Dear Premier Club Members, SUMMER IS OFFICIALLY HERE and, like the rest of the year, something wonderful is always happening at the Resort & Club. Last month we hosted a weekend experience with country music star Chase Rice celebrating the second leg of his Eyes On You

Tour. I’m sure those who attended enjoyed this Boca-exclusive performance. Look forward to more special performances like this during Labor Day Weekend when we host the second annual New Sounds of Nashville experience in partnership with Broadcast Music, Inc. Grammy-winning singer-songwriters such as Randy Montana and Sarah Buxton will be playing top hits all weekend as well as sharing the stories behind the creation of their biggest songs. It’s the next best thing to Nashville itself, so mark your calendars. This month is the debut of several Summer Dining Specials which will enrich your Member experience at the Club. Quest Summer Camp will also be in full swing – children will enjoy our amazing facilities and interactive activities and will learn from our golf and tennis experts. For Golf Members, our Summer Golf Reciprocal Program returns due to popular demand. Our pro shop staff are standing by and ready to help with tee times and reciprocal club information. Looking ahead, the upcoming 4th of July celebration will feature entertainment for the whole family, an all-American carnival, an outdoor concert and barbeque-style buffet dinner. As always, a spectacular fireworks show will serve as the grand finale! We hope to see you there. I wish all of you a great beginning to Summer 2019.

AS THE TEMPERATURE RISES and the bright greens of spring give way to the vibrant colors of summer, join us at Lucca to celebrate all that the season has to offer. Each week we will be highlighting the freshest of ingredients at the peak of their season. We will offer specialty crafted cocktails, cellos and a seasonally-inspired rotating menu throughout the month of June. June 21, officially marks the beginning of summer and the end of the spring growing season, which makes June a unique month for produce. Spring staples such as snap peas, artichokes and wild greens will be hitting their stride and slowly begin to fade. Beets, asparagus, wild mushrooms and citrus will give way to the start of stone fruit season and we will begin to see local peaches, cherries from California, apricots and nectarines. As we move into July and the mid-summer harvest, strawberries and figs will begin to pop up around the country, as well as summer favorites like sweet corn, tomatoes and summer squash. Melons and berries will begin to reach their peak flavor towards the end of the month and through the rest of the summer. Lastly, we will take a sneak peek into late summer harvest finishing in August. The late summer harvest begins with beautiful cucumbers, eggplants and bell peppers and concludes with kale, potatoes, carrots and green beans.

Parsley Oil 1 bunch parsley 4 cup blended oil Blanch, shock, and puree parsley Lemon Butter 2 sticks butter 2 each lemon zest and juice Whip together

Place flakey fish in closed parchment paper with lemon butter and 3 tablespoons white wine. Bake at 400˚ for nine minutes. Top with sauce vierge.
