So, we are combining our love for all things medieval and mini golf,” said Candice.
The medieval-themed black light indoor mini golf and arcade realm, includes 18 mystical holes with surprises lurking around every corner. This is no ordinary mini golfing experience. Cooper’s Kingdom is the creation of Candice and Scott Cooper. They wanted to bring a family fun place to Boerne

TThe Southern Economic Development Council (SEDC) has announced the recipients of its annual Community Economic Development Awards (CEDA) program for 2024. The awards were presented during a reception at the SEDC Annual Conference held Monday, July 29, 2024, in Savannah, Georgia.
The Community Economic Development Award program recognizes outstanding organizations in the 17-state southern region for their efforts in advancing the economic viability of their community through economic and community development programs. Recipients were judged on specific criteria including innovativeness, transferability, community commitment and leverage, measurability and secondary benefits to the community.
The Boerne Kendall County Economic Development Corporation (BKCEDC) was awarded the 2024 CEDA in our population category for the launch of Das GreenHaus, Kendall County’s first business incubator.
The BKCEDC is honored to receive this recognition for the first time with SEDC. “Because of the

Champion High School Welding Students Unveil Custom-Made Gate for Stars of Hit TV Show “Iron Resurrection”
IIn an impressive display of craftsmanship and dedication, welding students from Samuel V. Champion High School have successfully completed and unveiled a custom-made 5’ x 15’ gate for Martin Bros. Customs, the renowned custom vehicle building and fabrication company located in the Texas Hill Country. This extraordinary project, led by Mr. Dorman Vick's Ag Mech/Welding Program, represents over 800 hours of meticulous work by the students throughout the 2023-24 school year.
The unveiling event, held on August 9th at the Samuel V. Champion Ag Mech/Welding Shop, drew a crowd of community members eager to witness the result of the students' hard work. The project was a testament to the students' advanced skills and their ability to bring a complex vision to life.
Martin Bros. Customs, operated by Joe and Amanda Martin, has gained national recognition as the stars of the hit TV show “Iron Resurrection.” The Martins have been long-time supporters of vocational education, consistently inspiring and encouraging students at Champion High School. Their collaboration with the welding students on this project is a shining example of how industry partnerships can enhance educational experiences.
“Seeing our students take on such a significant project and deliver it with this level of excellence is incredibly rewarding,” said Dorman Vick, Welding Instructor at Champion

TThe Zoeller family continues to provide Kendall County and other area hill country towns with excellent cuisine. From the Riverside Meat Market to Riverside Catering, the tradition continues. Cindy Zoeller is the grill master and chef, using her expertise and knowledge learned from the Pappas Family Restaurants’ chefs in both Houston and Austin. She is cheftrained by the best in the business.
Cindy was introduced to the Zoeller family when she met Stephen Zoeller over eighteen years ago. He happened to be grilling at a barbecue in Johnson City. Stephen’s parents, Harold Ray Zoeller and Mary Lou (Pfeiffer) Zoeller owned and operated the Riverside Meat Market in Boerne for over 35 years. The Zoeller and Pfeiffer families have been in Boerne since the mid-1800s. The market was at the corner of South Main Street and River Road. They offered the best barbecue in town and high-quality cuts of meat, as well as grocery items. The Zoellers sold the business in 2012 to the first of a few owners. The market and pink house behind it were demolished a few years ago.
Riverside Catering is owned and operated by Cindy and Stephen Zoeller. The couple moved to Boerne in 2007 when Stephen accepted a position as the Kendall County Extension Agent. They began the catering business in 2009. At first, Cindy utilized the Riverside Meat Market to provide the meats needed for the weekend events they catered. As the business grew, the company expanded into a full commercial kitchen at their home base on the Pfeiffer Ranch off Ammann Road. Because of its excellent menus and professional service, Riverside Catering has evolved into a full-time working operation. The kitchen has been expanded with three additions to serve the continued growth of corporations, nonprofits and families needing that extra care for their special events. The regular staff consists of from ten to fifteen extended family members and friends. Six of
these have been with Cindy and Stephen since the beginning. For larger events, Cindy uses a staffing company.

