Few locals were left untouched by the wrath of Cyclone Debbie last week, among them Lismore ‘mud manipulator’ Lauren Campbell, who sadly lost her home and ceramic studio to the floodwaters. Thus 'A Walk in the Park' Lauren’s joint exhibition with local illustrator and artist Grant Colquhoun at the Nikau store in Byron from 6pm tonight will now act as a fundraiser, with all pieces available for purchase on the night. There’ll also be live tunes, bubbles, and bites by @foodstorybyronbay. There’ll be more food on Saturday, with Mullumbimby Leagues Club hosting a gourmet food truck festival from 4pm until 9pm. Grab your picnic blanket and bring the whole family along for good food (including plenty of veg and vegan options), live music from local singer-songwriter Dan Hannaford, and fun activities for kids. Your gold coin donation for entry will support local live music.

While Bluesfest is still another week away, the festival’s busking competition starts this weekend, kicking off with the ‘grommet heats’ at the Youth Activity Centre on Saturday and Sunday from 10am. The over 18s heats will start at 5pm at the Beach Hotel on Tuesday and Wednesday, with the finals also hosted by the Beachy from 12pm next Friday. Best of luck to the local entrants! BINNED OFF, Anonymous National Parks and Wildlife Service charge people to park at Broken Head and don't even supply a garbage bin in the locality. It's good there are some at The Pass and these are collected by the Byron Shire Council. Surely not a case of passing the buck. Not back to the environment in this case. It's good that the barbies are maintained. Plastic washing into the ocean is not good for fish to eat. (Talk about junk food, don't mean to be rude). Dear Keenwa, Have you noticed that it's like going from the warmest day of summer, to the coldest day of winter, every time you pass in front of a shop in town? Close your doors! Do these people drive their cars with air-co on and the windows open too? Also, could you turn the light switch off? No one is buying at 4:00am. Sorry, I know its not your fault Keenwa, or is it? - Constructive Criticism Dear Constructive Criticism, Turning off the damn lights would save up to 250 kilos of fossil fuels, but why would multi-million dollar merchandise want to prevent global warming? Their job is 100% consumer connection babes, which means being prepared for four seasons in one day. The customer does not want to get caught out in sudden flash floods, freaky heat waves, or a kebab stained tee without the opportunity to purchase the right gear, especially at 4am. Dear Keenwa, I met this gorgeous guy in the car park opposite the Pass a couple of weeks ago and we had a good conversation, I borrowed his wax for my board and we both surfed. I asked what he was up to and he mentioned he was going to a movie screening that I too was going to, however I didn't see him later that evening, and haven't seen him since. I can't stop thinking about how wonderful his energy was, and how much I'd love to go surfing with him. Beetroot Gnocchi from The Beet Restaurant
Sebastian Goldhorn, chef at The Beet, pairs this delicious gnocchi with brussels sprouts and their house-made vegan ricotta cheese. You can also cook the gnocchi with an alternative plant-based sauce like cauliflower or pesto.
Ingredients:
Method:
- chives - sundried tomatoes (as garnish) - vegan ricotta cheese - half a handful of dried enoki mushrooms - salt (to taste) - 200g brussels sprouts - 300g flour - 400g beetroot - 500g desiree potatoes
1. Boil beetroot until tender. Drain, peel and blend until smooth while still hot. Place in a fine strainer to remove excess liquid and set aside. 2. Boil potatoes until tender, strain and peel, retaining as much heat in them as possible. This will reduce the amount of flour and make a better dough. 3. Blend potatoes and mix in beetroot puree. 4. Fold flour into the mix bit by bit, as you may need less (or more) flour depending on the starchiness of the potato you use. 5. Season and shape into rolls, then cut into 3cm parcels. 6. Blanch for 3-5 cm in salted water. 7. Clean the brussels sprouts, separate into leaves, and blanch for a minute. 8. Stir-fry sprouts until coloured. Add gnocchi and use extra virgin olive oil or dressing to finish. 9. Serve on a plate and garnish with vegan ricotta cheese, chives, mushrooms and sundried tomatoes.

PRINCESS FIONA AND JERRY Happy Coach driver
You drive the Happy Coach with your cat Jerry, what do you love most about your job? The happy people I meet that are on holidays, they like to have fun and are up for an adventure. And the random fits of laughter that can start an epidemic in the bus on the way home. Jerry wears a matching top hat too, are there any plans for him to wear a bow tie? Well since you mentioned it he does have a waistcoat and a tie that he wears on special occasions. But I think he'd prefer if I could find some polka dot material to make the bow tie that then matches my tutu for wearing on the bus. Does he prefer cookies or brownies? He's only 11 month’s old and way to young to try such things. But maybe we'll find out in another year's time if he chooses to try them. Where is your favourite stop on the bus? The waterfall that we stop at, it’s a short tranquil walk through the rainforest. Although Eltham Pub is lovely, great coffee and real friendly publicans. How long have you been driving the HC? 2 years now. What do you like doing when you’re not driving the bus? I like to get my hands in the dirt and do a bit of gardening whilst playing silly buggers with Jerry. And I love to go out for a good dance to some of the amazing music in the area. What’s your favourite outfit in your wardrobe? Hmm that’s a hard one, I have many. But probably my best rainbow tutu with corset top hat and tails. Favourite thing to do in Byron in the winter? Probably hanging out in the sun with Jerry drinking coffee at Wategos watching the surfers. Or curled up on the lounge at the Treehouse cafe with Jerry, coffee and a good book. Going out in the evening for a meal with friends and watching a cabaret, the old movie theatre in Byron is great as well. Where is the best place to explore in Byron or surrounds? The tea tree lakes, the rainforests and waterfalls and Nimbin of course. The crystal castle is also worth a look on a nice day. You can catch Princess Fiona and Jerry driving the Happy Coach from Byron.
