No reception would be complete without some mouth- watering wines to wash down the wonderful food. Phillipe Alexandre is a London based wine importer from Burgundy, France. Here he tells us just what you should be looking for when buying wine for your Big Day…
The trend has changed for wine this year due to a particularly good summer in the UK. For a wedding I strongly advise wine that’s easy to drink, light in alcohol and refreshing, dry and fruity with tropical flavours. Domaine de L’Horgelus Gascogny is a perfect blend of Colombard and Sauvignon Blanc. They also do a Rose made with 100 per cent Tannat grape strawberries, great for entrees, notably shellfish, or asparagus. If you want to serve red, Domaine de la Colombette, a Pinot Noir from Languedoc, is the perfect wine which will go with most wedding dishes such as roast beef or lamb or perhaps poussin, quail, or turkey for the adventurous. For your toast, a Classic Prosecco Spago from the Valdobiadenne area in Italy or the rose version is absolutely gorgeous – It has a rounder flavour than its white sister. Finally, I would not consider a wedding complete without a glass of Chardonnay from my home town, Burgundy. Alain Besson does a Petit-Chablis Antique. I’ve known this old man over 20 years and his wine is a winner!

Choosing Wine Red
Best For: Meat courses - beef, lamb, pork, chicken and game. Go for fruity with a hint of oak. Medium bodied is better as it will suit most guests’ palettes. Europe do wonderful reds (Bordeaux from France, Ribera del Duero from Spain and Sangiovese del Umbria fro Italy) but don’t over look New World wines. Argentina, Chile and Brazil produce some very good wines too.
White
Best For: Lighter courses, and with the heat of the summer will add a refreshing chill to all courses. Gavi is sensational with crisp salad, and white fish. Something with a bit of character such as Gavi from Piemonte, Chablis Burgundy from France or Albarino Galicia from Spain are perfect.

Best For: Starters and lighter main courses. Very good with salmon, and some of the meatier white fish and anything grilled. California and Australia both produce Blush wines that are very drinkable and there are some surprisingly good rose Merlots from Chile.
Champagne
Low budget sparkling Prosecco from Italy is great. If money is no object look at grand Cru Classic Vintages but don’t be surprised by the price, or my personal favourite, Krug….the quality is evident from the wine, it has a fullness of flavour and in Vintage form is quite simply sublime.

What are the main considerations when dressing a room? It’s important to think about how each area of your venue will be used at different times throughout the day. For example, the room where your ceremony took place could later be used for your evening party, so two different looks would be required. It’s also good to make sure people will be comfortable. If you have lots of additional evening guests coming, for example, then additional seating like sofas and coffee tables would be a good idea.
Is a colour scheme recommended? Having a colour scheme is a good way to ensure a unified look for your whole wedding. The colour of choice is usually determined by the colour of the bridesmaids’ dresses. This colour, and shades of it, can be translated to as many areas as you wish. Drapes, table settings and lighting can all be used to tie in. What are the current trends? This years ‘in’ colour is deep purple. Hi ladies, why is Hanbury Manor perfect for a traditional English wedding? L: ‘Hanbury combines the old with the new. It’s 16th Century and the Oak Hall, Drawing Room and Poles Hall are full of history. Then we have Garden Court and the Summerhouse which provide a more modern setting.’ Is there a local church for couples who want a religious wedding followed by a reception at Hanbury? J: ‘There is a church in Thundridge and others in Ware, about 10 minutes away. Couples who don’t live locally will need to contact the church directly to see if the Vicar is willing to marry them as couples do need to live in the parish or be on the electoral roll. Don’t forget though that Poles Hall is a converted chapel and licensed for civil marriages.’ What is particularly great about Hanbury in the summer? L: ’The walled gardens provide a stunning setting for a drinks reception with Pimms served on the lawn and croquet and games in the walled gardens to keep guests entertained throughout the day.’ J: ‘Hanbury’s outside space is like having another room and you can do many different things for the evening reception. BBQ’s are a popular idea.’ What do you most enjoy about your job? L: ‘Seeing the most important day of people’s lives come together, sometimes over a year, sometimes as late as eight weeks before.’ J: ‘I love being part of the build up of a couple’s wedding and seeing their happiness on the day when it all goes perfectly.’ What exactly does your job entail? L: ‘We do initial show rounds of the hotel to prospective brides and grooms, organise menu and wine tastings, confirm weddings and hold final detail meetings. We are basically here to help in any way we can between booking and the actual wedding day.’ What’s the craziest thing you have been asked to do? L: ‘I was asked if an eagle could fly the couple’s wedding rings down the aisle. I have also had a groom turn up on a white horse!’ What’s the secret of a good wedding planner? L: ‘Having a real passion for weddings, and understanding that the little things matter more than the big things sometimes.’ J: ‘Good organisational skills and a good memory - all brides like to feel special - so remembering who they are and when their wedding will take place is essential in making them feel unique.’

