On Sunday, Cape Byron Distillery invites the community to celebrate its Davidson plum harvest with activities including bobbing for plums, a ‘slow’ gin workshop and live tunes by Pat Tierney. The $40 ticket price includes a traditional Aboriginal and Torres Strait Islander feast courtesy of Kupmurri by Clinto, and a donation to the Preston Campbell Foundation, which develops opportunities for Aboriginal and Torres Strait Islander people to kickstart careers in the hospitality industry.

RAPHAEL LEE- IN RESPONSE TO SHAMANA MARSHALL IN ISSUE #164 The Elements train is in its original heritage colours. It is not homogenised, nor is Byron town. It will not be graffitied as it is housed in a shed. It would have been great if Elements revitalised the trainline to Cavanbah Centre, but it didn’t want to cross Bayshore Drive. I live close to the line and the train has a toot, an electric motor noise and ‘clackety-clack as’ it goes along the line. The frequency of this noise from 7.30am-10.30pm 365 may be an issue.

BRING BACK THE COURTESY WAVE - MORE MR NICE GUY So what happened to the courtesy wave? Did it fly out the window with the arrival of the selfie? Are people so self-involved these days that you can't be bothered throwing a simple wave to say thanks for letting me in this crazy Byron summer traffic. I saw a guy the other day who was rockin' a bring back the courtesy wave sticker! LEGEND! Let's get on board. If we are all a little nicer, throw a few smiles and waves, merge like a zip and just be a little less self-focused on the road, I think we can all work to a smoother cruisier flow in the Bay carpark. Who knows, maybe it will lead to fewer traffic issues and more beach time...that you will inevitably selfie and post for self-validating thumbs.

Whether that's parking cars at The Pass or starting a crowdfunding to fix the damn potholes, the sky is the limit, and we all know that when your spirit is aligned with your calling you also get laid.

This week's location O-SUSHI / @OSUSHI_BYRONBAY For Japanese food in Byron Bay there are a couple of options, but O-Sushi Byron Bay is the original and remains a popular choice. There is an all-day sushi train serving sushi and sashimi and you can take away from the train or grab a prepared Bento box to go. O-Sushi Byron Bay also has an a la Carte menu. It begins with Zensai (tapas) to share such as Gyoza, Soft Shell Crab Tempura and Karaage (fried chicken). You can also order Sashimi freshly sliced or O-Sushi Signature Rolls using premium ingredients like the Rainbow Roll featuring salmon, tuna, kingfish, prawn, cucumber and avocado. Do try the Japanese Beef Salad, which I order to share almost every visit. There are also Tempura dishes and Grilled Skewers that are hard to resist. For a larger main sized meal, there are grilled Teriyaki dishes served with rice and salad, warming Noodle Soups and sizzling Teppan. Keep an eye on the Specials Board as well. For dessert it’s hard to beat the Banana Tempura served with maple syrup and vanilla ice cream. O-Sushi Byron Bay is fully licensed and the bar list is well priced. There are plenty of traditional Sakes to dabble in to keep it authentic while the wine list features a good variety of Australian and New Zealand wines by the glass and bottle.

5 EASY PLASTIC HACKS 1. THE MUSHROOM BAG The produce section is a killer for plastic bags. Find the one paper bag in the mix—the mushroom bag! Use it for loose produce like spinach, green beans etc. Paper has an environmental impact as well, so avoid using bags unless you’re desperate.

2. BOX YOUR GROCERIES Food arrives to the store in a box, why should it leave in a bag? If you forget to bring your own bag, ask friendly grocery staff for a spare cardboard box in the store. Recycle the box afterwards.

3. REUSE JARS AT HOME Makeover your pantry. When shopping, buy things packed in glass jars with metal screw top lids. You can reuse the jars to store bulk goods, such as dish soap, spices, oats, rice, seeds, etc. At home, give them labels, so you don’t confuse cinnamon with cumin.

4. SKIP THE STRAW If smoking cigs gives you lip wrinkles, wouldn’t sucking straws do the same? To avoid straws, we must anticipate when they might sneak in. When ordering a drink, politely let the wait staff know your feels on straws.

After running an organic urban farm in Vancouver, Canada, she took off on the road, riding motorcycles and horses, spearfishing and picking greens and dreaming up the perfect homestead. Spicy curried amaranth-stem quick pickles

@HILLIERHEATHER INGREDIENTS

• 1 Giant bunch of wild amaranth, stems and greens* • 170 ml apple cider vinegar • 170 ml water • 50 g sugar • 1 tsp salt • 2 cloves garlic. sliced • 1 hot chili, sliced

• 1 thumbnail-sized piece ginger, sliced • 1 tbsp curry powder • 1 tsp peppercorns • 1 tsp mustard seeds • 1 bay leaf * Can sub green beans, asparagus, carrots / whatever veg you find at the farmers’ market.

METHOD • Strip amaranth of greens - save and put them in your stir-fry tonight • Peel stems, blanch in boiling water 3-4 minutes. Cool. • Gently heat water, sugar, and salt until dissolved. Add vinegar, heat until hot but not boiling. • Place all other ingredients in a clean 500 ml jar. • Pour vinegar mixture into jar, lid, and let sit on the counter until cooled.

• Refrigerate for at least 1 week up to 1 month, then eat on their own, in sandwiches, dipped in hummus, with cheese or however you please!
