A Note From Our Team Let everyone breathe a collective sigh of relief now that 2016 has slunk away into the shadows. We are looking forward, with a reckless sense of optimism, to what will hopefully be a year when everything starts to fall neatly into place. Welcome 2017! We have had time to reflect on the moments that stood out for us in the past 12 months, and amongst the inevitable frustrations, there were so many times when w e were buoyed by the sheer enjoyment we experience in bringing our monthly community magazine to you. It’s all about the amazing people we get to meet, the exciting and brave new start-up projects we come across, and the irrepressible spirit and resilience of our community in the face of challenges. It’s that spirit that feeds our enthusiasm, and spurs us on to create each monthly issue. We thank you for being who you are, our appreciative readers. This month, Cairo East Magazine captures this sentiment beautifully on our covers by showcasing the art of eL Seed, a French -Tunisian artist who blends the historic art of Arabic calligraphy with graffiti to convey messages of beauty, poetry and peace. His art is currently being showcased at Art Talks Egypt, for more inspiration read more about eL Seed on page 46. Last month at Porto Cairo Mall, The

Entertainment Hub brought a unique show to Cairo: Got Talent, featuring star turns from some of the best acts from the international TV competitions, including the US, Italy, France, the UK and of course Arabs Got Talent. The Entertainment Hub, created in 2012 in collaboration with partners the MBC Group, is a ticketed event agency belonging to entrepreneur Mahmoud Saad. Their first full-scale event was last year’s successful Scooby Doo, but the Got Talent show, which as well as showing in Cairo is also being produced in Dubai and Saudi Arabia with a different group of entertainers, has been the biggest project so far. >>

“We took the license to produce the stage show from MBC4,” says a spokesperson for the company. “A lot of people after seeing the show on TV assume it is a competition, but it’s not. It’s an opportunity for an audience to watch the acts performing live on stage, most of them having got to the final stages in the TV show – first or second place, or ‘golden buzzer’ performers.” The Got Talent show was presented live by the charismatic Raya Abirached, a familiar face on Arabic television with her show Scoop with Raya, and of course Arabs Got Talent. Cairo East Magazine was delighted to catch this exclusive interview with Raya, in which she divulges some of her top tips for being a leading entertainment journalist. CEM: Did you ever dream as a child that you would one day become as famous as the celebrities you now interview? RA: People tell me that they’ve grown up watching the show, which is very nice because it means I’ve inspired a generation of young people to love cinema.

I never got into television because I wanted to be someone famous. It was my passion for cinema that took me down that road; I was in television because it was the right platform from which to share that passion with other people. Fame has been the result but it was never my target – even though I enjoy having people recognize me, and I enjoy feeling the love – especially here in Egypt. Has the role of interviewer and presenter been something you slipped into naturally? Yes, because it was my passion. I brought it to the channel; it was a woman-made show. It’s not like I was given the opportunity to present a show on cinema – I proposed it and created the show myself; it’s my baby! It’s been an organic process. Who has been the strongest influence in your life? I’m not someone who gets very influenced by other people. I’ve enjoyed different experiences here and there, met people along the way who have had an impact on my career, some tougher on me than

others, inspired me to work hard and be proactive – because in this job that’s what we do: work hard. But basically, I’m influenced more by things that happen around me than by people. It must be demanding keeping up with your hectic schedule, how do you manage to balance work and motherhood? You are always on the road, how do you stay sane? That’s a newly acquired skill that I’m still learning! It’s very difficult to be away from my daughter. My job requires a lot of travelling and I started travelling again two months after having her, (she’s nearly five years old now). Managing it all requires good organizational skills, which I was blessed with initially and now it’s become full-blown. Basically what I have given up is any kind of social life; it’s my job and my family and those are the exclusive priorities I’m happy to have. What have been the standout moments in your career to date? It’s always the first time that stands out, the first time to do Arabs Got Talent. The first time at the Oscars

or the Cannes Film Festival, the first interview with Brad Pitt, or Oprah Winfrey. But what’s made a difference in the last few years is social media and how I interact with the fans; knowing what they want, who’s important to them, what their questions are and the impact of the show on them – which is really nice.

Even though a lot of them are quite serious, if you get them on a good day the comedians are always quite fun. I did many interviews with Robin Williams and he really made me laugh, a true comedic spirit.

It’s very important to have done the research about the person and, for example, to have seen all their films. I never have prepared questions though; I prefer to listen to what people say and not follow a particular line of questioning. I feel they often give you more interesting information that way. Oh yes, absolutely – in fact many of them already are world class performers and feature in the Guinness Book of World Records. Sos and Victoria for example, have performed all over the world and are just back from Vegas. Lisa Sampson was a sensation in the UK on Britain’s Got Talent. The competitions are a platform for them and afterwards, if they work hard enough, they all become professionals. Salah the Entertainer, Babu Flex – I’d pay for a ticket to see them!

