro” Il 2019 è l’anno dei 500 anni dalla morte di Leonardo da Vinci e, proprio per questo, saranno moltissime le celebrazioni per la storica ricorrenza. In una di queste sarà grande protagonista il celebre Autoritratto del Genio. La preziosa tela, conservata nella Biblioteca Reale di Torino, sarà esposta ai Musei Reali in occasione della mostra “Leonardo da Vinci. Disegnare il futuro” che sarà inaugurata il 15 aprile e durerà fino al 14 luglio. Leonardo da Vinci’s famous self-portrait on display from April 15 at the Royal Museums in Turin in the “Disegnare il futuro” exhibition 2019 marks the 500th anniversary of the death of Leonardo da Vinci. There are many celebrations scheduled for this historic anniversary including the exhibit featuring the famous Genius’ self-portrait. The precious canvas, guarded at the Royal Library in Turin, will be showcased at the Royal Museums within the “Leonardo da Vinci. Disegnare il futuro” exhibition (April 15 – July 14). Ci sono voluti tre mesi e tanti voti. Ora però la Toscana è la “best wedding destination in the world”. Sono stati i lettori di Travel + Leisure India & South Asia, edizione indiana della rivista americana dedicata ai viaggi di lusso e lifestyle, a conferire tale riconoscimento. Durante l’evento di premiazione Carlotta Ferrari, Direttrice del Destination Florence Convention and Visitors Bureau – divisione Tuscany for Weddings – ha sottolineato i dati del successo che vedono la Toscana come «una regione italiana molto popolare per i destination wedding (31,9%)». “Best wedding destination” in the world It took three months and many votes. Today Tuscany is the “best wedding destination in the world”. The award was given by the readers of Travel + Leisure India & South Asia, the Indian edition of the American magazine dedicated to luxury and lifestyle travel. A un’ora da Shanghai ha da poco aperto il primo hotel costruito dentro una cava. L’Intercontinental Wonderland è composto da 19 piani, 17 di questi però sono realizzati verso il basso, attaccati a strapiombo su una parete rocciosa di una cava. Gli ultimi due piani della struttura, progettata dall’architetto inglese Martin Jochman, sono sott’acqua. The Intercontinental Wonderland features 19 floors, 17 of which however are technically underground, attached on the rocky wall of a quarry. The 2015 Sassicaia by Tenuta San Guido has taken the lead according to the American Magazine Wine Spectator’s Top 100 wines list. This recognition has come in concurrence with the most famous Italian wine’s 50th anniversary from its launch date. Produced in Tuscany, it achieved, after twelve years for the first time from the last Italian producer (2001 Brunello di Montalcino by Tenuta Nuova di Casanova di Neri), the top of the prestigious list.

Even though your daily activities are generally the same, every day is different as well as every destination. Once onboard, you will make sure all is set for the passengers’ boarding. When the passengers board the plane you will kindly welcome them, helping them find their seats and avoid delays. Once the plane takes off, it’s time for the on board service. During the preflight briefing, you had been entrusted with specific tasks and now you know what to do. Together with one of your colleagues you will hand out snacks, drinks and other products from the onboard menu. The secret to become a good flight attendant is treating all passengers exactly how you would like to be treated: with care, empathy, respect and calm. During the flight, you will enjoy an amazing view from your office in the clouds: an ever-changing landscape. The view that passengers photograph and enjoy as a unique experience, is your daily pleasant experience. e come sosteneva Ludwig van Beethoven, “La musica è una rivelazione”, una rivelazione lo è stata sicuramente LP che, con la sua musica e la sua attitudine a questa arte, ha segnato una strada nuova nel panorama musicale internazionale. Lo testimonia un album, Lost on You, che l’ha consacrata al grande pubblico e aperto un capitolo inedito nel grande libro della storia del rock. Una storia che la cantautrice di origini italiane ha intenzione di continuare a scrivere con un nuovo lavoro, Heart To Mouth, anticipato da un singolo, Recovery, sinuoso e profondo, toccante e intenso allo stesso tempo: «Adoro questo nuovo disco, riascoltandolo mi sono sentita come su un’autostrada, piena di emozioni».
Recovery, il brano che ha anticipato il suo nuovo lavoro, sembra tracciare una nuova strada nella carriera di LP. Che album è Heart to Mouth e come è nato? «Non sono sicura che stia tracciando un nuovo cammino. Penso che sia la continuazione di un’esplorazione che io porto avanti in tutto ciò che faccio, come sempre. Ogni album è un nuovo capitolo e spero che rappresenti un momento di crescita. Heart to Mouth è più una serie di canzoni connesse tra loro da un unico filo conduttore. I brani indicano dove mi trovo in questo momento nella vita e parlano di alcune vecchie situazioni che mi porto dietro e su cui sto lavorando». Lost on You è stato un grande successo a livello mondiale. Con questo nuovo lavoro, sente la pressione di doversi
riconfermare? «Se avvertissi una qualsiasi pressione, cercherei di affrontarla, non credo che sia giusto cercare di ripetersi, gli artisti hanno bisogno di continuare a correre dei rischi ed a sentirsi un po’ sulle spine, credo che sia questa combinazione a dare vita all’arte». Qual è la prima cosa che ha provato riascoltandolo per intero la prima volta? «Mi sono sentita sollevata. Credo che l’album restituisca emozioni vere e reali e che sia di qualità, non potrei chiedere nulla di meglio». A quale dei brani del nuovo disco si sente più legata? «Non ho un brano preferito e in genere è sempre cosi, ma Dreamer potrebbe essere la mia preferita». Prima del successo con Lost on You, tre album che non hanno avuto la stessa eco. Ha mai avuto paura di non farcela? E quanto è stato difficile continuare a coltivare il suo sogno? «Certamente sì, l’ho pensato molte volte. Ma credo che sia una paura comune a molte persone, a prescindere dal tipo di carriera. E quando poi arrivano al successo, vogliono sempre averne di più. Fortunatamente, in concomitanza con quegli album avevo dei contratti che mi hanno tenuto a galla, scrivevo canzoni per altri artisti e questo mi ha sostenuto sia economicamente che emotivamente. Ho anche ricevuto apprezzamenti e incoraggiamenti da parte dei fan durante tutto il mio percorso e questo ha un valore inestimabile. Certo non avevo lo stesso numero di fan che ho adesso, ma ri-

With her music and her attitude towards this art, she marked a new path in the international music scenario. Lost on You, the album that made her famous and gave life to a brand new chapter of the history of rock, is proof of this. The singer songwriter of Italian origins intends to follow her path and she wrote a new album, Heart To Mouth following the early release of Recovery a deep, moving and intense single. «I adore this new album, listening to it I felt as if I were in a broad highway, brimming with emotions». Recovery, the single released right before your latest album, seems to be tracing a new path in your career. What led you to Heart to Mouth and what kind of album is it? «I’m not sure it’s tracing a new path so to speak. È probabilmente una versione di quello che io ho vissuto crescendo da italiana. Essere italiani era qualcosa di cui essere molto orgogliosi. E quando si tratta di affetti, di relazioni e di fedeltà, essere italiani significa passione ed emotività. Sono felice di avere la possibilità di trasmettere queste emozioni e di avere un pubblico pronto ad accoglierle».

