Dear Members,

I hope you are enjoying the cooler weather as we leave behind the hot summer days and enter the beautiful fall season. The summer was filled with smiles and laughter at our amazing new pool complex and concluded with a grand celebration Labor Day weekend. And while this summer was a resounding success, I am excited to look ahead to all the wonderful activities that are on the horizon this fall.

The team has all your favorite fall events planned to help enjoy every minute of the magnificent weather. From family favorites like the Campfire Campout to the returning Game Dinner Under the Oak, there is an event for everyone. Golf is hosting a new event this fall, The Tailgate, which is certain to be a popular addition to the golf calendar, and a Pickleball Grand opening is scheduled to celebrate the addition of our new pickleball courts. Whether you choose to join us for family fun, dining, golf, or racket sports, I look forward to seeing you here enjoying your club.

As fall turns into the holiday season, there are festivities planned for all ages. You may enjoy a traditional favorite like Club Ball, or one of the new events like the Speakeasy Cocktail Reception, or the Polar Bear Express Gingerbread Brunch. There are several opportunities to gather as a club family to celebrate and enjoy one another’s company.

While reading through this publication, we hope you enjoy the opportunity to relive some of the special memories that were shared and that you take a minute to get to know a few of our special team members and their talents.

As always, when I look to the holiday season, I am thankful. Thankful for this amazing club, our wonderful members, our incredible staff, and for all we have been blessed with. We all have so much to be grateful for, and I look forward to sharing this very special season with all of you!

SAFETY REMINDERS

PERSONAL PROPERTY SAFETY

The Club is working closely with CMPD to ensure our Club property is safe for members and staff. As you may know, there has been a slight increase in petty theft in our parking lots. Our peer clubs in Charlotte are experiencing the same issues, with suspects hitting multiple clubs.

We have installed security cameras and other safety measures to prevent crime. However, the best way to ward-off break-ins is by locking all vehicles and storing personal items out of sight. If possible, keep valuables in a locked glove box or trunk, or secure them in your locker at the Club

The Summer Clubhouse Interns worked together to host an End of Summer Bash for the entire campus! Together they called on team members to participate in their School Supplies Drive which was donated to Classroom Central, serving schools in the Charlotte region. Our interns treated team members to an afternoon of treats and games, with CCC trivia winner Julie Francis even taking home a $100 gift card!

South America has actually been making wine since the 1500’s. It wasn’t until the late 1800’s when plantings of Malbec, Cabernet Sauvignon and Carmenere gave South America the leg-up it needed to make some exceptional vino. Find out what makes South American wine unique and what you should be seeking!

WHEN TO SAY 'I DO'?

Charlotte Country Club has had the honor of hosting countless gorgeous weddings that occur all year long. Our first wedding of 2023 took place in February and we will round out the year with our final reception in November. Every single wedding capitalizes on the advantages of the season it takes place in, leading to a truly unique event.

The blossoming trees and vibrant flowers make spring a beautiful time for a wedding. The balance of a not-too-hot, not-too-cold day makes an ideal opportunity for an outdoor ceremony overlooking the golf course or hosting your cocktail hour on the Event Lawn.

This summer we held several wedding receptions, three of which were in July!

Our couples who get married during this season benefit from sunny days and warm weather, the perfect time to share a cocktail with their guests on the back terrace. Many guests are already in vacation mode and ready to dance the night away.

The beautiful autumn foliage makes fall a popular season to get married in as well. From vibrant color schemes to delicious fall cocktails, there are countless reasons to plan a fall time wedding. Depending on the month, you can spend your cocktail hour on the Event Lawn or enjoy the warmth of the roaring fireplaces inside the Club.

Plan your wedding any time of year!

In winter, an indoor wedding creates a cozy and romantic ambiance to enjoy with guests. Couples can have a private moment, and beverage, in front of the fireplace in the Georgian Room before joining their guests in warmth of the Pine Room for cocktail hour. There is already so much excitement surrounding the winter month’s holidays, adding a wedding celebration into the mix doubles the fun and time spent with friends and family!

GRILL AT HOME: BRAISED SHORT RIBS

SEAN YOU, Executive Sous Chef

Fall is for braising! As the weather starts to change, try your hand at Chef Sean's delicious braised short rib. The perfect cool weather dish for a cozy night at home!

