If you’re sticking around the Shire for Chrimbo this year, consider taking the kids along to the Bangalow Christmas Eve Carnival with rides, street food, and performers taking over the main street from 5pm-9pm. Many of the local shops will also be open, perfect for picking up lastminute gifts. Down in the Bay, several local restaurants will be putting on a Christmas Day feast for those who don’t fancy cooking. Top picks with tables still available at press time include a four-course feast at The Italian ($165/head) and festive lunch and dinner buffets at Elements ($140/head). Come New Years, Flume is set to ring in 2018 from behind the decks at Falls, and while the local pubs haven’t lined up any particularly big acts this 31 December, Soul Street has things covered with four entertainment stages, food trucks, kids activities and more. CHRISTMAS PARTY ROOKIE - ANONYMOUS I have my Christmas party this weekend. It was a last minute decision by my boss to put on some booze and food and get the crew together to say thanks for the year. I am pretty nervous as I have, many times over the years, drank to much champas and ended up not wanting to go back to work in the new year. I feel like businesses should be more creative with their Christmas party ideas. Like, why do we have to get free booze? Can’t we do something that brings the team together sober?
I LOVE CHRISTMAS - NOT SCROOGE I love Christmas. I find it to be a relaxing, reflective and inspiring time of the year. There is always so much buzz on the streets, in the shops and at work. I love seeing people out having a fabulous time at their end of year parties, people striving to clear their inboxes and hearing of families getting excited about their much anticipated holiday together. It annoys me when people say they feel stressed. I hear it all the time. People should embrace this magical time and remember those less fortunate then us.

Let’s face it, Christmas Day forecast (for many) is MORE – family friction and food-babies THAN – “Fala-la-la-la”. But it doesn’t have to be. If you’d rather replace overstuffed and irritable with energised and wholly renewed, then stay close to this column. Here you’ll find rituals, practices and holiday-hacks to upgrade your awareness and gift you a calm centre during hyper-social, sometimes stormy, always silly season. This week we continue our series with two more tips...
#2. LET THE CREDITS ROLL In the spirit of coming together and wrapping things up, take a moment to gather the crew and let the credits roll. Thank and acknowledge each and every member of your clan. Actively notice the things you love and appreciate about them. Sure they might put their foot in it from time-to-time, they might fly off the handle, say things they shouldn’t. As sure as there are shortcomings, no doubt there are golden qualities too. Choose to focus on these. If only for a day. Give gratitude generously and watch how it harmonises your interactions and exchanges. You can do this out loud, taking it in turns, voicing your thoughts and singing your praises. Or, if you’re not a vocal bunch then putting pen to paper and reviving the long, lost art of handwritten love letters. Either way, ritualise it as best you can.
#3. PERFECTLY IMPERFECT Finally, embrace the wild, crazy mess that is this time of year. The coming together of clan, the noisy clamour of family and friends, those screaming banshees (oops I meant to say kids), the friction, the real deal of family domesticity. It’s all beautifully messy. And naturally what happens when an entire tribe is tossed together under one roof. Regardless of how dysfunctional they might seem, there is comfort in the bonds we call family. Cherish these ties, hold them near and even when they drive you mad, see them as a gift. Psst. This week's location DUK, BYRON BAY Remember the Monty Python politically incorrect ditty: ‘I like Chinese’? It went like this: “I like Chinese. Their food is guaranteed to please, A fourteen, a seven, a nine, and lychees.” Well, thankfully, there’s no Number 14 nor a lychee in sight at the new Chinese barbeque Duk in Bay Lane Byron Bay, but the food is guaranteed to please. Duk serves dinner seven nights a week in the style of an authentic Chinese eating house. The space is elegantly understated with a bit of Asian back alleyway mystery. Inside, diners are neatly arranged at timber stools and tables crafted in jet. There are two ways to eat at Duk – order mains to share for 2 to 4 people or order your own bowl. Try the twice cooked eggs with Sichuan pepper and salt and palate cleansing pickles. Follow up with roast duck, flavoured with master stock. Pork is served two ways, sweet and tender Char siu or the ultimate crispy roast style with crackling. The fried tofu would convert any naysayer. On the side are wok fried greens and rice and an array of incredible house made condiments, For dessert, the Salted chocolate peanut and five spice cake is out of this world. Duk is licensed and serves Chinese Tsingtao and Stone and Wood beer, local Brookie’s gin and local Jilly Wines by the glass, carafe and bottle Duk it’s good.