Who are some of the big names in show business that you have interviewed? Out of all celebrities you have interviewed who was the most fun?

How do you manage to ‘warm up’ a difficult interviewee?

How important are events like this in providing opportunities for young talents to get exposure? They’re providing a professional platform to these performers and a real public who’ve paid for a ticket to come and see them, which is what they’re all about. We live in a region where it’s established that to succeed in life you have to go into ‘serious professions’, which is something that the show, and myself, are trying to change peoples’ minds about. Take the Egyptian singer on the show Yasmina El Alwani, for example. Got Talent has completely changed her life and there’s no doubt she will become a singing star.

Quickfire Round: Favorite clothing item? Large black trousers! Signature fragrance? I don’t really have a best one; I change all the time. Right now I’m wearing Burberry. Best habit? Discipline. (Or what my husband would call being a control freak.) Comfort food? Ice cream. Ideal holiday location? Miami. Always in your suitcase? Trainers. I’ve taken a new habit of always exercising in hotels when I travel. Favourite app? WhatsApp What is the best gift you have ever received? My daughter.

Got Talent Performers The Got Talent show featured new singing star Yasmina, who is also Egyptian runner up on Arabs Got Talent. A host of other international acts made famous by the show in their own countries were also featured on Got Talent. They included quick-change sensation Sos and Victoria, as well as Karoli and Ana Zeman from America’s Got Talent who pulled off a display on roller-skates with a particularly dangerous-looking sequence involving Ana being hurled around by Karoli with a leather strap around her neck. The show also featured Yorok, halfEgyptian football free-styler who told Cairo East Magazine he ended

up in Spain’s Got Talent by accident when going to cheer his friends on the auditions. “The show is a fantastic way for any performer to promote their skills and become professional,” commented Yorok. Each contestant has had their own journey to reach the top, and seeing the show live conveyed their passion to the audience. For Marco ‘Kira’ Kristoferi, an ex- break dance champion performing with a giant wheel, the show has enabled him to live his dream, “What I do with the wheel is for me a kind of magic, transferring the energy I have on the ground to the air; when I’m turning with it I feel free.”

Egyptian Design Talents Penetrate the Japanese Market JETRO Hosts ‘rooms’ Fashion and Design Trade Show Well-deserved recognition

has come for a batch of innovative Egyptian designers, in the form of participation in ‘rooms’, a leading trade show being held by H.P. France, in Japan in February 2017. Cairo East Magazine attended the conference and caught up with H.P. France Executive Director, Tomonori Matsui, and some of the designers who will exhibit in Japan. CEM: How long has the ‘rooms’ event been taking place? TM: The event, ‘rooms’ is well established, and first took place in 1985. It has proven to be an exciting, important launch pad for designers from diverse

countries wanting to introduce their unique products into the Japanese market. Attendees actually come from many countries, especially the Far East and Asian region, so participants are able to reach a very broad market. What products does it focus on? It can roughly be broken down into 60% accessories, 28% clothing, 10 % interior decor items and 2% art. Within these categories of course there are many types of product, so visitors are kept busy browsing displays during the three-day event.

How have Japanese fashion tastes and purchasing habits evolved in recent years? When the Japanese market really took off, buyers mainly purchased fashion items from France, and established boutiques for them. Japan had no fashion accessories at the time; it was all real jewelry. How has the Japanese fashion industry developed? When they first started in Japan, Japanese designers used to travel, take ideas from Europe and copy them in Japan. It was not just about copying the things they saw, they meant to introduce new cultures through the ideas they borrowed.

10 Does the idea of having something unique rather than mass-produced appeal to the Japanese consumer? We appreciate uniqueness, and this is what we are looking for. The quantity doesn’t matter; it’s the quality that does. What do you think will appeal to visitors of ‘rooms’, having seen what young Egyptian designers produce? From what we saw, we believe that every brand has an edge and is unique in its own way. The bags that represent Egyptian culture will be sought after in the Japanese market. What support has the JETRO trade show offered in terms of helping local designers to enter the Japanese market? JETRO is the link between Egyptian designers and us; the staff organized and handled everything very well. How do you think Egyptian products will sell in Japan? Egypt has a great history, and its designers are very talented. We are concentrating now on selecting the

most appealing products that will sell in Japan. There is great potential for Egyptian design and creations to have an impact on the Japanese market. 1 Malaika CEM: Do you think the artisan element in your bed linen will be a good selling point in the Japanese market? M: Yes, having been there before, we found that the Japanese loved the stories behind the designs and were very impressed with the craftsmanship. Do you see a trend in the global market for more individualized products rather than massproduced lines?