oak coal fire. There are many calls for an open grill at some events. That seems to create some ambience as guests gather around the grill to visit and watch the progress of those high-quality steaks being cooked. Riverside Catering offers a variety of food; the website has a delicious array of eight or nine menus. Selections include beef, pork, chicken, Mexican, fajitas, barbecue and pasta. However, Cindy will customize any menu according to event planners’ preferences. She will ensure food is served for a variety of dietary restrictions. And, she has gone “above and beyond” to provide a different menu for a mother of the bride, different from the bride and groom and their guests. Outstanding customer service at its best!
Riverside Catering offers impeccable food and service for all occasions from “happy to sad”. Catering events during the week has been busy even though typically July and August are slower months for the industry. Business has never been better on the weekends with multiple crews, including Cindy and Stephen, splitting their time at overlapping events. When asked what a work week looks like Cindy responded, “Usually I spend Tuesday ordering food and supplies for the upcoming week and weekend. On Monday I had an event so I also spent time reorganizing
the supplies afterwards. This weekend we have an 80th birthday celebration and a wedding party brunch.” She explained that she hosts tastings at the Riverside Catering commercial kitchen during the week and on weekends to accommodate the planners’ or families’ schedules.
All the plating is provided by Riverside Catering, from basic acrylic to china upgrades. Her staff serves smaller plated events as well as larger buffets and receptions. As stated on the website: “from simple backyard picnics to elegant china, chargers and crystal,” Cindy and Stephen will make it happen. They love what they do and they have repeat business as well as new business where other clients are recommending them.
They provide excellent care for any occasion and will travel south to San Antonio, east to New Braunfels and Seguin, and west to Kerrville and the surrounding areas around Boerne.

Foundational Five
TThere are endless recommendations when starting down the road to health! Where do you start? Do you really need to swallow all those capsules to be healthy? What kind of exercise should you do? How much should you sleep each night? Are you drinking enough water? Should you eat all protein and no carbs?
Finding what is right for you and your current health situation can be a daunting task. If you don’t know where to begin, might I suggest a manageable starting point? First, before making significant changes, ask your doctor if there is anything that you should NOT do. Next, consider working up to drinking half your weight in ounces of water each day. Also consider cutting back on fried and sugary foods so your diet and body have the time and energy to absorb more wholesome, nutrient-dense foods. Lastly, consider adding just five supplements to your daily routine.
I call these five supplements the Foundational Five. These are supplements that almost every person would do well to consider.
1. PROBIOTICS: In recent years, much research has continued to confirm the strong link between a healthy gut and a healthy patient. The gut plays an important role in both protection from foreign adversaries (like viruses, bacteria, and toxins) and absorption of needed nutrients. The key to finding a good probiotic is finding a high quality probiotic that provides a large number of ‘good’ bacteria. Not all probiotics are the same and typically, taking ‘any ol’ probiotic that is inexpensive, may be more of a waste of time and money than finding a high quality product.
2. VITAMIN D: For many years Vitamin D was seen only as something made in your skin when exposed to sunlight and necessary in small amounts. Current literature, however, suggests the story is much more important and profound than this showing Vitamin D can support the immune system, appropriate placement of calcium in bones, and even some anti-cancer support. It is important to not take too much Vitamin D. This should be tracked at least annually by blood lab values.
3. MULTIVITAMIN (MVI): What is a building without a firm foundation? How can a worker produce the intended product without having the necessary building blocks for construction? This is the role of a quality MVI. There are many mass-produced multivitamins on the market, so which one is the best? First, look for a product that is bioavailable meaning that your body has the ability to utilize it. An MVI tablet does little good if it is so compressed into tablet form that your body can’t dissolve it in your gut. Second, look for a product that has the specific components that you need. Do you need methylated b-vitamins, iron, or something else?
4. MAGNESIUM: Do you have muscle cramping, sleep problems, constipation, or nerve or immune stress? Magnesium may help! It is used in over 300 enzymatic functions in your body and deficiency in magnesium can impede normal cell function. It is also critical

5. OMEGA-3: Omega-3s are polyunsaturated fatty acids that your body uses to support cell structure and cannot make on its own. This means that you must take them in by diet or supplement and getting the proper ratio of the omega fatty acids is important. Studies have shown that the proper amount of polyunsaturated fatty acids can support healthy cholesterol and triglyceride levels, blood pressure, cognitive function, and even support lower levels of inflammation in the body.