’Tis the season for cool, sweet treats. Lots of candy and chocolate comes wrapped in plastic or a confusing mix of paper and foil or plastic and foil. Mixed-resource packaging like this cannot be separated, so it does not get recycled. To avoid the drama at the bin, I make my own plastic-free, oceanfriendly chocolate.
INGREDIENTS: • • • • • • •
1 cup coconut oil 1/4 cup cacao powder 1 tsp. vanilla 1 tsp. sea salt 1/4 cup honey or maple syrup for vegans 1/4 cup tahini Handful of macadamia or brazil nuts
METHOD: • • •

Put coconut oil, cacao powder and vanilla in a pot on low heat. Mix until melted. Pour into pan and sprinkle through sea salt. Place in freezer or the fridge, for a fudgey choc. Whip with a fork 1/4 cup honey / maple syrup and 1/4 cup tahini. You may need to melt this to be runny enough. When creamy, stir through the partially hardened chocolate. This is your caramel. Toast macadamia or brazil nuts on the stove until light brown. Plop evenly throughout your chocolate. Put in freezer or the fridge. When it has hardened, pull it out, place it on a cute tray and share, share, share.

METHOD
Francisco Smoje’s cooking is authentic without clinging to convention – working with traditions, but also bringing a new palate of flavour to the Byron Bay dining scene. As the head chef of Barrio, meaning “neighbourhood” in Spanish, Francisco’s Burnt Eggplant dish is an example of their effort to manipulate produce as little as possible. Happy cooking.

• Place eggplants on a rack over coals (or flames), and turn every few minutes until they are soft to touch and crispy on the outside (about 10 minutes). • Leave to cool before gently removing the burnt skins. Butterfly cut the eggplants in half, sprinkle with sea salt and a splash of extra virgin olive oil. • Pimp up your eggplants by crumbling feta and sprinkling fresh herbs on top, or add a Japanese twist with a dressing of shiro miso, honey, lemon, and chopped ginger with shallots.
• We cook the eggplants over coals, but you can use a gas flame for the same effect.

Here he is on his home-turf; conservative in his approach, with serious ambitions, he optimises time-management and helps us to get more done in less time. With Saturn in Capricorn the road can be rocky and no stone is left unturned. There is no easy way or shortcut to achieving your objective; only concentrated and steady effort brings results. You might feel this even more so this year, if you have planets in Capricorn or in the early degrees of Aries, Cancer and Libra.

