COFFEE CUP WOES, LISA BELL (IN RESPONSE TO EMBARRASSED LAD ISSUE #152) My re-usable coffee cup smells. No matter how many times and how thoroughly I wash it, it has this off soy crossed with damp old towel smell permanently lingering around it. This makes me not want to use it, and given it was 28 bucks, makes me not want to purchase a new one. So therefore, I get my takeaway in a takeaway cup…often with a lid. I hate that I feel judged for this and wish that people could be more empathetic to my situation, I can’t be the only one!
RIP MACS, MACS POWERS Macs Milk Bar, the iconic Byron Bay business is closing. This was the one cafe left in Byron Bay that still reminded my of my beach side youth, sandy wooden floors, friendly local staff that took the time to shoot the breeze, a genuine establishment that wasn't trying to make itself another hip inner city cafe. The last bastion of these Australian ideals is sadly gone. Not to many people seem concerned that Macs has closed. The more interesting topic it seems, is what will replace it? My guess is another trendy cafe filled with obnoxious staff who will first look you up and down for not wearing the latest Byron fashion, then make out taking your order is the bane of there existence. RIP Macs

Glaze • Add olive oil to saucepan, add scallion leaves and cook gently until wilted. Add all remaining ingredients and increase heat til mixture starts to boil. Reduce heat and simmer for 30 mins stirring occasionally. Leave to cool then blend until fairly smooth. Oranges • Dip oranges into sugar and cook rapidly in frying pan until sugar dissolves and oranges start to colour. Remove from heat and allow

1 tablespoon fresh thyme 12 pimento berries 5 fresh habanero chillies ½ cup muscovado sugar 1 tablespoon tomato paste 1 tablespoon balsamic vinegar 1 tablespoon tamari 1 tablespoon diced ginger 1 freshly squeezed orange 1 tablespoon olive oil to cool for 1 min before serving.
Wings • Coat chicken in seasoned flour by placing in large bowl and tossing. • Heat oil to 170.c in fryer or large pan with a thermometer. Cook for 7 mins or until internal temperature of chicken has reached 75.c. Remove from oil and place onto kitchen paper. • Toss with glaze until chicken is nicely coated then plate with oranges and finely sliced scallion leaves.

WHAT DOES BHAVANA MEAN? Bhavana, pronounced; Bhaa-vuh-naa, is a Sanskrit word meaning ‘Spiritual cultivation’ – something that is at the heart of every experience we offer.

husband Perry have owned the property for 10 years now. It’s been their holiday location until last year when they relocated from Sydney to enjoy life on the farm full time. The farm is home to our organic garden, 7 chickens, 10 head of angus cattle, and now our cooking school.
WHAT CAN STUDENTS EXPECT FROM A CLASS AT BHAVANA? A day at Bhavana delivers an immersive paddock to plate experience in a warm and welcoming country home environment. Foraging and gathering from the organic gardens allows guests to see, smell, feel and taste everything that is cooked. Everyone then has a hands on experience in the kitchen.