ZAGH is not in a position to discuss international trends. We focus more on creating timeless pieces that are worn regardless of fashion trends.

S.A.D.A.F.A. Have you had interest in your exclusive range of bags from other export markets? S: This is the first formal approach, although I’ve had previous interest shown by other boutiques. How do you expect your designs to be received in the Japanese fashion market? We feel that our Kimono bags will match traditional Japanese dress and costumes. Our design ethos will be attractive to a Japanese market interested in minimalism.

and his acclaim is far-reaching. So, how then did he come to create an iconic visual project in one of Cairo’s least privileged neighbourhoods? Cairo East Magazine set out to learn more.

CEM: What is the message inside your calligraphy? ES: The essence of my artwork is that it is a form of Arabic poetry. It manifests as bold graffiti, and is situated where it can most effectively send out a message of hope, peace and unity. I seek to create beautiful works of art that need no translation, even if people don’t understand them, they can feel them. I believe that Arabic script connects with the soul before the eyes decipher it, it doesn’t need translation. Just as music is universal, my art can be appreciated by any culture.

How did you come to select Manshiyat Nasr for your latest project?

church itself is located in a cave which delves deep inside the actual mountain.

The area first came to my attention in 2009 when 300,000 pigs were slaughtered, based on the assumption that they could carry the swine flu virus. As they were a main source of livelihood for the large community of Coptic Christians, I could understand what an effect this would have. It was some years later on a trip to Cairo that I made a visit to Saint Simon Monastery, in the Mokkatam area, which is elevated above the city. The

The drive there led through the noisy, congested and odorous alleys of Manshiyat Nasr, also known as the area of the zabaleen or garbage collectors, but somehow it still seemed to have its own sense of industrious organization. Looking down from the elevated level, I felt that this marginalized community deserved to be respected, to have the perception of being dirty or unclean changed.

Every art project I create must be relevant to that place or community, and the words of the 3rd century Coptic Bishop, Saint Athanasius of Alexandria, “Anyone who wants to see the sunlight clearly needs to wipe his eye first”, seemed to resonate with Manshiyat Nasr. This is how, with my team of artists, along with help from members of the local community, I created a continuous mural with these words that encompasses the facades of over 50 buildings. How did the residents of the community respond to the concept? I had been told that the one person who could convince the residents was Father Seman, from the church I had visited. Once I had explained the idea to him, he was enthusiastic about getting their agreement. At first they didn’t really get the point, and the level of communication was limited. However, in a short while we got to know everyone by name and felt embraced and welcomed by the residents. Their hospitality and warmth was immense, even to the extent of proffering glasses of tea from windows of each level as we

worked our way up the facades. Maybe that is why it took us a whole three weeks to get finished, it was all of those tea breaks! What impact has the artwork had on the area? To be visually appreciated in its entirety it is best viewed from the heights of Mokkatam. But from every perspective it has something new to offer. It is said that, “To see something clearly, sometimes you need to change your angle”. Our project has thrown light, or nawartuna, on a community worthy of admiration for their tireless efforts in recycling the garbage of Cairo’s millions. Not only as the fluorescent white detail of the painting catches the lights of the surroundings, but also through the attention already garnered from all over the globe. Do you consider your work a passion or a job? I think I can sum that up by saying that Manshiyat Nasr was the most amazing project and human

experience I have ever lived through. One resident, Uncle Ibrahim, who I got to know well during those weeks, made a long overdue trip to Mokkatam to view the finished work. His words, “This is a project of peace and unity that has brought people together”, will remain with me. eL Seed recently exhibited at Art Talks gallery in Zamalek, showcasing lithographs and canvases with his distinctive, bold turquoise, ochre, black and white calligraphy, extending the message of that iconic statement in the heart of Manshiyat Nasr. How High Achievers will Make 2017 Better than 2016 As each New Year starts we set up the usual list of resolutions. How many of them last the distance? Cairo East Magazine stumbled upon this read-worthy piece compiled by Michael Hyatt, author, blogger, speaker, and the former chairman and CEO of Thomas Nelson Publishers.

Hyatt asked several high achievers what they do to set themselves up for a great year. As their responses came in, he was surprised by how much their answers overlapped. But then again, he really wasn’t that surprised. The overlaps function like best practices. He’s convinced these commonalities are part of what makes these people all high achievers in the first place.

