GO FORTH AND BE GRATEFUL. Got gratitude? I think a little gratitude ritual is one of the most powerful morning priming practices on the menu. It’s simple, easy and powerful. I love Harvard happiness researcher Shawn Achor's approach to gratitude. He suggests writing down three things you're grateful for from the last 24 hours. This is effective for a few reasons. First, it can be really easy to slip into a gratitude rut- repeating the same "big" things every day (my health, my family, etc.,) and using Achor's approach keeps your gratitude fresh, relevant, and calls your attention to the little bijoux in your day - the tiny gems that you might otherwise not notice. You start celebrating the small things that you are deeply grateful for. You keep your eyes peeled, so to speak, for all the many blessings in your life. It can become gameful and fun (like a word search or one of those Where’s Wally books) and this helps to make it a ritual that you'll want to return to every day. Plus, this consistent attitude of gratitude expands and sets you up to receive even more to be grateful for. As L.A. based health guru Dr. Habib Sadhegi says, "feeling is the language of the universe.” In other words, feeling grateful and recognising all that you have to be grateful for invites more of the good stuff into your life. In other words, please and thank you go hand in hand. So go forth and be grateful.

MANNA HAVEN CAFÉ - 97 JONSON STREET, BYRON BAY If it’s ‘food for body and soul’ you seek, then Manna Haven Café should leave you feeling nourished and maybe even enlightened. The vegetarian café, a ministry of the Seventh Day Adventists Church, is where a faithful following of locals and health conscious travellers congregate for plant-based eats without the high prices. Manna Haven serves meals from 11am – 3pm Sunday to Friday. The menu changes weekly and almost all dishes are vegan. There are plenty of gluten-free, sugar free and raw menu options available. Hot dishes include Cauliflower Chickpea Satay, Vegetable Pakoras and the famous Vegetarian Pumpkin and Mushroom Lasagne. There is always a good range of freshly prepared salads on the side like the Crunchy Satay Salad, Roasted Vegetable and Lentil Salad and Tangy Courgette Slaw with Tahini Dressing. Hot dishes and salads are served to bainmarie style. You can choose two dishes for $13 and three dishes for $16. The sweets cabinet includes treats like Superfood Bliss Balls, Chia Puddings, Raw Apricot and Ginger Slice and Gluten Free Vegan Chocolate Mousse cake. If you have a celebration coming up they can create delicious cakes and desserts for you to order. For drinks there is Chai, Herbal Tea and Hot Chocolate - no coffee I’m afraid – plus a small selection of bottled drinks and smoothies like the Manna Mango and the Berry Blast priced at $8. If time isn’t on your side, you can ‘grab and go’.

PLASTIC FREE JULY IS COMING - INSPIRE ACTION Now that you are ready to be plastic free for all of July, you can begin to think beyond your personal impact and how you may want to inspire action in your community. Here are a few suggestions. • Ask your local cafe if they can offer a discount for bringing your own cup. • Inspire your local cafe to have a mug library. You can start them off by purchasing 20-30 mugs from an op shop. Put them in a cute tray with a donations jar. Make a sign explaining that people can borrow or keep one of the mugs for gold coins. This way you have coins to restock the mug library when it gets depleted! • Meet with the manager or owner of your local supermarket to increase the paper bags in the produce section. Make paper mushroom bags more accessible around the produce section, so people have another option to plastic. • If your farmer’s market still hands out plastic bags, meet with the organisers to see what it would take to use paper bags or offer incentive for folks that bring their own bags. • Organise a beach clean for your friends, family or colleagues. Don’t be afraid to propose a spontaneous beach clean if you are at the beach with friends or on a picnic. Break the stigma around picking up trash. The more we chip in, the better our world will be.

Macca encrusted Salmon with salad

2 salmon fillets • 1/4 cup macadamia nuts • 1/4 cup coconut flakes • 3 tablespoons panko breadcrumbs • 2 tablespoons coconut oil • 1 tablespoons macadamia nut oil • Salt and pepper • 2 tablespoons lemon juice.
Salad • Mixed Salad leaves • 2 tablespoons macadamia nut oil • 2 tablespoons lemon juice • 1 teaspoon Dijon mustard • Sea salt and ground black
METHOD •

Preheat oven to 220°C. Place Salmon on lined oven tray and brush fillets with half the Macadamia nut oil and season. Bake for 6mins. Pulse macadamia nuts and coconut flakes until coarse then combine with breadcrumbs and melted coconut oil.

Remove salmon from oven and brush with remaining Macadamia oil. Press the macadamia/coconut mixture onto salmon fillets and drizzle with lemon juice. Return salmon to the oven and bake for an additional 12mins, or until cooked to your preference. Serve with salad.

Zero Emissions Byron (ZEB), in collaboration with the Byron Shire Council, aims to transition the Byron Shire region to zero emissions by 2025, working through the sectors of Energy, Buildings, Transport, Land Use and Waste. ZEB aims to reduce the impacts of climate change and develop new economic opportunities by inspiring and working with Council and the community. They have invited Earth System scientist Professor Will Steffen to tell us what we can all be doing now to chart a way forward and reduce emissions in a way that’s realistic, economically feasible and ultimately how can we chuck a collective uey to reduce our emissions in time. Tomorrow, the film is the beginning of a movement seeking to encourage local communities around the world to change the way they live for the sake of our planet. Inspired by the some scientific research forecasting some pretty dire stats, filmmakers Cyril Dion and Mélanie Laurent decided to explore what our world could look like if we brought together some of the best solutions to date in agriculture, energy, economics, education, and democracy. What they found were men and women changing the world: cities that produce their own food and energy, zero-waste systems, businesspeople and towns creating their own currency to prevent speculation and the appropriation of wealth, citizens rewriting their own constitution, and pioneering educational systems. WHAT CAN YOU TELL US ABOUT THE HISTORY OF SKY SURFBOARDS? Sky surfboards was established in 1973 by Geoff and Janice Heers. There was a factory in the industrial estate and a shop as you drove into town. In the 80s, the brand was sold Australia wide and in Japan.
WHAT WAS SURFING CULTURE LIKE IN BYRON BACK AS A TEENAGER? Most times we were just surfing with
mates. Majority of people were at the Pass or if you went to the other beaches a lot of the time you would be surfing on your own. It was a friendly local crew out in the water and we were lucky to have the waves to ourselves.
HOW HAS BYRON CHANGED SINCE YOU WERE A TEENAGER?
It wasn’t a tourist town back in the early days. It was more like a farming area with a few businesses. Just a quiet rural beach town, and now of course it is a major tourist destination.
WHAT WAS IT LIKE RAISING YOUR KIDS IN BYRON? DO THEY SURF? Yes most of my kids surf. Byron has been a great place to bring up 7 children. We love our home town.
WERE YOU AN ORIGINAL SHAPER? ARE YOU STILL SHAPING? The original shapers were Chris young, Michael Cundith and Chris Brock. I started there in 1975 finishing off boards, and then started to shape my own boards for Sky in 1977. I am still shaping Sky boards today.
WHAT’S NEXT FOR SKY? We are passionate about