INGREDIENTS

1/2 cup (4 oz) canola oil

10 (5-oz) beef short ribs (trimmed & deboned)

1 cup (4 oz) onion, rough chop

3/4 cups (3 oz) carrots, rough chop

1/4 cup (2 oz) celery stalks, rough chop

about 1/3 cups (1 oz) leek, rough chop and washed

1 Tbsp (1 oz) chopped raw garlic, peeled

1 bay leaf

1 cup red wine (pinot, merlot)

15 peppercorns

2 cups beef stock

1 cup fresh orange juice

1 Tbsp. whole cumin seeds

PREPARATION:

1. In a hot sauté pan, add 1/4 cup oil and pan sear ribs on all sides to seal in juice and for flavor. Remove and place in an oven proof medium size pot.

2. Add rest of oil to sauté pan and add onions, carrots, celery, leeks and garlic. Allow vegetables to caramelize (make sure pot is large enough for the vegetables or they will steam). Caramelized vegetables will enhance flavor of braising liquid. Stir vegetables with wooden spoon until they are a golden brown

3. Pour red wine in over vegetables to deglaze pot. Add peppercorns, bay leaf, stock, orange juice and cumin seeds and stir to combine. Add meat back in and bring pot to a simmer. Season with salt and pepper.

4. Cover with parchment paper then tin foil and let braise on heat to maintain a simmer for about 1 ½ to 2 hours, or until fork tender.

5. Remove ribs from liquid and place on pan and cover. Strain liquid through fine mesh into a bowl and return to a sauce pot. Bring to simmer then lower eat until sauce is reduced by half. Remove from heat.

6. When ready to serve, heat the broiler and brush reduced stock over ribs. Place under broiler for 1 ½-2 minutes and repeat this process 2-3 times, allowing a savory glaze to form on the meat. Serve immediately.

MEET NEW EXECUTIVE PASTRY CHEF, JUN JIANG

Originally from Shanghai, ,Chef Jun joined us in September, moving from Little Rock, Arkansas. He has experience working at some of the top five star hotels in China, and most recently was the Executive Pastry Chef at The Capital Hotel (AR) for eight and a half years.

We have already been blown away by Chef Jun's beautiful and delicious confectionery creations, and know you will be too!

Keep an eye out next time you are at the Club for some of the new sweet treats he will be offering!

CHEF JUN'S LEMON RASPBERRY COOKIES

INGREDIENTS

1 1/2 cup butter, softened

1 1/2 cups cream cheese

3 cups confectioners sugar

3 eggs

2 Tbsp. vanilla extract

5 cups all purpose flour

2 tsp baking powder

2 tsp salt

1 cup raspberry chocolate

3 lemons zested

pink food coloring

PREPARATION:

1. Cream the butter, cream cheese, sugar, and a few drops of the pink food coloring in a large bowl

2. In a separate bowl, mix the eggs and vanilla extract together till just combined. Next, add the mixture to the butter, slowly scraping down the sides until combined

3. In a large bowl, mix flour, baking powder, and salt together

4. Add the flour mixture to the butter and mix until smooth

5. Once the dough has formed, add the raspberry chocolate and lemon zest, Mix until well incorporated. Place the mixture (still in the bowl) in the refrigerator for at least 30 min.

6. When ready to cook, preheat the oven to 325 F. Use a large ice cream scoop to scoop the dough into balls onto the cookie sheet and let sit at room temperature until soft.

7. Bake for 12 minutes until golden and serve!

DINING & SOCIAL HOLIDAY WINES

The holiday season is such a happy time – gathering with family and friends, cool nights with hot chocolate (or a Hot Toddy) around a bonfire, Thanksgiving dinner, celebrating the turning of a new year… There isn't a season filled with more with joy and sharing.

With countless celebrations and parties to host, it can be hard to come up with the perfect beverages to pair with a meal. Whether for a celebration, or just to enjoy because we’ve made it through another busy week, let's talk the best wines for the holidays and even dive into an option for “bubbles” that aren’t Champagne for this New Year!

Thanksgiving can be one of the most interesting meals to choose a wine for – and a good time to impress those around the table. It’s important to ensure that it pairs well with the meal, and well, there are so many options that it can be hard to pick the right one. The good news is that I have some ideas to help!

