Byron this weekend for the 21st annual Byron Writer’s Festival. Held across half a dozen venues in town from Friday to Sunday, this year’s stellar lineup of 130 writers and thinkers includes the likes of Clementine Ford, Nikki Gemmell, Peter FitzSimons and even Jimmy Barnes! I have travelled around the world 4 times now, visited many a tropical island and experienced vast beauty on this big spinning ball we call earth. Yes the hills in Tuscany are stunning, the waters of Vanuatu and Fiji pristine, but we have heaven right here too. Just yesterday I took a drive around the northern rivers and was simply blown away by the beauty. No clouds in the beautiful clear blue sky, the soft breeze just cool enough to balance the warm sun's embrace. Crossing the river at Hastings took my breath away with the clarity of the water. Returning home via Tweed Valley Way and the luscious green canopy that creates a natural tunnel to cruise through. When life is feeling full on, busy, hard, stressful, make sure you stop and appreciate the beauty that we have right here, free of charge!

David (Dingo) Blomkamp, UNBOUNDED YOGA YOU SPENT THREE YEARS AS A HIGHFLYING CAR SALESMAN IN BRISBANE. WHAT BROUGHT YOU TO BYRON TO START A YOGA STUDIO? That life almost destroyed me! Living in the fast lane only stops when you run out of fuel, or crash into a wall. I got out while I could and spent 18 months travelling between Patagonia and LA, before being slowly pulled into Byron Bay.
WHAT WERE THE CIRCUMSTANCES THAT LED YOU TO BEING ATTACKED BY TWO PUMAS IN BOLIVIA? I was paying to volunteer at a wildlife refuge for rescued animals in Bolivia. Part of my job while I was there was to walk these big cats through the swampy jungle. Sometimes these cats got bored walking the same trail every day, so that day I was their entertainment.
WHERE DID THE NAME UNBOUNDED YOGA COME FROM? I opened the Tao Te Ching and stumbled across the line, “Unbounded like the sea.” When in doubt, I follow The Way. WHAT YOGA CLASSES DO YOU OFFER? Yang and Yin.
The Yang classes are in the morning and all about building strength and fluidity through a Vinyasa style flow. The evening Yin classes are a time to slow down, engage the parasympathetic nervous system and allow our mind and body the space to restore.

100g 70 % Organic Dark chocolate 1/8-1/4 tsp Chipotle Chili Powder 1/8-1/4 tsp Nutmeg freshly scraped 50g Coconut Oil (purified or virgin) or Cacao Butter
METHOD FOR THE POPCORN • Heat 25g of the coconut oil over medium heat, add popcorn and shake pan to coat the corn with oil. • Cover pan and once it starts popping pay attention as once it slows down it can easily start to burn, once there is barely any more pops, remove from heat and scoop popcorn into a large mixing bowl being careful to leave any un-popped corn behind.
• In a small pot melt peanut butter, syrups, lavender + salt, heat gently and adjust seasonings and sweeteners as desired. • Add the caramel to the popcorn bringing it together with spatula or hands. • Set aside briefly while chocolate is melting.
FOR THE CHOCOLATE • Make sure everything is completely dry before you start or chocolate will seize • Break chocolate into pieces and add to a small stainless steel/glass bowl with spices + coconut oil/cacao butter • Place bowl over a snug to fit pot of simmering water, ensure base of bowl does not touch water • Melt chocolate mix once melted you can add maple or coconut syrup to taste if desired, though I find the popcorn caramel has enough sweetness • Pour chocolate evenly amongst your mold of choice so that you have a nice layer as a base, freeze for 5 mins to lightly set but not fully • Lightly press popcorn caramel onto the base, so they embed into the chocolate a little, depending on your mold you can create the popcorn layer as thick as you wish • Place in freezer for 1/2 hour to set well, take out of the mold, and sprinkle with additional lavender