How did you feel the first time you listened your latest album for the first time? «I felt relief. I felt like this was a body of work that felt true and real and of quality to myself. And I could ask nothing more». In the new album, which is your favorite track, and why? «I don’t really have just one which is usually the case and this is usually, but, Dreamer seems to stay one of my favorites».

Before Lost on You, you released three albums that weren’t just as much successful. Have you ever thought you wouldn’t make it? How difficult was it to pursue your dream? «Of course I thought it many times. But, you know I think people in many types of careers feel that way and even when they succeed they want more. While I was making those records I was lucky enough to be in record deals that kept me afloat with advances and writing songs for others which kept me going both financially and emotionally. I also was getting praise and encouragement from fans all along the way which was invaluable, not in the numbers I have now but you’d be surprised what the kind words of one person a day/a week/a month can do». In an interview you said that Lost on You holds your Italian spirit. «It’s difficult to explain. Like trying to explain the spirit of a country and its internal story handed down from generation

What is left of the LP who sung HeartShaped Scar compared to the current LP? «It’s all in there but I’d like to hope I’ve evolved in ways if only 0,00001%». CRACOVIA UN GIOIELLO TRA STORIA E CULTURA
Capitale del Regno di Polonia fino al 1569 la città è tutt’oggi il maggior centro artistico e universitario del Paese: un affascinante viaggio tra bellezze architettoniche e naturali di Gianluca Boserman
Una città che profuma di storia in ogni angolo. Un luogo meraviglioso dove immergersi per passare una vacanza all’insegna della cultura, dell’arte, della storia e, naturalmente, del divertimento. Ecco, Cracovia è tutto questo e molto altro.
Storia
A lungo capitale della Polonia, e ancora oggi principale centro turistico, artistico e universitario del Paese, la città capoluogo del Voivodato della Piccola Polonia è un gioiello da ammirare e scoprire in ogni piccolo dettaglio. La sua origine risale addirittura all’Età del Ferro, ma la prima testimonianza sembra risalire intorno all’VIII Secolo. Intorno all’anno 900, Cracovia era un fiorente centro commerciale e, sempre in questo periodo, vengono erette costruzioni che, ancora oggi, sono simboli della città: il principale rimane sicuramente il Castello di Wawel. tinua anche nei secoli successivi: nel 1364 Casimiro il Grande fonda l’Università Jagellonica, mentre sei anni più tardi diventa la capitale del Regno di Polonia fino al 1569. All’inizio del XVII secolo, poi, Sigismondo III trasferisce la capitale a Varsavia. Inizia così un lento declino della città anche a causa delle varie invasioni subite: Napoleone, prussiani, russi e nazisti occuparono, nel corso degli anni Cracovia, che però, nonostante questi duri momenti, non ha mai perso né la speranza né la sua bellezza né la sua importanza a livello mondiale. Dal 1964 al 1978 vescovo della città fu un signore che avrebbe cambiato la storia non solo della Chiesa ma del mondo: Karol Wojtyla, meglio conosciuto come Papa Giovanni Paolo II.

Leggenda vuole, infatti, che la Polonia fosse infestata da un drago e che il re promise in sposa la figlia a chi fosse riuscito a uccidere l’animale: l’impresa riuscì a un calzolaio grazie a un ingegnoso stratagemma. Il drago, ovviamente, aspetta tutti i visitatori all’ingresso della costruzione dove, nel corso dei secoli, sono stati incoronati i sovrani del Regno. Tutte da ammirare, all’interno, la Cappella Reale, il tesoro reale e l’armeria medievale. E l’ermellino cosa c’entra con Cracovia? Ebbene, all’interno del Museo Czartoryski, il primo museo storico del Paese, fondato dalla principessa Izabela Fleming nel 1796, si può ammirare una delle opere più belle di Leonardo da Vinci: la Dama con l’ermellino. Come sia finito laggiù il dipinto che ritrae Cecilia Gallerani è ancora oggi un mistero ma, visitando Cracovia, è una tappa obbligatoria.

Su un lato della piazza poi si erge la meravigliosa Chiesa di Santa Maria con le due torri di altezze differenti.