1. REFLECT ON THE PAST YEAR

The first thing high achievers do to set themselves up for a great year is review the current one. “I set myself up for success in the New Year by pausing and reflecting,” John Maxwell, #1 New York Times bestselling author, coach, and speaker told Hyatt. “I block the last week of the year and spend time reviewing my entire year’s calendar. I believe that evaluated reflection turns experience into insight. So, I evaluate what I did so that I gain insight for what I should be doing in the New Year.” Businessman, author, philanthropist and motivational speaker Tony Robbins does the same thing. He told Hyatt that throughout the year he collects “accomplishments and magic moments” in a journal almost like saving up receipts for tax purposes. “At the end of the year I go and review them all,” he said. “I look at the area of our businesses, our relationships, finance, and family.” By reflecting on these magic moments, Tony is able to “pull some principles” and determine “what do we really want to make happen in the following year.”

Communication Strategist and copywriter Ray Edwards said he starts preparing with “a gratitude flood.” How so? “In my journal I write down every good thing I can remember from the past year. In that state of total gratitude I ask, ‘What do I most want to be thankful for one year from now?’ I write the answer down, and it becomes a focus for the new year.”

2. STAY POSITIVE High achievers also work to stay positive as they lean into the New Year. Regret and negativity can kill our drive. Reviewing the “magic moments,” as Tony Robbins does, tells us that staying positive in this review process can help us move forward without losing momentum.

3. EXPRESS GRATITUDE The third thing high achievers do to set themselves up for a great year,

Research tells us that gratitude has a measurable effect on achieving our goals so it would seem that counting our blessings is a good way to start a great year.

4. ELIMINATE THE EXCESS One thing that results from reflection is direction for the new year. Hyatt heard that from several high achievers. But he also heard that spending time to reflect can highlight the stuff we need to cut. “What do I most want to be thankful for one year from now?” - RAY EDWARDS “Seeing the big picture in advance allows me to work with more purpose throughout the year.” - AMY PORTERFIELD “I set myself up for a great year by ruthlessly eliminating the bottom 30 percent of activities, projects, and commitments from the previous year,” Ray Edwards told Hyatt. “By removing those from my calendar, I get space to focus on the activities with the biggest payoff.” Bestselling author, speaker and coach Jeff Goins echoed the point. By killing the underperforming tasks and projects, he said, “It opens up all kinds of room for me to be more creative and innovative without running out of margin.”

5. SET COMPELLING GOALS This one came out in several of the answers in different ways, but the bottom line is that high achievers set goals that harness their emotional energy. “I set myself up to win by setting a clear vision for what I want to accomplish this coming year and why I want to accomplish it,” Lewis Howes, author, entrepreneur, and former professional football player, told Hyatt. The power is in that word why. Tony Robbins’ review process is designed to access this emotional power. “It’s really a recapturing of the year, emotionally and psychologically,” he said. It’s about identifying “what we achieved and what we enjoyed and then laying out what we’re going to achieve and enjoy in the next year.” Notice the importance of enjoyment there. Businessman, author, radio host, television personality, and motivational speaker Dave Ramsey

told me something similar, “I have to intentionally stop and dream again. What can I work on next year that makes me smile? Then my mind automatically moves from the strategic to the tactical. In detail how can I organize my work and my life to do the things that cause that same smile?”

6. BREAK IT DOWN The sixth thing high achievers do is to take those compelling goals and chunk them down into manageable pieces. Chris Ducker, bestselling author, podcaster and blogger, starts with a few big goals for the year, “usually no more than three.” He then writes them down and displays them in his office. But he doesn’t stop there. “I break them down into four quarterly goals — which are good-sized wins on their own, and then break those up into monthly goals,” he said. “This enables me to stay focused on the long-term goals, while at the same time enjoying being ‘in the moment’ of achieving my short-term, monthly goals. It’s a system that has worked for me for six years now!”

7. SCHEDULE THE YEAR Once they’ve set their goals and broken them into manageable pieces, the seventh thing high achievers do is schedule them. “What gets scheduled, gets done”, Hyatt often says. Beyond that, scheduling also protects your time. Here’s the reality: Everyone has

an agenda. If you don’t declare yours by calendaring what’s what important to you, others will try to fit you into their agenda. “I block out calendar time for my most important outcomes vacations, fun and time off and major business and creative projects,” Marie Forleo told Hyatt. “Those ‘stakes in the ground’ ensure that what’s most important happens.” Author and online entrepreneur Amy Porterfield explained her process in depth. “I buy a big dry-erase wall calendar and map out my entire year,” she said. “I include promotions, launches, and special content campaigns. Plus, I make a point to block out all vacation and days-off.”

