BINS! RUBBISH! - ANONYMOUS Why doesn't the Byron Shire provide more bins for tourists (and locals in the Bay who are in the minority now) to put their wrappers, bags, general waste into? Greenies argue that everyone will start using the bins as their personal trash service. So where will the rubbish end up with no bins? On the road's edge, in the bush, down the gulleys and finally into the ocean to be spread along our once pristine beaches? Can it really be such a huge burden on the local Council to provide rubbish bins in places where tourists park and go to the beach or take a walk? Oh, right, I forgot they are too busy and financially stretched fixing the roads to worry about this inconvenient problem.
KEEP THE MARKETS - ANONYMOUS I am saddened and slightly confused as to why it would be a good idea to move the Byron Market!? A community event that hasn't changed in over 40 years, that holds some of the original magic of Byron Bay. Here I was, thinking it wouldn't be long until the Council planted some more trees, maybe even fixed up the toilets in the original Marketplace, how wrong I was! Instead, they are trying to shift the markets into a downsized, degraded position and using the beautiful Butler street reserve as a Bus depot. This plan not only affects the nursing home and residents but those yet to visit, who would have stumbled across our iconic market after a day in town or a swim at Main Beach. That's before I get started on squashing the original creatives of Byron Bay, the stall holders who depend on the bountiful Byron markets as their breadwinning market and fill one Sunday a month with colour, life and talent. Byron Council needs to let a good thing be!!!

• 500 grams organic chicken livers • Juice of 1 lemon • 1 brown onion • Salt and black pepper • 500g butter
METHOD • Soak livers in lemon juice the evening before and refrigerate

• Melt generous amount of butter in pan • Roughly slice onion and add to butter • Add in herbs, salt and pepper • When onions have caramelized add livers • Cook on a gentle low heat until livers become pink and firm slightly (try not to overcook them, it destroys their valuable enzymes)
• Sweet paprika (optional) • 2-3 tsp. dried basil or any of your favorite herbs
• Remove from pan and add to food processor • Mix 'til smooth, adding more salt, pepper and butter • Eat warm or refrigerate for later use