With traditional Thanksgiving fare, a few wines immediately come to mind – Beaujolais from the Burgundy region of France, a hearty Oregon Pinot Noir, or a rich, spicy Zinfandel from Paso Robles.

Beaujolais is most known around the holidays for “Beaujolais Nouveau” as this is the first bottling of Beaujolais each year to celebrate the new harvest. These wines are intended to be drunk almost immediately, but the quality doesn’t get close to a “Village Level”Beaujolais; keep an eye out for Beaujolais bottles with the names “Brouilly”, “Juliénas”, or “Morgon” on the label – that’s the good stuff!

I also love Oregon Pinot for Thanksgiving for the tart red berry fruit flavors perfect to pair with Turkey and Cranberry Sauce, and a slight earthiness that goes well with the typical herbs used to season Thanksgiving dishes.

And for those that prefer a luxurious, spicy, and touch more bold wine for Thanksgiving Dinner, look no further than a Zinfandel from Paso Robles. Some of my favorite producers are DAOU, Turley, and Ridge Vineyards!

It’s hard to imagine ringing in a new year without hearing the pop of a cork leaving a bottle or seeing that beautiful stream of bubbles run up a champagne flute. Believe it or not, 25% of all Champagne sales happen between Christmas and New Years Eve! The price of champagne can be quite high from top producers. The main reason is that making Champagne is a painstaking, and often years-long process, for just one bottle. Of course, the price increases even more for products from top Champagne Houses. This New Years, I’d suggest bringing a bottle of crémant to the party! It is made in the “méthode champenoise” or traditional method of making Champagne, and usually half the price! I’ve had the opportunity to taste some amazing crémants side-by-side with big names champagnes and have been blown away by the quality of these wines which are half the price. Crémant is made in all of your favorite regions: Bordeaux, Burgundy, and Alsace!

This holiday season, I hope you get to spend time with loved ones as you celebrate all the milestones of the current year, and looking forward to great things to come next year!

LOOKING BACK: LABOR DAY

Our annual Labor Day Splash event had a festive “luau-inspired” spin to it this year as we celebrated the holiday poolside! The Club had the pleasure of seeing members and their families enjoy several complimentary activities such as the surf simulator, bounce house, airbrush tattoos, and hula dancing. Not to mention the super tasty poke bowl station executed by our wonderful culinary team, that still has all our mouths watering! Perhaps the most fun and eventful activity of them all was our first annual Cardboard Boat Regatta Race, in which the USS GLALLIS team took home the big win this year. Between the beautiful weather and a day full of excitement, we were so grateful to celebrate Labor Day this year in true CCC fashion!

TIPS FROM THE PRO

You've probably heard the saying: "You play how you practice and practice how you play." Not only does this mean you should put as much effort in practice as your actual matches, but you could also interpret the message as: "One should try stepping outside of their comfort zone in order to improve one's game."

Think of it this way, while it is great to keep the ball in play (in tennis and pickleball) and play it safe, sometimes it can be better to go outside of your comfort zone. If a player were to constantly play the safe shot, their opponent would quickly take advantage.

When playing in practice matches, during clinics and lessons, commit to your coach's advice, take some chances and go for that poach you normally wouldn't be comfortable with. If you won't take the chance in practice, you probably won't in a league match, right?

MEET OUR NEW TENNIS PROS

Mary has had a love and natural gift for tennis from a young age. As a junior player, she represented her home country of Venezuela in the South American Cup for 6 years. She had an outstanding college career at Iowa State University, playing #1 and #2 singles and doubles for 5 years. In 2021, she was nominated for NCAA Woman of the Year. Mary and her husband Brendon recently moved to Charlotte from the Midwest. She is excited and grateful for the opportunity to be part of the CCC team and can't wait to meet more members and teammates!

Quinn is originally from Boulder, Colorado. He recently graduated from Methodist University where he played college tennis and studied Professional Tennis Management. After graduation, he transferred to Queens University of Charlotte to play his final year of tennis and pursue an MBA. He has over 5 years of teaching experience and has just completed his 3rd summer as the 1st Assistant Pro at Westhampton Country Club. In his free time, he loves to play golf, go the gym, as well as hiking and any other outdoor activities.

UPCOMING TENNIS PROGRAMMING

We are excited to announce the imminent start of construction on our indoor tennis facility! Plans are being approved, the site is being cleared and are moving swiftly forward to develop this new amenity for our members. This state of the art structure will feature three clay courts for enjoyable play no matter the weather!