History
Once capital of Poland, and still today the main tourist, artistic and university center of the country, the capital city of the Lesser Poland Voivodeship is a jewel to admire and discover in every small detail. Its origins date back to the Iron Age, but the first evidence seems to date back to the VIII century. Around the year 900, Krakow was a thriving commercial center and, again in this period, buildings were erected that, still today, are symbols of the city: the main one is certainly the Wawel Castle. The rise of the city continues in the following centuries: in 1364 Casimir III the Great founded the Jagiellonian University, while six years later it became the capital of the Kingdom
Bisogna uscire un po’ dalla città, circa 13 chilometri, per poter ammirare le miniere di sale di Wieliczka, uno dei posti più affascinanti dell’intera Polonia e, forse, d’Europa. In quasi 300 chilometri di gallerie con bassorilievi, decorazioni, laghetti, il punto di maggior interesse è rappresentato dalla “Cattedrale di Sale”, una
vera chiesa di 54 per 12 metri dedicata alla Beata Kinga, la patrona dei minatori polacchi.
Per non dimenticare
Auschwitz. Basta il nome. Il luogo più famoso, e triste, della Seconda Guerra Mondiale si trova a pochi chilometri da Cracovia e, sebbene sia un pugno nello stomaco, è una tappa obbligatoria. Per non dimenticare, per vedere con i propri occhi una delle pagine più nere della storia dell’umanità.
Divertimento notturno
Essendo la principale città universitaria polacca, Cracovia è piena di pub, locali, ristoranti dove passare una serata rilassante e in allegria. Insomma dalla cultura, alla storia, al divertimento: Cracovia è senza ombra di dubbio un piccolo gioiello da scoprire e da ammirare.
Castles and ermines
A strange combination, one would think, but actually it is less than one would imagine. The first place to make a stop is definitely the Wawel Castle, symbolic place of the city full of history and myths. Legend has it, in fact, that Poland was infested with a dragon and that the king promised his daughter in marriage to the one who would succeed in killing the monster: the challenge thrived thanks to a shoemaker which had an original stratagem. The dragon awaits all visitors at the building entrance where, over the centuries, the sovereigns of the Kingdom have been crowned. Inside it’s possible to admire the Royal Chapel, the Royal Treasure and the medieval armory. And what does the ermine have to do with Krakow? Well inside the Czartoryski Museum, the country’s first historical museum, founded by Princess Izabela Fleming in 1796, you can admire one of Leonardo da Vinci’s most beautiful works: Lady with an Ermine. How in the world the painting that portrays Cecilia Gallerani has ended up there is still a mystery today, but visiting Krakow it is definitely a must.
Unesco heritage
the city’s small historical center is included in the UNESCO World Heritage Site list, for its immense square and for the gardens that surround it. Heritage Site. The Rynek, the Market Square (the Poles say it is the largest in Europe) is home to the Textile Market (Sukiennice) where you can indulge in shopping. On one side of the square stands the marvelous Saint Mary’s Church with its two different height towers.
Salt mines
Just outside the city, about 13 km, you can admire the Wieliczka salt mines, one of the most fascinating places in Poland and, perhaps, in Europe. Around 300km of galleries with bas-reliefs, decorations and ponds. The most interesting area to see is represented by the “Salt Cathedral”, a true 54 x 12 meters church dedicated to the Blessed Kinga, the patron saint of Polish miners.
The importance of remembering
Auschwitz. The name is enough. The most notorious and painful place of World War II is located a few kilometers from Krakow and, although it is a heart-rending experience, is it definitely a must-see destinaton. To not forget, to see with your own eyes one of the darkest pages in the history of humanity.
Nightlife
Being the main university city in Poland, Krakow is full of pubs, clubs, restaurants where you can spend a relaxing and fun evening. In short, from culture, to history, to entertainment: Krakow is undoubtedly a small gem to discover and admire.
This two-storey restaurant (one Michelin Star) is probably the most popular in the city. Located at the foot of the Wawel hill, in the city center, it is characterized by white wooden tables and tapestries on the walls.

i recente, una nota compagnia telefonica ha deciso di girare uno spot sull’Etna, titolo: “La Montagna”. Sì, perché prima ancora che un vulcano, l’Etna è una montagna: con i suoi circa 3300 metri (la quota varia spesso) è la vetta più alta d’Italia se si escludono quelle dell’arco alpino. Il più grande vulcano attivo d’Europa è entrato nel 2013 nella lista dei Patrimoni Mondiali dell’UNESCO: “I crateri, le ceneri, le colate di lava, le grotte di lava e la depressione della valle del Bove fanno del monte Etna una destinazione privilegiata e un importante centro di ricerca in-
NORD-SUD-OVEST-EST ternazionale con una lunga storia di influenza sulla vulcanologia, la geologia e altre discipline di scienza della terra” inoltre “la sua notorietà, la sua importanza scientifica, i suoi valori culturali e pedagogici sono di importanza mondiale”. Così l’organizzazione che fa capo alle Nazioni Unite ha motivato l’inserimento di “A Muntagna”, come la chiamano gli etnei, nella World Heritage List. E montagna in inverno è sinonimo di neve. Nella stagione fredda, oltre alle escursioni, possibili tutto l’anno, sull’Etna si può anche sciare, sia sul versante settentrionale, in zona Piana Provenzana, sopra Le Gole dell’Alcantara, a sinistra, e i Crateri Silvestri, sotto, sono solo due delle tante bellezze naturalistiche che riserva il paesaggio dell’Etna. THE MOUNTAIN OF BEAUTIES One-off and enchanting landscapes, evocative gorges, ski resorts and many attractions for children: the charm of Mount Etna knows no boundaries Recently, a well-known telephone company decided to shoot a commercial on Mount Etna, entitled: “La Montagna” (the mountain). Yes, because even before being a volcano, Mount Etna is a mountain: with its approximately 3300 meters (the altitude varies often) it is the highest peak in Italy if you exclude those of the Alps. It entered the UNESCO World Heritage list in 2013 for being the largest active volcano in Europe: “The craters, the ashes, the lava flows, the lava caves and Bove valley basin make Mount Etna a privileged destination and an important international research center with a long history that has influenced volcanology, geology and other disciplines of earth science” moreover “its fame, its scientific importance, its cultural and pedagogical values are of global importance.” This is how the organization belonging to the United Nations has motivated the inclusion of “A Muntagna”, as the locals call it, in the World Heritage List. And mountain in winter is synonymous with snow. In the cold season, in addition to hiking, which is possible all year round, in Mount Etna you have the opportunity to ski, both on the northern side, in the Piana Provenzana area, above Linguaglossa, and on the southern one, in the territory of Nicolosi. Here, at an altitude of 1920 meters, from the Sapienza mountain shelter, the cableway departs and leads to the various slopes, including the “Piccolo Rifugio”, the longest (2700 meters) and with

Sei invece le piste di sci alpino (di cui 4 rosse) servite da quattro impianti di risalita. Recentemente, sono stati aperti anche alcuni tracciati per il fondo sul versante occidentale dell’Etna, nella zona di Monte Maletto. In inverno, sul vulcano, si può praticare anche lo sci alpinismo, il freeride (il fuori pista) che permette di scoprire angoli davvero suggestivi, l’importante è affidarsi a esperti perché le insidie non mancano. Così come non manca la possibilità di fare escursioni con le ciaspole e scoprire le bellezze naturalistiche del Parco dell’Etna. Il vulcano più alto d’Europa è anche una montagna a misura di bambino e lo è fin dalle sue prime pendici, da quella che viene definita “La Porta dell’Etna”, ovvero il paese di Nicolosi. a difference in altitude (580 meters). Not far away, in Piano Vetore, you can practice cross-country skiing with up to 10 kilometers of accessible trails. It’s also possible to enjoy Nordic skiing in Piana Provenzana, among pine, beech and birch woods, thanks to the “Poiana” track (approximately 5 km long), approved for FISI competitions. Six are the alpine ski slopes (4 of which are red) serviced by four ski lifts. Recently, some tracks have been opened for cross-country skiing on the western side of Mount Etna, in the Monte Maletto area. In winter, on the volcano, you can also practice ski mountaineering, freeride (off-piste) that allows you to discover really impressive sights. Keep in mind to rely on experts as dangers are around the corner. Least to say there is the possibility of hiking with snowshoes and discover the natural beauties of the Etna Park. ospita al suo interno un piccolo Museo Vulcanologico che illustra la storia del vulcano e conserva le cosiddette “bombe”, cioè delle pietre di lava solidificate portate alla luce dalle tante eruzioni che si sono succedute in migliaia di anni. All’esterno si trova invece il Sentiero del Germoplasma, un parco botanico che racchiude e sostiene il patrimonio genetico e vegetale etneo. Due luoghi molto didattici, per i bambini, ma anche per gli adulti. Poco a nord di Nicolosi, meritano una visita i Monti Rossi, nati dall’eruzione del 1669: tra pinete e percorsi naturalistici è stato costruito il Parco Etna Monti Rossi Adventure, un parco avventura con percorsi per bam-

