COUNCIL FOOTPATHS, ANONYMOUS 11 It is a sad reflection on Byron Shire Council that footpath safety is ignored. Noted by many is the fact that some residents seem to believe it is okay to block footpaths to prevent pedestrian access while others do all they can to maintain them in good condition. There are numerous instances of mothers with strollers having close calls with motor vehicles as they are forced onto the road as the footpath was closed to them. It is long overdue that the Council ensures that the footpaths are kept clear.
BYRON BAY: I WANTED TO STAY, AILISH PARR I live two hours away, But I had never visited the Bay. My family was on the Gold Coast, So, I had gone as far as Palm Beach, at most. But last weekend I crossed the border, Under my best friend’s order. We headed down so I could finally see the Bay, And honestly, I fell in love, despite some skies of grey. From the beautiful, blue waves, To the hectic night-time raves. I adored my stint in Byron Bay, And it is safe to say, that I longed to stay!

60ml (1/4 cup) pouring cream 40g (1/4 cup) coconut sugar 20g unsalted butter, chopped Swiss meringue buttercream 150g egg whites 250g (1+1/4 cups) caster sugar 340g unsalted butter, at room temp 2 teaspoons of vanilla extract 1/4 teaspoon of fine salt
METHOD

Dione learnt quickly how measuring ingredients correctly is very important! Fast forward and Dione has been making and decorating cakes for over 10 years. Self taught and cake obsessed! She love creating unique cakes and desserts for any occasion. Her husband and their 4 children have lived in this area for over 7 years and love everything that this area has to offer.

• Preheat oven to 160c. Line base of 2 x 18cm (7 inch) tin with baking paper and grease the sides. • Combine dates, water and bicarb in a bowl. Set aside for 10 mins and use a food processor to process into a pulp. • Beat butter and coconut sugar until pale and creamy. Add 1 egg at a time beating well after each addition. • Fold in the date mixture and flour and spoon mixture into the prepared pans. • Bake in the oven for around 20 minutes. Check with a skewer which should come out clean or until the surface springs back. • Cool in tins for about 5 minutes and turn onto wire rack to cool completely. • To make the butterscotch sauce place the cream, coconut sugar and unsalted butter into a saucepan over medium
heat. Cook while stirring until smooth. • To make the Swiss meringue buttercream, wipe bowl of the mixer with paper towel and lemon juice. • Sit a bowl in a saucepan of boiling water making sure it doesn't touch the water. • Add egg whites and sugar to double boiler, whisking constantly until temperature reaches 60C. • Transfer to mixer with a whisk. Whisk until meringue is thick and glossy and bowl no longer feels warm (7-10mins). • Switch to paddle attachment and add butter cubes one at a time until incorporated and silky smooth. • Add vanilla and the butterscotch sauce (leaving a bit to spoon over iced cake) and beat until well combined. • Ice cake and keep cake refrigerated. Bring out an hour before serving.

On Tuesday 4th July from 6:30pm be apart of a special film screening with a programme of refreshingly creative short films, selected from Flickerfest finalists. Films for this year’s screening will include Welcome to Country, Vote Yes, Black Chook and Corey The Warrior, a Screenworks Creatability Short. Award winning documentary Servant or Slave will also be screening, directed by Steven McGregor and produced by Mitchell Stanley. Tickets are $10 and available at the door or online at byroncentre.com.au. This is a fundraiser for the Arakwal Corporation and supported by the Indigenous Coordination Centre.

WHAT DOES BEING PART OF THE UNCLE PROJECT PREVENT? Who knows, and that’s the power of the work. We are a prevention service, rather than help line, therapists or damage control institution. Rather than waiting for an issue to arise, The Uncle Project aims to deliver effective role modeling, help set healthy expectations, offer an experience in setting respectable boundaries and generally allow the masculine to wrestle freely and proudly.
