This week's location FOLK - BYRON BAY
Folk is ideally located on the western side of Byron Bay - just off Ewingsdale Road – so it’s a perfect destination if you’re on that side of town to grab a coffee, snack or a daytime meal without having to tackle too much traffic. A heads up in case you are looking for a bacon and egg breakfast roll though, as the menu is plant based. The Folk philosophy also supports organic, local and ethical ingredients. It’s wholesome and nutritious and tasty to boot. Folk was once a caravan park kiosk now cleverly converted into a café with wood whitewash and delicious textural features including beaded macramé slings, vintage pottery, native floral arrangements and even a crochet blanket or two to borrow if there’s a chill on. Outside there are quiet spaces to sit at tables or on handcrafted stools, on picnic rugs on the lawn and deck. There is plenty of shade under the native trees and palms with the sun peeking through from time to time and the sound of the rolling surf not far away. The menu is the same all day with cleverly designed dishes that you can eat from breakfast to lunch. I can highly recommend the Folk Burrito and the seasonal Nourish Bowls are popular. There is a Miso Omelette and Buckwheat Pancakes on the menu as well. All very Instagram worthy! Folk also makes some of the prettiest drinks in town – from Turmeric Lattes, to House Brewed Keffir and Smoothie Blends. If you’re interested, there’s another member of the clan too. Woods in Bangalow is the baby sister to Folk where you will enjoy a similar experience with a different view and a different crowd.

Stone & Wood are throwing open their Murwillumbah brewery doors again this year in support charity, The Wedgetail Retreat, who offer a space for people with life limiting illnesses and their families. Get along to the family friendly event kicking off at 11am for an activity packed day of brewery tours, eats, music, fun for the kids, and of course, fresh, cold beers straight from the source. There will also be market stalls featuring local artisans, illustrators, painters, ceramicists and upcycled timber craftsman who will be selling their goods, wares and some offering workshops, including, Boomerang Bags and Bee Folk – creators of Beeswax Wraps. The new cup exchange initiative #forcupssake will be in action eliminating single use cups with all beers being poured in re-useable cups. Exchange them for a fresh beer, refund them on your way out or keep them as a momento from the day. Tribute beer ‘Murbah Swamp Beer’ will be on tap alongside a few other brews straight from the tank. Beers will be $6 and there is a gold coin entry fee, with all profits raised donated to The Wedgetail Retreat. WHAT KIND OF CLOTHING DO YOU WEAR?
Many clothes these days are made from synthetic materials. Plastics are cheap. They have made their way into the clothing industry as fibres. In the washing machine our clothing is tossed around to get clean and tiny fibres are shaken loose. Fibres that end up in the water ways and eventually the ocean. (Watch my Youtube interview with microfibres expert Dr. Mark Browne)
I WEAR:
Natural Linens. These still shed fibres, but the damage is nowhere near as enduring. (Check out local brands Opia, Arnhem, Hemp Temple, gorgeous hand made Rode to No Wear) I support local labels/ designers. Clothing is made with love and without shipping packaging. Vintage Clothing and leathers. The best way to own lush leather goods. Worn in and well loved (Shop Second Loves or visit Trash Byron Bay). Recycled Synthetic active / swimwear instead of virgin plastics. Let’s close the loop and recycle plastic “waste” into the clothing we need to stretch. • 1 cup dried fruit (try ¾ cup medjool dates and ¼ cup of sulphur free dried apricots) • 1 cup nuts (almonds and cashews) • ⅓ cup coconut oil • ⅓ cup organic raw cacao powder

• 2 drops of Pure Peppermint Essential Oil • 1 tablespoon chia seeds • ½ cup shredded coconut
• Soak the m edjool dates (if you are using them) for 15 minutes in warm water to soften.
• Roll into small balls and cover in shredded coconut. Store them in an airtight container in the fridge.
• Blend nuts on high speed until they reach a fine crumb/meal texture.
• Leave them for a few hours so they become firm.
• Blend the dried fruit, cacao powder, ¼ cup of shredded coconut, peppermint essential oil, coconut oil, and seeds until the mixture reaches a smooth texture. • Add the ground nuts and blend together until everything has combined.