bini dai 4 anni e per adulti oltre a un’area relax e pic-nic e sentieri natura. All’interno del Parco dell’Etna altri luoghi incantevoli da non perdere sono la Valle del Bove, depressione vulcanica con pareti alte fino a 1000 metri e profondi canyon, la Grotta Vulcanica, un’altra grossa cavità nella quale si è formato un ghiacciaio perenne, e le Gole dell’Alcantara, formatesi grazie all’azione erosiva del fiume omonimo e percorribili se legati con delle funi. Altre bellezze mozzafiato di una montagna croce e delizia, di un vulcano che fa paura ma al tempo stesso rappresenta un patrimonio notevole per tutta la Sicilia.
L’Etna è il vulcano attivo più alto d’Europa. All’interno dell’area naturalistica del Parco dell’Etna, istituita nel 1987, si trova un altro luogo incantevole: è la Valle del Bove, in basso, che presenta profondi canyon e pareti profonde fino a 1000 metri. in Europe is also a family-friendly mountain and it is so right from its slopes in Nicolosi, the village named “La Porta dell’Etna”, (the door of Etna). This is the site of the Etna Park, which houses a small Volcanological Museum that illustrates the history of the volcano and stores the so-called “bombs”, solidified lava stones brought to light by the many eruptions that have succeeded in thousands of years. Outside the park the Germoplasm Path is found, a botanical park that contains and supports the Etna genetic and plant heritage. Two very educational places, for children, but also for adults. Just north of Nicolosi, the Red Mountains, created by the 1669 eruption, are worth a visit: among the pine woods and nature trails, the Monti Rossi Adventure Park has been built, an adventure park with trails for both children (from 4 years) and adults. It also features relaxation area and nature trails. The Etna Park is home to other enchanting unmissable sites: Valle del Bove, volcanic basin with walls up to 1000 meters high and deep canyons, the Volcanic Cave, another large cavity in which a perennial glacier has formed, and the Alcantara caves, formed by the erosive action of the river that bears the same name and can be accessed if tied with ropes. inominata la “patria dell’automobile”, Stoccarda è sicuramente uno dei centri culturali, amministrativi ed economici più importanti della Germania. Situata in una valle nella zona sud-ovest del Paese, circondata da colline con boschi, frutteti e vigneti, a pochi passi dalla Foresta Nera e dal fiume Neckar, la capitale dello stato federato del Baden-Württemberg ospita gli stabilimenti di due dei marchi automobilistici più importanti del mondo, Mercedes-Benz e Porsche. «Stoccarda è una bella città. Stoccarda è in fondo alla valle, dove le ragazze sono belle ma anche crudeli», scriveva così ne Il villaggio silenzioso Herman Hesse, poeta e filosofo premio Nobel per la letteratura 1946.
Storia
Stoccarda deve le sue origini a Liudolfo di Svevia, uno dei figli di Ottone I, imperatore del Sacro Impero, che intorno al 950 d.C. fondò la città che, almeno in origine, venne utilizzata per allevare i cavalli. Attorno al 1300, Stoccarda divenne la residenza dei conti di Württemberg, promossi duchi nel 1496.

Dopo la rottura di Napoleone nei confronti dell’Impero, i duchi di Württemberg guadagnarono il titolo di re e Stoccarda divenne residenza reale. Fu però nel 1871 che la città si unì all’Impero tedesco, creato dal Primo Ministro prussiano Otto von Bismarck. La Prima Guerra Mondiale portò alla caduta della monarchia e alla proclamazione dello Stato libero di Württemberg, regno indipendente della Repubblica di Weimar. Il centro di Stoccarda fu raso al suolo durante i bombardamenti aerei della Seconda Guerra Mondiale. La città, lentamente, si rialzò fino ad assumere l’assetto attuale.
Musei e tanto altro
Il luogo ideale per iniziare la visita della città è sicuramente Schlossplatz, al cui centro si erge la Colonna del Giubileo (1841) sormontata dalla Concordia, dea dell’armonia il cui sguardo è rivolto verso il Castello Nuovo. It is located in a valley south-west of the country, surrounded by woods, vineyards and orchards a stone’s throw from the Black Forest and the river Neckar, the capital of the BadenWürttemberg federal state is home to the manufacturing plants of two of the world’s leading automotive brands, MercedesBenz and Porsche. Hermann Hesse, poet, philosopher and Nobel Prize for Literature in 1946 wrote in Journey to the East «Stuttgart is a beautiful city. Stuttgart is at the bottom of the valley, where the girls are pretty but also cruel».
History
Precedentemente i duchi e conti del Württemberg abitavano le sale del vicino Castello Vecchio, dove ogni anno si tengono le cerimonie d’inaugurazione della sagra del vino Stuttgarter Weindorf e del Mercatino di Natale di Stoccarda. In questa straordinaria arteria urbana, ogni giorno migliaia di residenti e turisti affollano i negozi alla ricerca del regalo giusto. Il gioiello più recente della Schlossplatz è il Kunstmuseum: un cubo di vetro alto 27 metri, che rende la piazza ancora più spettacolare soprattutto di notte, quando l’illuminazione rivela nei dettagli il cubo di marmo racchiuso al suo interno. La collezione cittadina del Kunstmuseum comprende oltre 15.000 opere dal XVII secolo in avanti, ma soprattutto contemporanee. Per gli amanti del grande schermo consigliamo una scappatina a Stoccarda tra aprile e maggio, quando, dal 1982, si tiene il Festival Internazionale del Cinema d’Animazione. Infine, se pensiamo alla Germania ci verrà in mente un bel boccale di birra fresca. Ecco, per gli appassionati della bionda che vogliono riscoprire un clima meno commerciale rispetto all’Oktoberfest di Monaco di Baviera, consigliamo una visita tra settembre e ottobre, quando le vie della città si trasformano in pub all’aperto per la Cannstatter Volksfest.
Around 950 AD, Duke Luidolf of Swabia, son of Holy Roman Emperor Otto I, founded the city. Initially the area was used for stud farms. Around 1300 Stuttgart became the residence of the Counts of Württemberg, indorsed Dukes in 1496. After Napoleon broke with the Empire, the Duke of Württemberg gained the title of King and Stuttgart became a royal residence. It was however in 1871 that the German city joined the German Empire created by Prussian Prime Minister, Otto von Bismarck. The First World War led to the fall of the monarchy and the proclamation of the Free State of Württemberg, an independent kingdom of the Weimar Republic. The center of Stuttgart was razed to the ground during the World War II air raids. Stuttgart slowly rose up and became the city we see today.