A Day in the life
of Hanbury Manor
By Charlotte Quantick, Sales and Marketing Co-ordinator ‘It’s an early start for Hanbury Manor with preparations for the day underway. Breakfast is being served while Poles Hall is dressed elegantly in silver sashes, awaiting its guests to arrive. A bride is awoken by tranquil birdsong in the historic manor house, while the groom, awake in another room, is sipping his coffee and reading the newspaper. The bride phones the Bridal Concierge to let her know she is eager to get ready. Feeling relaxed after yesterday’s massage, it’s time for her make-up and hair to be done and the last chance for a gossip with friends to ease her pre-wedding nerves. The Bridal Concierge asks whether she needs any help before going to add the finishing touches to Poles Hall. Meanwhile, the groom is enjoying a massage and manicure in the spa. The photographer arrives as the make-up artist adds her finishing touches, ready for pre-wedding pictures. Soon the guests are arriving. When all are seated in Poles Hall, the music begins, alerting the guests to the bride’s arrival. Following the service the newlyweds retire to the beautiful gardens for photographs while drinks are served to the wedding party. Meanwhile, the stoves in the kitchen are fired up and the chefs get busy creating their culinary masterpieces for the hungry guests. The wedding breakfast is served in the Thundridge Room and everyone is happy to finally relax - except for the Best Man who sips champagne to calm his nerves before his speech. The evening’s entertainment takes place in Poles Hall where guests feast on canapés while the music commences. Soon enough emotions are running high as the first dance evokes romance and sets the scene for many happy years to come.’

Be prepared!
The secret of a great speech is confidence, timing and humour. As a groom you shouldn’t be under pressure to be side-splittingly funny (leave that to your Best Man), but you must be polite and must remember to thank everyone (a list from the Mrs. would be a good tip – you don’t want to be hauled over the coals for forgetting anyone). Then again, you don’t want to bore everyone, so while it’s ok for your best man to have your audience cracking up, if your family or your in-laws are straight-laced, a story about pranks involving late night trips to the potting shed with your new wife will not go down well. So learn about your audience first. Decide whether your approach should be friendly, formal, or slightly saucy. Plan your speech, perfect it and then practice, practice, practice!
Follow the format
Speeches should always follow a format, remember back in school when your English teacher told you that stories should always have a beginning, middle and end? It’s the same with a groom’s speech. The following format works, so if in doubt, stick to it.

Introduction
Start out with a good joke. If the father of the Bride or the Best Man spoke before you, maybe make fun of his speech a bit but don’t be too rude. Thank both sets of parents for the lovely reception and thank your guests for coming.
Share a funny story that shows the bond you share. Maybe mention how you met and highlight her good qualities.

Include something inspirational but not too tacky. You could say something along the lines of: ‘I couldn’t imagine a better woman to share my life with.’

A Groom’s speech is incomplete without a wedding toast, so, make a toast to ‘A happy future’
Compliment the bride
Tell her how beautiful she looks and how lucky you are to have found her.
Keep it short and sweet
To deliver a great speech, practice over and over again, but don’t go on too long. As soon as you see someone yawning, stop! Remember to have fun, but at the same time to be polite and considerate of everyone’s feelings.

Going formal
For traditional weddings, the usual wedding attire for men is a morning or lounge suit – not the best choice in the summer unless you want to risk wilting in the heat and fainting at your bride’s feet! You can still look formal by choosing a lightweight suit, perhaps in a summer colour such as stone, white or ivory (we like these selections from John Lewis below), or a more traditional navy, black or grey suit with a smart wing collar shirt but without a stifling waistcoat, tie or cravat.

For a really casual or beach wedding, you could opt for a casual shirt and trousers. Certainly a cheap option but not one your bride may appreciate. For those trendsetters amongst you, cropped linen trousers with matching jacket, smart T-shirt all in dazzling white and bare feet would look great in the Caribbean but not so wonderful back at home. You could still rock the white linen look in the UK, but team this with good, matching shoes and shirt with perhaps a pastel tie and buttonhole to add a bit of colour.

For summer weddings we recommend the classic three piece morning suit in a light weight mohair mix or a up to the minute lounge suit in a similar fabric with or without a waist coat would be a good choice. This option is perfect for a hot summer’s day. Stick to classic colours such as black, navy, or silver grey. For that continental wedding maybe beige linen, with a coloured shirt (worn open collar) or classic Prince Edward style, two or three piece in stone or pure white.
