The Hotel Brunswick is the place to catch some tunes on Friday evening, with a free gig courtesy of Brisbane hiphop group Butterfingers kicking off at 7pm. Back in Byron, the Byron Bay Craft Beer and Cider Festival returns to the Sun Bistro on Saturday with more than 25 craft breweries showcasing their best suds from 11am to 5pm. Tickets ($38) will be available on the door (unless sold out via Eventbrite) and get you four sampling tokens, a reusable cup, and access to a brewing demo, live entertainment, prizes and more. In town, Byron Theatre will be hosting three performances of Snow White by the Victorian State Ballet over the weekend, with shows at 7:30pm on Friday and Saturday, and at 2pm on Saturday. Enjoy!

I refuse to turn my back on this wildish windfall from my ancestors who moved in rhythm with the moon and walked in step with the seasons. An inheritance of instincts. The trust that our intuitive knowing is vaster and more comprehensive and more on point than any spreadsheet, statistic or expert analysis will ever be. I am not a fool for trusting my instincts. TITLE: The Secret History AUTHOR: Donna Tartt NUMBER OF PAGES: 576 EST. READ TIME: 12 hours and 50 minutes WHAT IT'S ABOUT: Friendship, lies and a murder. What
happens when an innocent experiment at college goes wrong and who is to blame? A group of students are faced with a great ethical dilemma and must choose a path forward, with grave consequences. Murder, sexual tension and deceit are all on the cards. WHO IT'S FOR: Anyone who enjoys an intellectual murder mystery and a story that keeps you guessing. WHY YOU SHOULD READ IT: The Secret History is an instant classic. It’s characters are both flawed and flawless. Reading this book feels like an old school ‘choose your own adventure’ novel, as you’re faced to question what decisions you’d make if you were one of the characters. The relationship between these college students is intoxicating. The Secret History is an exciting study into the effects of our decisions, however big or small. It’s a long read but the time investment is well worth it. My favourite book of the year. NOTABLE QUOTE: “It's funny, but thinking back on it now, I realize that this particular point in time, as I stood there blinking in the deserted hall, was the one point at which I might have chosen to do something very much different from what I actually did. BYRON BÁNH MÌ - BYRON BAY If you base your dining choices on where the crowds are flocking, then it has to be lunch at Byron Bánh Mì. From 11am to 2pm a consistent crowd gathers outside to wait for a lunchtime fix of one of the world’s best tasting sandwiches. The menu at Byron Bánh Mì is compact with six different varieties of Bánh Mì on offer. The Crispy Pork Roast with crackling and the Grilled Lemongrass Pork are my go to. The light and airy baguettes all come with pâté, pickled carrot, cucumber, coriander, mayo and optional chilli. Byron Bánh Mì also serves rice paper rolls with a hoisin and peanut dipping sauce. The Pork and Prawn combination rolls are great with lots of filling. Owner Muoi Trinh’s signature Spring Rolls are ever tempting and the naughtiest Bánh Patê Sô - a little street food snack inspired by the French Pâté Chaud. It’s a small round pie of buttery puff pastry filled with savoury pork and paté. It’s kind of like a mini sausage roll but so much better. Muoi also prepares Vermicelli Salads that are refreshing and zesty and made to order. Try your vermicelli salad with spring rolls on top! Byron Bánh Mì is open from 8am – 2pm Monday to Saturday. Don’t be put off if there is a crowd. The Bánh Mì are made fresh to order and there is never a long wait.