Start visiting the city by going to Schlossplatz, where in the center stands the Jubilee Column (1841) surmounted by Concordia, goddess of harmony whose gaze is turned towards the New Castle. This marvelous building has mixed architectural influences: from baroque to rococo, from neoclassical to imperial style, and was the royal family’s residence until the midnineteenth century. Formerly the Dukes and Counts of Württemberg used to live in the rooms of the nearby Old Castle, where the opening ceremonies of the Stuttgarter

Weindorf wine festival and the Stuttgart Christmas Market are held every year. In this extraordinary urban artery, thousands of locals and tourists flock to the shops every day looking for the right gift. The most recent attraction of the Schlossplatz is the Kunstmuseum; a 27-meter-high glass cube 27, that is even more spectacular at night, when the lighting reveals in detail the marble cube found inside. The Kunstmuseum’s collection includes mostly contemporary art in addition to over 15,000 works from the seventeenth century onwards. If in Stuttgart, however, you can not miss the MercedesBenz Museum, the place that draws the largest number of visitors per year. In the district of Zuffenhausen, 9 km away from the central station, lies the Porsche Museum, which houses 80 of the most legendary models of the German car manufacturer: from the 1964, 904 Carrera GTS Coupé to the 911 GTI that won at Le Mans in 1998.

For the big screen lovers, we recommend a trip to Stuttgart that has been housing the International Festival of Animated Film since 1982 (between April and May). ue millenni di storia e un patrimonio naturale unico. Porto Torres è una piccola gemma nel nord dell’Isola nella provincia di Sassari, famosa per la sua bellezza selvaggia e ricchezza culturale. Un vero e proprio museo a cielo aperto anche grazie ai resti di Turris Libisonis, colonia romana fondata da Cesare nel 46 a.C., che permettono di vivere un viaggio nel tempo. Viaggio che continua nel vicino Antiquarium Turritano, Museo archeologico nazionale che raccoglie ceramiche, statue e mosaici della colonia Iulia. Di età imperiale è, invece, il Ponte Romano: sette arcate, perfettamente conservate, che sovrastano il Rio Mannu. Molte altre testimonianze della storia turritana arrivano dai complessi funerari di via Libio e dalla Necropoli preistorica di Su Crucifissu Mannu.

North of the Island, province of Sassari, Porto Torres is a small gem famous for its wild beauty and cultural richness. A true open-air museum also thanks to the remains of Turris Libisonis, a Roman colony founded by Caesar in 46 BC, which allow us to experience a journey through time. A journey that continues in the nearby Antiquarium Turritano, a National Archaeological Museum that gathers ceramics, statues and mosaics from the Iulia colony. The Roman Bridge is instead from the Imperial Age: seven perfectly preserved arches that overlook the Rio Mannu. Other evidence of Turritan history comes from the funerary complexes of via Libio and the prehistoric necropolis of Su Crucifissu Mannu. In Porto Torres is also home to the largest and oldest Romanesque monument in Sardinia: the Basilica of San Gavino, built on Mount Agellu between 1030 and 1080, has always been surrounded by an aura of mystery and legend. Tra le spiagge, la più bella e famosa è quella di Balai. Acque cristalline, insenature rocciose e la chiesa a picco sul mare (San Gavino a mare) ne fanno una tappa d’obbligo. Meritano una visita anche il porto, dominato dalla Torre Aragonese, con il suo Museo e il Museo Andrea Parodi.

Worth a visit is also the port, dominated by the Aragonese Tower, housing its Museum and the Andrea Parodi Museum.