8. UNPLUG FOR A TIME Several years ago Hyatt started taking a month-long sabbatical. To make it work, he has to plan it a year in advance, but it’s a crucial part of having a great year for himself. He heard this from other high achievers, especially as part of preparing for the year. BEST PRACTICES There’s a lot that goes into having your best year ever, and some things are different for us all. After all, we all have different talents, aspirations, and circumstances. But these insights and disciplines from high achievers show us some of the best practices we can all follow to accomplish the things that matter most in each of our lives this coming year.

may be true, there is more to Dahab than meets the eye. An “amazing culinary destination,” as Tamim puts it, there is lots to discover in Dahab in the way of food. Lakhbatita Ramez & Paola Restaurant serves authentic Italian cuisine right on the beach, Namaste Tandoori Oven specializes in bona fide sumptuous Indian food with all its complex layers of flavor, Red Cat Restaurant owned by Marianna Yakutova serves exotic Russian dishes, Churchill’s Bar grills “the best burger in Egypt,” according to Tamim, Ali Baba Hotel has perfected seafood cuisine, and dai pescatori Dahab is another authentic Italian food destination. “A traditional must in Dahab is breakfast at Ralph’s German Bakery,” says Tamim, the bakery is owned by German chef Ralph Stocker and has become a longstanding staple of the Dahab alimentary scene. Another must-do in Dahab is The Dahab Community Friday Market. It is a “street” food market held weekly at Sheikh Salem House and it features local products and produce from the surrounding Bedouin community, as well as food

stalls selling culinary delicacies and mouthwatering eats. “I find real peace there,” says Tamim of Dahab, “I find people there who have left the city behind, made an downgrade to their life style, and an upgrade to their mental wellbeing.”

Turkey Time at Castle Zaman

A tradition that started eight years ago among friends has today evolved into a full-blown competition with winners, losers, an audience, and a whole lot of succulent turkey to go around. Hani Roshdi is the owner and architect behind Castle Zaman, a ruin-like castle sitting atop a cliff, overlooking the shores of Nuweiba. Anyone who’s been to Sinai knows or has heard of this architectural marvel, and its famous slow-cooked, large-portion, high-dinning meals. Eight years ago, Roshdi and his pal Hussein El Sheikh shared a friendly rivalry over who could cook the best Thanksgiving turkey. Eight years later, the duo along with El Sheikh’s

wife Hedi are on the same team, competing against five other teams for the bragging rights over the best turkey. “We competed with two turkeys,” says Roshdi, “one we attempted to deep fry, and the other we smoked.” The deep-frying idea came from an American tradition of cooking turkey, “we couldn’t get the temperature high enough to create a consistent exterior,” explains Roshdi, “it ended up tasting great, but looking awful.” Their smoked entry however was a different case, “The smoked turkey is a recipe I’ve been doing for the past three years, mainly because the turkey is smoked far away from the kitchen, leaving room for the other competitors. And the smoked meat makes great leftovers!” claims Roshdi. Quite content with a fourth place win, Roshdi is looking ahead to next year’s turkey meet, “Next year we want to have a bigger event, we will think of ways to make next year bigger.”

First place winner and self-professed amateur chef, media producer Abbas Fahmy entered the competition with a Castle Zaman first: turkey under a salt crust. With 15 kg of salt in hand, along with the standard 8 kg turkey, Abbas got to work. The competition rules stipulated that all turkeys are sourced from the same farm and must weigh more or less the same. Castle Zaman provided the turkey, which each team paid for, while each team brought along its’ own tools and ingredients. The multi-turkey feast at the end was free for all invited

guests. For the third year running, Kamel Gabr, owner of Camel Dive in Sharm El Sheikh headed the judging panel, and voting was based on a set of criteria that included timeliness, presentation, carving, and taste. “It was my first time cooking an entire turkey under a salt crust,” admits Fahmy, “I had done veal leg and fish before but never a turkey. The advantage of cooking under a salt crust is that it accelerates the cooking process because no heat or moisture escape,” he explains. Cooking something under a salt crust imparts a flavor,

salt is hardened in the oven, and a hammer is literally needed to remove the crust after the turkey is cooked. Each team is required to create a side dish to complement the turkey. “My side was fereek with very small diced vegetables so that in one spoonful you carried all the ingredients: zucchini, carrots, potatoes, and sweet potatoes,” says Fahmy. “My winning side was cooked with rendered fat and cooking cream in a crockpot in a baladi oven, everything was pan fried before being put in the crockpot, >> CAIROEASTMAG.COM

with the addition of finely diced sausage and spices. I also made crispy oven-baked sweet potato and potato cubes with finely chopped rosemary, mint, garlic and olive oil, tossed together and crisped in the oven.” Fahmy goes on to explain, “Instead of making a gravy, I made an Argentinian inspired chimichurri made with celery leaves, parsley, fresh thyme and fresh rosemary with garlicinfused olive oil.” Among this year’s highlights were the vegetarian turkey made by Valentina Verbenko, “Her turkey looked perfectly

cooked and succulent,” says Roshdi, “but the minute you cut through it, you realize it’s a cake! It was wonderful.” Perhaps the highlight for everyone at the event, chefs and audience members alike, was the camaraderie and jovial atmosphere that sprung up among all attendees, a true meeting of spirits hungry for turkey and generous with their friendships. Abbas is eager to maintain his position as title-holder, but he is perhaps most looking forward to, “making more friends next year.” Refer to our address book

