It’s shaping up to be another big weekend in the shire, starting with the Love Lennox festival on Saturday. The celebration of all things Lennox kicks off in the main street from 9am, with market stalls, live music, family entertainment, a surfboard swap and food trucks galore, with local eateries competing to be crowned this year’s Flavour of Lennox. There’ll be more food (and wine!) going ‘round on Sunday, courtesy of the first ever Byron Bay Fine Food & Beverage Festival hosted by Elements of Byron Resort. From 11am, you’ll be able to sample small plates from 12 top local chefs, as well as fine food and booze from boutique producers from all over Australia. Entry is $22. Next Tuesday, don’t miss the local premiere of Cultivating Murder, a documentary about the murder of Glen Turner, a public servant working for the Office of Environment and Heritage, who was gunned down on the side of a public road in Croppa Creek, near Moree, in 2014. Tickets for the screening at Mullum Civic Hall (from 6.30pm) will set you back $16.50. Stay on for the Q&A with Greg Miller of Film Projects conducted by Greens MLC Dr Mehreen Farugi. See you there! I lost my dignity at The Rails many full moons ago, and I'm afraid the only spirituality I'll discover is at the bottom of a gin bottle. How do I find my way out of the gutter and into the light? - No Diggity Dear No Diggity, Next time you wake up after a night of emptying a gin bottle, you might want to remember what our mate Rumi says, “the wound is the place where the light enters you,” which pretty much means whatever caused your nasty hell of a hangover, is actually enlightenment in disguise. THIS WEEK’S MANTRA - MAKE PEACE, MOVE ON. If there's an outcome you're waiting on, hoping for, working towards, counting on...the best thing to do? Make peace with what you DON'T want to have happen. Yeah, you heard that right. Be cool with the UNdesirable outcome. Be okay with it. Accept it. Make peace with it so you can move on. So you can redirect your energy and your focus. Because...where attention goes, energy flows. If you're stuck in the negative, in the fearing and calculating and tiptoeing around the possible perceived failure (the deal falling through, the goal going unticked, the job offer not coming) you're actually building that up. So don't avoid it. Look that shit in the eye. Say I see you. Say I'm okay with you. Befriend the failure. Feel how it would feel. And then send it packing and get back to devoting yourself fully to your desired outcome. Here's the bottom line: If you surrender your fears fully and absolutely trust, you do not need to be "in control" or attached to an outcome. By making peace with your fear you remove the obstacle to success. You remove the fear of failure by putting the "failure" in perspective. You liberate yourself to fully direct your energy toward the positive. Make peace and move on, baby. You got this.

WHITE TRASH, Anonymous I hate to talk trash but the recycling bins in the bay are just too damn small. The bin outside my frat house is constantly full and the council have been rubbish in dealing with the matter. And before you say it, yes I have already tried holding my crystal and channelling the empty bottles into a boozy vortex but to no avail. All I want in life is to come home at the end of the day and smash a slab of Stone & Wood on my balcony without the neighbours and passersby judging my overflowing mess. If Byron Shire Council refuse to increase the size of the yellow bins, then they should at least consider collecting the recycling weekly or even daily would be a treat.

IN RESPONSE TO POT HOLE (ISSUE #132), Anonymous Thank you for raising concerns about the potholes on Banskia Drive. I noticed since your whinge they have been filled BUT how on earth are the filling them? They have already started to sink in again. What the hell are the council filling the potholes with? Can someone please explain this to me? Surely from all the new paid parking metres around town there is some left over money to put towards filling these damn things properly. I should also bring attention the other major areas of concern in town. Midgen Flat Rd - 80km road that has pot holes deeper than my bath tub. Clifford St - Suffolk Park, god help me if I spill my Tully’s coffee again after driving to the beach. Anyone else have any potholes they would like to share?

Sticky Date Pudding from Lynda Griparic

This week’s recipe is a gluten free sticky date pudding from nutritionist and gut health expert Lynda Griparic. Rich in fibre and protein this recipe is full of natural sugar, a great alternative to store-bought varieties. This is hands down Lynda’s favourite dessert - perfect for Byron’s wintery evenings!

Ingredients:

¼ tsp himalayan salt 1 tsp bicarbonate soda 1 tsp cinnamon powder ¼ cup coconut flour 100g organic butter at room temperature 1 ½ cups pitted dates (soaked in 200 ml water for 2 or more hours) 1 and 1/2 cup ground almonds 3 organic eggs ½ cup pitted dates (soaked in 300ml water for 2 hours or more) 50 g organic butter

Preheat oven to 170C. Line a baking dish with baking paper. Make sauce first. Drain dates and keep the liquid. Place dates and butter in food processor and blend until smooth. Slowly add the “date liquid” to the sauce and blend until silky and smooth. Set aside. Drain dates and keep the liquid. Place “date liquid” into a food processor with ground almonds and butter. Process mixture. Add the eggs, salt, cinnamon, coconut flour, cinnamon and bicarb of soda. Blend until smooth and creamy. Roughly chop the soaked dates and stir by hand through the cake mixture, until evenly distributed. Pour mixture into the lined baking dish. Bake for 35 minutes. Cover the top of the cake with baking paper and bake for a further 20 minutes. Serve with delicious sticky date sauce. You can warm the sauce in a saucepan for a lovely warm sauce. Add a dollop of coconut cream or fresh organic cow’s milk cream.

Head Brewer at Stone & Wood Brewery

You have brewed beer at some of the most epic breweries around the world. What makes Stone & Wood so special? Definitely the people and of course this special part of the world. I’m lucky enough to work with a bunch of absolute legends who are all down to earth, passionate and great to share a few beers with. Can you tell us a little bit about the Stone beer? Dark and robust, our 2017 Stone Beer uses six malts, giving it a roasted caramel aroma that’s balanced with a warming, full-bodied cocoa flavour. Brewed for when the days are short and the nights are cold, our winter seasonal honours the ancient techniques of brewing. By adding wood fired stones to the kettle to rouse the boil, the malt characters are intensified. We heard it’s pretty strong too? It’s 6.5% alc/vol and it’s dark so it’ll warm you up but it’s balanced, so still approachable. What can we expect to see at this years Festival of the Stone? The crew have lined up some epic bands – Kingswood, Polish Club, MT Warning and Bunny Racket as well as delicious street food, a kids corner and cold beers! All profits raised from ticket sales and beer will be going to Liberation Larder and Bay FM. Community is an integral part of the Stone & Wood brand, why is this so important? We feel it is our role as the local brewer, to support the people who support us and be ingrained in our community. How much beer do you actually drink? We test every beer before we let it leave the brewery gates… so it is up to the team and I to ensure the beer is up to scratch! My fridge is never dry either, so at the end of the day, it only makes sense to enjoy a few cheeky ales. You also made a special brew to welcome your son Arlo, will you save a few bottles for his 18th birthday? Yeah, we’ve got one stashed away for him! Most favourite brewery in the world? There are too many epic breweries to choose from, so long as they’re passionate about brewing good beer… they’re a favourite. Stone & Wood’s annual Festival of the Stone is on Sunday 11th June.
