INTRODUCTION FROM TRACY RIVERS As the holiday season approaches, we want to extend a warm and heartfelt welcome to this festive time of year. This season is not only about celebrating with loved ones but also appreciating the incredible team we have here at Charlotte Country Club. This month, we take a moment to honor and thank our Veterans for their service and sacrifice. We are grateful for their commitment and bravery, and extend our sincere appreciation to those on our team members who have served. After a busy summer and fall, we are gearing up for the holidays here at the Club. I want to thank you all for your continued hard work. Your dedication and smiling faces are what set us apart! I’m excited for you to read through this newsletter to celebrate our team members and learn more about our exciting new initiatives. We are thrilled to introduce RIPPLE, an embodiment of our core values. Remember that even one small act can have an enormous impact on our Club and the experience we provide for our members. Be sure to sign up for this year’s Jolly Jamboree, which promises to be an unforgettable event! Join us at Top Golf on Monday, Dec. 18 for a fun-filled evening of team bonding, games, and great food. It’s an excellent opportunity to connect with your fellow team members and unwind during the busy holiday season. Stay tuned to learn more about our employee educational events, beginning next year! This program will offer various opportunities to help you grow personally and professionally. An official schedule will be available soon and I hope to see you all at these sessions. In addition to these exciting updates, we’re delighted to share some holiday cheer with you. In this month’s newsletter, you’ll find delightful holiday recipes, winter gardening tips, and more exciting news from around the Club. STAFF NEWS & CELEBRATIONS Anesa Odhah of the Service team became a US Citizen on Sept. 15. Anesa and her daughter Shima moved from Yemen to New York where they lived for 5 years, 11 years ago. A native Arabic speaker, Anesa has learned English and studied for a whole year to successfully pass her citizenship test. Congrats Anesa!

Jamie Hansen (Events) and husband Eric welcomed a baby boy, Caden, on August 18!! Rosalio Robles Sierra (Agronomy)welcomed a baby girl named Nicole on September 15!

Laurie Wilson (Director of Communications) and husband Rob welcomed a baby boy Harrison, on August 3! Congratulations to Taylor Oikemus (Schmit) who tied the knot to husband Cody on September, 17! 5


CONGRATS TO ASSISTANT GOLF PROFESSIONAL TYLER NOSKE Tyler qualified for the 2023 National Assistant Championship. Tyler shot 71-72 in the Carolinas Assistants Championship at Forsyth Country Club, finishing 8th.

THANK YOU, AGRONOMY! Thanks to John Szklinski, and the Agronomy Team for ALL their hard work! They work tirelessly to keep our golf course and horticulture in tip top shape! As a thank you they enjoyed a steak lunch on September 22. We are grateful for all this team does all year long!

PHILANTHROPY BACK TO SCHOOL DRIVE The Summer Clubhouse Interns worked together to host an End of Summer Bash for the entire campus! Together they called on team members to participate in a CCC School Supplies Drive which was donated to Classroom Central, serving schools in the Charlotte region. Our interns treated team members to an afternoon of treats and games, with CCC trivia winner Julie Francis even taking home a $100 gift card!

PUMPKIN CARVING CONTEST Our annual Pumpkin Carving Contest was held on October 25! We had an amazing turnout this year, from Nemo to Gru, with 15 entries! Voted on, at the Family Halloween Celebration, Members were blown away by the creativity of all of the submissions! In the end, only one pumpkin carver could be crowned victorious. Congratulations to Stacy Rumph, our 2023 Pumpkin Carving Champion! We hope you all had fun, and its never too early to start planning for next year!

AN UPDATE ON INDOOR TENNIS

We are excited to announce the upcoming start of construction on our indoor tennis facility! Plans are being approved, the site is being cleared and are moving swiftly forward to develop this new amenity for our members. This state of the art structure will feature three clay courts for enjoyable play no matter the weather! Plans for this capital project also include the construction of a new golf cart barn. We are excited to continue to improve our campus and offer Charlotte Country Club members the best facilities and experience possible. Stay tuned for more updates on this exciting development and plans for a grand opening in 2024. 11


R.I.P.P.L.E. Charlotte Country Club is pleased to announce the launch of the R.I.P.P.L.E Program. At CCC we believe that “One Small Act Can Have an Enormous Impact!” This program was designed to recognize when one of our Team Members goes above and beyond, preforming an act representing a pillar of R.I.P.P.L.E.

FALL GARDENING Did you know you can eat the leaves of the brussel sprout, broccoli, and cauliflower? Did you know it takes two years for a pineapple plant to produce a pineapple? Did you know it takes three years for asparagus to produce? You may or may not know that I love gardening. In all seasons you can find me elbow deep in soil tending to my backyard garden. Here are a few tips for success to give gardening a go this Autumn Season! •

Fall gardening is so much better than summer as you don’t have as many pests. However, whether fall or summer, I recommend protecting your crops from any hungry critters that might get to your plants before you can. Protect your crops in any season by covering them with a mesh cloth and hoops, to ensure you get to enjoy our harvest!

