Guests gather at the kitchen counter replete with all the ingredients for a culinary creation. Chef walks through the process, while each participant adds the items to their taste and preference. A learning environment leaving you completely satiated.

we hosted three different Mother/Daughter weeks featuring Elaine Madsen, Ryan Newman and Victoria Justice consecutively. Designed to encourage multigenerational bonding through shared experiences, each week was filled with fireside chats, specialized group fitness classes and engaging activities such as fashion shows, make-up lessons, skin care tips, cooking demonstrations and nutrition workshops. Mom/Teen week takes place June 11-18, 2017 – call now for early booking!
Hitting the Road...
After more than 11 years, Harold Marsh has retired from Cal-a-Vie Health Spa. Many guests have had the pleasure of sharing a ride in his service as one of our most valued drivers. Astonishingly, during his tenure, Harold made 2,770 trips to San Diego airport driving a total of 271,460 miles - the distance from the earth to the moon is 239,000 miles! We wish Harold all the best on a road less traveled!

The Spice of Life As the summer heat turns to a cool, crisp breeze and autumn leaves begin to fall, our health status can change as well. Blame it on back to school stress or late nights, but the bottom line is that your immune system can become compromised. In order to fend off those nasty colds and infections that can put a major damper on your weekend, add some spice to your weekday rituals. This Cajun seasoning not only adds a delightful kick to the red beans and rice, but also a power house punch to beat any illness that comes your way.
Onion and garlic come from the allium vegetable family, known for intense aromas, flavonoid antioxidants, and sulfur-containing compounds. Quercetin, a flavonoid found in onions helps to reduce inflammation, fight bacterial infections and prevent colds. Eating garlic and onions helps to rid the body of harmful toxins that can weaken the immune system. Alyssa Moore pepper also induces sweating, aiding in detoxification. Cayenne pepper contains capsaicin, which is responsible for burning your tongue! If you can handle the heat, capsaicin can help clear congestion. Paprika comes from red bell pepper which is rich in carotenoids, the phytochemical that gives them their bright red color (which also gives autumn leaves their color). These help to fight inflammation and build up immunity.
Boosting Snacks

Oregano and thyme may both be used to treat and prevent colds, coughs, and upper respiratory infections. These herbs help to reduce phlegm and increase sweat production. Thyme also increases the formation of white blood cells, which help to fight infection.
Baked Sweet Potato Sprinkled with Cinnamon & Walnuts Sweet potato is a great source of complex carbohydrates which help raise levels of serotonin, a neurotransmitter that helps regulate mood. Pair with some cinnamon and a few walnuts to balance blood sugar.
With spices, a little goes a long way, so you can use small amounts of fresh or dried spices in your cooking and still reap the benefits. Don’t let the changes of fall compromise your health; embrace them by making small changes yourself.

and chopped nuts, freeze Bananas contain a prebiotic fiber called resistance starch that helps feed good bacteria in the gut. Studies have shown that a healthy microbiome is associated with better mood, so happy gut bacteria makes you happy too!
Cajun Red Beans
by Executive Chef Curtis Cooke INGREDIENTS RED BEANS • 1 tbsp grape seed oil • ½ cup onion, small dice • ¼ cup celery, small dice • ¼ cup green bell pepper, small dice • 1 cup smoked chicken sausage, sliced • 1 tbsp tomato paste • 1 tbsp Cajun seasoning (recipe below) • 2 cups beans, cooked • 2 cups vegetable stock INGREDIENTS • 1 tbsp smoked paprika • 1 tsp onion powder • 1 tsp garlic powder • ½ tsp black pepper • tsp cayenne • ½ tsp dried oregano • ½ tsp dried thyme
DIRECTIONS In a medium sauce pot over medium heat, add oil. Add sausage, onion, celery and bell pepper saute for about 3 minutes, or until vegetables are soft and translucent. Add tomato paste and heat for about a minute. Add the seasoning mix and heat for another minute. Add beans and vegetable stock. Cook for approximately 15 minutes until the liquid is absorbed and thickened. Makes 6 Servings: ½ cup serving 158 calories 5g fat 0mg cholesterol 207mg sodium 18g carbohydrates 5g fiber 2g sugar 8g protein