From the 23rd of March until the 15th of April we encounter the first (of three) retrograde Mercury periods for this year. Mercury takes 88 days for one complete revolution around the Sun. From earth it looks as if he is moving retrograde three times a year. Make sure your electronic devices work smoothly and are backed up, well before that time. Retrograde Mercury in Aries may affect the quality of communication and transport. Be prepared for misunderstandings, impatience and delays concerning travel. It is best to not sign contracts or begin new projects. It is an excellent time however, for planning, research and reassessing your priorities. In mid-May Uranus moves from fiery Aries, which he has been traversing since 2010, into earthy and stable Taurus. This is quite a mismatch and lasts until 2025! Uranus stands for all things unpredictable, left field, unconventional and unexpected, while Taurus insists on keeping everything the same, safe and comfortable. Therefore radical Uranus gains stability and Taurus learns a lesson or two on how to adapt to sudden changes concerning values, the economy and monetary systems (e.g. crypto currencies). Also a revolution in agriculture could be sparked; the way we produce our food could change radically. Maybe the value that we give to Mother Nature shifts towards radical conservation instead of radical exploitation through use of high-tech equipment! This once-in-a-lifetime transit affects Taureans most, but also people with planets in the early degrees of Virgo, Scorpio and Aquarius. From the 25th of May until the 13th of June we are graced with a wonderfully inspiring water trine, formed by Jupiter in Scorpio (deep) and Neptune in Pisces (soulful). This is the time to dream big, create art, explore consciousness and all things esoteric or ‘New Age’. People with planets in water signs (Cancer, Scorpio and Pisces) around 14 to 18 degrees benefit most from this trine. During mid-August we are gifted another dose of this positive and very fluid transit. Mars takes about two years to complete a revolution around the Sun; he moves retrograde every couple of years for two to three months. This year the retrograde Mars period is in Aquarius/Capricorn from the 27th of June to the 27th of August. Transport issues may appear and it might be difficult to fulfil deadlines. Try not to push forward during this time, rather renovate, repair and reconsider your goals. This is the time for an inward, not an outward journey. On the 27th of July we enter our second retrograde Mercury period this year. This time it is happening in Leo and lasts until the 19th of August. With Mercury and Mars in retrograde motion, allow extra time for any unexpected complications when travelling. Avoid ego clashes, bossy behaviour and take care with clearing up any misunderstandings; above all, try to take things not so personally! Also from mid-August to mid-October a very practical earth trine from Saturn in Capricorn to Uranus in Taurus assists us to make necessary changes and get out of a rut. This transit motivates us to upgrade technology (from September onward) and renew outdated systems, even belief-systems! Rules might be overhauled, boundaries tested and new, unusual or radical alliances may be formed. This combination of ‘old meets new’ was first experienced last November and now we have another chance to make constructive adjustments. This transit particularly affects the earth signs Taurus, Virgo and Capricorn and to a lesser degree the water signs Cancer, Scorpio and Pisces. During mid-September the Saturn/Uranus trine enjoys the support of the second Jupiter/Pluto sextile for this year (see second paragraph). This might boost our courage and we may decide to take a risk; chances are that our judgement is sound and we land on our feet! Venus takes 225 days to complete a revolution around the Sun and she turns retrograde approximately every 18 months for about 6 weeks. This year it occurs between the 6th of October and the 16th of November. During the Venus retrograde time we might have to re-assess our relationship to love and money, or what we value in general. This year’s retro time is very potent since it happens in Libra (relationships) and Scorpio (sex, power and money). Old friends or ex-partners might want to reconnect with us. It is not a good time for making big decisions about love, getting married, borrowing or investing money. As soon as Venus turns direct, Mercury turns retrograde (18th of November to 6th of December). This time he journeys back through Sagittarius into Scorpio. Again there could be delays in travelling and any misunderstandings might produce unusually long-lasting frustrations and repercussions. Avoid signing contracts and handing over money during this time. By mid-November Jupiter leaves hard-working and ambitious Capricorn behind and enters his home sign of freedom-loving and adventurous Sagittarius for one year. This fiery, enthusiastic and expansive time encourages us to broaden our horizons, as well as our multi-cultural and philosophical understandings. The slogan ‘think globally, act locally’ was born in a Jupiter in Sagittarius year! the town of Byron that was created in collaboration with local artists, encouraging people to get out of their cars, get on their bikes and ride together! Locking up your bike next to someone else who has just enjoyed a ride, is an opportunity to connect, and let’s face it, we all need to do more of that. to design sculptural bike racks as public art pieces. We’re asking Northern Rivers residents to dream up a set of racks for the town of Byron and you could be funded $20k to bring the project to life and see them used in our town.
WHY IS IT IMPORTANT TO ENCOURAGE LOCALS AND TOURISTS TO RIDE THEIR BIKES? Because pumping tyres