SUNDAY 20TH MAY 2018 / BANGALOW The Bangalow Billycart Derby began back in 1994 and has grown into an annual tradition for the peeps in the Shire and literally thousands turn out for it. Basically competitors build their own Billycarts and race them down the main drag of Bangalow. There is a race for everyone with categories including kids, parents, mothers, juniors, seniors, sporting clubs, novelty and celebrity! Billy Cart registration starts at 7am in the Bangalow Hotel and racing begins at 9am sharp. The day kicks on after the race with art and craft stalls food, a jumping castle, ferris wheel, merry-go-round and of course the annual Mad Hatter’s Derby Tea Party which is the Bangalow Public School’s biggest fundraiser. As it starts to cool off and we welcome the season change, pull out your jumpers and adjust your diet. The best food to eat is what grows fresh locally. This is what our bodies digest best and get the most benefits from. Of course, it’s good for the planet too because it won’t come packaged in plastic, burn heaps of fuel to travel to your belly, or enable a broken system of massmanufactured processed chemical-rich products marketed to humans as ‘food.’ Supporting local farmers is the best for your bod and the earth’s bod. This month I share some warming, plastic free recipes to help you keep your bin empty and your body cosy even as the temp is cooling down.
BROCCOLI RICE - INGREDIENTS: (Buy bulk, organic ingredients where possible) • 2 heads broccoli, cut into florets • 1 tbsp organic Coconut Oil (reuse the glass jar for storing dried goods) • 2-4 cloves garlic, crushed • 1 onion, chopped • 1 small chili, chopped • 1 tsp cumin • 1 tsp ground coriander • 1 handful of chopped fresh greens (coriander, parsley, etc.) • Himalayan salt and ground pepper to taste

Steam broccoli for 5 min. Chop until fine like rice. Melt coconut oil in pan on Med Heat, add garlic and onion, stir until soft. Add the rest, stir for 5 min until soft.

35g (1/3 cup) rolled oats 1 tablespoons flaxseeds 2 tablespoons coconut sugar (optional) 75g (1/3 cup) solidified coconut oil 4 eggs 40g (1/3 cup) coconut flour
METHOD Are you often stuck trying to find a delicious and healthy treat to go with your afternoon cup of tea? This is one of my favourites by Katrina Woodman (Taste.com) and can be perfectly paired with a Byron Bay Tea Company Earl Grey tea or if you are feeling a little adventurous- our Energy blend - containing green tea and berries. This is a nutrient-dense and wholesome treat with good fats, complex carbohydrates, protein and the super food goodness of goji berries.

Preheat the oven to 180°C/160°C fan forced. Grease and line the base and sides of a 7 x 22cm (base measurement) loaf pan, allowing the edges to overhang.

Combine 3 tsp of the oats, 2 tsp of the flaxseed and 1 tsp of the coconut sugar in a small bowl. Set aside. Use electric beaters to beat the coconut oil and remaining sugar in a bowl until pale and creamy. Beat in 1 egg and 1 tbs of the coconut flour. Repeat with the remaining eggs and coconut flour until combined.

40g (1/3 cup) almond meal 2 tablespoons goji berries 2 teaspoons gluten-free baking powder 1 teaspoon ground cinnamon 3 ripe bananas, mashed

Add the almond meal, goji berries, baking powder, cinnamon, banana and remaining oats and flaxseed to the egg mixture and stir to combine. Spoon into prepared pan. Smooth the surface, then sprinkle with the reserved oat mixture.

Bake for 1 hour or until firm and a skewer inserted into the centre comes out clean. Cool in pan for 15 minutes. Transfer to a wire rack to cool. Serve warm or at room temperature.

Open Studios is an arts adventure trail. A group of local artists of different genres are opening their own working studios to the public so that people can experience the process of how artworks are created. The inspiration came from people approaching me in gallery exhibitions and asking simple questions like “how did you make that piece?” or “how and where do I begin?”
WHERE ARE THE ARTISTS FROM? The sixteen working
studios are in the Ballina, Byron and Lismore Local Council areas. Our vision is for people to organise a car-load and experience a trip of exploration to places they have never been before and cannot imagine. Studios in the Northern Rivers area are in the most fascinating locations.
WHAT TYPE OF ART WILL BE EXHIBITED? The studios
chosen include a fascinating spectrum of arts such as painting, drawing, ceramics, pottery, blacksmithing, wood carving, etching, jewellery, textiles, printmaking, mixed media, mosaics and other visual arts practices.
WHY IS IT IMPORTANT TO EXHIBIT THE WORK OF LOCAL ARTISTS? This area is rich in artistic talent with emerging, established and award winning and international artists. The Open Studios hope to raise public awareness of our region’s outstanding artistry and craftmanship and to introduce more locals and visitors to the artistic diversity of the region. In doing so we hope to support the artists of the area.
HOW CAN WE USE ART TO BRING TOGETHER THE COMMUNITY? Art creation is a very therapeutic
