You’ll learn about how to make decisions on flour choices and how to read labels including nutrition and qualities . Adrian will also show you how to mill your flour using her home equipment.

The terroir of rice determines the quality and taste of rice and can produce different flavor profiles even though they can be the same species . Join Ploy and her friend who will tune in from Bangkok and learn about rice . We’ll start with different species of rice and how terroirs affect the rice you consume . Then, we’ll take you to a Thai farm and see the ecosystem of this area where it has a lotus pond, orchid farm, and rice field. We’ll finish our talk with Thai rice snacks.

FOOD TALK: SECRETS OF SPICES AND A COCKTAIL
Jenny Shrestha | Home Chef, Recipe Curator, @jenchaskitchen Let’s explore different spices and learn about health benefits, cultural importance, and family stories. We’ll go over unique spices including varieties of peppers, different types of salt, black cumin, mango powder, nigella seeds, and more. You’ll learn about their flavor profiles and how we can use them in food, drinks, or even body products . Jenny will show how to make turmeric powder from fresh turmeric . You’ll also learn how to make a delicious cocktail that incorporates your favorite pantry spice .

HISTORICAL TOUR AND PIZZA IN THE NORTH END
Elliot Savitzky | Culinary Instructor, Chinatown Expert This historical tour is as much about history as it is about pizza . We’ll learn about the history of the North End and sample pizza from 3 of the best pizza restaurants . We’ll talk about history from the 17th century by visiting many sites within the one square mile of the neighborhood . The tour will convene on Cross Street between Hanover and Salem Streets . The tuition includes the cost of pizza, taxes, tip, and admission fee to the Old North Church (depending on Covid restrictions at that time .) The instructor will send a welcome information package via email one day prior to the class . Students are asked to follow Massachusetts State Guidelines regarding social distancing and to wear a mask throughout the class .

BASIC COCKTAILS WITH CURBSIDE PICKUP FOR TASTING
Brendan O’Toole | Beer Specialist and Spirit Professional Anyone can mix! Through hands-on mixing and tasting, you will learn proper cocktail techniques. We’ll make different drinks based on different techniques and a different base spirit: vodka, gin, and whiskey. You will make a variety of cocktails and taste your own creations . This class includes the ingredients kit including spirits, cordials/mixers, and fruits for making cocktails . You’ll only need basic supplies at home including glassware, shaker/strainer (or a glass with a spoon), and jigger/ measuring cup . Tuition includes the ingredients kit .

COCKTAILS NIGHT: GIN AND GENDER
Alejandra Toro and Daniela Castaneda | Bartenders Gin has a long history in America, so do cocktails . In this online interactive class, join Alejandra and Daniela, a queer Latinx couple who have bartended for over 10 years and learn how to make 3 delicious gin cocktails step by step . We’ll talk about history and background of each cocktail and how the gender stereotypes influence how the cocktails have been made until today . We’ll also talk about the glassware of each cocktail and the story behind it . Each cocktail will lead us to the meaningful conversation and how each of us can make a difference as a citizen of the world. One drink at a time.

We’ll sample red and white wines as well as unique nibbles including several artisan cheeses . You’ll learn about how to taste and how to best enjoy them . To enhance the experience of learning and tasting, this online interactive class includes the wine and cheese tasting kit . Each pair will pick up the sampling kit at CCAE . The tuition includes the tasting kit for 2 people .

JAPANESE WHISKEY TASTING WITH CURBSIDE PICKUP

This creates a wide array of styles and flavors that are truly unique. There is so much more to Japanese spirits than just Sake.