Il rifugio Zallinger si trova esattamente nello stesso posto dove è stato costruito nel lontano 1854: nella piccola Alpe di Zallinger, che si estende per gran parte sopra i 2000 metri, uno degli angoli più suggestivi dell’Alpe di Siusi (Bz). Al rifugio Zallinger non si arriva con la macchina: in inverno gli ospiti possono usufruire di un transfer molto particolare con un gatto delle nevi. ono trascorsi 42 anni da quando il primo Rocky irruppe sulla scena cinematografica americana. Era il 1976, nel bel mezzo del decennio che declinò concetti e ragioni della Nuova Hollywood, il movimento destinato a influenzare il cinema degli anni a seguire. Coppola, De Palma, Scorsese, Spielberg e Lucas: ognuno a modo suo, ciascuno secondo precise stigmate artistiche, quel che è vero è che loro hanno cambiato la settima arte, emozionato, costruito sogni, scardinato incubi, disegnato eroi. Nel 1977, il piccolo film su uno sfigato pugile italo-americano che lotta per il titolo dei pesi massimi si ritrovò nella notte degli Oscar a vincere la statuetta più ambita, quella per il Miglior Film, in faccia a uno dei capolavori riconosciuti di un altro italo-americano, il regista Martin Scorsese. Rocky sarebbe potuto così passare alla storia come il film che tolse l’Oscar a Taxi Driver. E la storia che seguì rischiò di metterne in second’ordine i meriti. La saga che nacque finì presto per confondersi con il marketing, uno degli esempi di scuola
del cinema seriale di cui oggi siamo invasi, perdendo di vista i meriti artistici di quel primo episodio. Rocky non è solo un film su un match di pugilato. Rocky è Philadelphia, una città devastata dalla crisi economica, Rocky è il suo personaggio, un boxer fallito che per campare recupera i soldi della malavita minacciando di spezzare dita ai malcapitati indebitatesi con il boss locale. Rocky è gli italiani d’America. Rocky è una storia di solitudine, ma anche di una serata pattinando sul ghiaccio da cui nascerà un grande amore. La sceneggiatura tocca temi e nervi scoperti degli USA degli anni Settanta. Il suo autore, Sylvester Stallone, divenne uno dei pochi a ricevere le candidature per Miglior Attore Protagonista e per la Miglior Sceneggiatura Originale nello stesso anno e per lo stesso film. Prima di lui capitò solo a Charlie Chaplin e a Orson Welles; dopo di lui accadde solo a Woody Allen per Io e Annie, Matt Damon per Will Hunting - Genio ribelle e Roberto Benigni per La vita è bella. Sempre tra gli episodi più riusciti c’è Creed, penultimo sequel in ordine di tempo, arrivato nel 2015, che riuscì nel difficilissimo compito di trasfondere sangue fresco in un franchise che mostrava i colpi del tempo. It was 1976, in the midst of a decade that refused concepts and reasoning of the New Hollywood, the movement intended to influence the cinema of the years to come. E diventare bravo, poi se nel lavorare a questo obiettivo riesco a entrare in contatto con altre persone talentuose, tanto meglio». Con Sly “Rocky” Stallone è andata allo stesso modo: «È una leggenda, un’icona. Lui ha dato il via alla saga, lui ha disegnato la mappa dei film sulla boxe e ora ha passato il testimone a una nuova generazione di attori “pugili” e distribuisce continuamente delle perle di saggezza, dietro o davanti la cinepresa, su come dovrebbe essere realizzato un film o come portare un montante». The saga that was born soon ended up being confused with marketing stunt, one example of serial cinema that we are invaded with today, losing all sight of the artistic merits of that first episode. Rocky is not just a movie about a boxing match. Rocky is Philadelphia, a city devastated by the economic crisis, Rocky is his character, a failed boxer who, to survive, gets back the money for the mob’s local boss threatening to break fingers to the unfortunate debtors. Rocky represents the Italians of America. Rocky is a story of loneliness, but also about an evening skating on the ice rink where a great love would be born. The screenplay touches on the themes and raw nerves of the USA in the seventies. Its author, Sylvester Stallone, became one of the few to receive nominations for Best Actor and for Best Original Screenplay in the same year and for the same film. Before him it happened only to Charlie Chaplin and Orson Welles; after him it only happened to Woody Allen for Annie and Me, Matt Damon for Good Will Hunting and Roberto Benigni for La Vita è Bella. Rocky was not a “little movie” and still today, in times of economic crisis, keeps its strength and passion intact. The 7 sequels did not weaken the left hook. Rocky decides to train the son of his opponent-friend-trainermentor Apollo Creed. Released in USA in late November, Creed II is to be released on January 24, 2019 in Italy, eighth film in the series of Rocky, it is probably to be considered as a direct sequel to Rocky IV. Yes, because the son of Apollo, Adonis Creed (Michael B. Jordan), must face in the ring the son of the boxer who killed his father, Viktor Drago. A dynasty, a revenge, the faults of the fathers that fall on their children and children who can only fight to find themselves. It was true for Rocky in 1976, it was true for Adonis in 2015 and even more so today when the protagonist Michael B. Jordan is now a star launched in the Olympus of cinema, after the success of Black Panther, role for which rumors have it, to be a future candidate for the 2019 Oscars. For Creed II, Jordan worked with the new director Steven Caple Jr. who replaced Ryan Cogler. “Ryan is quiet, silent, we understand each other without speaking. Steve is more extrovert instead. A
vrebbe voluto fare il pittore Heinz Beck, ma dando seguito all’opposizione familiare, ha optato per una scelta che gli ha permesso ugualmente di esprimere la creatività che si agitava in lui sin da ragazzo. Altro che ripiego. Heinz Beck è uno dei grandi chef che continua a ricevere riconoscimenti, ad avviare nuove attività in giro per il mondo e ad avere una umiltà disarmante, quella propria dei grandi professionisti. Il suo segreto? Sua moglie (e socia) Teresa.

L’amore per questo mestiere come l’ha scoperto? «Come mi capita di raccontare spesso, inizialmente il mio desiderio era quello di diventare un pittore. Amo l’arte in ogni sua declinazione e ho sempre sentito di avere una certa predisposizione verso questa materia. La mia famiglia si oppose e scelsi un ambito di studio in cui poter esprimere la mia creatività… ed eccomi ancora qui, diversi decenni dopo». Which dish convinced you to take up this career and who did you make it for? «The German name is Ente mit Rotkohl und Kartoffelklößen (duck with red cabbage and potato “gnocchi”). Honestly, it wasn’t the dish that motivated me to take up this career, but I remember it as one of the first “rich” dishes that I prepared at the catering college which was given to teacher to judge». Now you’ve been in Italy for many years, what have you taken with you from Germany? «Of course rigor and diligence can be traced back to my origins… besides these, I feel completely Italian». A dish that you remember from your childhood? «The Zelten, sweet bread typical of the holidays». You conquered three Michelin stars and other important awards and prizes, but you are still humble and willing. What’s the secret to your success?

Da tanti anni in Italia, cosa si porta dietro della sua Germania? «Sicuramente il rigore e la tenacia sono riconducibili alle mie origini… per il resto, mi sento italiano a tutti gli effetti». Un “piatto del ricordo” della sua infanzia? «Lo zelten, il pane dolce tipico delle festività». Con la sua cucina ha conquistato ben 3 Stelle Michelin e altri importanti premi e riconoscimenti, ma è sempre una persona umile e disponibile. Qual è il segreto del suo successo? «Mia moglie Teresa. Lei é il mio baricentro. Insieme gestiamo la

What a second-best! Heinz Beck is one of the greatest Chefs ever and continues to receive recognitions, to start new restaurants throughout the world and to be disarmingly humble, just like great professionals. His secret? His wife (and business partner) Teresa. How did the passion for this job come about? «As I often tell people, my first desire was to become a painter. I love art in all its forms and I’ve always had a certain disposition towards it. My family was against it and so I chose to study where I could

C’è, in particolare, qualche suo collega dove ama andare a mangiare? «Mi piacerebbe, vista anche la stima che nutro nei confronti dei miei colleghi, ma non ho mai tempo. Quando posso concedermi una serata di relax, mi piace ri-

Come arriva una nuova idea per un piatto? «Di base, mi ispiro alla realtà che mi circonda: può essere una canzone, un’opera d’arte, una conversazione da cui scaturisce l’idea. Talvolta mi immagino il piatto e inizio a studiare abbinamenti e tecniche con cui realizzare ciò che ho in mente; altre volte prendo ispirazione da un ingrediente e cerco il modo più sano ed equilibrato per valorizzarlo, senza rinunciare però al gusto».