CEM: Which alternative healing methods do you carry out? SK: My approach is called Rapid Transformational Therapy, where I have specialized myself in hypnotherapy. It is a method that is developed by Marisa Peer, UK’s best therapist, who personally trained me. In addition, I use a mix of energy healing and energy psychology methods like Matrix-2Point, Reiki, Pranic Healing, NeuroLinguistic Programming and PEAT (Primordial Energy Activation and Transcendence). While my methods can free a person from some of their issues, they mainly complement other medical forms.

Many people believe they are not enough and that they are lacking in some significant way; this belief causes many psychological and physical problems for people. The second most common type of condition I would say is physical issues like chronic pain and unexplained physical ailments like fibromyalgia.

When would a person benefit most from this type of therapy? This type of therapy can benefit anyone from those with illnesses like cancer to those with chronic psychological ailments or anyone in between. The benefits of alternative healing methods are multifaceted as my treatments are tailored individually to each of my clients. It is very important to understand that alternative medicine and energy healing are pathways to holistic health, which compliment other types of traditional medicine. Therefore, anyone facing an issue big or small has the potential to benefit from these practices. Rapid Transformational Therapy provides patients with support to improve emotional, mental, and physical health. What are the most common psychological and physical conditions that you come across? In my practice, I see a wide variety of clients with different psychological and physical conditions. I am specialized in addictions, depression, anxiety, and trauma, but I cover a wide range of health and personal development related topics. The most common conditions I come across are clients facing self-love issues. Many of my client’s adult problems stem from issues rooted in their childhood. Typically, these problems are based in a lack of exposure to the proper love and nourishment during one’s upbringing. While my practice is in Cairo, I have worked with a

Can the therapies be used concurrently with traditional medications? Yes, the therapies are actually best used concurrently with other medical treatments, as alternative healers are not medical doctors. There is no need for a client to choose one track or the other but to use both concurrently to achieve the best possible results. When a client comes to see me for the first time I always discuss their case and familiarize myself with their entire medical situation. It is important to make the process as holistic as possible because the overall goal is to help and heal the client. Honestly, I am not allowed to tell a patient or recommend a patient to stop seeing their other medical practitioners, and it is my job to be responsible in my work and recognise the limits of my practice. Each person needs to weigh the benefits and the limits of alternative healing methods and decide for their selves. Can the treatments be applied to children as well as adults? Yes, absolutely, Rapid Transformational Therapy can be applied to both adult and child

clients, but it is far more common for me to treat adults in this line of work. Next year, I will be hosting educational workshops around Cairo with the intention of expanding my practice and seeing more young clients. Typically, if children are interested in my services I require them to be over the age of ten for the treatments to be the most meaningful. How many sessions are usually needed to see a noticeable improvement? After the first session with my client, I give a ball-park idea of how often they will need to come and see me for change to occur. This first session is important because this is when I gain an overall picture of their background, problem, and desired outcome from this alternative medicine practice. Depending on many factors, I then decide because each client’s case is so different and so unique. From experience, clients usually come to see me for about three sessions over the course of 1 to 2 months, but clients with more severe conditions require a longer process. What follow up is needed to ensure that the benefits are maintained? After our initial meeting, I contact my clients to follow up with them to see how they are feeling after the treatment. Since we are working towards a goal I like to monitor how they are feeling to help guide their healing. The goal is to have clients see me for a maximum of three to four sessions over a period of time but again, everything is individualized and catered to the client’s individual needs. I had a client who stopped smoking after only one session, which is amazing, but other clients with more complex problems need to see me for a series of hypnotherapy and energy healing sessions to achieve their goals. Have you seen a change in people’s willingness to go for more holistic approaches in health issues? People are now more open to a variety of traditional and alternative medicine practices as they become more mainstream and accessible. CAIROEASTMAG.COM

