A meditation practice that works - and that will make a real difference in your life - doesn’t need to be 45 or 60 minutes a day, particularly if you’re just getting started. So rather than overcommitting, getting overwhelmed and then, well, not making it happen Every. Damn. Day. Do just the opposite. Make your goal a little bit of meditation on a lot of days. As uber-entrepreneur Tim Ferriss puts it “rig the game so you can win it.” I believe this mindset works wonders when setting goals for your meditation practice. For example- an ideal for some people might be a 20 minute morning meditation and a 15 minute evening meditation. But a realistic goal to start with would be a 5 minute morning meditation. By purposely setting the goal at a very realistic and achievable level, you set yourself up to actually get ‘er done. Ferris explains, “alleviating that performance anxiety…allows you to overshoot that goal, continually succeed, and sort of build that confidence and momentum. The feeling that you’re winning is a precursor to winning on a really large scale.” The fact is that smaller, regular victories have a more powerful impact than more monumental but less frequent victories. When you kick goals, you feel good. When you feel good, you’ll want to kick more goals. You celebrate the small stuff and enjoy the ride, rather than postponing the celebration of success to a day in the future when you might actually capture that lofty trophy. Bonus: by not overcommitting, you’ll fight the overwhelm and burnout that often creep in when setting new habits. With that in mind, rig the meditation game to win it. Meditate a little bit, on a lot of days.

HOW DO YOU AVOID THE PLASTIC SMOOTHIE CUP?

I bring a jar or ask for it in a bowl. Or search the food court or inquire at other cafés to borrow a cup or use a paper cup. It’s all about getting creative. And ALWAYS skip the straw.

CLEANING PRODUCTS ARE ALL PACKAGED IN PLASTIC, HOW DO YOU AVOID THIS?

I make my own cleaning products. I’m not interested in hectic chemicals lingering on counter tops from plastic packed sprays and scrubs. We breathe them in, touch them, prepare food around them. Instead, we can avoid the issue of harmful chemicals and their plastic bottles by making our own cleaners. Water and a drop of eucalyptus oil is the best cleaner you will ever need!

HOW CAN WE AVOID CLING WRAP?

Beeswax wraps are a great alternative. The waxy square can wrap around any container and seal tight. Since the wraps are coated in natural, organic beeswax, they are food safe. Just make sure to wash them with cold water, so you don’t melt the wax! They can be purchased at health shops like The Source or you can make your own! (Watch my Youtube tutorial!)

Tucked away in the Woolworths Plaza carpark in Byron Bay is a slip of an Asian street food den called Foxy Luu’s. Just look for the paper lanterns swinging in the sea breeze and you’ve found it. Open seven days for lunch and dinner, the little shop front serves a simple and freshly prepared menu of classic pan Asian street foods. The menu starts with a selection of Taiwanese steamed buns known as Gua Bao or simply ‘Bao’ to us Aussies who like to shorten the names of everything! I am a fan of the Sesame Chicken Bao filled with chicken, mayonnaise, fresh herbs and greens and deep fried shallots. Next stop is Vietnam for Goi Cuôn or Rice Paper Rolls filled with Chinese Pork, Satay Tofu or Sweet Soy Chicken. For something more substantial try a freshly prepared salad. The Indonesian Gado Gado comes with either Tofu or Chicken. They also serve a Thai Papaya Salad. A nourishing Bone Broth served with Asian Aromatics can be ordered by the bowl or cup. Another good idea is to do the $20 ‘Hawkers Degustation’ described as a marathon of bites. Then there is the Dumpling section – the ultimate Asian street food! Some call dumplings comfort food and others call them hangover food. Whichever your take, there are prawn and pork and vegetarian options. Foxy Luu’s also has classic pork buns from the steamer and bean curd rolls and a small dessert menu. The drinks fridge is all natural with juice, kombuchas, coconut water, oolong tea, sparkling and Pocari Sweat – a Japanese sports drink. You can also BYO.

• 2 heads of cos (Romaine) lettuce, washed and torn • 200ml extra virgin olive oil, with extra for frying croutons • 8 cloves garlic, finely chopped • 3 anchovy fillets • 1 lemon, juiced • 1 tablespoon Worcestershire sauce

METHOD Head chef and owner of Your Gourmet Catering, Leela Anna Brett has more than 20 years experience working at some of the finest hotels and restaurants in the world. She shares a family recipe with meaning and heart. This salad is one of the reasons I became a chef. My dad has been making it for me for as long as I can remember, literally!

• Cook the croutons. Heat the olive oil in a pan, add the croutons and toss until coated in oil. Cook until they start to toast, then add garlic. Cook until garlic is golden brown. With the fork, whisk in lemon juice, mustard, Tabasco,