Now, you may ask, “What should I grow in the fall?” Learning more about what grows where you live is as easy as googling your “zone” by using your zip code. Simply google, “What zone is 28215”and you will find information on the best plants to grow based on climate and soil types in your location!

Tending to a garden can be tedious, but finding the plants that require the least intervention is a great place to start! The list below does not require any pollination from bees to grow and are mostly frost tolerant, meaning they can handle the cold temperatures to come this season! • • • • • • • • • •

Team members can receive a $100 or $200 bonus for every referral who is hired and completes their 90 days! COVID-19 IN THE WORKPLACE It is important to remember that COVID-19 is still present, and we all must remain vigilant and cautious while adhering to the guidelines of the CDC and local government officials for preventative measures. It is imperative that everyone makes smart decisions and continues to follow safety guidelines not only at work, but when away from the Club as well. If you develop symptoms or test positive, stay home and contact your supervisor or the Director of Human Resources for guidance.

DIVE CELEBRATIONS

CCC celebrated AAPI, Juneteenth, Bastille Day, and Hispanic Heritage Month with special meals prepared by the Culinary Team. A huge thank you to them for all of these delicious meals. Each of these Heritage Months speaks to the cultural richness we have on the CCC team!

FAMILY HOLIDAY RECIPES PAN DE YUCA

Gluten Free Tapioca Bread Tapioca breads are very quick to make breads popular in Columbia and many Latin American countries. They are usually consumed at breakfast time or later on in the day, as a snack. Another bread like this is the pandebono (Colombian Cheese Bread). My family has a bakery in the city of Cogua, Cundinamarca, Colombia, where this bread is made daily. On Sundays more than 100 pounds of cheese are processed into the pandebono! The main ingredient is cassava (tapioca starch) found in many Latin American recipes like cakes, fritters, empanadas, and cookies. This recipe is very easy and quick to make with just three ingredients you can buy in most stores!

INGREDIENTS - 1 pound of Queso Fresco (ground or shredded) - 1 Tablespoon of Sugar -1/2 cup of Sour Tapioca Starch TO MAKE 1. Preheat oven to 350F 2. Mix all ingredients together until you form a dough 3. Once dough is formed, divide into balls about 2 ounces in size (4 tablespoons) 4. Take each ball, roll into cylinders, and shape into crescents then place on a sheet pan 5. Place pan in oven and bake at 350F for 15 minutes. 6. Once golden, remove and enjoy with your favorite cold or hot beverage for breakfast or a snack!

SWEET POTATO CASSEROLE This recipe is important to my family because it has been around at nearly every holiday or family gathering since I can remember, not just Thanksgiving or Christmas! My family always jokes about how my aunt is a terrible cook, but somehow manages to make the best sweet potato casserole (it’s the ONLY thing we let her make). We enjoy it with a brown sugar and pecan crumble on top that is delightful. Wanna make it even sweeter? Add mini marshmallows on top for a sweet southern touch! Trust me, you’ll be going back for seconds on this one all day! INGREDIENTS - 5 cups sweet potatoes baked & mashed (about 5-6 medium potatoes) - 1 cup granulated sugar - 8 tablespoons butter, softened. - 1 ½ teaspoons vanilla extract - ½ cup of milk - 2 large eggs

TO MAKE

Crumble Topping - 1 cup brown sugar - ½ cup all-purpose flour - 1 cup chopped pecans. - 4 tablespoons butter, softened. - ½ cup mini marshmallows (optional)

1. Preheat oven to 350 F degrees. 2. Scrub sweet potatoes and boil or bake in the oven until tender. 3. Cool, peel and mash the sweet potatoes. 4. Stir in granulated sugar, butter, vanilla, milk, and eggs, mix well. Pour mixture into a 9x13 baking dish or individual dishes for serving. 5. Make Pecan Crumble Topping: Mix brown sugar, flour, nuts, and butter together and spread evenly over sweet potato mixture. 6. Bake until the topping has browned, and the sweet potato casserole has set in the center (about 30 minutes) (If including marshmallows, bake the sweet potato casserole for 20 minutes. Remove from oven and spread the marshmallows over the top of the casserole. Return to oven and bake the remaining 10 minutes, until brown and toasty.) 7. Enjoy!

Eligible full-time team members enrolled in the CCC medical, dental, and vision plans should start scheduling appointments now so it’s complete by the end of the year. Some of the In-Network preventative care visits that are covered by our plans include annual physicals, mammograms, a colonoscopy (for those 45 years and older), and dental exams to name a few. Don’t wait until the last minute…be proactive about your health! Be sure to take advantage of your Health Savings Account for any out-of-pocket expenses such as prescription medicine.