• 55+ Communities are popping up all over the country as we experience an ever growing aging population. These communities can range from single family homes, townhouses and a mix of apartments and homes which allow for an ‘aging in place’ experience.
Home Too Small…
Whether you need a home office, crave a home gym or find yourself with a growing family, a home that’s too small just doesn’t work. Many people have made working from home a permanent solution and we’re seeing homes with not one but two offices to accommodate this trend. Have your kids grown in size, not just numbers. Having space to accommodate growing children can also be a reason to seek a larger living space.
• Shared living options - We’re seeing families combining living arrangements to solve financial challenges as well as the desire to have larger families under the same roof.
• Larger condo or townhouse – Many people don’t want to add additional maintenance to their already busy schedules, so townhomes and condos provide great options.
• New home construction – New construction has become very attractive, not just because you get to create your dream home, but because builders can offer lower interest rates for financing and some offer large concessions to help with closing
costs or to buy down rates. Despite having to endure the time it can take to build a home, many people want a brand new home.
• Home additions – If you love your location but need more space, a home addition may be the right idea for you. Home additions can increase your home’s value and will make it attractive to a larger pool of buyers should you decide to sell it down the road.
If you are ready to consider the next step, it doesn’t hurt to research neighborhoods, schools and other important aspects of a new location. You can even seek out current residents of your desired neighborhoods to find out what they like or dislike about it and gauge whether you want to consider purchasing a home there.
One thing we advise our clients to do is to create a ‘nice to have’ and a ‘need to have’ list. This helps in comparing communities as well as helping to ensure that everyone involved is on the same page about what’s important in the next move.

First Families of Kendall County
Heinrich Ludwig Otto Brinkmann 1832 – 1915
Sponsored by the Genealogical Society of Kendall County (GSKC), The First Families of Kendall County project began in 1999. The purpose of this project is to recognize the living descendants of persons instrumental in founding and settling of the area encompassed by present day Kendall County, Texas and to preserve the history of their families and the county.
To date, 586 applications have been approved for 318 different individuals. One hundred seventy (170) Founders and one hundred four (104) Early Settlers have been documented and recognized. They represent one hundred thirty-five (135) different families in Kendall County. There are two hundred sixty-two (262) volumes of First Families notebooks on the shelves at the Family History Place.
Here we will share with you some of the stories of those First Families who settled this beautiful area of the Texas hill country. We hope you enjoy!
Marie Johanne Caroline Ochse 1849 – 1929

Otto Brinkmann and his wife, Marie Ochse, are two well-known founders of Kendall County. Guido Ransleben mentions Otto in nine different places in his book A Hundred Years of Comfort in Texas and Marie in four. Their story also appears in Rivers, Roads, Ranches & Recreation – A History of Kendall County. This narrative is an abridgment of their story taken from these sources.
Otto was born to Carl Brinkmann and Johanne Sophie Mittendorf in Hoexter, Westphalia, Germany, on August 15, 1832, and christened Heinrich Ludwig Otto. As he grew to manhood, he was apprenticed as a cabinet maker and, over time, advanced in the trade to become a master cabinet maker. When he was twenty, he decided to "cast his lot with those seeking adventure in a new world" and immigrated to Texas.
On October 24, 1852, the ship Oceanus arrived in Galveston, delivering Otto to his new homeland in Texas. From Galveston,

he sailed to the port of Indianola; from there, he planned to travel inland. However, he and his traveling companions contracted yellow fever. He was the sole survivor from his immediate party, all of whom had succumbed to the fever. As soon as he could travel, Otto went to Hortontown near New Braunfels, where he remained until 1858 when he came to Comfort.
Ernst Altgelt, instrumental in founding Comfort four years earlier, sold Otto two corner lots, numbers 43 and 90, in December 1859. The property extended the entire block of Sixth Street from Front Street to High Street. In February, he purchased lumber from Friederich Schulze and began constructing a cottage, which is still standing today. His twin brothers, Alex and Carl, joined him, and they all lived there until the outbreak of the Civil War.
Otto's craftsmanship kept him in high demand in the immediate areas of New Braunfels and San Antonio. Examples of his cabinet work are found throughout the hill country. On June 23, 1867, a month after he completed the Altgelt home, Otto married Marie Johanne Caroline Ochse. Marie was the daughter of Julius and Auguste Schaefer Ochse, who ran a mercantile business on High Street. Later that year, Otto purchased the business from his father-in-
law and, in 1871, formed a partnership with Christopher Flach. They operated the business for ten years before selling it to August Faltin in 1881. The following year,
Otto built a furniture store, which, like his first cottage, is still standing today. His wife, Marie, conducted a millinery shop