Plans for this capital project also include the construction of a new golf cart barn. We are excited to continue to improve our campus and offer Charlotte Country Club members the best facilities and experience possible.

Stay tuned for more updates on this exciting development and plans for a grand opening in 2024.

CCC GOLF TRADITIONS

Spread the Word on CCC Golf Traditions!

PACE OF PLAY

• We always play a golf round in four hours or less and maintain close proximity to the group immediately ahead of our group.

GOLF CARTS

• We never drive golf carts near or through native (tall, fescue) grasses.

• We never drive golf carts within 30 yards of greens or tees.

• We drive and always park golf carts on paved cart paths where available, particularly around green complexes.

• We always repair ball marks on putting surfaces…both our own and those left by the day’s previous golfers.

• We always rake bunkers after playing a shot so that golfers following us will not have to play out of our footprints.

• We never litter our beautiful course and always pick up any trash we see, including the broken tees we create on every hole.

CONGRATULATIONS TO ASSISTANT GOLF PROFESSIONAL TYLER NOSKE

Tyler qualified for the 2023 National Assistant Championship to be held in Port St. Lucie, Florida in November.

Tyler shot 71-72 in the Carolinas Assistants Championship at Forsyth Country Club, finishing 8th.

If you see Tyler around the Club, be sure to congratulate him!

TIPS FROM THE PRO

We have all been there…you have one hour to practice and go directly to the range, pull out the wedge, 7 iron, then driver without hitting one practice putt on the putting green. Its no secret, the best way to improve your golf score at any level is to improve short game, and putting is without question the most important. The next time you go to the practice tee, skip hitting balls for the full hour and spend the first 30 minutes of your practice session on the putting green. Here are a few putting drills/thoughts to think about:

Grip Pressure– Think of holding the putter like holding a tube of toothpaste. If the top were open, the pressure you hold the toothpaste would not allow any of the toothpaste to exit the tube of toothpaste…it’s a lighter pressure grip vs a tight grip.

Grip – When placing your hand on the putter grip, both palms should be facing one another (like saying a prayer with your hands) and both lifelines of the right and left hand to rest on each side of the putter shaft/grip.

Ball position – Play the ball on the inside of your left heel (for right-handed players) with 4-6% more weight resting on your front foot. Keep the weight there as you putt. The front leg will act as a post while you make a putting stroke.

Distance from the ball – Ideally, your eyes will be on the inside of the golf ball. To check this, get in your setup, hold the putter grip vertically from your eyes. As you hold the putter out, check to see if the putter is on the inside of the golf ball. If this is the case, as you place the putter on the ground the toe and heel of the putter should rest flatly.

SPEED – Other than confidence, SPEED is the most important aspect of putting. A great way to practice speed is to hit putts to an area, not necessarily to a hole. A great drill for speed is to place tees on the green 1 foot apart. Hit putts to the tees from 6, 10, and 15 feet. The goal is to hit 3 putts in a row between the two tees on the green. The focus is all about speed and not at all about mechanics or making putts. This will help your putting speed immensely.

Hold the finish – If you have taken a lesson from me on the putting green, there is a good chance I have told you to hold the finish for 3 seconds after you make the stroke. I challenge you to watch a tour player putt on TV…they never move after they have made a putting stroke. Try it!

Again, I cannot stress enough the importance of putting. Take the time to practice and make it your goal to have 2-5 less putts the next time you play. Your score WILL improve!

MEET OUR NEW GOLF COURSE ARCHITECT ANDREW GREEN AT GOLF NIGHT

We are thrilled to introduce Andrew Green, President and Principal Architect of A.H. Green Design who will be spearheading our golf course restoration project!

Andrew has an impressive portfolio including multiple championship venues such as Scioto Club, Inverness Club, and the East Course at Oak Hill Country Club, host of the 2023 PGA Championship. Some of his restoration projects have received accolades such as Restoration of the Year from Golfweek and Golf Digest's Best Transformation.

We are excited for Andrew to begin restoration work that will keep the golf course true to Donald Ross’ design, allow us to keep pace with the modern game, and improve the golf experience for all members.

On November 9, join us for cocktails and light hors d'oeuvres followed by an interview with Andrew by golf commentator Gary Williams.
