Over the past 30 years, has grown from a boutique wellness retreat to a world-renowned destination spa hailed for its wide range of fitness classes, gourmet-inspired healthy cuisine, pampering spa treatments and impeccable Provencal design. 2009 L’Orangerie

300-year-old limestone greenhouse from the Convent of the Carmelites in Dijon, France, has history extending from 1710 when it was originally built as a greenhouse for orange trees during the cold months. Later, the building was adapted to become a dining hall for the religious community and place for social gatherings.

La Societe De L’Orangerie is an honorary program to recognize and thank our guests for their loyal support and continued patronage throughout the years, allowing Cal-a-Vie to grow and flourish as your "Spa Haven." The Societe currently celebrates over 70 members!

The panel of wine scribes evaluated more than 300 wines from 14 countries. The awards included a Critics Gold for the 2011 and the Critics Platinum for the 2012.

DIRECTIONS

The roots of plants are what anchors them to the earth, stabilizes their foundation, and provide the essential nutrients that support their growth. In traditional Chinese medicine, root vegetables are believed to transfer these “grounding” properties to those who eat them, making them feel both mentally and physically stable and energized. Root vegetables come in a vast array of colors, which means they contain an abundance of micronutrients. Beets contain the phytochemical betalains which gives them either their deep red/violet color or their bright yellow hue. Betalains have powerful antioxidant, anti-inflammatory, and detoxification properties which help to reduce the risk for heart disease, type 2 diabetes, and cancer. Carrots, another root vegetable, contain beta-carotene and polyacetylenes, two antioxidants that work together to aid in eye health, decrease the risk for cancer, and protect against cardiovascular disease. You could say their vibrant colors paint the mind and body into a decadent masterpiece.

Preheat oven to 350 degrees. In CARROT CAKE • 12 oz gluten free flour a large bowl, combine the flour, baking powder, baking soda, • 12 oz carrot, grated allspice, cinnamon, nutmeg, • 1 tsp baking powder salt and sugar. Using a mixer, • 1 tsp baking soda with the paddle attachment, add the yogurt and coconut • ¼ tsp allspice oil and mix for approximately • ¼ tsp cinnamon 1 to 2 minutes. Add the dry • ¼ tsp nutmeg ingredients and mix until it is • ½ tsp sea salt incorporated. Add the carrots • 12 oz sugar and the eggs, continuing to mix until it’s all fully incorporated. • 3 eggs Pour batter into a sprayed cake • 6 oz Greek yogurt pan. Bake for approximately • 2 oz coconut oil, 25 minutes or until a toothpick softened to room temp comes out clean when inserted.

LEMON CURD • 3 egg yolks • 1/3 cup sugar • 1/3 cup lemon juice

In a medium sauce pan, add enough water to come about one inch up the side. Bring to a simmer over medium heat. In a small bowl, combine the egg yolks, sugar and lemon juice. Place the bowl on the sauce pan and whisk until the mixture is smooth and thickened.

Root vegetables are a natural source of complex carbohydrates, meaning they don’t spike blood sugar in the same way that simple carbohydrates do. Instead, they provide long lasting, steady energy. In this way, they truly do keep things stable in the body. They are also filled with nutritious fiber, which helps keep us full so we don’t find ourselves over-indulging. In fact, the particular type of fiber (pectin) that is found in carrots and beets has been shown to protect both digestive and cardiovascular health. You can eat root vegetables both raw and cooked. It has been shown that cooked carrots retain their beta-carotene while cooking beets may cause them to lose a little bit of their nutrition. Simply put, eat plant foods in their whole form, as close to what nature intended. Including both raw and cooked root vegetables in your diet can be a “groundbreaking” experience, causing you to feel more energized, clear, and balanced.

The aging in new French barrels brings out the earthy and oak tones allowing for a classic Bordeaux style finish. 2013 CHÂTEAU CAL-A-VIE ESTATE MERLOT Produced from the best Merlot grapes grown in our Cal-a-Vie Estate Upland Valley vineyard. The wine is 100% Merlot with a dramatic example of the classic Merlot cherry aromas and Bordeaux style, bouquet and finish. Aged in new 60 gallon French oak barrels for twenty four months. Only 288 bottles were produced.

Undergoing a fitness evaluation can be helpful in identifying your personal fitness level and developing an individualized fitness program to get the desired results. It also helps to measure the results of your regime and identify areas for change in your program. Cal-a-Vie offers the following fitness evaluation options: Bod Pod - the most innovative technology to assess your body fat and lean mass. Measuring your body composition is one of the best indicators of overall health.

- a comprehensive overview of general fitness level based on the results of testing for cholesterol, body fat percentage, flexibility, strength, aerobic capacity, blood pressure, resting heart rate and body measurements. Records are kept so that upon return visits a comparison reading can provide insight into how changed behaviors have influenced the results.

Metabolic Rate Testing - measures breathing and how much oxygen the body

uses, indicating how much energy (or calories) are being burned. This information can be used to calculate target caloric zones so you learn what it means to “eat to your metabolism.”

VO2 Fitness Assessment - clinically measures oxygen consumption (VO2)

and heart rate, measurements used to find target heart rate zones based on the individual’s aerobic and anaerobic thresholds. This test is designed to gather physiological performance data during a graded exercise test while breathing into a mask. This test will identify ideal workout intensity levels and data used to define a precise, personalized exercise regimen to reach specific training goals.