C’è qualche ingrediente che porta con sé nei o dai suoi viaggi? «Certamente. Durante i miei viaggi mi piace assaggiare e studiare gli ingredienti locali, sia per arricchire la mia conoscenza sia, perché no, per creare nuovi abbinamenti e sperimentare sapori. Per fare un esempio, capita che un ingrediente asiatico, quale lo yuzu, diventi uno dei protagonisti dei miei piatti e questo piatto può entrare in carta a Roma, così come a Tokyo, a Dubai e negli altri ristoranti da me gestiti».

il meglio? «Di cucinare ogni giorno come se fosse il primo e mettersi nei panni del cliente per capire e anticipare le sue esigenze. Li sprono a studiare per conoscere a fondo le materie prime, a tenersi al passo con le nuove tecniche e li esorto a trasmettere con i piatti la loro passione, elemento indispensabile per riuscire in questo mestiere». Nella sua cucina non deve mai mancare…? «Pesce, frutta, verdura, erbe aromatiche e un ottimo olio extra vergine di oliva». Il suo piatto preferito? «Dipende dai giorni. In stagione, la pasta con i tenerumi come la sanno fare mia moglie e mia suocera». Quando non lavora cosa ama fare? «Amo dipingere, mi piacciono le mostre, i vernissage, assistere all’Opera, ascoltare musica, visitare musei o anche solo semplicemente una passeggiata per godermi la bellezza della città in cui vivo.

Is there any of your colleagues’ restaurant you like to eat at? «I’d love to, considering how highly I think of them, but I never have enough time. When I’m able to break-away and chill I like to stay home with Teresa». How do you get new ideas for a dish? «Mostly, I’m inspired by what surrounds me: it could be a song, an art work, or even a chat that gives me an idea. Sometimes I imagine the dish and I start studying the different combinations and techniques I want to use to create what I have in mind: other times I get inspired by an ingredient and I try to find the best balanced way to enhance it, without giving up on taste, of course». Describe of your cuisine. «Mediterranean, well balanced, healthy and tasty». Besides the well-known La Pergola di Roma restaurant (at the Rome Cavalieri Hotel), you move among other restaurants in Italy and abroad, up to Dubai and Tokyo. What are the golden rules that your staff has to abide to so that everything goes smoothly? «Cook everyday as if it were your first and put yourself in the customer’s shoes to understand and anticipate their needs. I push them to study to fully know prime ingredients, to keep up with new techniques and I urge them to convey their passion through the dishes, this is indispensable to succeed in this profession».
«My wife Teresa. She is my focal point. Together we manage our consultancy company, Beck&Maltese Consulting. I’m much more hands on, she’s the brain. She’s the one that keeps contact with the investors and professionals to work on the strategy. She carries out a very difficult task, that implies a great deal of responsibilities». How is it possible that your dishes are so “sophisticated” though with such a taste of simplicity? «Less is more. The more modest the dish seems, the more it is tested and studied in the kitchen. For example, just think of “cacio e pepe”, the recipe is apparently easy,

Tortellini di cappone su crema di zucca, salsa al Grana Padano e tartufo bianco d’Alba
Tortellini 160 gr Farina, 80 gr Semolino, 2 Tuorli, 1 Uovo, qb Acqua, Sale Crema di zucca 100 gr Zucca, Timo, 2 spicchi Aglio, Olio evo, sale Crema di Grana Padano 100 ml Panna, 70 gr Grana Padano, grattugiato Sale, Mantecatura del piatto: Brodo di vitello, 1 noce Burro, Tartufo bianco di Alba Procedimento Ripieno: Pulire il cappone, rimuovere le interiora, passarlo sulla fiamma per eliminare la peluria, lavarlo internamente ed esternamente e asciugarlo con un telo da cucina.In un sacchetto per sottovuoto, inserire le cosce di cappone, il grasso d’anatra, i semi di coriandolo, l’aglio, il pepe in grani, sale e cuocere nel roner a 72° per 10 ore. Eliminare gli aromi, la pelle, spolpare le cosce e tritare finemente la carne. Tagliare il petto di cappone a pezzi, inserire nel contenitore pacojet insieme alla panna e congelare. Pacossare fino a ottenere una purea fine, unire alle cosce di cappone tritate in proporzione 50/50 e salare. Pelare le carote, pulire il sedano e ridurre entrambi a piccola brunoise. Rosolare le verdure in padella con un filo di olio evo, lasciarle freddare e unire al composto precedentemente preparato insieme alla riduzione di Madeira. Regolare di sale e pepe.
acqua quanto basta. Lasciare riposare per 1 ora. Stendere la pasta finemente, spennellare uno dei due fogli con un uovo sbattuto e disporvi sopra il ripieno con l’aiuto di un cucchiaio da tè. Incidere la pasta con un apposito stampo rotondo, chiudere a mezzaluna e successivamente unire le due estremità, formando i tortellini. Crema di zucca: Tagliare la zucca a cubetti e sistemarli in una pirofila insieme a timo, aglio, olio evo e sale. Coprire con carta stagnola e cuocere in forno a 180° per 20 minuti. Togliere dal forno, rimuovere gli aromi e frullare fino a ottenere una crema omogenea. Crema di Grana Padano: Mettere la panna in un pentolino e portare a ebollizione. Fare bollire per 1 minuto e aggiungere il Grana Padano grattugiato. Mescolare bene e frullare con un mixer a immersione. Aggiustare di sale, se necessario. Preparazione del piatto Cuocere i tortellini in abbondante acqua salata e scolarli al dente. Per il condimento, fare sciogliere dolcemente il burro, rosolarvi il tartufo bianco d’Alba ridotto a brunoise e aggiungere il brodo di vitello.Amalgamare bene e mantecarvi i cappelletti fino al termine della cottura. Distribuire la crema di zucca sul fondo del piatto, adagiarvi sopra i cappelletti e guarnire con la salsa di Grana Padano. JANEZ PUKSIC

Capon tortellini with pumpkin purée, Grana Padano sauce and white truffle from Alba Filling 2 Legs of capon and 1 Capon breast, 100 gr Duck fat, Coriander seeds, 1 clove Garlic, Black pepper, 300 gr Cream, Madeira reduction, 1 Carrot, 2 Celery, Extra virgin olive oil, Salt, pepper Tortellini 160 gr Flour, 80 gr Semolina, 2 Yolk, 1 Egg, Water, Salt Pumpkin purée 100 gr Pumpkin, Thyme, 2 cloves Garlic, Extra virgin olive oil, Salt Grana Padano sauce 100 ml Cream, 70 gr Grana Padano, Salt Dressing, Veal broth, 1 dab Butter, White truffle from Alba Method Filling: Clean the capon, remove the entrails, pass on flame to remove the fuzz, wash it and dry with a kitchen towel. In a vacuum bag place the legs of capon, duck fat, coriander seeds, garlic, pepper, salt and cook in the roner at 72°C for 10 hours. Remove the spices and skin, strip the flesh off the legs and chop it finely. Cut the breast of capon into pieces, place it in container pacojet with the cream and freeze. Pacossare to obtain a fine puree, add the minced capon legs in 50-50 and salt. Peel the carrots, clean celery and cut both in small brunoise. Pan-fry the vegetables with a drizzle of extra virgin olive oil, let them cool and add to the