Usually, if a client is coming to me for treatment they have already decided that they are willing to make a life change as seeking alternative healing methods involves a conscious approach to your physical and psychological ailments. But results, as is often the case, are completely dependent on the person’s readiness and wiliness to seek help. Some people are hesitant to get help because the issues they face have served them for so long they have become ingrained as part of their identity. Some people, even when they are going through treatment, are slow to let in the new and release the old. Selma Koehn is aware that much education is required about her type of work as is needed to promote her practice; many people are still familiarizing themselves with alternative medicine. Natural, alternative medicine practices will never completely replace

traditional Western medicine, but many people are looking for more holistic ways to heal. There has been a rebirth and refocus towards organic, holistic, and ancient pathways as many people are skeptical of traditional medicine and big pharmaceutical companies. Koehn also warns of irresponsible practitioners who are unrealistic about the limitations of energy healing. While these methods can be used to create a holistic healing environment, they cannot be relied upon to cure many serious diseases and psychological disorders. Using energy healing for mild depression is far different from using it to cure bipolar disorder and the benefits and limitations need to be weighed; it is a fine balance indeed. Koehn, at the end of the day is a Rapid Transformational Therapist and she loves to see her clients leave with a smile, and hopes to free people from their issues, one client at a time.

Let’s face it, during these months you can spoil yourself as much as you want, this phase is all about you. Once your precious baby arrives he or she will get all the attention, including yours. This is the time that you can prepare yourself for the amazing journey you are about to start. You need to prepare mentally and emotionally, read as much as you can beforehand, as once you have delivered you will be immersed in baby tasks. Move, don’t take your pregnancy as an excuse to just sit there all the time. Studies have proven that an active pregnant woman is of a better condition than a sedentary pregnant woman. The point of concern is when to move and what to do, and that’s exactly what we are going to discuss here.

Physical exercises are usually not recommended during the first trimester, (the first 3 months of the pregnancy). You must check with your doctor when is it safe to start exercising for your particular case. From the second trimester, starts the magical phase. Where all the hormonal swings are almost over, no vomiting anymore, no cravings for weird food, it’s just you and your growing baby. Fortunately, the opportunity for you to be active increases and you may start going to the gym. Walking is one of the best cardiovascular exercises for pregnant women. It is a safe activity to continue throughout all nine months of pregnancy. Start by walking 10 minutes a day four to

How to Prevent Post-Traumatic Stress Disorder (PTSD ) At a certain point of each of our lives, everyone understands that life is full of ups and downs. No one lives his/ her life without experiencing both. Some of the downs we face are easy to overcome, but sometimes we can experience traumatic events that can be hard to get past and can sometimes leave scars. It is unwise to ignore our psychological turmoil, especially since 1 in 3 of the people who experience a traumatic event develop Acute Stress Disorder (ASD) that when ignored can develop into post-traumatic stress disorder (PTSD). Acute stress disorder (ASD) is an anxiety disorder that occurs within one month of experiencing, witnessing or being confronted with one or more traumatic events and lasts at least three days and can persist for up to one month. Anyone can develop ASD after experiencing a traumatic event. There are several symptoms that indicate if someone has ASD.

Restricted range of affection, unable to have loving feelings.

Sense of foreshortened future, does not expect to have career, marriage, children or normal life span.

Cognitive behavioral therapy, which may increase recovery speed.

Exposure-based therapies.

Hypnotherapy.

Efforts to avoid activities, places, people or situations that arouse recollection of the trauma.

Sleep disturbance: difficulty falling asleep or staying asleep.

Irritability or outburst of anger.

Inability to recall important aspects of the trauma (psychological amnesia).

Difficulty concentrating.

Hypervigilance.

Exaggerated startled response.

Recurrent and intrusive distressing recollections of the event.

Recurrent dreams of the event.

Sudden acting or feeling as if the traumatic event is recurring.

Intense psychological distress at exposure to things that symbolizes or resembles an aspect of the trauma, including anniversaries.

Medication to relieve the symptoms of ASD, such as antianxiety medications, selective serotonin reuptake inhibitors (SSRIs), and antidepressants.

Markedly diminished interest in significant activities.

Anxiety or increased arousal:

Efforts to avoid the thoughts or feelings associated with the trauma.

Re-experiencing the traumatic event:

How can ASD be treated? The first step in the treatment of ASD is recognition. The moment someone recognizes he/she has a problem, they need to visit a doctor to evaluate their symptoms and determine their needs to know the best treatment for them.

The selection of the best treatment depends on the doctor’s evaluation to the patient’s case since the effect of any of the treatments differs from one case to another. Many people with ASD are later diagnosed with PTSD, which causes a significant amount of stress and difficulty functioning, but when ASD is early recognized it can be easily treated getting the patient to full recovery. We need to learn how to continue living our lives and overcome all the bumps in our ways, because that is all they are, bumps, they slow us down, but we can still pass them and learn from them.