in one corner of the building and gave lessons in the art of cutting and sewing garments.
Otto and Marie both contributed to their community. Otto served as a justice of the peace, a member of the Board of School Examiners, and a notary public. Texas Governor E. J. Davis appointed him to the Board of Appeals for Kendall County. Otto also formed a men's chorus, which lasted for over 90 years. Marie helped organize a local reading club and served as its librarian for over three decades. She was also instrumental in organizing the Maria-Martha Verein, a social and benevolent society.
Marie and Otto were also busy with a growing family. They had six children, Alex, born 1868; Walter, born 1870; Antonie (Mrs. Rudolph Flach), born 1872; Katie (Mrs. Ernst Ingenhuett), born 1876; Martha
(Mrs. James Bierschwale), born 1881; and Herbert, born 1884. They were all identified with the community's business, social, and cultural life.
The 1900 Census listed Otto as a merchant. Martha and Herbert lived at home, with Herbert attending school. Marie's mother, Augusta Ochse, was also living with them. 1910 found Otto managing a lumber yard. Herbert, still living at home, was working as an electrical engineer. Walter was living next door, where he operated a tinning shop, and on the other side of Otto was his daughter Katie, whose husband, Ernst, was a ranchman. Otto died in 1915 and was buried in the Comfort Cemetery. Marie lived with her youngest daughter, Martha, during the 1920 census. She died the following year and was buried next to Otto. BBM

AAs the Boerne Independent School District opens the 202425 school year, projects from the 2022 bond have made historic progress.
Three major projects have been completed, with the opening of Viola Wilson Elementary School, the George and Baudelia Mitchell Learning Center, and the P-TECH Health Science Pathway addition at Boerne High School. Later this fall, the new PTECH addition at Champion High School, as well as the Aquatics Learning Center will open. The library renovations at BISD Legacy Elementary campuses Cibolo Creek, Curington, Fair Oaks Ranch, and Kendall are scheduled to be completed and opened after the holiday break in 2025.
Previously completed 2022 bond projects at Boerne ISD Stadium include the new turf field with expanded practice space containing therma-cool pellets, which can reduce the field temperature by as much as 25 degrees, a new track with expanded practice areas, new visitor bleachers and concrete pad, sidewalks, and ADA improvements.
Additionally, HVAC deferred maintenance was completed as well as a complete replacement of the fire alarm and PA system at Boerne High School, Champion High School, and Boerne Middle School North, as well as tennis court lighting was installed at both high schools. The district-wide furniture replacement has also been completed.
Boerne Independent School District Superintendent Dr. Kristin Craft was selected to participate in the Superintendent Leadership Program with The Holdsworth Center.
BThe Superintendent Leadership Program is an 18-month learning journey designed to grow and support dedicated, mission-driven leaders who are newer to the role of Superintendent. The first session took place in late July.
The Learning sessions take place at the Holdsworth Center Campus on Lake Austin, a one-of-a-kind place dedicated to the idea that public education holds value.
At Holdsworth, superintendents connect with peers from across the state and hear from top leadership experts who introduce new ideas and push their thinking. They learn and practice essential leadership skills needed to address the unique issues and opportunities within their districts. In addition, superintendents receive executive coaching from Holdsworth Superintendents-in-Residence Dr. Thomas Randle and Dr. Art Cavazos.
Dr. Craft began her tenure as BISD Superintendent on January 2.
TThe Boerne Independent School District is proud to announce that legendary Boerne and Champion High School Coach and current Athletic Director Stan Leech has been selected to the Texas the Texas High School Basketball Hall of Fame Class of 2025.
Leech won 833 games in his storied 32-year coaching career, including 12 district championships and 27 playoff appearances. Leech guided Boerne to the UIL state tournament in 1990 and 2008.
Coach Leech was the head boys’ basketball coach at Boerne High School for twenty-two seasons and the head boys’ basketball coach at Champion High School for ten seasons prior to retiring from coaching in 2018. Leech is in his 38th year at Boerne ISD, including his 25th year as the district Athletic Director.

Coach Leech is married to Carla Leech who taught at the elementary level for 31 years before retiring in 2015. Together, they have two adult children, Courtney and Coby and one grandson, Jack Wells.