Your favorite dish? «It depends on the day. In season, pasta with “tenerumi” (tender leaves of the zucchini plant) like my wife and mother-inlaw know how to cook».
mixture previously prepared with the reduction of Madeira. Season with salt and pepper. The tortellini: Make a dough with flour, semolina, egg yolks, egg, a pinch of salt and water as needed. Let stand for 1 hour. Roll out the dough thinly, moisten one of two sheets with a whisked egg and drop one tea spoon of filling. Cut the dough with a round cutter and fold the disk to make a half moon. Join the ends to form the tortellini. Pumpkin purée: Cube the pumpkin and place it in a baking dish with thyme, garlic, extra virgin olive oil and salt. Cover with a foil and cook it at 180°C for 20 minutes. Remove from the oven, remove the spices and blend the pumpkin to obtain a homogeneous purée. Grana Padano sauce: Pour the cream in a pot and bring it to a boil. Boil for 1 minute then add the grated cheese. Mix well and blend with an immersion blender. Season with salt to taste, if needed. How to prepare Cook the tortellini in salted water. For the sauce, melt the butter and pan fry the white truffle from Alba reduced to brunoise and add the veal broth. Mix and cream the tortellini until cooked. Place the pumpkin purée on the bottom of the dish, put on the tortellini and garnish with Grana Padano sauce.
When you’re not working, what do you like to do? «I love to paint, I like exhibitions, vernissages, going to the Opera, listening to music, visiting museums or just simply go for a walk and enjoy the beauty of the city in which I live. Geez, there’s never enough time for me to dedicate to these recreations, but cooking is my greatest passion, so I’m not complaining». And travelling? Where would you place it in your life? «Travelling takes up most of my time. Cars, trains, planes… often tiring trips, that can also become unexpected opportunities to let myself go and find new stimulus for my dishes». Is there any ingredient that you bring with you or take back from your travels? «Of course. During my trips I like to taste and study local ingredients, both to enrich my knowledge, why not, to create new combinations and experiment with flavors. For example, it happens that an Asian ingredient, like yuzu, becomes one of the protagonists of my dishes and this dish could be part of the menu in Rome, as well as Tokyo, Dubai or in any of the other restaurants I manage». Is there something that you always eat at Christmas? «A slice of “panettone” with my staff is a must». If you think of the new year, what flavor comes to mind? «A spicy marinade, because despite the difficulties given by the pungent taste of ginger, I trust this is going to be a happy new year for everyone». A flavor or ingredient that perfectly describes you. «Chocolate, with a good balance between sweet and bitter».

l Salone EICMA si conferma l’appuntamento più importante del modo del settore delle due ruote e anche quest’anno le Case hanno presentato qui le nuove “creazioni” per la prossima stagione. Il settore delle due ruote resta molto effervescente con il ritorno di modelli che negli ultimi anni soffrivano di mancanza di novità. A Milano si sono viste nuovamente le supersportive carenate, le moto di piccola cilindrata e quelle per l’off-road specialistico; ma restano sempre di tendenza le crossover e le naked. BMW continua ad avere la leadership del settore con la rinnovata R 1250 GS, che ora monta un motore che offre più potenza e coppia grazie a un’innovativa distribuzione a fasatura variabile. Non è cambiato
invece il look esterno e la ciclistica ,ma la moto è decisamente diversa. Restando in Europa e nella stessa tipologia di moto, interessante la novità presentata da Moto Guzzi con la V85TT, un enduro stradale che monta il tradizionale motore a V trasversale con una cilindrata di 853 cc e 80 CV alla ruota. Benelli, altro brand storico italiano, torna nel segmento delle medie con la 752S, una naked dalle forme accattivanti con un bicilindrico di 750 cc. Il telaio è una struttura a traliccio in tubi d’acciaio e il design complessivo è decisamente muscoloso. Milano è il nome della Moto Morini, questa due ruote dalla linea decisamente classica monta un 1200 cc con 105 cv alla ruota. Il serbatoio e la colorazione rossa e nero,

EICMA: TWO-WHEEL PASSION The Milan Motorcycle Show unveils the sector’s most important new models: from the BMW R 1250 GS and Guzzi V85TT to the Ducati Diavel 1260, the KTM 790 Adventure and the latest motorbikes by Yamaha, Honda, Kawasaki and Suzuki The EICMA Show has confirmed to be the most important event of the two-wheels industry and this year it showcased the upcoming season’s news. The two-wheels sector stays very bubbly thanks to the return of past years’ models that had been suffering due to lack of novelty. In Milan, the new sport-bikes, the small-powered bikes and those for off-road specialist are back on the scene; but crossover and naked are still the trendiest. BMW continues to lead the industry with the renewed R 1250 GS, which now features an engine that offers more power and torque thanks to an innovative variable timing distribution. The look nor the chassis have changed, but the bike is definitely different. Staying in Europe and in the same category, the new bike presented by Moto Guzzi stands out: the V85TT, enduro road bike that mounts the traditional transverse V engine with a displacement of 853hp and 80hp at the wheel. Benelli, another historic Italian brand, is back in the medium segment with the 752S, a striking naked with a 750 cc twin-cylinder. The tubular steel Trellis frame and the overall design is definitely muscular. Milano is the name of the Moto Morini, this motorbike with a decisive classical line, mounts a 1200 cc with 105hp at the wheel. The tank and the red and black color, also available in blue and black, give it an eighties look. MV Agusta, another Italian motorcycle brand with great traditions, launched the Brutale 1000 Serie Oro for 2019. Produced in only 300 units, it is a maxi naked powered by a four-cylinder radial valve with a whopping 208hp. Ducati presented several innovations among which the Diavel 1260 stands out with the Testastretta DVT engine with variable timing of 1198 cc with 159hp. The overall appearance is new with a more aggressive front, the tank with a more elegant design and new side conveyors to the radiator. Prodotta in soli 300 esemplari è una maxi naked mossa da un quattro cilindri a valvole radiali accreditato di ben 208 CV. Ducati ha presentato diverse novità tra cui spicca la Diavel 1260 che monta il motore Testastretta DVT a fasatura variabile di 1198 cc con 159 cv.