Warm-Up this Winter with Cream of Spinach Soup Beethoven once said, “Only the pure in heart can make a good soup,” and we strongly agree with him. He must have liked soup so much but, really, who doesn’t? It’s filling and packed with nutrients. Spinach is in season, and it is packed with vitamins, minerals, antioxidants, and more. Spinach is low in fat and even lower in cholesterol, high in niacin and zinc, as well as protein, fiber, vitamins A, C, E and K, calcium, iron, magnesium, phosphorus, potassium, copper, and manganese. What more can your body need?

Recipe

The origin of spinach is thought to be Ancient Persia (currently Iran), then it was anonymously passed on to India and finally landed in China with the name, “The Persian Vegetable.” If you ever see a dish with the word “Florentine” in it, it means that something is served on a bed of spinach. It was Queen Catherine de’ Medici of France’s favorite dish, and she was born in Florence, hence the term Florentine. A widely spread misconception about spinach is that it is high in iron, that idea came from the famous cartoon Popeye the Sailor Man.

Ingredients

Method

25g butter

In a large saucepan, heat the butter.

1 bunch spring onions, chopped

Add the spring onions, leek, celery and potato to the butter.

1 leek (about 120g), sliced

Stir and cover with lid.

2 small celery sticks (about 85g), sliced

Sweat for 10 minutes, stirring a couple of times.

1 small potato (about 200g), peeled and diced

Pour in the stock and cook for 10 to 15 minutes until the potato becomes soft.

Add the spinach; cook it for a couple of minutes until it is wilted.

½ tsp ground black pepper

Use a hand blender to blitz to a smooth soup.

1 litre of stock (made with two chickens or vegetable stock cubes)

Stir in the crème fraîche.

Reheat and serve.

400g spinach

150g half-fat crème fraîche

Tip Drizzle with double cream for a lively contrast that will make your dinner table look lovely.

A Modern Take on Traditional Egyptian Cuisine in the Heart of Heliopolis

Battaw Restaurant is fusion at its best, taking the best flavors from the region and

combining them to make old recipes new again. Battaw is your grandmother’s food, but with your older sister’s style. Its flavors are nostalgic, but its ingredients are lighter and healthier. Dishes sampled: Upon entering the beautiful Battaw restaurant we were treated like royalty; served warm sesame seed topped baladi bread and greeted by everyone with a smile. The staff were well dressed and on point with greeting, hosting, and serving. The menu was extensive, printed on crisp white paper with no pictures and placed on a wooden clip-board; giving it a hip and modern edge. We were excited to try everything as the menu was packed with Middle Eastern classics and family favorites. The lentil soup was a great start, topped with toasted baladi bread and herb butter giving it a crunch and a kick. It was a huge portion and could have been a meal in

itself. After the soup, we sampled the Battaw Tray which is a colorful tray filled with six of Battaw’s signature dips. The baladi bread and the dips were a perfect start to the dinner and could have fed upwards of six people. The dips were all classics but with an artistic twist; the hummus had whole chickpeas on top with a sprinkling of paprika and the lebna was flavorful and light and was mixed with toasted nuts. For our main course, we couldn’t pick one dish so we picked four. Dish after dish was brought to the table with perfect presentation and made fresh and hot to order. The bamia was cooked with cubed veal giving it a more filling and flavorful edge. The mumbar was brilliant and

came feeling lighter than usual and the sujouk was spicy and packed a punch. Impossibly full, but not willing to give up, we ventured even further down the menu and picked two dessert items, the konafa and sweet potato tart. Just like all the dishes before them, they were almost too good to be true. I would confidently say that each dish was the “best version” of itself that I have had. We cannot wait to go back and try the rest of the menu. Other menu options that appealed: The problem is all the menu items are appealing. The menu is full of Egyptian and Lebanese classics, all with a modern and healthy twist.

The large white chairs, the wood tables, the blue and white tiles, the turquoise doors, the crisp white accents, and the soft Mediterranean colors bring everything together. Ingredients: ●● 150gm sujouk (dry-cured beef sausage) ●● 10gm vegetable oil ●● 50gm red onion (cut into wedges) ●● 50gm green pepper (diced into medium pieces) ●● 50gm cherry tomato (cut in half )2gm table salt ●● 5gm garlic (minced) ●● 15gm butter ●● 5gm pine nuts (roasted) Preparation Method ●● In a sauté pan place the vegetable oil on medium/high heat ●● Sauté the onion and garlic for two minutes ●● Add sujouk mix, green peppers, and cherry tomatoes and mix well for five minutes ●● Before taking pan off the heat add the salt and mix all ingredients well for forty-five seconds ●● Place the mix on its serving plate ●● Garnish with butter and pine nuts ●● Serve ●● Enjoy!
