FANTASTIC PLASTIC FREEDOM, ANONYMOUS I have really struggled for the longest time to go plastic bag free. But I bit the bullet this weekend when I invested in the most beautiful woven basket. I have to let you all know it's changed my life . . . I needed to make the perfect space for it in my house. So I decluttered, dusted, reconfigured my space to put this art piece on show. The easiest part in all this is no longer using a plastic bag for my rubbish. I just wrap it up in old newspaper and take that to the bin. So simple, I'm embarrassed it took so long for me to wake up. Try it and feel empowered.

MULLUMBIMBY CO OP MADE MY DAY, JAMIE Since I moved to Byron from Sydney I am constantly taken a back by the helpfulness and openness of Byron Shire locals. The most recent experience was at the Mullumbimby Co op. When buying some firewood and petrol for my car, one of the staff immediately greeted me at the petrol pump and showed me how to use the pre paid machine. He then happily filled up my car without hesitation and carried the heavy bag of firewood for me. He asked me how my day was and did all of these things with a smile. It’s amazing how much good service can affect your mood. I hopped back in my car feeling happy and grateful for such a tiny piece of help. Thank you Mullumbimby Co op – you rock!

INGREDIENTS • 3 packets gyoza wrappers (defrosted at least 2 hours before needed) • ½ cup cashews (roasted or fried in oil) • 12 large dried shitake mushrooms (soaked in boiling water for 2 hours),stems removed • 2 tsp peanut oil • 1 onion finely diced • 3 cloves garlic crushed

• Put 1 tsp of filling in the middle of each wrapper.

• Remove cashews, and pulse soaked shitakes, keep a little coarse.

St. Elmo is plating up modern Spanish tapas dishes and share plates, inspired by fresh and flavoursome ingredients. Our innovative menu is designed to be shared with great company. You’ve found your kind of place.

• In a saucepan heat 2 tbsp peanut oil. Sweat onion and garlic, add carrot, cook 1 minute. Add mushroom mix, sugar, pepper and soya sauce. Cook, stirring regularly for 2 minutes. • Add snow peas, cashews, sesame oil, coriander leaf and green shallots. Turn off heat and stir for 30 seconds gently. • Turn mixture onto a tray to cool. • Spread 6 gyoza skins onto the kitchen bench. Wet a finger with water and run your finger around the outside of wrappers.

1 large carrot finely diced 1 tbsp light palm sugar 1 tsp white pepper 1 tsp sesame oil 3 tbsp coriander leaf chopped 3 tbsp green shallots sliced 10 snow peas finely diced 2 tbsp vegetable oil

• Fold wrapper over so edges join, then pull the two pointed ends together. • Place on a tray, and keep covered. Repeat. Refrigerate as soon as possible. • Add 2 tbsp vegetable oil to a heavy based fry pan with a fitting lid on a medium heat. • Place gyoza dumplings into pan, base down. Fry until golden. When golden, add splash of cold water to pan, place lid on pan and turn down onto low heat for 5 minutes. When ready, there should be no water left in the pan, so bases stay crunchy. • Serve with a ginger soy sauce.

Benji, SON OF DRUM YOUR STORE IS WELL KNOWN FOR ITS SPECTACULAR INSTRUMENTS FROM AROUND THE WORLD. HOW DO YOU CHOOSE WHAT YOU SELL? I’ve always had an ear for

various genres of world music as well as modern western styles. I just try to get a bit of everything I like and make sure that the quality is high but also affordable.

HOW MANY MUSICAL INSTRUMENTS DO YOU PLAY? I

started on the piano but I’m predominantly a kit drummer. I also dabble on djembe and can usually play at least a couple of chops on most instruments in the shop.

WHAT IS YOUR FAVOURITE PART ABOUT HAVING A STORE IN MULLUM? Having friends dropping by and meeting so many cool people. I also get to pick the brains a lot of talented and knowledgeable musicians to help me constantly raise the bar in terms of specifications and quality with the instruments we sell.

ARE THERE ANY COOL LOCAL MUSIC EVENTS AROUND TOWN THAT WE SHOULD KNOW ABOUT? You should come to one of our current shows coming up with Doni Raven. At Son of Drum we often place various world music events and workshops on our FB page.

WHAT DOES THE FUTURE LOOK LIKE FOR SON OF DRUM? We’ve just completed the first stage of renovations, which is allowing me to clear some space. I’ve just been back from Calcutta and have some primo harmoniums and Shruti boxes arriving soon.
