The Festival of the Cosmos promises to bend minds in a way that they haven’t been since the Aquarius Festival, but at the very least you can expect Dr Karl Kruzelnicki to be wearing an epic shirt.

Saturday afternoon also brings a good reason to head to the Arts & Industry Estate, where mid-century furniture specialists at Case 22 will be hosting their showroom launch with special guest, Bondi stylist Mr Jason Grant. The open event runs from 3:30-5pm at 2/8 Grevillea St. If you’re keen to get out of town, consider checking out the Lismore Lantern Parade on Saturday evening. The community parade of dancers, bands and illuminated sculptures will begin weaving its way from the corner of Market and Molesworth Streets towards Oakes Oval from 5:30pm, culminating in a ticketed ‘Fiery Finale’ at the oval with fireworks, food stalls and more from 6:30-8pm. Back in Byron, Coco Republic will be throwing its second ‘FSTVL’ at Byron Bay Brewery from 1pm, with free entry before 5pm.

A STATE OF DISAPOINTMENT, ANONYMOUS I feel constantly disappointed when I pay attention to the unmaintained details of Byron. On a drive into town, it’s not hard to notice the horrific state of the roads and the decaying footpaths covered overgrown with grass. On a walk through town, there are minimal public toilets, nowhere for mothers to breastfeed and barely any public seating along our character-enriched streets. It is so disappointing as I believe we have so many great assets, I just wish our roads and streets complimented them. I personally believe our Council has let us down, they have a responsibility to create great places to sit along the streets, a safe place for mothers to breastfeed and maintain our pathways. Done right, this can be achieved in a way that adds to the character of our beautiful town and creates a more enjoyable experience for both locals and visitors. Now that paid parking has been implemented on the streets and our rates are rising, the Council needs to invest this money back into the town.

• Put the cima di rapa in a pot of boiling water and cook until it is done Remove it from the water, drain it. Save some of the cooking liquid. When cool, chop into smaller pieces. Put some olive oil in a pan and heat it; add garlic to taste and a pinch of red pepper. Add the cima di rapa and cook until the flavors are melded, maybe adding an anchovy or two. You can also add some minced onions and pine nuts. Add some of the cooking water you saved. Take it off the heat & serve as a side vegetable, with some good quality cheese.

ORECHIETTE PASTA WITH CIMI DI RAPA (THE ANTONIO CARLUCCIO VERSION) • Cook the Cimi di Rapa in lightly salted boiling water until tender, then drain. Put the oil in a pan over a low heat, then add the garlic and chilli and cook gently for a few minutes until softened. Add the Cimi Di Rapa and mix well. Season with salt to taste. • Cook the pasta in boiling salted water for 14–18 minutes, until al dente, then drain. Mix with the broccoli sauce and serve, accompanied by pecorino cheese.

Ballina Food & Wine festival 30TH JUNE - 2ND JULY

The Ballina Food & Wine Festival is on again from 30th June - 2nd July bringing three events over three days to celebrate the best restaurants, wines, craft beers and products that the region has to share. This year’s festival kicks off on Friday 30th June with the Cricketers Arms Gala Dinner. Held at Ballina RSL you’ll enjoy a four course meal, paired with great wines and craft beers and be entertained by Kellie Knight and the Daze, playing Soul Funk Jazz. Tickets for this Gala dinner are $95. The fun continues with a tour on Friday and Saturday 1st July of the Northern Rivers, showcasing locally grown and produced food. These local producers will include the likes of Avocado Tom, Zentveld’s Coffee, Duck Creek Macadamias and Eltham Valley Pantry. The tour starts at 8:30 am and will continue through to 4pm. Last but definitely not least is the main festival day on Sunday 2nd July where restaurants will cook signature dishes and local wines, craft beers, spirits and ciders will be available to sample. Sarah Mae and Elise, @THE.POOR.GIRLS.PANTRY HOW DID YOU TWO BECOME FRIENDS? DID YOU HIT IT OFF STRAIGHT AWAY? When we read this question we literally both just cackled straight away! We met working at Spell Designs a couple years ago. To be honest, we really didn't like each other... at all. We are polar opposites, but kind of the same. After a while we literally became inseparable, and now we finish each other’s sentences (scary).

WHAT WAS YOUR INSPIRATION BEHIND STARTING THE POOR GIRL’S PANTRY? Elise - I have always loved cooking/eating,

and have basically always been broke since moving out of home. Lol. I got tested for a list of food intolerances around four years ago, so I had to alter my diet to dairy and gluten free. Therefore, I had to get creative in the kitchen. I'm always thinking of ideas that will make people's lives easier. So I decided to start our Instagram page (initially embarrassed to do it), but our following started to grow quite rapidly, so of course I had a panic attack, pestered Sarah to join me with the Poor Girl's journey. And thank god for that. I am the creative, she is the brains.

HAVE YOU ALWAYS EATEN SO HEALTHY? God no. And still

to this day, we can both demolish a packet of corn chips within a couple of seconds (it's worrying). Sarah Mae chose to become a vegetarian when she was 13, and then was diagnosed with PCOS, so she went raw vegan to clear it (which she did!), and from there, has always been health conscious of what she is putting into her body.

TELL US A BIT ABOUT YOUR POOR GIRL PLATTERS? We

got asked to do a platter one day, and were like yeah okay, we've never done a platter before but we'll try. People absolutely loved it. Next minute, we're creating 2 metre long table platters for b'day parties, baby showers, hens & wedding's around Australia.
